Adding Fruit to Cider/Beer
Inspired by the Turbo and Ginger turbo cider recipes I'm kicking off a batch of my own. There's an abundance of blackberry's growing on the hedges and I'd like to make a Apple and Blackberry cider.
Just wanted to check how you guys add the fruit. I've seen and been told various ways but I'm worried about chucking in any thing that could make the brew go bad.
I've heard about just chucking the fruit straight in the fermenting bin, boiling first and extracting the juice,or freezing it even
In the Barrel - Golden Ale (woodfords)
In the Fermenter - Elderflower wine
Drinking - Nothing home made

You could boil it but I may change the flavour of the fruit. Personally I would let the apple ferment for a few days, once the head has died off a bit, top up with the whole fruit (maybe chopped if they are quite hard) and more apple juice. The alcohol will then protect the cider and kill off any nasties.
You can freeze the fruit first to help make them more mushy but they should be okay whole.
I reckon Apple and Blackberry will be really nice.

Sounds good Starkie. Am looking at doing the same this year. Do not know if you tried Jacques Fruit Cider which is very good. I emailed Jacques (Heinekin) and they advised they put the fruit flavour in after fermentaion.
Also managed to obtain a garden shredder from freecycle. I was very lucky - put in a request and 2 days later was offered an almost new one. Will make mulching the apples and pears a breeze.
