<description>&#60;p&#62;Has anyone else been to Prague&#38;#39;s Starapromen brewery - went last year in sub sub zero temps and forgot all about the pics. Interesting tour - There is a link to my snaps of the old brewery that&#38;#39;s no longer used but shown to visitors. They brew continuously for 6 days than give all their kit a thorough clean on day 7 ready for the next week.&#60;/p&#62;
&#60;p&#62;When I went there was a party of 14 year old school kids just finishing their tour - they were in the sample room supping Starapromens finest - couldn&#38;#39;t happen here could it - think of the headlines in the Daily Mail.&#60;/p&#62;
&#60;p&#62;In the sampling room there was no limit on the number of beers you could sample and next door in the adjoined bar the food was excellent&#60;br /&#62;

Estimated IBU: 26 IBU&#60;br /&#62;
Boil Time: 90 Minutes&#60;br /&#62;
Est Abv: 4.6%&#60;/p&#62;
&#60;p&#62;Ingredients:&#60;br /&#62;

3.46 kg German Pilsner Malt&#60;br /&#62;
354 gm flaked barley&#60;br /&#62;
118gm carapils&#60;/p&#62;
&#60;p&#62;22 gm Northern Brewer (90 min)&#60;br /&#62;
13 gm Hallertauer Hersbrucker (10 min)&#60;br /&#62;

<description>&#60;p&#62;Hi Nath, I&#38;#39;ve only done a lager once as I don&#38;#39;t have a brew fridge so its difficult for me to get the temp right. I did it last summer by placing the fermenter in a container filled with water (which came about 1/2 way up the fermenter). I then filled some 1 litre PET bottles and froze them. I then placed around 4 in the water and replaced with frozen ones 2 / 3 times per day which got the temp down to 12c. &#60;/p&#62;
&#60;p&#62;I primary fermented at that temp for about a week (can&#38;#39;t really remember) but when the fermentation was about 3/4 way through. I then took inside and left for 24 hrs for the diacytil rest before racking into a clean fermenter and sticking in the fridge for 2 weeks. I then bottled with the normal amount of sugar.&#60;/p&#62;
&#60;p&#62;It turned out nice, not as crisp as I was hoping I probably would have improved with a bit more time (shame I drank it all so quick!). I would have dropped the lagering temp more slowly if I had a temperature controlled brew fridge so you&#38;#39;ll method looks good to me although you may want to the rest before fermentation is complete. &#60;/p&#62;
&#60;p&#62;Don&#38;#39;t worry about having enough yeast in suspension for carbonation as this will not be an issue but you may find it takes a bit longer to carbonate. I would use about 120g/23 litres.&#60;/p&#62;
&#60;p&#62;You may want to make a starter up for the Wyeast as you&#38;#39;ll need a fair amount of yeast when fermenting at lower temps. Probably worth doing a bit of research on that one.&#60;/p&#62;
&#60;p&#62;Would be good to know how it turns out. I&#38;#39;ve been thinking about doing another one myself.

&#60;p&#62;I have been reading up on lagering and there seems to be multiple ways of doing it.  I wanted to know if anyone has had the pleasure of lagering!&#60;/p&#62;
&#60;p&#62;Heres what I have planned after reading loads of bits n bobs:-&#60;/p&#62;
&#60;p&#62;AG as per norm.&#60;/p&#62;
&#60;p&#62;Cool wort to 14-15c and pitch yeast (wyeast activator 2278 Czeh pils).&#60;/p&#62;
&#60;p&#62;Put in brewfridge @ 11-12c and ferment as usual for 7-10 days until fg is reached.&#60;/p&#62;
&#60;p&#62;Raise to 18-19c for 2 days (for a diacytil rest - not sure if this is needed as I have constant Low temp and pitched at a low temp).&#60;/p&#62;
&#60;p&#62;Rack to secondary and seal with airlock @12c and drop 1-2c per day until 4c (lowest fridge will go) and lager for 2 weeks.&#60;/p&#62;
&#60;p&#62;Bottle as per norm.&#60;/p&#62;
&#60;p&#62;I think the biggest problems for me are (apart from the fact I have never erally lagered anything):-&#60;/p&#62;
&#60;p&#62;Wondering is there will be enough yeast in suspension after the long ferment and lagering.  &#60;/p&#62;
&#60;p&#62;When to rack to secondary - at fermentation end or 3/4&#38;#39;s into it so there is more yeast left for the secondary, and if so should I bring the temp up in the secondary for the diacytil rest instead.&#60;/p&#62;
&#60;p&#62;Also how much sugar to prime with.&#60;/p&#62;
&#60;p&#62;What do people think on this process?&#60;/p&#62;

Odd that 500g gave such a strong flavour, I&#38;#39;m quite a fan of the amber malt but I have always used it alongside crystal.  I saw your recipe for the Rakau Rhino and was just wondering about trying it myself... but as I&#38;#39;ve just mentioned in another post, I&#38;#39;m limited to what I&#38;#39;m able to make by the missus! (I wonder just how many of us are in the same boat?)  Sounds like a real good one though.  I&#38;#39;ll be making two brews this week - one being the Christmas Ale... maybe that one should be the other?&#60;br /&#62;

<description>&#60;p&#62;I&#38;#39;ve heard the tettnang is a really good hop although I haven&#38;#39;t tried as yet. I made a APA with Rakau and NZ Cascade last week and they both smell amazing. First taste out of the fermenter is a little disappointing but I think it will improve as it was quite bitter. I also used a Wyeast which I didn&#38;#39;t prep up with a starter and there was quite long lag time so I&#38;#39;m hoping nothing nasty got it there. Time will tell. &#60;/p&#62;
&#60;p&#62;I also used some Amber malt in a brew quite a while ago, as we discussed. That didn&#38;#39;t turn out well. The Amber is actually a really strong flavour, much stronger than I had anticipated. I only used 500g but its not what I was after. It&#38;#39;s drinkable but definitely not one of my better brew&#38;#39;s. You&#38;#39;ve got to try this things though. I think it would be better in smaller qty and matched up with some crystal malt and some fuggle/EKG. I used single hop (first Gold) and again I think this hop was too neutral for the amber malt.&#60;/p&#62;

Excellent thanks... I used Tettnang in the first and Hallertauer in the second.  There isn&#38;#39;t the big difference that I originally expected, but the Hallertauer has a much crisper and fruitier taste.  Both have now been in the bottle 4 weeks and are just about ready to drink but I&#38;#39;m delaying it as much as is physically possible :o)  It was a good experiment using the more traditional lager hops in an IPA, but I think in future, I&#38;#39;ll stick to something with a little more b*lls :o)

<description>&#60;p&#62;I take it this is the one that I tried?  Yeah i really liked it.  I rekon its a summer crowd pleaser.  More flavoursome that any of the lagers I have tasted but at the same time deffinatly had that &#38;quot;summer drink quenchability&#38;quot; that a lager has.&#60;/p&#62;
&#60;p&#62;A quick question - When you boil the hops do you add the sazz and hallertuer at the same time or are they boiled 1 after the other?&#60;/p&#62;

<description>&#60;p&#62;As promised here is my first attempt at lager. Brewed it about 2 months ago now and struggled to keep the temp low as I don&#38;#39;t have a brew fridge but did okay by freezing PET bottles filled with water then placing them around the fermenter (which was sitting in a bigger container) filled with water. Changed them 2 or 3 times a day and managed to get to about 12c most of the time. Not too bad bearing in mind it was high of summer, although not exactly a scorcher. Turned out pretty good. Very flavoursome and not as dry as I would like but really nice. Improved and mellowed with age, started out quite bitter but this subsided just as the last bottles were consumed. &#60;/p&#62;
