Coopers Brewmaster Irish Stout
I am new to home brewing. I have made Coopers Lager and have StPeters IPA fermenting right now.
I really want to make the Cooper Brewmaster Irish Stout.
I have bought the Iris Stout can and also Coopers Light Malt Extract in a can. When I read the instructions on the Irish Stout can, it says use 500g of Coopers Light Dry Malt + 300g of dextrose.
Can I still us the can of liquid malt that I have bought instead? If so how much as it contains 1.5kg of Light malt.
I also picked up a 500g pack of molasses sugar in the supermarket. Would adding the molasses be okay or not?

Hi Badger. Nice to meet you.
The Liquid Malt Extract would be fine. You always need more than you will with Dried Malt Extract. Use 1.0 KG of Extract and you should be OK. Adding the Molasses sugar will change the brew a bit, and increase the ABV by about 1.0%. To keep the ABV roughly the same, use 600 gm of Extract and the 500 gm of sugar. So, whatever you like, really. You'll get beer, whatever happens.

Fermenting: - Ginger Beer experiment
Conditioning: - A normal bitter with Styrians
Drinking: - All of it!!

If I don't use all of the extract, how long can you keep it for?
Does it need to be stored in the fridge?

Storing Liquid Malt Extract is a bit of a problem. Be careful the top of the tin is sterile when you pour it, and don't leave it standing around open to pick up bacteria. Seal the can straight away with some sort of cling film, or find a plastic cap to fit it and store it in the fridge. It should keep until it's use by date.
