Cider kit - sour and yeasty?
Hi,
I got a brew kit for cider a while back and followed the instructions to the letter, however when I tasted it the first bottle was yeasty and the second (I tried a few weeks later) is sour. The only thing I can think it that I left it in the fermenting barrel for 2 weeks rather than 10 days.
Any ideas on why this might be and what I can do about it? It is too sour to drink at the moment so unless I can change that, it will be going down the sink!

With homebrew, time is your friend. The kits say ready to drink in 2-3 weeks. Don't believe it. My brother made a batch of kit cider about 6 months ago that tasted absolutely rank, like chemical dishwasher. He put them in the back garden and pretty much forgot about them until I was home a few weeks ago. We popped one - crisp, delicious, appley, tangy, fizzy... Really good. They needed to be chilled right down before opened though because of the carbonation levels. Pouring them in one motion kept them clear - don't double action pour unless you want the sediment from the bottom of the bottle.
Patience and sanitation are the 2 single most important things in homebrewing. Everything else is just painting by numbers pretty much, follow the steps and you should end up with a pretty good end result.

Leaving it in the Fv for the exta 4 days wont have effected it. Like Ian says - its best to let it condition! Horrible part of the hobby Im afraid. Keep yourself busy by getting................ a cat................No obly joking.......Another brew on!
