Coopers Ginger Beer Fermentation
I have brewed a good few beers over the years, but not done ginger beer before so am using a Coopers kit.
It has been in the FV for ages. It took nearly a week to start fermenting, and when it did it was slow. However, eventually the reassuring layer of froth and CO2 appeared. However, it has been like this for nearly 3 weeks. Surely it must have finished fermenting by now. I have had consecutive hydrometer readings of 1040. The problem is it still looks like it's fermenting (i.e. big bubbles on the surface).
Is it just that the appearance of fermented ginger beer has a bubbly surface, or could it still be fermenting?
I will be bottling it and don't want to bottle it too soon - Lady Flashman will not be happy if the back bedroom is redecorated with Ginger Beer.

Yes my good man. 'Tis I, Sir Flashman of Gandamack Lodge.
Haven't got OG as I don't normally bother with hydrometer readings - far too complicated for a jaundice-eyed retired General like me. Perhaps i mean 1004 - it's two notches further down from 1.000.
While you see if you can help me out, I'll be asking Lady Flashman to toddle off to the garage to pour me a glass of Thunderbolt.
Thank ye chaps.
