<description>&#60;p&#62;Tasting time yesterday, brew fermented for 12 days and conditioned for 8 days and i couldn&#38;#39;t take the wait any more. Had a bottle last night and the taste blew me away, nice and fresh with fruity undertones leaving a nice clean taste in the mouth. Needless to say that a couple more &#38;quot;test bottles&#38;quot; followed.&#60;br /&#62;

Brewing at the end of the month (holiday to go on or would be brewing this weekend) and was considering doing a single hop ale like the brilliant Amarillo IPA. Recipe is going to be:&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Cascading Lights Pale Ale.&#60;/strong&#62;[u]&#60;br /&#62;
DME Light  -  2kg&#60;br /&#62;
DME Wheat  -  1kg&#60;br /&#62;
Cascade hops (7.6%) 30gm 90 min&#60;br /&#62;
Cascade hops (7.6%) 20gm 15 min&#60;br /&#62;
Cascade hops (7.6%) 10gm Flame out, steeped for 30 min&#60;/p&#62;
&#60;p&#62;Beer engine states this should give an ABV of 4.4% with an EBU of 51.&#60;br /&#62;
Wondering if this is too much hops, what do you think??&#60;br /&#62;
Looking forward as always to any pointers, questions or queries.&#60;br /&#62;

<description>&#60;p&#62;I would second Hamish, probably only 5 - 7.5% crystal maximum but I would probably give crystal a miss and go 100% Maris Otter. I would personally get the orange/citrus flavour from hops as orange peel gives quite a subtle taste normally for very low hopped wheat beers and you&#38;#39;ll probably find those citrus hops dominate the flavour anyhow.&#60;/p&#62;
&#60;p&#62;How about trying Simcoe hops (gives a nice passion fruit flavour) or maybe Summit?

<description>&#60;p&#62;Hey, I was thinking about making an orangey Pale ale and I was wondering if anyone can help me with my idea. I was thing&#60;br /&#62;
1) fill the brewing bucket up nearly full with water and put either a) orange peel or b) orange slices and let them infuse over night.&#60;br /&#62;
2) boil the malt (don&#38;#39;t know which ones to use yet) adding the hops for these times Pacifica for 60 minutes, Progress for 30 minutes and Ahtanum for 30-15 minutes (don&#38;#39;t know the amounts yet)&#60;br /&#62;
3) Add this to the water, let it cool then add the yeast and leave until ready.&#60;br /&#62;
What do you think? Anyone got any ideas?

&#60;p&#62;Tried another bottle of the lager tonight with me fish and chips. Two sips and the taste was there strong as ever. Chucked the rest. The other 29 bottles are soon to follow.&#60;/p&#62;

The WVP solution had been in the bucket for a fortnight before bottling, so I guess a few rinses with the garden hose wasn&#38;#39;t enough. There really can&#38;#39;t have been very much steriliser in the beer but enough to give it that taste.&#60;/p&#62;

I use it for head retention and either it&#38;#39;s working or the Maris Otter from Greg is doing it all on its own. I think I&#38;#39;ll leave it out for the next one to see.

<description>&#60;p&#62;The Maris Otter that Greg gets from Warminster needs nothing adding to improve head retention. As long as you give enough time for &#38;#39;maturing&#38;#39; the head is retained to the bottom of the glass. You even get little rings down the glass where some foam is retained on the glass. I find 3 to four weeks a good length of time to mature, but always have &#38;#39;testers&#38;#39; after a week.&#60;/p&#62;

The aim of this was to do something similar to Badger Golden Champion, flavoured with elderflower. A side by side comparison showed they were identical in colour, last time this recipe had better head retention and was more hopy and less sweet than Golden Champion. The elderflower flavour is subtle but compliments the hops This one is getting bottled today and tastes great from the sample I took yesterday to measure the FG. <description>&#60;p&#62;On the subject of funny aftertaste, and foretaste for that matter:&#60;/p&#62;
&#60;p&#62;I may have experienced my first bad batch. It&#38;#39;s a lager that I&#38;#39;ve brewed for visitors, so I&#38;#39;m not too distressed but curious.&#60;br /&#62;
First thing I noticed, when bottling, was a few large yeasty clumps lying on top of the fermented brew, something I don&#38;#39;t believe I&#38;#39;ve seen before. I measured the FG and it had fermented down to a final ABV of about 5.5%, so that was fine.&#60;/p&#62;
&#60;p&#62;The brew, however, had a real lingering taste of the yeast cake from which it was lifted. I&#38;#39;d changed the recipe to use less of the usual Hallertauer and Tettnang hops, lowering the IBU from 35 to 25.&#60;/p&#62;
&#60;p&#62;Anyway, it&#38;#39;s been bottled 3 weeks ago, there&#38;#39;s still this noticable sedimenty (there&#38;#39;s a word for you) taste. Granted it&#38;#39;s not 100% clear yet, so this taste may mellow given time, though my previous lagers have been very drinkable after 3 weeks. The only difference between this and all the previous lagers, apart from lowering the hops and IBU, was that this batch was 19L as opposed to the usual 8L, so maybe it takes longer to condition and I&#38;#39;m just being impatient.&#60;/p&#62;
&#60;p&#62;I have a pretty rigouous sterilization process, using WVP and plenty of rinsing, and this has never failed me before.&#60;/p&#62;
&#60;p&#62;The yeast was the usual cheapo Youngs lager yeast, but I was wondering if anyone else has experienced such clumps and a sedimenty-taste? If so, did it work out fine, or should I start clearing leaves from the bigger of my outside drains?&#60;/p&#62;

 I think I know the taste you mean. The first few brews I did were Woodfordes kits. They were&#60;br /&#62;
great but developed an aftertaste that I would describe as &#38;#39;plasticky&#38;#39; (if that is a word).&#60;/p&#62;
&#60;p&#62;I have not had the problem since moving to all grain brewing but never treated water for the kits so no&#60;br /&#62;
proper control to use to judge more scientifically. Your approach in changing only one variable is much more scientific and valid!&#60;/p&#62;
&#60;p&#62;I did a version of exmoor gold. I&#38;#39;ll stick the recipe up as I think it was one of the nicest I have tried.

I think you need to look at the whole set-up and replace whatever might be suspect. Could there be something nasty stuck in a tube or a tap somewhere? You could always try a small batch using different kit, such as kitchen utensils and size the batch to fit the utensils. That would eliminate the whole set-up in one go. Good luck.

RE Diacetly - Im pretty sure its not this as there is no initial taste of butterscotch and it never turns to the point of being totally undrinkable.&#60;/p&#62;

In Suffolk we don&#38;#39;t seem to have too much water quality problems and I never do anything other than boil the chalk out. In certain parts it often tastes like TCP, but not here. I&#38;#39;ve had a couple of aftertaste problems associated with ingredients, though. I used Muntons Liquid Malt Extract and made 2 test batches. They were both foul and eventually went very bad. I&#38;#39;m sure it had to be the extract, although no-one believes me. I&#38;#39;m not sure how you brew or what yeast you use, but WYeast advise a thorough Diacetyl rest for several of their yeasts. You can Google &#38;#39;Diacetyl Rest&#38;#39; and there&#38;#39;s loads of info, but this is an extract from one of them:&#60;/p&#62;
&#60;p&#62;&#60;em&#62;It (Diacetyl) is detectable in beer at concentrations as low as fifty parts per billion. At low levels, it gives beer a slick mouthfeel; at higher levels, the flavor becomes buttery — diacetyl is in fact what they make artificial butter out of — then like butterscotch, and eventually downright rancid.&#60;/em&#62;&#60;/p&#62;
&#60;p&#62;There are loads of other things which could cause it, one of them being sparging at too hot a temperature (over 90) and extracting tanins. Have a good look in Dave Line&#38;#39;s &#38;#39;The Big Book of Brewing.&#38;#39; It covers just about everything.

Following Gregs advice I got the analysis and then used Graham Wheelers calculator to work out the additions depending on style. I had problems when I started with kits having a funy taste, I have not had the problem since treating and going all grain.&#60;/p&#62;

<description>&#60;p&#62;Well this one is in the Barrel. Had to go for a standard barrel as the beer couldn&#38;#39;t wait any longer the hadn&#38;#39;t had a chance to get the Co2 for the Cornie yet.&#60;/p&#62;
&#60;p&#62;Its tasting really promising and its got a really deep orange colour to it which is unexpected as it was 100% pale grains. I guess it must have come from the hops in the steep. Its almost the colour of St Austell Tribute and it&#38;#39;s clear so I can see it changing. They have styrians too so I&#38;#39;m guessing its these which are giving the colour.

<description>&#60;p&#62;I racked this into secondary the other day and they are not kidding about this yeast being a true top fermenter, hardly any sediment and massive head. I think I should have left it for a couple of days longer. Anyway, got what was left of the sludge in a lemonade bottle in the fridge but its definitely still fermenting as it bubbling. Been gently opening the cap to release the pressure so I don&#38;#39;t get a yeast bomb going off.&#60;/p&#62;
&#60;p&#62;Planning on using it in a couple of weeks so I will make up a 1 litre starter (100g spraymalt/1 litre boiled water) before pitching to make sure its okay. Leave for a couple of days and see if it ferments.&#60;/p&#62;
&#60;p&#62;The beer is tasting pretty good, really fruity but very cloudy and fermenting still.

<description>&#60;p&#62;Here&#38;#39;s the sneaky brew I put together yesterday. I was testing the recipe out as it was one given to me by a very experienced brewer. The Brewers Gold were an unexpected delight. Very similar aroma to Cascade which I wasn&#38;#39;t expecting but very nice. I did a pretty laid back approach to this one as I was doing lots of stuff in the Garden at the same time. I didn&#38;#39;t even check the gravity until it was in the fermenter but turned out okay. I decided to switch back to Protofloc to see if I could get a clearer wort out of the boiler but came out the same as Irish Moss to be honest. I did have a really clear wort with lots of visible break material until I added the steep hops which seemed to cloud it up again. Ended up with 20 litres at 1.050 as I lost quite a bit again to the extra hops. I&#38;#39;m planning to ferment for 4 days, then rack to a secondary for a week. I don&#38;#39;t normally do this but I want to recover the yeast for a future brew and also I want the beer to clear as much as possible before I add to the Cornie keg. I really like that Wyeast 1318 as I used it in a beer a while ago with great results and I&#38;#39;m think I&#38;#39;m going to use it for all pale ales from now on. This beer is lot lower IBU than my normal Pales but I&#38;#39;ll see how it turns out. Looking good so far.&#60;/p&#62;

<description>&#60;p&#62;So I thought I would do 2 brews in one day and see how that went. Its the way forward and everyones a lot happier all round. Longer brew day but needed less often. I didn&#38;#39;t get the water on until gone 8 and was all done by 6.30, although still have some clearing up to do as dinner got in the way after the second one was in the fermenter. I&#38;#39;ve also been given a small burco by Nath which I will be able to use on the next day after a thorough descaling. Not sure what size it is but I think its about 15 litre which means with my large pan I should be able to heat enough water for the second sparge while the first is still boiling which will cut about 1.5 hrs off the total brew day.&#60;/p&#62;
&#60;p&#62;Anyway here&#38;#39;s the recipe. No name for this one as this is basically my standard house pale ale which I just adjust each time to try different hops and yeast in the safe knowledge that I&#38;#39;m going to like it. Just Pale malt, around 5% ABV with 38 IBU. Variety is the spice of life (or should that be hop of life) and not sure I can make the same beer twice. There are too many hops/yeast combinations.&#60;/p&#62;

&#60;p&#62;Choice of hops was simply to use up some stuff I had in the fridge but so far so good. My new brewing plan is to always make a batch based on this criteria and then make something a little more experimental. Double brew days from now on and it will ensure I always have a easy drinking pale ale in supply. Next time I want to try and emulate St Austells Tribute which says it uses fuggles, Willamette and Styrian Goldings in the hops (qty and times unknown). I guessing fuggles in the copper with Willamette and Styrians as the late additions. It has nice citrus aroma but not like cascade type APA&#38;#39;s which I&#38;#39;m guessing comes from heavy Styrians in the steep. I&#38;#39;m also keen to experiment further with heavy weighting towards late hop additions with very little copper hops but we&#38;#39;ll see how the Rocker comes out first. I also have some draft Black Sheep the other night which was lovely.&#60;/p&#62;

<description>&#60;p&#62;Dan you are a great one for gadget suggestions. The second pint seems to have less floating hops so hopefully it will be okay. To be honest I'm not too bothered anyhow. Dry hopping certainly gives a great hop aroma.&#60;/p&#62;

<description>&#60;p&#62;My lastest pale ale has cleared, only been in the barrel 2 weeks. Lovely hoppy flavour which I'm hoping won't fade. First time I have dried hopped straight into into the barrel and do seem to have a few bit of hops floating in the beer, hoping these will sink over time.&#60;/p&#62;
&#60;p&#62;Definitely the hoppiest beer I have made so far. The Willamette and Cascade give a really nice, distinct flavour. I also used a Wyeast English Ale which has given a lovely crisp flavour. &#60;/p&#62;
&#60;p&#62;Going to try some Rakau this weekend although not sure what to go with it. Perhaps some East Kent Goldings or use up the cascade and willamette from a couple of weeks ago.&#60;/p&#62;
&#60;p&#62;There are so many combinations. Oh the joy of home brewing!
