I did my first all grain brew on Saturday and appart from it being a nightmare (boiler broke half way through, ended up rushing at the end as I had to go out) the fermentation took a while to start. It didnt start till Monday morning (or Sunday night while I was asleep) and has now stopped (tuesday morning).

The mash would not hold the required temp, had to keep adding boiling water and the yeast was possibly added while the brew was a little on the warm side as i was rushing to cool it down- it was fairly cold but i reckon still around high 20 degrees C.

Any ideas as to why it could have gone wrong or any ways to save it?! Should I add more yeast? Additional sugar? Maybe the room it is in is too cold....

I did give it a stir today (probably a bad idea!) and the fermentation appears to have started a little again.

Any advice would be much appreciated!

Okay, the recipe is finalised. Downloaded beer smith and actually I've been missing something, its great. So much functionality, really impressed.

Going for a simple Weisen/weissbier

Batch Size: 23.00 L
Estimated OG: 1.050 SG
Estimated Color: 3.5 EBC
Estimated IBU: 15.3 IBU
Boil Time: 90 Minutes

Ingredients:
------------
Amount Item
2650g Wheat malt
2200g Pilsner Malt

40.00g Hallertauer Hersbrucker [3.00 %] (90 min Boil)
20.00 Saaz [2.20 %] (90 min Boil)

Wyeast 3068 Weihenstephan Weizen - 2 litre starter.

Planning single fermentation then bottling after a week or so.

Thought I would try a wheat this time for a change. Planning a 10 litre batch so I'm not stuck with loads if it doesn't turn out that nice.

Thinking

55 % Wheat Malt
45 % Munich Malt

Probably aim for around 1050 for starting gravity

Hallertauer Hersbrucker hops
Saaz hops

Look to around 20 IBU with possibly only copper hop addition, may steep some at 80c for a bit of aroma.

Then use wyeast 3056/3068/3942/3787 or 3944

Anyone have any thoughts/comments on this?

I will post proper recipe when its been finalised. I may also add some raspberries to half the batch during secondary fermentation
