Started around 8am yesterday and was all done by 8ish. 2 brews now in fermenters. I think I need a bigger fermentation area now as I've got Ginger Cider, 10 gallons of ale and Elderflower champagne all fermenting. Should keep me going for a bit.

First brew was my standard house pale ale. 100% Maris + Challenger and Easy Kent Goldings to 38 IBU. I've been altering the hop scheduling and yeasts on this one for the past few brews to try and hone the perfect pale ale. Settled on Wyeast Whitbread 1099 for the yeast and find this one gives a nice sweetness which conditions to a lovely roundness in the mouth. Previous hop schedules have been multi throughout a 90 min boil but I simplified it on this one to 90 min, 10 min then I'm going to dry hop to see if there is much difference. I also omitted the Calcium Chloride flakes on the water treatment as I did find this seems to deaden the hop flavour a bit.

Treating the water is giving a much better hot break.

The only problem with brewing outside on a windy day is that stuff gets blown into the boiler. I thought a slug had climbed in at one point.

It turns out it was just a bit of break material.

Second brew was Tony's tribute recipe.

I altered it slightly for my equipment and also ommitted the wheat as I've never really got good results from wheat additions. I also changed to a 90 min boil as I find I get better breaks with the longer boil so hops recalculated accordingly.

Water treated with 1 campden tab, 53.8ml CRS, 1.34 Gypsum in Mash, 2.42 Gypsum/6.32 Epsom salts in boil.

Estimated IBU: 26.4 IBU

4 kg Pale Malt
1 kg Munich Malt

30.00 gm Fuggles(60 min)
8.80 gm Williamette(60 min)
22.00 gm Bobek (10 min)
15.00 gm Williamette (10 min)
12.00 gm Williamette (80C) (Aroma)
12.00 gm Bobek (80C) (Aroma)

1 tsp Protafloc (Boil 15.0 min)
1 Pkgs English Ale (Wyeast 1968 ESB)

Mash Schedule: Single Infusion, Medium Body, No Mash Out

Mash at 65.0 C

20.00 gm Bobek (Dry Hop 3 days)

Its not come out as orange as I remember Tribute being but looks good still.

Planning to ferment both for 4 days then transfer to secondary for a further 10 days (dry hopping for 3).

Not tried the 1968 ESB yeast before so also looking forward to sampling that.

    Thanks Tony, I had that hot break after 15mins, before I even added the first hops! Never seen anything like it before.

    1099 is my favourite yeast at the moment. It did taste a bit too sweet to start with but conditioned really well.

    I'll bottle one of the tribute clones up and send you in your next order.

    I have another casualty.

    Not sure what's happened but the house pale ale has got the same problem as the 49er I did a few weeks ago. Strange smell and sour taste. Its not as strong as the 49er but its definitely not right and pretty sure its heading for the drain as the 49er hasn't got any better and not sure its worth the hassle of kegging it.

    This is very strange. I've had this once or twice before in years but never 2 batches this close together.

    It can only be one of a few things:

    1. The sunlight has got to it. Both could have been hit by some direct sunlight very early in the morning although I've had a bin bag over the second batch and moved to a different (cooler) location in the house but there is a slim chance that some sunlight got it at sunrise when the sun is very low. I always previously fermented under out stair but have had to move in the past few months as there was loads of other stuff under there.

    2. Something got in the beer when transferring from boiler to fermenter. This has started happening since I've been brewing totally outside.

    3. The fermenter was completely sterile. Unlikely as I've been using VWP and both were fermented under airlock.

    4. The steriliser itself is causing it. Again Unlikely as I've been using VWP for years and rinsed really well.

    Anyway, gutted. Lucky I made two batches as the Tribute recipe is fine and tasting good so I won't be completely out of beer but I'll have to get another brew on next week. Well I guess there is always a bright side!!!

    I'm going to move the fermentation location back under the stairs and put the lid half on the fermenter to try and stop anything getting in it... and pray.

    Like Varnish, I'm getting tired of some much manual work involved in brew days and so much hit and miss so planning a bigger brewery. Much bigger and much more automated.

    Sorry to hear about that mate, Strange to get 2 of the same infections. Is there any weird plants round the area you brew in? Does sound like an outside problem, but saying that my last 3 brews have been outside and have had no problems. Still its hot and wild yeasts and moulds will be flying through the air.

    Im sure the next will be fine, and as you say it was a double brew day so not all was lost.

    Oh well s**t happens as they say. At least the Tribute beer is coming along very nicely as is the Turbo cider and Elderflower Champagne. May have to bottle that lot tomorrow though :o(

    Just to give you an update. The Tribute beer is tasting really nice. Lovely citrus smell and a really hoppy flavour, like bottled London Pride. Its much paler than Tribute but the taste is similar and its just a nice (if not better) so definitely a winning recipe. Going to make it again very soon and can highly recommend.

    Always a worry when you recommend something to someone, but I'm really pleased that it's turned out well.

    Hols coming up soon .... so, if I can find time with the nippers at home I'll be brewing! I'm still wary of the temperatures at the moment though .. some of my stock is developing banana overtones from the heat. Yeasties not liking it. I may wait until the temp drops a little.

    We'd had conversations about 'going-off' the crystal lately and I'm starting to think I may be missing it a little. Having said that, I've just opened a bottle of my 'proper knob' and it has a wonderful malty taste. The hop characteristics are way out... but still a good pint!

    I know what you mean about crystal but I'm sure that Tribute has some in as it definitely got a crystal colour and underlying taste to it.

    I just find it a bit sweet if not balanced off by some strong hoppiness. London Pride would be a fine example of where I really like crystal. Spitfire is similar too.

    I think around 200g of crystal to that recipe would give the same effect. I'll reduce the pale to keep the ABV similar. I'm going to brew this one next weekend as got too much to do this weekend.
