Looking to do an ale that tastes a bit like Shepherd Neame 'Spitfire'. Anyone got any recommendations as to what would be a close match to this.

Take it from me, I did one kit then moved straight to extract - it's no more difficult than kits really, but it's more fun and much more satisfying to do. All you need extra is a decent sized stock pot and a sieve. Plus, you can have more input into how your beers going to taste once you've mastered the basics

Can't say I'm a fan of this brew. It's one of those biscuity beers that I just don't like. I think that comes from the Amber malt. You could replicate this as an extract brew. I'm sure one of us could convert it and you don't need a lot of kit for extract brewing.

SPITFIRE ALE Shepherd Neam Faversham Kent.
25 litre batch OG 1045 ABV 4.7 35 units of colour 43 EBU
HALCYON PALE MALT 3754 gms
AMBER MALT 250 gms
CRYSTAL MALT 400 gms
WHEAT MALT 200 gms
TORRIFIED WHEAT 400 gms
HOPS Boil time 90 minutes
TARGET 30 gms
GOLDINGS 28 gms
Add 10 gms Goldings last 15 minutes.
Yeast of your choice.
I might give this a go.....Can someone give me an idiot guide of how to make this, as I have only ever done kits. Thanks for any help.

Thats an all grain recipe, maeaning you need to have a mash tun, boiler and other bits n bobs. If youve only done kits Im assuming you dont have access to these other bits so it may be best to do a extract version which only requires a 11ish litre pan ples some dried malt, special grains and the hops.
If ya wanna do wither of the above then we can take you through the process and show you how to get the extra bits n pieces.

For details on extract brewing look at the recipe instructions for Way to Amarillo on this site:

That will give you a basic extract brewing technique that can be used for any recipe. Note, though, that not all the extract is added to the water at the beginning of the boil. This means that the hops that are added at the beginning will provide more bitterness than if all the extract were added at the beginning. Recipes need to be adjust to take this into account.
Now, for the Spitfire recipe we need to convert the Pale Malt and the Wheat Malt grains to extract and deal with the other grains. That's where it gets a little complicated.
When extract brewing, the conversion of starches into sugars has already been done and so no mashing is required to carry out the conversion. However, you can use some grains (called specialty grains) that don't require mashing to add complexity to the extract brew. Crystal Malt is a good example. It adds colour and some toffee-like flavours.
So how do you use these grains in an extract brew? Simple. You steep them in 65C-70C water for 30 minutes and remove them. You can put them in a grain bag for this as it makes removing the spent grains easier. You can do this in the water you are going to use to boil the extract/hops.
Looking at the Way to Amarillo recipe, you add the bag of specialty to the boil pot when it reaches 65C, turn off the heat and let it steep for 30 minutes. Then take the bag out and continue with the recipe.
OK. The Spitfire recipe calls for a number of grains:
HALCYON PALE MALT -> This can be converted to Extract
AMBER MALT -> This can be used as a specialty grain
CRYSTAL MALT -> This can be used as a specialty grain
WHEAT MALT -> This can be converted to Wheat Extract
TORRIFIED WHEAT -> This will have to be omitted as it needs to be mashed.
Using Beer Smith I've converted the recipe for use with the brewing technique used in the Way to Amarillo recipe:
Converted Recipe
2.00 kg Light Dry Extract (added with 15 minutes of the boil left)
0.50 kg Light Dry Extract (added at the beginning of the boil)
0.12 kg Wheat Dry Extract (added at the beginning of the boil)
0.35 kg Caramel/Crystal Malt -120L (steeped for 30 mins at 65C-70C)
0.25 kg Amber Malt (steeped for 30 mins at 65C-70C)
19.00 gm Target [11.00 %] (60 min)
27.00 gm Goldings, East Kent (60 min)
15.00 gm Goldings, East Kent (15 min)
For the yeast you could use SafAle S-04 or someone may suggest something else.
Additional Kit
A saucepan of at least 12 litres
A thermometer
A grain bag

Because I haven't done this before is this what I need to do:
In 6 litres of water add
0.35 kg Caramel/Crystal Malt -120L (steeped for 30 mins at 65C-70C)
0.25 kg Amber Malt (steeped for 30 mins at 65C-70C)
then remove and add
0.50 kg Light Dry Extract (added at the beginning of the boil)
0.12 kg Wheat Dry Extract (added at the beginning of the boil)
as well as
19.00 gm Target [11.00 %] (60 min)
27.00 gm Goldings, East Kent (60 min)
and boil for 45 mins. Then finally add
2.00 kg Light Dry Extract (added with 15 minutes of the boil left)
15.00 gm Goldings, East Kent (15 min)

Could you drop the Wheat Dry Extract and steeped Crystal Malt and steep some Crystal wheat instead?.

Plus one from me Simon, seriously not a fan of Shepherd Neame. Add any Marstons, Sam Smiths, Speckled Hen, Greene King, Adnams (apart from Broadside), Bombardier.... plenty of others.

Yeah spot on, that's another, Badgers, all horrible...... apart from maybe the Blandford Fly which seemed quite different to the others.
Good luck with the recipe. I'm having a go at an extract Landlord tomorrow, what's the worst that can happen? Maybe they end up nothing like we expected... but it's beer!

There's a book by Graham Wheeler called "Brew Your Own British Real Ale", £14.99. Very good, 100+ recipes, including Old Speckled Hen as well as lots of instructions for brewing.

Also download some software such as Beer Engine, Beer Tools, Beersmith and others. They will let you tweak the recipes or make your own up.
