I think that&#38;#39;s a great suggestion with the yeast and you&#38;#39;re right about badger having the distinctive taste.&#60;/p&#62;
&#60;p&#62;I was thinking the same about the sugar Nath ... I really don&#38;#39;t like using it but looking through books of clone brews, nearly all my fave brews have sugar.  Cheapskates!&#60;br /&#62;

<description>&#60;p&#62;I think the problem will be the yeast. All badger beers have a very distinct, melon/fruity, taste which I think must come from the yeast as you can taste it in most of there beers. The Wyeast ESB would probably be a good contender.&#60;/p&#62;
&#60;p&#62;I know what you mean about the colour of tangle foot, its definately got an orange tinge to it, maybe a very small amount of crystal. Why doesn&#38;#39;t someone call the brewery and see if they will shed some light on it. I would definately like to try and make some too.

&#60;p&#62;I dunno about the sugar addition. My 6x clone (which is taken directly from wadworths) states some sugar to be added and the taste was a bit homebrewey to me.  Not like the other ag&#38;#39;s I have done.  Could be a problem with the way I brewed though.&#60;/p&#62;

Do you have a recipe for tanglefoot?  I managed to find out that the hops are challenger and northdown, but no idea of timings.  I believe there&#38;#39;s only pale malt added but the colour would seem to suggest a little amber or crystal too.  Any thoughts?

<description>&#60;p&#62;Just had a sneaky taste and its coming along nicely. Like the Nath and Tony, it doesn&#38;#39;t taste as bitter as I was expecting but I think that due to the ABV. You can definately tell its a strong brew but the bitterness smooths out the high ABV. Not smelling as hoppy as before, more malty but I think I&#38;#39;m going to resist the urge to dry hop but I may change my mind. I&#38;#39;m also giving the finnings a miss as I&#38;#39;m sure this will clear well in the bottle. Its already fairly clear.&#60;/p&#62;
&#60;p&#62;All in all, so far so good. I&#38;#39;m going to leave in the secondary now until next weekend then bottle.

<description>&#60;p&#62;Okay this one is in the fermenter, I&#38;#39;ve adjusted the recipe above to the final version. Ended up using the rest of the Rakua as the steep hop as thought I may as well use it up rather than open some Amarillo and they smell fairly similar anyhow. I also used Maris Otter low colour as I haven&#38;#39;t used this before.&#60;/p&#62;
&#60;p&#62;For some reason only ended up with just over 19 litres but I think I lost a couple of litres to the extra hoppy trub as started with the same amount as usual in the boiler and added back 3 litres (as I normally do). Anyway, not the end of the world and its already got a nice think foamy yeast head on it. The activator wyeast are definately a lot easier to use. Ready in 3 hours and no need to make a starter. &#60;/p&#62;
&#60;p&#62;So plan from here is 4 days in the primary, transfer to secondary (and I may add some gelantine at that point), then 1 week in there and bottle up with 110 grams of sugar. With that gravity I think this one will want 6 weeks in the bottle really, so looking at first week in March although I&#38;#39;m sure I&#38;#39;ll have a sneaking preview or 2 along the way.&#60;/p&#62;
&#60;p&#62;Smells really hoppy at the moment.&#60;/p&#62;
&#60;p&#62;Started heating water at 8am and was all done by 1.00.

<description>&#60;p&#62;Yes, it I&#38;#39;m hoping it won&#38;#39;t be too fruity. The yeast should give it fairly dry flavour and the Rakau is a bit like cascade and not too fruity. I&#38;#39;m hoping for lots of flavour and aroma without too much fruit flavour but never used the Nelsons before so not quite sure what they are going to bring. I know it won&#38;#39;t be subtle that&#38;#39;s for sure but just hope it works. The ABV should help carry strong hop flavour and aroma and the high IBU should also help give it s dryness.&#60;/p&#62;
&#60;p&#62;This is one is a bit of a risk but where&#38;#39;s the fun in making the same old safe brews.&#60;/p&#62;
&#60;p&#62;The various brews are certainly shaping up to be quite different so looking forward to the comparisions.

I don&#38;#39;t think it was down to the yeast to be fair, more to do with the recipe but I always use S04 if I&#38;#39;m using dried yeast as its never let me down and always ferments and clears quickly.&#60;/p&#62;
&#60;p&#62;A lot of microbreweries also use s04 for the same reason.&#60;/p&#62;
&#60;p&#62;That said I&#38;#39;ve only heard good things about Nottingham and I know a lot of home brewers will only use this one. I guess its down to personal preference.

Amarillo (aroma)&#60;br /&#62;
To around 60 IBU and will probably dry hop with both hops.&#60;/p&#62;
&#60;p&#62;Still undecided on mash temp.&#60;br /&#62;
I think the increased body and sweetness from a higher mash temp will help to offset the bitterness and higher alcohol level. &#60;/p&#62;
&#60;p&#62;Yeast?&#60;br /&#62;
I&#38;#39;m thinking either 1187 or 1332.&#60;/p&#62;
&#60;p&#62;Water?&#60;br /&#62;
I might have a go at producing something in a Burton style.

I would have thought Low colour MO tastes very similar to standard anyway, just produces a lighter coloured beer. I think different pale malts can used but no adjuncts. The hops and yeast will make the most difference to the flavours so different malt won&#38;#39;t really make much difference.&#60;/p&#62;

I&#38;#39;ve got some Northern Brewer hops and have been waiting for the opportunity to use them in a high IBU brew, would that be acceptable?

If you wanted to make good use of the postage then order some stuff I could just put them in with that and that would save you having to pay an extra set of postage costs so long as the weight stays below 30kg.&#60;/p&#62;
&#60;p&#62;Also like how the recipe criteria is shaping up. Perhaps we could just leave the hops totally up the brewer so long as the IBU range is met. That way people can use stuff they have knocking around. I would also suggest that any extract brewers are also welcome to join in. &#60;/p&#62;

&#60;p&#62;First thing is to see who&#38;#39;s up for it then discuss the rules for the recipe plus decide on the recipe.&#60;/p&#62;
&#60;p&#62;I vote for a Pale Ale of around 6% with 60 IBU target. Ie Punk IPA type beer. Just because this is what I was thinking of next but we need to decide together. Definitely think it should be Pale Ale.
