Hey Varnish, really am sorry to hear that. I was talking to a mate who does a lot of lagers and has a bad time in the summer with temperatures. He says he wraps his FVs in radiator insulator as it keeps out the heat in summer. Might be something to think of.
Hope the new brew goes well.

Sorry to hear that Varnish, what a pain.

Seems strange that is undrinkable as I've only had to chuck one batch ever and that got an infection in it.

Well this is pretty much undrinkable.
I'm gonna toss it.

It tastes the same as that high IBU IPA I did.
Which makes me think it wasn't the high IBU that make it taste bad, but high fermentation temperature.

The same thing appears to have happened with both.
The gravity dropped to 1008 on both. They both have the same harsh, astringent quality which drys the back of the throat. And they both taste like a bag of chemicals. Not nice at all

I'll try this one again, as it'll only be the cost of the grain (which is not much really).
And I will make sure I ferment it COOL!

I know.
It tastes like that IPA. That attenuated really low as well.

It was fermented at around 18*.

I ferment in the utility room next to a radiator.
I alway turn the radiator off, but it somehow always gets turned back on.
(they know who they are, and they won't be doing it again)

I'm sure blasting one side of the FV up to around 25*+ didn't help matters any.

I'm surprised its fermented that low. That Strain is only mean't to be attenuation 67-71%. Hopefully it will mellow out a bit with time, I'm sure the esters will go after a while. What temp did you ferment at?

This has gone to 1008.
With carbonation. I'm sure without the bubbles it would be lower.

Tastes far too dry, and the esters have got a bit out of control.

I'll see how it tastes ice cold with forced carbonation.

Let me know how that goes Greg.

Have you seen the carbonation section in beer smith?
You input the temperature you're storing the beer at, and it gives you a PSI which will carbonate the beer to the correct level for the style.

I know what you mean, I tend to use secondary only if I'm planning to bottle although I've just done on the most recent brew as I planning on putting into a cornie and want to get it as clear as possible.

I think its also better to recover yeast from primary.

I'm gonna leave it in the FV for another week to let the yeasties finish what they're doing.
Then put the whole thing into the fridge for another week and let things settle out.

You don't need to split the nutrient packs. I doesn't make any difference to the cell counts, it just shows viablity so don't panic. Those Wyeasts are less then 2 months old so I reckon they should be pretty viable still. I think you will find it starts pretty quick.

When I opened the wyeast pack I found I had only broken one of the two nutrient packs.
I'll have to apply more ignorance next time.

Beer is in the FV, but I'm expecting a bit of a lag time as I don't think the yeast go fully going before I pitched it.

It tastes, like really bitter slightly sweat malt drink.
I'll add alcohol and see if it improves the flavour.

I always put in on the counter top, locate the inner pouch then smack it hard a couple of times with my fist. Always seems to work and never had one split.

I think they require more than a simple slap and tickle as Wyeast would suggest.

I'm always worried about breaking the outer packet, but never have! Last week my Irish Ale Yeast didn't swell very much at all after 3 hours but I pitched it straight from the packet and even though it took several hours to get going, it managed it fine!

It's just had an hour with the intercooler, I'm gonna let it sit for an hour before draining it to the FV.
There seems to be a lot of gunk in suspension still, so I'm going to give it some time to settle out.

I thought the smack pack was taking it's time to swell. Looks like I didn't smack it hard enough.
I wonder if anyone has broken one of those outer packets by smashing it really really hard.

HLT is on!

My last AG brew wasn't so good. The mash tun manifold came apart and I had a stuck mash.
I'm hoping this one goes better.

I remember my first AG brewday was a rushed and very stressful day.
Now I know whats going to happen, and I'm confident in my technique, I'm pretty chilled about the whole process.

It's just the same as before.

I haven't had time to do any in depth research for this recipe, so I'm leaving it simple.
As you can see; 2 grains, one hop, conservative mash schedule, sensible ABV and IBU, yeast to style.

Now I just have to double clean everything, in double strength WVP. I'm sure there's mold growing on the boiler, probably the mash tun and fermenter too!!!
It was all clean when I put it in the shed. But that was 4 months ago <img src="http://www.brewuk.co.uk/forum/bb-plugins/default/icon_surprised.gif" title=":-o" class="bb_smilies" />
