Hey all.

If I wanted to take an IPA beer kit (For example, Coopers) and steep some malts to make it into a pseudo Black IPA, would you suggest Dark Crystal or Roasted Dark malts to add the colour?

I am using Beer Alchemy for the mac not sure if that is why we are getting a few differences?? Have made a few of the tweaks as suggested see below. But still getting a IBU of 42. Should i have preferred hop formula set to: Tinseth, Daniels, Rager or Garetz?

Yup, I find that with my beer software I get differences in IBU's and EBC. I use Beersmith and Beerengine and both come out different!

I really couldn't tell you how the various scales are set, except to say that Beer Engine only gives the option to set to Tinseth or set to Linear. It's set to Tinseth. That's why I like it; simple and reliable. There is no option for setting a colour scale, and as everyone uses EBC (except across the pond where they insist on being different and over-complicated) that's the only scale Beer Engine uses. Regardless of which program you use, the figures should be the same, unless you've got some alternative brewing system selected. Beersmith has loads of different ways of doing it. After all, for a givem amount of ingredients you'll get the same colour, EBU and ABV.

I'm fairly sure Greg uses Beer Alchemy on a Mac, so if you mail him I'm sure he'll give you a run down of how he sets the program.

Hi Saracen, Thanks for the reply.

I am using Beer Alchemy for the mac not sure if that is why we are getting a few differences?? Have made a few of the tweaks as suggested see below. But still getting a IBU of 42. Should i have preferred hop formula set to: Tinseth, Daniels, Rager or Garetz? At the moment i have it set to Tinseth. If you look below i think you must be using Garetz? Not really got my head round all this yet... Also what should i be using for colour? Are you using Daniels?

Looks like a good plan. Should be a good beer.
There are a couple of things you might want to think about and your figures don't add up.

Dried Malt Extract Pale. 10 EBC. 1500 grams. 71% of Extract
Dried Malt Ext. Xtra Pale. 5.5 EBC. 500 grams. 23.7% of Extract
Crystal Malt, Pale. 60 EBC. 200 grams. 5.3% of Extract

Nelson Sauvin Whole. AA 12.7%. 75 mins. 12 grams 69.3% of EBU
Cascade Whole. AA 6.8%. 10 mins. 10 grams 10.7% of EBU
Nelson Sauvin Whole. AA 12.7%. 10 mins. 10 grams 20% of EBU
Cascade Whole AA 6.8%. 0 mins. 15 grams 0% of EBU
Nelson Sauvin Whole AA 12.7%. 0 mins. 15 grams 0% of EBU
Cascade Whole AA 6.8 % 0 mins. 15 grams 0% of EBU

Final Volume: 12 Litres
Original Gravity: 1.062
Final Gravity: 1.014
Alcohol Content: 6.2% ABV
Bitterness: 36 EBU
Colour: 22 EBC

Reduce the amount of Crystal to a maximum of 200 gms, or even 150. It gives a heavy, sweet character if used as more than about 5% - 7% of the total extract. 10% is reckoned to be absolute maximum.

Steeping the Crystal Malt. Put 10 lt of water into a pan, raise the temperature to 70°c and steep the grains for 30 minutes. Monitor the temperature and raise the temperature if it falls below 66°c.

For the initial boil only use the 1.5 kg of Pale Malt Extract or you will reduce the efficiency of the Alpha Acid extraction. Add the rest at the end of the boil.

I've extended the boil time to 75 minutes. 60 minutes isn't really enough to isomerise the Alpha Acid properly. 75 is just about right.

Where are you getting 45 EBU. Even with the extended boil, I've only got 36. If you want more bitterness, increase the initial amount of NS to 20 gms to give 53 EBU. With 6.2% ABV this should be OK, and it also brings the initial bitterness figure up to 79% of the EBU which will give less harsh bitterness.

Hey

Finally going to get an order in for stuff need to make this up, have decided to scale it back to a 12L batch as I would like to brew more regularly and try out load of different recipes so I think small scale batches are the way to go for me.

Anyway recipe below if someone wise could cast an eye over it make sure there is nothing silly in there, been a few changes since the original

Batch size: 12L
OG: 1.060
FG: 1.014
IBU: 45
ABV: 6.0%

Grain Pre Boil tea
10L of water in pan
250g Light crystal malt (crushed) - steep till water reaches 77C

Fermentable - boil
1.5kg Light malt extract
500g Spraymalt extra light (at end of boil)

Hops
12g Nelson sauvin (60mins)
10g Cascade (10mins)
10g Nelson sauvin (10mins)
1 Protafloc (10 mins)
15g Cascade (end of boil)
15g Nelson sauvin (end of boil)

Rapid cool to 15-22C, into FV, top up with 2L of water

Yeast
Wyeast 1056 - American Ale

15g Cascade dry hop (day 4-7)

Thats the plan.

Hi Themose

I enjoyed that. You make a very good tutorial video.
Only improvement I'd suggest is to use a balloon whisk when it comes to adding the DME. You'll find it a lot quicker. Leave it all untouched in the FV for 14 days, then bottle/barrel. 85 gms sugar for barreling, 120 gms for bottling.
Well done. Only wish I could brew something and end up as neat and tidy as you.

All we have to do now is pray to the Lord it comes up somewhere near!!

Now, your question about Coopers Amber Malt Extract. Basically, it's much too dark for this beer. It will be 63 EBC as opposed to 22 EBC. If you use Coopers Malt Extract Light, you'll need 3.65 KG as a direct replacement for the Dried Malt Extract, remembering the proportions is you are doing a small volume boil, and you'll get the right colour.

I managed to find the info needed for this. The bittering is quite high in line with the higher ABV and should make a good beer.
When you get the hops, make sure the Alpha Acid figures on the packs are the same as here, ie: Challenger 8.2% AA and First Gold 7.9% AA, The figures seem to differ wildly from supplier to supplier. Thse are for 2010 harvest hops. If yours are different, let me know and I'll adjust it for you.
If you are doing a full 23 lt boil, use all the Malt Extract in the boil. If it is a smaller boil, say 8 lts, use only 1.0 kg of Malt Extract, adding the rest at the end of the boil.
Steep the Crystal Malt for 30 minutes in water at 70°c then add the Malt Extract, then boil.

Dried Malt Extract Pale. 10 EBC. 3150 grams. 96.5%
Crystal Malt. 130 EBC. 200 grams. 3.5%

Yeast: Wyeast 1968 or S-04

Challenger Whole. AA 8.2% 75 mins. 25 grams 53.2% EBU
First Gold Whole. AA 7.9% 75 mins. 20 grams 54.0% EBU
First Gold Whole. AA 7.9% 5 mins. 15 grams 5.9% EBU
First Gold Whole. AA 7.9% 0 mins. 10 grams 0% EBU (Steeped post-boil at 80°c for 30 minutes)

Final Volume: 23 Litres
Original Gravity: 1.050
Final Gravity: 1.011
Alcohol Content: 5% ABV
Colour: 22 EBC

That recipe is for normal IPA. For the Export IPA I'd need to re-do it. The hops used and listed on the label on the bottle and so is the ABV, both of which I need to do the recipe.
As far as malts go, I need to check the specification, but the easiest way to do it is to use Dried Malt Extract. You can use Liquid Malt Extract provided it is an un-hopped extract and you use it in the right quantities for the boil. Let me know the hops and the ABV and I'll go from there later this week. If you can a can of Amber Malt Extract, could you give me the figures on the label regarding colour, which should be shown as EBC.

I have some contact with GK so I've a good idea how their brews go.

For what it's worth, this is my go at their IPA. It can be converted to Extract once we have the spec of Export.

Hi Guys,

My first post on here, so here goes.

After around 6-8 different extract kits Ive decided to try and start adding my own hops.
The kind of beer I'd like to try and get near to is Green King's IPA export.
I want to stick to a partial extract recipe if possible

I'll take a shot in the dark here and propose these ingredients below as a starting point. Please bare in mind though I'm new to this game and I'm asking for your advice and suggestions - especially for hop amounts and boiling times

1 Can of Coopers Amber Malt Extract 1.5kg
Challenger hops
First gold hops
Danstar Nottingham Beer Yeast
Muntons Beer Kit Enhancer

Am I going to be on or off the mark with this guys ? ? ?
Please let me know

Go with whichever yeast you want to use mate - they all have their ups and downs. California 001 is a great seller, which means a lot of people use it, I love 002 (like saracen) and find that, although it leaves a residual sweetness, it allows the hops to come though enough for my tastes.

This is meant to be a real hoppy one by the look at the recipe so why not go all out with some 001 then if you want to scale it back choose another yeast for next time.

So thanks for all the advice guys.Have tweaked it a little more so i have higher ibu's as well now. Which yeast would be easiest to work with as this is my first brew based on my own recipe.

Also emailed the guys a Dogfish Brewery, as the book "extreme brewing" was by there head brewery, to ask about why they put in the book to add sugar 2 days in and got this response.

"The brown sugar adds a little flavor but most of the sugar goes to alcohol but doesn't add any additional body to the beer. The half pound of sugar will add about 1/2% alcohol."

Anyway will keep you all updated, need to do an order before i can start this brew, so will probable be after crimbo now!

Yes, WLP 001 might give a few problems with clarity. WLP 002 or Wyeast 1968 are both highly floculative. Personally, I had a bad experience with 1272, so I'm biased. Wyeast 1335 is another I get good results with.

Protafloc goes in for the last 10 minutes of the boil.

You might want to increase the IBU's a little for a beer that strong if you want it to be IPA style.

Also if WLP001 is anything like Wyeast 1056 its flocculation is medium to low so you might not always pour a clear pint. Wyeast 1272 has higher flocculation and I assume the White labs equivalent WLP051 has too.

Looks good, Ralph.
If you boil 17 lts that should fine. Use 2.0 kg of the Extract and all the Spraymalt, then add the rest of the extract after the boil.

Hmm, 'Extreme Brewing'. Is that where you balance the FV on a mountain ledge 7,000 ft over a river canyon? I don't have a lot of faith in books that need a title like that to grab attention.

The Protofloc, 1 tablet, goes in 10 minutes before the end of the boil, but for it to work properly you'll need to cool the whole amount of liquid down as rapidly as possible to get the cold break which coagulates the proteins, etc. It should be down to 20c in about 45 minutes.

For the end of boil hops, let it cool to 80c and steep them for 30 minutes, then cool it all down.

Got the idea of adding the sugar on day two from the "Extreme Brewing" book by Sam Calagione. But looking back over it it doesnt say what the point of adding it is any ideas?

Without adding the sugar on day two. I get:
IBU 41
ABV 6.4%

At what point do I add the Protofloc tablets?

Was going to boil 17l then make it up to 19l in the fermenter.

Have now change the hop schedule and taken out the irish moss and gypsum:

OG: 1.062
FG: 1.014

Grain - Preboil
500g Light crystal malt (crushed)

Fermentable - boil
3kg Light malt extract
500g Spraymalt extra light

Hops flavorings
25g Nelson sauvin (60mins)
15g Cascade (10mins)
10g Nelson sauvin (10mins)
25g Cascade (end of boil)
15g Nelson sauvin (end of boil)

30g Cascade dry hop (day 4-7)

Yeast
White Labs WLP001 –California Ale

Thanks for the advice so far, getting pretty excited about trying this out!

Yes, can't see the point of the sugar on day 2. Add it at the end of the boil.

What EBU and ABV does it give?

Personally, I wouldn't add any chemicals and use Protofloc tablets rather than Irish Moss. Much, much more effective. On the other hand, an extract brew doesn't need really need either.

Another very valid point is how big a boil volume are you going to use. If it's the full finished volume everything will be OK. If it's only 6 or 8 lts, then you need to boil all the hops in a 1.0 kg Malt Extract wort and add the rest at the end of the boil or the bitterness will be a long way out.

I think most now agree that late additon hops for more than 5 - 10 minutes are a bit of a waste. 20 minutes is long enough to boil off all the elments that give the flavour and aroma. I'd re-jig it to add the Nelsons and Cascade for the last 10 minutes, and increase the Cascade dry hops to 30 gms.

Hi Going to have a go at my first attempt of something other than a kit (well sort of), have already given the Amarillo extract kit a go. Now going to try something based very loosely on a recipe on the northern brewer website, but with a few tweaks not sure if they are all necessary, such as the gypsum and the Irish moss hoping someone will let me know. Made this using beerAlchemy.

Grain - Preboil
500g Light crystal malt (crushed)
2 tsp gypsum

Fermentable - boil
3kg Light malt extract
500g Spraymalt extra light

Hops flavorings
25g Nelson sauvin (60mins)
1tsp Irish moss (20mins)
15g Cascade (20mins)
10g Nelson sauvin (20mins)
25g Cascade (end of boil)
15g Nelson sauvin l (end of boil)

225g light brown sugar (day 2)
20g Cascade dry hop (day 4-7)

Yeast
White Labs WLP001 –California Ale

Anyway let me know what you guys think is this worth a shot, really into hoppy golden beers at the moment, so hopefully this should do the trick.

At the weekend, I bought a Ruby Red Ale kit at my local homebrew shop (sorry Greg - I promise I'll buy my 1st extract brew from you - Amarillo or Rocker me thinks) for the new year blues and.... in it it has a 'Goldings Hop Powder sachet'. Instructions on this one say to add all of it. Is this normal? Seamus - have you had hop sachet's in your Ruby kits?

It will be nice to know as I'll change the brewing volume if there is the remotest hint that I have got another IPA.

I have done dozens of the St Peter's Ruby kits over the last couple of years in fact normally have one on the go all the time. Today had my first bottle of the latest batch... it was different in taste (really not as nice IMHO) and colour (dark but no sign of the usually quite distinctive red hue). Did a blind test with my son and he couldn't believe it was 'Ruby' either. Have I missed something here? Have they been having a few probs in the packing dept? <img src="http://www.brewuk.co.uk/forum/bb-plugins/default/icon_evil.gif" title="" class="bb_smilies" />

I have just been looking at reviews of St Peters IPA on a rival site (sorry Greg). The latest comments there suggest that the IPA comes with a hop sachet kit and that the addition of all of it makes the beer quite bitter. Furthermore, the customer pictures of their IPA brews match the colour of my beer exactly.

Looks like another example of St Peters Beer kits in the wrong box. Not that I am worried - I love hoppy IPA's and I am made up with the one that I have brewed - an IPA it would seem. <img src="http://www.brewuk.co.uk/forum/bb-plugins/default/icon_biggrin.gif" title=":D" class="bb_smilies" />

This is my 4th time back to home brewing (Oct 2011) now that kids are 6&4 and this time round I have done 2 wherrys, 1 with and 1 without Saracens excellent Mod, then St Peters Golden Ale and 2 weeks ago, Milestones Donor and blitzed.

It was definitely St Peters Golden Ale that had the hop sachet, it was even in the instructions about varying the amount to put in according to taste. Being a hop fan, I put all of that bad boy in and there is no doubt that this has the colour and taste of an IPA. My only addition, was 250g Spraymalt light. I have checked in beer engine and there is no way that in a 21 litre brew, this could have caused an EBC in the 25-30 range.

That said, it is extremely similar to Weltons - Old Cocky(a local Horsham Brew) both in terms of colour and taste and that calls itself a 'Golden Ale'. It does not however look like a pint of Pi3wasser (lager), as the St Peters Golden Ale appears on the box.

Has anybody had St Peter's Golden Ale out of a bottle? Roughly what sort of EBC/color is it?

Hop sachet in a st peters golden ale??

That was a kit I did, which I didn't think much of I'm afraid, but I don't remember any hop sachets in it

And to throw another one into this discussion, I have recently done a St Peters Golden Ale and I have to say its absolutely fantastic, even better than Wherry for my palate. However I would estimate it at 25-30 EBC and not 10-15 EBC as it appears on the packaging. Did I get an IPA kit instead of Golden Ale? (not bought here I am ashamed to say!). Using all of the Hop sachet, it definitely tastes more like an IPA.

Donor and Blitzed goes to keg on Thursday night and hope to start Ruby Red on Sunday. Lets hope it is Ruby Red!! <img src="http://www.brewuk.co.uk/forum/bb-plugins/default/icon_confused.gif" title=":?" class="bb_smilies" />

Just a bit of an update really, this is now in the barrel and has been for a week and a half. Went with 20g of hops in the end. Going to have a taste in a couple of days will report back.

In the mean time got a my first extract kit (Way To Amarillo) but can't brew it yet as I have the ipa in the barrel and 40 bottle of crimbo beer in the cellar. Really been bitten by the brewing bug!! Going to have to get some more bottles I think!

Never done it. Did a Muntons Gold Pills but I didnt rate that very highly at all. But if you change the yeast of the pills to a true lager yeast then its supposed to be a better drink.

Id go with Saracen, reduce the volume, maybe dry hop with some yummy citrusy hops????

I'd go with your idea, and also reduce the final volume to 37 pints. You get a bit more body and flavour. White Labs WLP 002 is a very good yeast for a Premium Bitter.

Has anyone ever done the above kit?

I've been gifted one by someone who had bought two and didn't like the results (plus the fermentation stuck) of the first kit.

I was considering having a go at pimping it like people have mentioned doing to the Wherry kits! My plan was swap the Yeast for the White Labs Burton Ale Yeast and then Dry Hop with 20g of Golding (Worcester) Hops after the Krausen has died off. I've considered steeping some grains or adding a Hop tea but don't know if that would change the character of the IPA too much?

Thoughts and Suggestions will be greatly appreciated!

Thanks for the great replies!!

Reckon I will do the dry hopping in the primary fermenter then, can't make up my mind weather to go with the styrians or the Nelson Sauvin. Maybe I'll keep it safe this time as its my first try at dry hopping and go with 15grms of styrians. Then next time go with nelson sauvin.

I'll keep you posted, and let you know how I get on. Thanks again!

Hi Ralph

Using either: 15g Nelson Sauvin, Saaz or Styrian Goldings. Which would anyone recommend.

In an IPA, go with the Styrians if thats what you have in stock, otherwise Cascade would work well but Goldings would be more traditional. Saaz are spicy, almost pepper without the peppery heat if you know what I mean <img src="http://www.brewuk.co.uk/forum/bb-plugins/default/icon_confused.gif" title=":?" class="bb_smilies" /> and earthy. I don't think they work in an English style ale. NelsonS are amazing but you have to be careful you don't over do them.

Hi Ralph. Nice to meet you.

Altering and enhancing kits is a great way to find out what different things do and what effect they give.
Using the Cooper IPA kit, a single can kit, the instructions call for 1.0 kg of sugar. Use either 1.0 kg Brew Enhancer or Dried Malt Extract instead. The DME comes in different colours from Extra Light through to Extra Dark. Light DME will be fine for an IPA.

If you want to mix Spraymalt and Enhancer, make it up to 1.0 kg.

Dry hopping, you've got the right idea. Different hops give different effects, and for a traditional English Bitter taste, Goldings (not Styrians) is a favourite. Use 15 gms first time and adjust it from there. Nelson Sauvin is a very strong hop and goes well with a bitter to give a grape like aroma and a similar taste. 15 gms is about as much as you need. Stryrian Goldings have different effects depending on the type, but they are not a Golding at all. They are a Fuggle. Bobek tend to give a citrus aroma and taste. Use 20 gms. Saaz is more for lager, but remember, the only rule is, there are no rules.

I normally dry hop after 3 days and leave the whole lot in the FV for a further 7 to 10 days, then barrel it. It's long enough for the hops to do their job, but not long enough for odd flavours to be extracted, plus it allows the beer to clear more before barreling/bottling. Personally, I never bother with a 2nd FV, but if use one, transfer the beer after 10 days (3 for the primary fermentation then 7 with dry hops) and leave it for a week, then prime the barrel, not the FV, and go from there.

Hi All

Been browsing for a while and have got a couple of kits under my belt the St.Peters Ruby Red which i'm drinking and a Milestone Donnor and Blitzed conditioning ready for christmas, both have gone really well and taste great.

Now I wanted to try something a little different a bit more e

I was going to make up a Cooper IPA kit using 500g Light Spraymalt and 300g of Muntons Beer Kit Enhancer instead of the sugar. For a start will this work???

Then after the primary fermentation I wanted to dry hop in a secondary fermentation vessel for three days.
Using either: 15g Nelson Sauvin, Saaz or Styrian Goldings. Which would anyone recommend.

Then after three day in the secondary fermentor I was going to barrel this and leave it for 3-4 week before drinking.

Anyway that my plan let me know what you think. Thanks

Thanks for all of the replies. Seems like my mixed-up cans theory might not be that implausible.

Zongo: really interesting that you've had similar results. As it's the first kit I've done I also assumed that I'd messed it up, but I can't see anything in my method that would cause the colour to come out so much darker than expected.

Greg: thanks for offering to follow-up with Muntons, but unfortunately the box and the cans were chucked a few weeks ago. As I said in the original post, I don't really mind the unusual result because it is drinkable - just curious.

That's really interesting. The St. Peter's IPA was the first kit I did too (all of 3 months ago), and mine turned out EXACTLY like this one! I also thought it was a bit too red, but I put it down to my own inexperience (I thought I'd messed it up, basically). Do you think that there's been a batch of IPA that's got mixed up with the Ruby Red?

Hello Forum!

This is my first post on here, but I've been lurking and taking in your collective valuable advice for a while. It's been a real help for a beginner, so many thanks.

I've just opened the first bottles of my first brew, which was the St Peters IPA kit bought through this site. My method was a hybrid of the kit instructions and the wisdom that I read on here: 10 days in primary, then racked into a second FV with a sugar solution to bulk prime, and bottled from there. I tried it before bottling, and it had quite a distinct tangy taste which wasn’t all that pleasant. After 4 weeks of bottle-conditioning it now tastes much better, and has a good fizz to it.

However, I’m not convinced that it’s the IPA! It looks and tastes like a ruby ale, which just happens to be the other St Peters kit that is available. Maybe I’m being daft, but I’m wondering if the unmarked tins that came in the IPA box were in fact the Ruby Red Ale. I don’t mind, because it tastes nice and it’s all a big experiment anyway!

I had some beer left after filling all of my galss bottles, so used a plastic bottle as well rather than pour it away.

Photos below (if they work). Has anyone else here done a St Peters kit? Did your IPA look anything like mine?

I’ve just bought a big stock-pot, so it’s extract next... (walks before he can crawl).

Toddy.

Im probably one of the worst here for drinking beers early, so I would say yeah go for it! I would also like to point out that it would also be good to keep a few pints and really let it mature (5 weeks +) to see what it should really taste like!

Hi Guys again i have another query my latest brew in the fermentor is a coopers IPA i used 1KG of burton bridge beer kit enhancer and some mortons finishing hops golden. I set up the first fermention on saturday and got an OG 1058 and it fermemnted rather quick in room temperature of between 21-27 celcius so i took another hydrometer reading of 1007 is this correct because this is only my second brew and when i tried to work out the ABV i got a reading of like 6.6% surely none of this can be correct? Any help please? Also would you say this is ready for secondary fermention yet?

500g (Not 1 kilo) will increase by 0.5%.

am I missing something

Possibly. 4000 gm gives ABV 6.3 and 4500 gm gives ABV 7.0, so it's 0.7% but the brewing process is not an exact science. 0.5% is given as a rough guide. It makes no difference to the ABV when you add it, but, as Greg's recipe says, it will affect the bitterness (IBU or EBU)

Borrowed this from the summer ale receipe on the main site ' You can add more malt extract to increase the ABV. 500g will increase by 0.5%. Add to the pan after boiling is complete otherwise you will alter the bitterness'. Hope that helps.

Looks good to me. I like Beer Engine because it's simple. I normally use the %EBU ratio (bottom righthand corner) when I'm modifying a recipe. If you start with an established recipe you can see the %age EBU each hop stage gives and adjust a substitute hop accordingly.

Looks good to me mate, 42 ibu and Plenty Strong! Remember to make sure you pitch enough healthy yeast to ensure they are not overwhelmed by the amount of sugar in there! What yeat will you be using? If its dry yeast mr.maltys calculator say to use 1.5 11g packs to ensure a good fermentation.

Hi Sam. Well, I haven't brewed extract for a while, but as Nath says, upping the ABV will produce a different beer. If you have Graham Wheeler's book "Brew your own British Real Ale", look up Fullers ESB and Fullers London Pride. You'll see the recipes are virtually exactly the same with the quantities all scaled up to produce the higher ABV. The beers are very different, though. I use Beer Engine, because it's simple, like me, and it's free, unlike me. You can download it here.

http://www.practicalbrewing.co.uk/index.html

You will need to go for the Grain and Hop editors and adjust the ingredients and hop AAU, but if you look up the stuff you want to use in the shop section, you'll mostly find all the information you need to adjust the ingredients. Have a play around with it, look at how different stuff changes the fugures, and you'll get a better idea of Nath's explanantion. You can even design your hop monster IPA. I'd start with one of GW's recipes, like Fullers ESB or Flowers IPA and adjust things from there. At the very least you'll get a better understanding of how it all works. If you really want to get complicated, you can pay for Beersmith. Personally, I like it to be as simple as it can be.

Sorry for delays, but a double double brew day is hindering me! I have had a look on beersmith and the IBU's are about 32 and the gravity is approx 1.050. so 4.8-5%.

If you use 2kg at the beginning instead of 1kg and use 32g all of boil and 15g instead of 10g for the last 15 mins the ibus remain the same.

heres the thing though the ratio between the maltyness and hoppyness for the original is 0.665. If you do the above, although the ibu (bitterness) stays the same the taste will be different as it is a stronger drink.

So you could also do this - 2kg instead of 1kg of malt at the beginning, 40g hops at start of boil and 25g in the last 15 mins will keep the same ratio, so in theroy a similar taste....maybe!

The choice is yours, Ive never upped the percentage of a beer I liked, but the 2 methods above is how I would do it.

Id also wait for some more opinions from extract brewers as I am all grain so I dont tend to use beersmith for extract recipes and someone else may be able to sort it out better for you.

Hope it sort of helps, I now it may be a bit confusing so keep asking and I will post to see if some extract brewers can help us out <img src="http://www.brewuk.co.uk/forum/bb-plugins/default/icon_wink.gif" title="" class="bb_smilies" />

Hey Sam!

If you added just the malt then yes it would mess up the recipe, you would have to balance the hops with it. I will have a play in beersmith tomorrow and (hopefully) sort something out for ya! You can substitute hops but you have to adjust for the difference in hop bitterness. Galaxy are supposed to be mega punchy and Im sure if you changed to them it would turn out great as long as you stick to the same overall bitterness.

Great to see you doing another brew while waiting. One of the things you learn is that its essential to have a "rolling stock" so you are always drinking one, conditioning one and fermenting one!

Hi Guys

This is my first post hear, have been a fan for a while and was hoping for a little advise.

I have just finished my first Way To Amarillo brew and am plescently happy with the results and planning my next brews while waiting for this one to clear.

I would like to make a stronger version of Way To Amarillo more like 6-7%ABV but keep the 21 litre size. would this just be a case of adding an extra kg of malt extract? and is this likely to affect the taste( making the malt more dominant than the hops)

Also I've got some Galaxy hops on order pellets and flowers, which I was planning on using as a substiitute to Amarillo hops and maybe dry hop for a true hop monster of a IPA.

Has any one worked with these hops?

Sam

Sweet looks like a few st austell clones are on their way then! Apparently the head brewer is a very nice chap who has helped a few people out creating a look-e-like-e through the magic of email. Worth a try. Their bottles are all properly conditioned so it may be worth recovering the yeast.

Well Im back after 9 days of hot sunny burning weather in Cornwall. Man I could have stayed down there. Everything was great and as it was my birthday while I was down there a few mates popped 200+miles down to go on a crawl!

We started in Penzance and went to the turks head which is a free house and has at least 4-6 different ales on tap at any time. Its a proper old pub (ye olde pube) with ultra low celings and slopes about 4ft from front to back. I had a few pints of a nice IPA there but cant remember the name (good start).

After a few more proper pubs we came across a pub on the sea front (navy inn rings a bell) which sold Exmoor gold which is another nice IPA.

From there we went to Wetherspoons where I used up some of my vouchers with some amazing Brewdog Trashy Blonde, which is now my fave BD beer!

A short trip back from penzance to my fave pub in cornwall - Logan rock in Treen (CAMRA pub of the year 2008). Its a st austel pub with all the norm ales - tribute, hsd etc etc which are all great but then I found Proper Job, a 5.5% IPA - really well hopped, it tasted amazing, really zingy, really floral. On from that I had a bottle of Admrils Ale. It won beer or the world (yeah baby world) award 2008 and to be honest I can see why. Its made with all cornish gold malt, gives it a great ruby colour, mega hopped and has a melon aftertaste. My missus loved it I loved it and so did all my mates, even the lager drinking one! I ended up getting a few bottles of each and walking with a mate totally inebriated over the cliff edge path a mile and a half back home....... and im still alive!

Im gonna have to find some around here, seriously if you see proper job or admrils ale on offer (both from st. austell brewerry) then go get it.

PS - Greg - I tried to bring some back for you but my mouth wouldnt let me so I went to the tescos in Penzance on the way back and both ales were out, spose it shows how good it is!

http://www.staustellbrewery.co.uk/beers/bottled-beers.html - check them out!

I think the problem will be the yeast. All badger beers have a very distinct, melon/fruity, taste which I think must come from the yeast as you can taste it in most of there beers. The Wyeast ESB would probably be a good contender.

I know what you mean about the colour of tangle foot, its definately got an orange tinge to it, maybe a very small amount of crystal. Why doesn't someone call the brewery and see if they will shed some light on it. I would definately like to try and make some too.

Found this on Jims:-

TANGLEFOOT 5 gallon batch OG 1048 ABV 5.1% 24 EBU

PALE MALT 3510 gms
SUGAR 770 gms

HOPS 90 minute boil

CHALLENGER 18 gms
NORTHDOWN 10 gms

Add 20 gms NORTHDOWN last 15 minutes.

YEAST of your choice.

That said even the bloke who done the recipe says its lighter than he remembers. If memory serves its slightly golden orange so it cant be much of a 2nd malt addition. Then again what do I know!

I dunno about the sugar addition. My 6x clone (which is taken directly from wadworths) states some sugar to be added and the taste was a bit homebrewey to me. Not like the other ag's I have done. Could be a problem with the way I brewed though.

If you do it or find a good recipe that tastes like it make sure you post as its my fave beer!

sounds fantastic and that sounds like a good idea with another batch!
Do you have a recipe for tanglefoot? I managed to find out that the hops are challenger and northdown, but no idea of timings. I believe there's only pale malt added but the colour would seem to suggest a little amber or crystal too. Any thoughts?

I had another "Quality Control" sample of this last night and its tasting amazing. Really hoppy flavour with a very smooth bitterness towards the end. Almost clear after a week.

Its going to be hard to leave this one alone. In fact I may have to knock up another batch of similar, perhaps changing the hops slightly but same addition schedule.

Just had a sneaky taste and its coming along nicely. Like the Nath and Tony, it doesn't taste as bitter as I was expecting but I think that due to the ABV. You can definately tell its a strong brew but the bitterness smooths out the high ABV. Not smelling as hoppy as before, more malty but I think I'm going to resist the urge to dry hop but I may change my mind. I'm also giving the finnings a miss as I'm sure this will clear well in the bottle. Its already fairly clear.

All in all, so far so good. I'm going to leave in the secondary now until next weekend then bottle.

Okay this one is in the fermenter, I've adjusted the recipe above to the final version. Ended up using the rest of the Rakua as the steep hop as thought I may as well use it up rather than open some Amarillo and they smell fairly similar anyhow. I also used Maris Otter low colour as I haven't used this before.

For some reason only ended up with just over 19 litres but I think I lost a couple of litres to the extra hoppy trub as started with the same amount as usual in the boiler and added back 3 litres (as I normally do). Anyway, not the end of the world and its already got a nice think foamy yeast head on it. The activator wyeast are definately a lot easier to use. Ready in 3 hours and no need to make a starter.

So plan from here is 4 days in the primary, transfer to secondary (and I may add some gelantine at that point), then 1 week in there and bottle up with 110 grams of sugar. With that gravity I think this one will want 6 weeks in the bottle really, so looking at first week in March although I'm sure I'll have a sneaking preview or 2 along the way.

Smells really hoppy at the moment.

Started heating water at 8am and was all done by 1.00.

I've changed the recipe as I want to try adding most of the hops with in the last 15 mins to maximimise hop flavour and aroma. I may still change to the balance further and decrease the boil hops even more... If I dare!

Yes, it I'm hoping it won't be too fruity. The yeast should give it fairly dry flavour and the Rakau is a bit like cascade and not too fruity. I'm hoping for lots of flavour and aroma without too much fruit flavour but never used the Nelsons before so not quite sure what they are going to bring. I know it won't be subtle that's for sure but just hope it works. The ABV should help carry strong hop flavour and aroma and the high IBU should also help give it s dryness.

This is one is a bit of a risk but where's the fun in making the same old safe brews.

The various brews are certainly shaping up to be quite different so looking forward to the comparisions.

That could be it but the more the merrier. Just get on and brew. If anyone else wants to join in them they just need to let us know before the end of Jan when all the samples need to be sent in.

This is a great way to try lots of different recipes at once so lets hope they come out really different.

Perhaps we could make it a regular thing if it all works out, maybe 4 times a year or something. Different style each time. Xmas beer would be a good one for later in the year.

Yes indeed. I am a big fan of S-04 and use it most of the time, never had a single problem with it - maybe that's why I should use it this time ..?
I'll try the Nottingham another time!

I've used Nottingham once and the beer didn't turn out that well. I don't think it was down to the yeast to be fair, more to do with the recipe but I always use S04 if I'm using dried yeast as its never let me down and always ferments and clears quickly.

A lot of microbreweries also use s04 for the same reason.

That said I've only heard good things about Nottingham and I know a lot of home brewers will only use this one. I guess its down to personal preference.

I've got the recipe mostly straight:

12 Litres (bottle it all)

100% Marris Otter (extra pale or normal)

Hops will be:
Centennial (bittering)
Amarillo (aroma)
To around 60 IBU and will probably dry hop with both hops.

Still undecided on mash temp.
I think the increased body and sweetness from a higher mash temp will help to offset the bitterness and higher alcohol level.

Yeast?
I'm thinking either 1187 or 1332.

Water?
I might have a go at producing something in a Burton style.

I'm happy to go with the standard MO, no problem at all.. and as you say, I doubt there is much in the way of taste difference.

BeerSmith is giving me 11.2 EBC with the standard anyway.

I think I may have a look into changing the yeast however. I like S-04 but I have a friend who had some success using a Nottingham yeast in an IPA, I see you have the Danstar Nottingham .... have you used it?

Hi Tony, yes definitely, I will get a couple of sacks and split one into kg. I think the price is the same as standard MO but I'll confirm once I speak to Warminster next week.

Perhaps Varnish has got a point, maybe we should all use the same malt although this obviously is impossible if any extract brewers who want to join in. I would have thought Low colour MO tastes very similar to standard anyway, just produces a lighter coloured beer. I think different pale malts can used but no adjuncts. The hops and yeast will make the most difference to the flavours so different malt won't really make much difference.

I'm planning:

Rakau
Nelson Sauvin
Amarillo

Haven't decided on yeast as yet but most likely to be 1056 American Ale Wyeast.

I'd be really interested in using the extra-pale marris otter Greg, will you be buying in enough to sell on?

Plan so far -
Extra Pale Marris Otter (if possible, if not just the stock Marris Otter)
Northern Brewer hops (bittering & aroma)
Irish Moss
Water
S-04 Yeast
Bottle-conditioned

Single infusion mash, batch sparge

I may tweak this very slightly after working through it on BeerSmith though.

American and NZ all the way for me. Might dry hop in a secondary fermenter, depends on how it tastes after primary.

Just need to decide what yeast. 1056 American Ale I think or I may use the 1968 ESB, or maybe something else all together.

Pretty much decided on the hops but may change the name yet. May even use a different malt, was thinking about Golden Promise instead of MO. Or maybe even a mix of the 2. Was thinking about getting some extra pale MO from warminster maltings so may grab a bag of that as I need to put an order in with them next week. Is that allowed??

We'll put a deadline for people to enter say end of Jan? You can then send to me once we know final numbers. If we get too many then we'll split it into smaller groups so we don't have to send too many bottles. We can also sort out the postage stuff by then.

I've ready been working on my recipe this afternoon. Its going to be called Rocker IPA.

Tasting 4 or 5 bottles of 6%+ could be fun... Might have to sample over a few days. I suggest we each setup a thread with the recipe then each taster can add comments to that thread.

Wonderful!

I would have thought that Punk was above the 60 odd IBU.

So - Traditional Pale Ale with just Maris Otter and own choice of hops? We'll need to all jump in with what we want to use. I'd be happy if we say no sugar in the brew too. So, once we have the brewday (give or take 7 days?) we should be able to work out postage day! I've got some Northern Brewer hops and have been waiting for the opportunity to use them in a high IBU brew, would that be acceptable?

I was thinking about suggesting the same thing with regard to postage. If you wanted to make good use of the postage then order some stuff I could just put them in with that and that would save you having to pay an extra set of postage costs so long as the weight stays below 30kg.

Also like how the recipe criteria is shaping up. Perhaps we could just leave the hops totally up the brewer so long as the IBU range is met. That way people can use stuff they have knocking around. I would also suggest that any extract brewers are also welcome to join in.

We will need a bit of conditioning time on these one's though so not going to be a speedy process but this will give us time to get the bottles sent etc.

I've started this new thread so we can discuss the proposed Forum brew.

First thing is to see who's up for it then discuss the rules for the recipe plus decide on the recipe.

I vote for a Pale Ale of around 6% with 60 IBU target. Ie Punk IPA type beer. Just because this is what I was thinking of next but we need to decide together. Definitely think it should be Pale Ale.
