Coopers brewmaster pale ale
I have just brewed a coopers brewmaster pale ale (only second brew I have done), I have used malt extract to replace the coopers brew enhancer and I have also added fuggles - in a tea bag - to the brew. I am still experimenting at the moment but my brew temprature is a bit high - around 28 degrees (it will cool down today as it is winter in Australia)the intructions tell you to brew it at between 21 to 27 degrees, however I have just been reading 'brew your own british ale' by Graham Wheeler and in that he says to brew at between 18 and 20 degrees? Is there a better temperature? Will I have caused a problem with this brew by the tempeature being too high at the start? Cheers - apprentice brewer.

The book says it all Brew your own BRITISH! ale.
Your kit is Australian and is ment to be brewed at high temperatures as it uses high temp fermenting yeast. Coopers is a good kit to do in UK in the summer as if you have no temperature control it generally takes care of itself. Your brew will be fine. Now if you were doing say a Muntons kit you may have problems.

Its probably gonna be fine, make sure its left on the yeast for a while after fermentation has finished (5 days or so) and it will clean up after itself. Its always best practice to ferment at the bottom range of the yeasts temp range, so Ideally pitch at 23ish and after a few days bring it down to the lower temp.
Ive literally cooked a Woodfords kit before when I had my brewing fridge - the probe fell out and the brew was fermenting for 48hrs at 30c! Wasnt too much of a problem and I had no funny aftertastes/smells!
