<description>&#60;p&#62;Thanks for all the replies &#38;amp; apologies that I didn&#38;#39;t respond sooner, things got hectic over Christmas!  I checked the gravity again today and it was 1.10.  As my first full mash I know there were a few things done wrong &#38;amp; not to the instructions.&#60;/p&#62;
&#60;p&#62;1. My mash was definitely at too low a temperature.  It kept dropping so I kept adding boiling water to try to bring it up.  I ended up with very little water left for a sparging &#38;amp; I know that the mash, for the most part was too cool.  &#60;/p&#62;
&#60;p&#62;2. The instructions also were pretty poor in specifying how much water I actually needed- I assumed 23L, ended up using about 25L but only ended up with about 15L of Wort in the end after boiling. Could this be why it has a high gravity- too concentrated?&#60;/p&#62;
&#60;p&#62;3. Probably didn&#38;#39;t boil for the full hour ( i was in a mad rush!)&#60;/p&#62;
&#60;p&#62;4. Probably didn&#38;#39;t cool the wort down enough before pitching the yeast.  I did use a chiller but, again, I was rushing too much.&#60;/p&#62;
&#60;p&#62;From most of these I have learnt something though which is good!&#60;/p&#62;
&#60;p&#62;1. Fit thermometers to all of my equipment and dont rely on a crappy cheap dial meat probe thermometer.&#60;br /&#62;
2. Research better about how much water to use.&#60;br /&#62;
3&#38;amp;4. Don&#38;#39;t start a mash at 2.30pm when you need to go out at 7pm. Also, dont rush even if I do need to go out at 7pm!&#60;/p&#62;
&#60;p&#62;Any more ideas on this disaster would be appreciated!&#60;/p&#62;
&#60;p&#62;Thanks guys for being so willing to help and informative, fingers crossed my next brew goes better. Perhaps I will try a very simple beer next.  Suggestions welcome too!

<description>&#60;p&#62;If you made it to the letter then that reading must have been wrong as the gravity should have been around 1.048.&#60;/p&#62;
&#60;p&#62;Have you managed to take another gravity reading (making sure all is sanitised properly)?  You may find it will be lower now, which means its still fermenting away, just with little action.&#60;/p&#62;
&#60;p&#62;If I were you I would leave it alone, sealed up for a week or so, then check the gravity, me thinks it will be fine

<description>&#60;p&#62;I did my first all grain brew on Saturday and appart from it being a nightmare (boiler broke half way through, ended up rushing at the end as I had to go out) the fermentation took a while to start. It didnt start till Monday morning (or Sunday night while I was asleep) and has now stopped (tuesday morning).&#60;/p&#62;
&#60;p&#62;The mash would not hold the required temp, had to keep adding boiling water and the yeast was possibly added while the brew was a little on the warm side as i was rushing to cool it down- it was fairly cold but i reckon still around high 20 degrees C.&#60;/p&#62;
&#60;p&#62;Any ideas as to why it could have gone wrong or any ways to save it?! Should I add more yeast? Additional sugar? Maybe the room it is in is too cold....&#60;/p&#62;
&#60;p&#62;I did give it a stir today (probably a bad idea!) and the fermentation appears to have started a little again.&#60;/p&#62;
&#60;p&#62;Any advice would be much appreciated!&#60;/p&#62;

<description>&#60;p&#62;By complete coincidence we went into to a Waitrose on Saturday (can&#38;#39;t usually afford to shop in there!!), and I spotted their Bavarian wheat beer so bought a bottle to try. I had it last night, very nice indeed, far nicer than Erdinger, and preety similar in taste to the one I brewed a few weeks back, colour similar too. Fruit, spice, and malty breadiness.&#60;/p&#62;
&#60;p&#62;Greg, my wheat tasted slightly bitter straight form the fermentation bin, but did indeed mellow out after a couple of weeks in the bottle, so I reckon you&#38;#39;ll be fine.

<description>&#60;p&#62;Bought two wheat beers this afternoon for a taste comparison. Erdinger and waitrose Bavarian Weissbier.&#60;/p&#62;
&#60;p&#62;The Erdinger is really smooth and almost tastless but a nice brew.&#60;/p&#62;
&#60;p&#62;The waitrose Bavarian Weissbier taste almost identical to mine, well will do after a few weeks in the bottle. Really pleased with how its turned out and would highly recommend trying this. That 3068 wyeast has really done the job.

It was other posts on here that got me thinking of a wheat beer and just sounded different and interesting. I&#38;#39;m going to grab a few bottles from waitrose for comparison.&#60;/p&#62;

On a (slightly) related issue... Am I just imagining it - or did you have a pale crystal malt which has now gone? Pale wheat malt, pale crystal malt, brambling cross &#38;amp; cascade hops ... and now it&#38;#39;s all gone.  Of course, I could have been dreaming this ... had quite a bit of work on lately. <description>&#60;p&#62;Okay bottled this one last night after a week and half in a closed fermenter.&#60;/p&#62;
&#60;p&#62;Tastes really nice, more bitter then I expected but I think that will mellow out in the bottles. Amazing tastes from the wyeast, fruity and spicy and very deeply flavoured for such a simple recipe.&#60;/p&#62;
&#60;p&#62;Can&#38;#39;t wait until its fizzy and cold as the taster was flat and warm but still delicious.&#60;/p&#62;
&#60;p&#62;Managed to get 38 bottles so not too bad at all. Bottling wasn&#38;#39;t as bad as I remembered either. Used 120g of brewing sugar which should give me a nice carbonation.

&#60;p&#62;Re made the Rakau Rhino 2 weeks ago and barreled it on Sunday. Tastes amazing already. Really nice flavour from the hops but mild so the malt flavour is really coming through. I&#38;#39;m running a bit low on supplies so hopefully it will clear quickly.

<description>&#60;p&#62;I&#38;#39;ve been using a brewing bag in my mash tun - it&#38;#39;s big enough to not even notice its there really, and any stuck mash just needs a little &#38;#39;jiggle&#38;#39; :o)&#60;br /&#62;
Good news with the grain .. I&#38;#39;ll have to put it to use :O)&#60;/p&#62;
&#60;p&#62;Yes .. remember the christmas beer I posted .. well I did two 5 gal batches, one with the spice and one without.  I did the &#38;#39;without&#38;#39; first and that should be ready to bottle sometime this week ... been in the secondary for a week and a half and its the first time I&#38;#39;ve done a dry hop, really interested to see how it comes out.  The &#38;#39;with&#38;#39; will be racked to secondary today sometime also interested to see how the spices are showing.&#60;/p&#62;

<description>&#60;p&#62;Hi Tony, I had been using beer engine which is fine for hop/grain calculations but very limited really. Beersmith is so much better. I did have a look at it a while ago but looked really complicated but its actually not too bad.&#60;/p&#62;
&#60;p&#62;Yes never done a AG wheat beer before so thought I would give it a go. Hoping I don&#38;#39;t get a stuck mash though as I&#38;#39;ve heard this can happen when using large quantities of wheat. I guess I will have to bottle this one too but never mind, its always nice to have a few bottles of home brew, especially in the winter when I don&#38;#39;t want to go out to the cold garage every time I want a beer.&#60;/p&#62;
&#60;p&#62;Your wheat should be fine for quite a while. Any crushed grain should be kept in a airtight container then it will last for ages, easily a year!&#60;/p&#62;

&#60;p&#62;I was ment to be In Holland (watching the Rafting pre-worlds in Zoetermeer) a week ago, but things fell through!&#60;/p&#62;
&#60;p&#62;Any back to topic, I have used Danstar Munich and Safbrew WB-06 (both dried Wheat beer yeasts) when I was using kits I always exchanged the kit yeast for a new one, and had good results from them!&#60;/p&#62;
&#60;p&#62;The only thing that put me off doing a AG Wheat as been the dreaded &#38;#39;Stuck Mash&#38;#39; and now Im just starting looking at doing my first wheat as I feel I&#38;#39;ve got the mash and!&#60;/p&#62;
&#60;p&#62;If it was my first AG brew I would brew a simple One or Two grain beer with a couple of hop additions just to get used to your equipment and the way you do AG Beers! One tip is START EARLY! and its not as hard as it seems!&#60;/p&#62;

&#60;p&#62;There isn&#38;#39;t much difference between brewing a wheat beer and an ale. Apart from using a liquid yeast the rest is the same. You don&#38;#39;t have to use a liquid yeast as there are some good dried wheat yeasts too. At least most wheat beers are brewed at 18c so you don&#38;#39;t have to cold ferment like a lager which makes life easier.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve decided on the Wyeast 3068. I&#38;#39;m planning on making it up to two litre starter over the next few days. I&#38;#39;ll stick up a seperate post on using a Wyeast so you can see what&#38;#39;s involved. Its not that difficult but you need to plan things a few days in advance. &#60;/p&#62;
&#60;p&#62;Recipe is finalised so I will post it in a bit. Its up to you what to brew first, ale is probably a little simpler but if you really prefer wheat beer then go for it!&#60;/p&#62;
&#60;p&#62;How&#38;#39;s the AG setup coming on? Post us and update, perhaps in a new thread.

Im thinking of doing a wheat beer for my first AG brew but am wondering if this is a step too far for my first attempt. The yeast starter seems a little daunting!&#60;br /&#62;
I was in Holland last weekend and tasted a lovely weissbier or white beer as they called it.&#60;br /&#62;
Should I stick to a simple ale or jump in at the deep end??!!

<description>&#60;p&#62;I didn&#38;#39;t use any late hop addition in either of my wheat beers, as I read that generally hop aroma is not in the style, but could be nice I guess.&#60;br /&#62;
I must admit that I like the German &#38;amp; Belgian style wheat beers, the american ones are a bit bland for my taste, hence the yeast being critical to give the required phenolics and clove flavours.&#60;/p&#62;
&#60;p&#62;Hope yours carbonates better than mine! Still waiting to try the bottles I added extra sugar to.

<description>&#60;p&#62;Hi Dan, go for it. Wheat beers are really popular in America at the moment and they use standard ale yeasts and american style hops. &#60;/p&#62;
&#60;p&#62;That&#38;#39;s the best thing about home brewing for me, playing around with the different recipes and learning what tastes good. Inevitably you&#38;#39;ll get a beer that&#38;#39;s not as good as others but you learn from it and start to hone recipes of your own which taste amazing. Maybe even come up with a new style of beer.&#60;/p&#62;
&#60;p&#62;I just wish I had more time to brew every weekend as I have more idea&#38;#39;s than I can brew at the moment so have to compromise and make some beer I know I&#38;#39;ll love to keep supplies up.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ll keep you posted regarding this weekends brew. Might even send you a bottle if it turns out well!

<description>&#60;p&#62;I&#38;#39;m definitely doing a Wheat beer as the first brew after my opperation, Wheat beers have got to be my favorite beer style, in fact im drinking a Franziskaner Weissbier as I type! &#60;/p&#62;
&#60;p&#62;I want to do a wheat beer with a difference though, maybe a lemon twist (Like a Hebden Wheat by the Little Valley Brewery) or put some american hops in to give a slight punch? I know adding extra hops/lemon doesn&#38;#39;t fit into the correct beer styles but it will still be a wheat but even more tasty!!

&#60;p&#62;I did think about going for a wit beer but thought I would try a straight wheat beer for a change. I may increase the brew length though as I will be gutted if it turns out well and I&#38;#39;ve only got 10 litres.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ll stick it on the software later then post up final recipe.&#60;/p&#62;
&#60;p&#62;Just need to decide on a yeast now...I think I&#38;#39;m heading for a wyeast 3068 which I&#38;#39;m going to get started tomorrow ready for pitching on Sunday.

<description>&#60;p&#62;Yeah, this will be my first AG wheat beer and a stuck mash is definately something that I&#38;#39;m not keen on.&#60;/p&#62;
&#60;p&#62;Saying that I don&#38;#39;t have any rice hulls so I guess I&#38;#39;ll have to see how it goes. I&#38;#39;m wondering whether it would be better to layer the mash the the barley was at the bottom and the wheat at the top instead of mixing together.&#60;/p&#62;
&#60;p&#62;The amount of wheat fits the profile for a wheat beer so I can&#38;#39;t see too many problems with starch conversion. I think it will need to be mashed slightly higher temp, around 67c though.&#60;/p&#62;
&#60;p&#62;Well I&#38;#39;ll have to see how it turns out I guess, might hunt around a bit for some more info on the mashing of that much wheat though.

I&#38;#39;ve had a Hogarden or two, but never knew they were wheat beers until I got into this homebrewing thing.&#60;br /&#62;
So I can&#38;#39;t comment on the recipe.&#60;/p&#62;
&#60;p&#62;The thing I did have a look at though, as I had no idea, is whether or not wheat malt has enough enzyme content to self convert starch into sugar. All sources I found said it&#38;#39;ll be fine. Unless its roasted etc.&#60;br /&#62;
Munich malt apparently will convert itself quite happily too.&#60;/p&#62;
&#60;p&#62;I also saw this thing about rice hulls which I didn&#38;#39;t know and might interest you:&#60;br /&#62;
