Ozzybits in my cider

2 years ago | Ozzy (Member)

Hi all. I made some cider mid september and racked it off the sediment about four weeks ago.
Clearing nicely and the bit I tasted was great. However, I've noticed just a few white spots are now appearing on the surface of the cider, which is still kept under airlock in the cellar. Could it be mould spores or something? Planning on drinking most of it over x-mas but wanted to save a bit for new year so not sure if I should bottle it all now. Any suggestions anyone?

The white spots could be flocculated yeast particals (not actually dissolved in a solution)

    Do you have a photo??

I don't think bottling will do any harm, it will also give the cider chance to settle in the bottle and allow you to get another brew on the go!!

Hi Ozzy, I had the same problem with my cider last year. Its basically mold but if you its not the end of the world so long as its not taken a major hold. Does it drop to the bottom if you move the demijohns?

I syphoned mine into clean demijohns and added 1 campden tablet per gallon which did the trick. I would probably leave in the demijohn for a couple of weeks to make sure its okay before bottling.

Mine turned out amazing. I kept it in demijohns until the spring then bottled and left in the bottles for a couple of months which made a big difference to the final taste. I did find the mold came back but I just repeated the process above a couple of times.

    Planning:Maybe a lager.
    Fermenting:
    Conditioning:Pale with Styrians
    Drinking:Cascade Pale Ale, Summer Lightning
