<description>&#60;p&#62;Two days? Give it five at least. A strong brew ten or more. The vigour has passed but it still has plenty to do if it&#38;#39;s lifting the lid. Take hydrometer readings, and wait until it drops below 1012 or constant below 1014 for a couple of days.&#60;br /&#62;
 If you want to bottle and It&#38;#39;s still as high as 1014. Don&#38;#39;t prime. Just allow a week room temp, &#38;amp; at least a month cellar type temps, for good natural condition.

&#60;p&#62;I put a Brewferm Christmas kit down on Friday morning and ran it in the brew fridge at around 22 degrees (25 degrees was the general guidance in the instructions).  I bubbled away as expected until this morning and now looks like it is finished as the water in the air lock has completely levelled off.  The FV has definitely not lost pressure as you can gently press the lid to move the water in the air lock.  It is a strong beer, so only 7 litres in total, I am thinking that I should bottle now, but am also concerned that it is not fully fermented and will blow the bottles?  Anybody done one of these before or got any advise?&#60;/p&#62;

<description>&#60;p&#62;Final update people...with the beautiful weather sunday i decided to try out my brew and i tried a couple from each batch out of the fridge and they were nice and refreshing had a lovely fruity smell to them abit cloudy but sparkling and had a beautiful taste to them with the first batch tasting abit more fruity had a lovely raspberry after taste and i would advice trying this out for the summer months as myself, sister, mom and a large group of my mates all tried a bit and were delighted with the results so i can&#38;#39;t wait for a couple of more weeks to pass when they&#38;#39;ve got even better with age....Hopefully

<description>&#60;p&#62;yeah the only thing i can think of is i took the og of the second fermentor after adding the water based flavouring which contained distilled water and aromas so wether that altered the density as it was only a slight difference? and indeed i spent the whole of saturday morning cleaning and sterilising the bottles and that was without the priming and the actual bottling of the brew so saturday was a long day... luckily the england match passed some time in the process....:-D

<description>&#60;p&#62;Hi again guys sorry for the vague posts so far been a very hectic week at work and home but thought i&#38;#39;d give a better post why i have 5 mins so here we go. Basically i started this last week using a Coopers Mexican Cerveza beer kit 500g of light malt and 500g of dextrose using the original yeast from the kit and chucked in some Raspberry water flavouring which a link for a peach flavoured version is in the original post. Firstly i steralised all my equipment before mixing my wort in my Fermention bucket which i got with my Coopers starter...i then proceeded to top up to 23 litres...before pitching my yeast i split half of my 1st fermentor into a second so i had two 11 and half litre batches and into my second fermentor poured one of my raspberry water flavouring pots before taking the OGs of both 1st(no flavouring) 1046 2nd (with flavouring) 1052 i then pitched my yeast and tightened both lids so the water in the airlocks were level both were 22oC in temperature on pitching and were both placed on computer chairs in my bedroom. On the first night of fermention the 1st batch was bubbling along as usual yet my 2nd batch had virtually no activity so after some light reading i tightened my lid some more before turning in for the night. Sunday morning i was awoken to the sound of water being pumped out of the top of my airlock on the 2nd batch so i loosened the lid off until the airlock had evened out. I had no repeats of this during the week and took a hydrometer reading on Wednesday night of 1st: 1008 2nd: 1010 i then took readings of the same for thursday and friday so today i&#38;#39;ve steralised my bottles ready to move onto the bottling stage one thing i have noticed in the second fermentor is the lovely fruity aroma coming from it i&#38;#39;ll keep you updated...

Personally, I would look up some hops, such as Nelson Sauvin with it&#38;#39;s Grape/Gooseberry flavours or Citra (&#60;em&#62;Aroma/Flavor: Lots of descriptors out there: Citrus, peach, apricot, passion fruit, grapefruit, lime, melon, gooseberry, lychee fruit, pineapple, mango, papaya and other tropical fruit flavors and aromas.&#60;/em&#62;) and flavour the brew by dry hopping. My Nelson Sauvin brew tastes like a great summer ale. 10 or 15gm of either in the FV would pack a real fruity punch.&#60;/p&#62;
&#60;p&#62;Don&#38;#39;t trash the whole brew.

<description>&#60;p&#62;I would add to the beer after its finished fermenting so you can add a small amount to a sample and see what it tastes like before adding to the whole lot as it may well taste foul. &#60;/p&#62;
&#60;p&#62;That way you can avoid ruining a whole batch of beer.&#60;/p&#62;

I mentioned in my first thread about the water flavourings such as this one: &#60;a href=&#34;http://www.homebrewmegastore.co.uk/shop/peach-water-flavouring.html&#34; rel=&#34;nofollow&#34;&#62;http://www.homebrewmegastore.co.uk/shop/peach-water-flavouring.html&#60;/a&#62; and i was thinking about using this to give a peach flavour to my beer and i asked for tips on this and i decided i am gonna try it in my next brew by adding this to bottled water and leaving for 24 hours before preparing the wort and adding to the kit but i am considering using this with Coopers Mexcian Cerveza as i think this style of beer is lovely and refreshing in the summer and i think the idea of a nice peach flavour appeals to me i mean as i said i am tryin new things cuz i&#38;#39;m tryin to make a lovely pint ready for when me and a few mates descend on the V music festival so we can enjoy a nice brew sat outside our tents, i just wanted to know peoples opinions on this wether this would work at all or not?

&#60;p&#62;1) Without a mash tun. Could i get away with steeping all the grains? If so what temperature would be best? I would guess at between 65c to 70c. Obviously then keep an eye on the temperature for 90 minutes and make sure it doesn&#38;#39;t drop below those temperatures.&#60;/p&#62;
&#60;p&#62;2) The white sugar it&#38;#39;s just normal sugar? Not special brewing sugar etc?&#60;/p&#62;
&#60;p&#62;Apologies... i am new to brewing awaiting my second batch to finish. There is so much information to take in.&#60;/p&#62;
