I might give this a whirl on my next brew day. Looks really interesting.

All infusion amounts are in quarts.

Notes
-----
After primary, slit open 2 vanilla beans. Scrape the insides, chop the pods into quarters, add to secondary fermenter, rack beer onto vanilla. Taste periodically for the correct balance. I left the beer in secondary for 11 days. Rack to bottling bucket and add 10 ml. per pint of Jim Beam Black Bourbon (or to your taste). Bottle, enjoy!

Need to find some Vanilla beans although vanilla extract can be substituted. Are Vanilla Beans different from Pods?

Wyeast are also now stocking "Dennys Favourite" yeast as a stock strand so may get some of that too.

What do you reckon? One to Brew now for next winter.

    Looks lovely Greg. That's a big grain bill, should have a lovely full taste.

    I think vanilla beans and pods are the same thing. Saw that Sainsbury's are selling them in the baking section.

    Should be nicely conditioned by next winter!

    I need to put it into Beersmith to get the qty's etc which I'm going to do later. Comes out around 7.7%, its got nearly 1/2 a litre of whiskey in it too. The Vanilla in Varnish's Porter was really nice and I love bourbon so I'm hoping this should work out really well.

    Okay, I've got the Green Light for brewday this weekend so this one is definitely going to get brewed.

    Put the recipe into Beersmith and these are the results:

    Recipe: Bourbon Vanilla Imperial Porter
    Style: Imperial Porter
    TYPE: All Grain

    Recipe Specifications

    Batch Size: 23.00 L
    Estimated OG: 1.076 SG
    Estimated Color: 88.2 EBC
    Estimated IBU: 33.2 IBU
    Boil Time: 60 Minutes
    Est Abv: 7.44%

    Ingredients:
    ------------
    4900 gm Pale Malt, Maris Otter
    1130 gm Munich Malt
    680 gm Brown Malt
    570 gm Chocolate Malt
    450 gm Dark Crystal Malt
    220 gm Light Crystal Malt

    23.00 gm Magnum [15.7%] (60 min)
    33.86 gm East Kent Golding [4.6 %] (10 min)

    EDIT - had extra hops on this earlier where I cut and paste, corrected now!

    Yeast TBC Possibly Wyeast 1098 or 1028 or I may recover a 1056 from the Rocker Forum Brew.

    Split 2 vanilla pods into secondary and rack. Leave until vanilla is to desired taste. Add 400ml of Jim Beam to bottling bucket with primer then bottle. I will then leave to bottle condition for 6 months.

    Looking forward to this one as not made a Porter before.

    Is that ABV before you add all that Jim Beam? Not so sure about carrying anything after, more like you'll need to be carried!

    Yes its ABV pre Bourbon. I haven't worked out how to put that into Beersmith, if its even possible.

    Can't wait to get this one underway. I'm just trying to work out yeast pitching rates at that ABV. I've either got to make up a starter for an activator but I'm also looking into recovering some yeast from Rocker IPA as its the one they suggest. You know me, its a bit scientific but I'm struggling on.

    Hey Greg, did you ever get round to doing this one? I'm tempted too, and just happen to have all the bits apart from pale malt which I'm ordering next week. I like a bit of vanilla and am partial to a bourbon or 4 at the end of an evening. Curious to hear if you thought it's a winner or not.

    This sounds amazing! I love Porter. I love vanilla. I love Bourbon. I can see the flavours going together very well.
    I'll put this on my to do list for one day as well I think!

    Try Varnish's Vanilla Porter, I brewed it with Wyeast 1968, it was rather good...
