&#60;p&#62;I use a one gallon demijohn, normally glass.  I have not used plastic for wine, maybe others here can advise on that.  There does tend to be a large quantity of sediment so I start everything off on a fermentation bucket and rack it off after a few days when the heavy staff drops out.&#60;/p&#62;
&#60;p&#62;For the sodium metabisulphate I use a small spoon liberated from MacDonalds (I think they now use wooden sticks), this gives less than a little finger nail size of measure (sorry about the basic measure).  This needs to be done at the liquidising stage or the liquidiser introduces too much oxygen and the whole thing goes a dark brown.  The apples can&#38;#39;t be sterilised by boiling as this releases large quantities of pectin and detracts from the flavour.  The sulphur will disipate in a couple of days, but I introduce the pectolase as soon as the berrys are crushed in the apple juice.&#60;/p&#62;
&#60;p&#62;Half the sugar goes in after a couple of days and the yeast as soon as it is desolved.  When fermentation is vigurously underway rack the liquid from the sediment and put in the demijohn.  The remainder of the sugar can be introduced at a later stage when fermentation reduces. There will be more sediment and a second racking may be neccessary.&#60;/p&#62;
&#60;p&#62;It took several trys for this, but when finished and mature it tastes like a good claret with a lot of attitude.&#60;/p&#62;
&#60;p&#62;While the wine is in a fermentation bucket I cover with a cloth soaked in a solution of sodium metabisulphate to keep the dreaded vinegar fly at bay.

<description>&#60;p&#62;Have never tasted it so I can&#38;#39;t say if it&#38;#39;s worth the trouble or not but the comment that it tastes like a wet paper bag isn&#38;#39;t selling it to me. If I can achieve the same effect by just sucking on a paper bag why would I want to wait weeks for a brew to be ready? In fact...... &#60;/p&#62;
&#60;p&#62;yarp, just been in the kitchen and tried it... it&#38;#39;s rank. Perhaps it depends on the bag?&#60;/p&#62;

&#60;p&#62;I believe the window is only two or three days long. During this period the sap will flow out but either side of this it will slowly drip. If you get the timing right you can harvest a good quantity of sap. My neighbour gave me 3/4 gallon he tapped last year in one day. I&#38;#39;ve heard you need to use the sap within 24 hours or the wine will turn out cloudy. If you take too much sap from a single tree you run a high risk of killing it, though it may take a few years to die. Estimates as to the safe amount and frequency of tapping seem to vary widely though all sources agree that you should only tap a well established, healthy, tree. As grmski said it is imperative that the bore hole is properly plugged after tapping.&#60;/p&#62;
&#60;p&#62;It is difficult to tell when a tree is ripe for tapping as the sap will rise in trees in the south of the country a couple of weeks earlier than those in the north. Downy birch looks very similar to silver birch but the sap has a bitter taste and therefore it is not advisable to tap.

<description>&#60;p&#62;Well - if you don&#38;#39;t have a silver birch but know where some are you need to ask the owner if you can tap their tree. Simply drill a hole in the trunk about waist high and stick a stick into the hole and hang a bucket off it leave it overnight. Remove the stick and plug the hole (to avoid killing the tree). &#60;/p&#62;

<description>&#60;p&#62;I can&#38;#39;t take any credit (or abuse) for this. I saw the recipe in todays Guardian and thought it might be of interest to someone here.&#60;/p&#62;
&#60;p&#62;Birch sap tastes almost exactly like water – but the freshest water you have ever tasted, with just a hint of sweetness (0.7% sugar is the highest I have ever found). It does not keep very long – about four days in the fridge – so use it as soon as you can. Here is how you make the wine.&#60;/p&#62;
&#60;p&#62;4.5 litres of birch sap&#60;br /&#62;
200ml white grape juice concentrate&#60;br /&#62;
Juice from two lemons&#60;br /&#62;
1.2 kg white sugar&#60;br /&#62;
Sachet white wine yeast&#60;br /&#62;
Yeast nutrient – follow instructions on packet&#60;/p&#62;
&#60;p&#62;Gently heat the sap in a pan with the lid on to 75C and keep at that temperature for 20 minutes. Take off the heat and stir in the sugar until it is dissolved. Closely cover the pan and allow to cool. Transfer to a fermentation bucket and add the lemon juice, grape juice concentrate, yeast and yeast nutrients. &#60;/p&#62;
&#60;p&#62;Keep the bucket closely covered for five days then siphon into a demi-john, fit the bubble-trap and leave for about two months. Rack-off into a fresh demi-john and bottle when it is all nice and clear. This stuff goes bad for a pastime, so be extra careful making sure everything is sterile and the bottles well sealed. &#60;/p&#62;
&#60;p&#62;The flavour? Light, dry, fruity, with a faint piquancy of wet paper bag.

<description>&#60;p&#62;Just used youngs high alcohol yeast around a tea spoon straight into the vimto no starter but did boil the vimto to boil off any preservatives etc first, starts fermenting next day. First time I tried it ended up around 14.5%abv but sweet with the reduce sugar it made it dryer much more to my liking.

Only thing I&#38;#39;d change is reduce the sugar to just 500g as the first batch was to strong and very sweet. <description>&#60;p&#62;I began making this wine many years ago when I had access to a large general orchard.  It produces a full bodied red.&#60;/p&#62;
&#60;p&#62;INGEDIENTS&#60;/p&#62;
&#60;p&#62;4lb blackberries&#60;br /&#62;
10lb mixed windfall apples&#60;br /&#62;
1lb raisins&#60;br /&#62;
3 ½ lb sugar (invert sugar preferably)&#60;br /&#62;
Sodium metabisulphite&#60;br /&#62;
Citric acid&#60;br /&#62;
pectolase&#60;/p&#62;
&#60;p&#62;METHOD&#60;/p&#62;
&#60;p&#62;Note: this recipe does not use boiling water therefore strict hygiene is a must.&#60;/p&#62;
&#60;p&#62;Put the blackberries in a fermentation bin and crush.  Chop the apples and liquidise (a little sodium metabisulphite and citric acid will stop the resultant juice from oxidising and turning brown.  Add the apple juice to the blackberries with the chopped raisins.&#60;/p&#62;
&#60;p&#62;Once the sulphur dioxide has subsided add the pectolase, cover and leave 24 hours before adding the sugar.  When the sugar has dissolved fully add a good red wine yeast.  The mixture will foam up quite a bit when fermentation gets underway, just needs stirring a few times.  Strain and fill a demijohn to the neck adjusting level with cold, boiled water if required.&#60;/p&#62;
&#60;p&#62;Ph may require adjustment as this is dependant on the apples.&#60;/p&#62;
&#60;p&#62;Fermentation can be an extended period and the resultant wine needs to mature in the bottles for several months.

4-oranges(&#60;strong&#62;juice only no pith or pips&#60;/strong&#62;)&#60;br /&#62;
1/2tsp-Marmite(optional)&#60;br /&#62;
1tsp-GP yeast compound.&#60;br /&#62;
water.&#60;/p&#62;
&#60;p&#62;&#60;u&#62;Method:&#60;/u&#62; wash the sloes and discard any stalks,then add to the FV and cover then dissolve half the sugar in a pan of water,then pour the sugar syrup over the sloes and cover and leave to cool,when cool mash the sloes in the FV with a potato masher,the add the grape juice,tea the juice from the oranges,Marmite and yeast compound and cover and stir twice daily of 10 days after 7 days make some sugar syrup with the rest of the sugar then add to the FV when cool,after 10 days rack the fermenting wine from its sediment and strain into your demijohns.discard solids. top up to the neck with cold water and fully ferment out,when fermenting has finished,rack wine from sediment top up with water fit a cork or rubber bung and keep somewhere cool for 12 months to clear and muture.&#60;br /&#62;

No worries. I can last the Winter without them. We&#38;#39;re not really into experimenting with wine so we only make the Elderberry brew (as it suits our taste). Even after paying for all the ingredients the wine only cost around the £1 a bottle mark so it&#38;#39;s cheap enough. And quite strong. Certainly beats the over sweet jam like elderberry wine sold in the local &#38;#39;Country Farm Boutique&#38;#39; at £8 per bottle!&#60;/p&#62;

Final SG around 0.992&#60;/p&#62;
&#60;p&#62;Elderberries (Dried – 1.25 Kg)&#60;br /&#62;
Raisins (1.25 Kg) (Soak Raisins over night then rinse to remove any oil, then mince in a blender)&#60;br /&#62;
White Granulated Sugar 4.5 Kg&#60;br /&#62;
Soft Light Brown Sugar 2 Kg&#60;br /&#62;
Red Wine Yeast – 1 Sachet&#60;br /&#62;
Yeast nutrient 2 Level Tbsp.&#60;br /&#62;
Boiling Water 23 ltrs.&#60;br /&#62;
Pectolase 3 Level Tbsp.&#60;/p&#62;
&#60;p&#62;RECIPE&#60;/p&#62;
&#60;p&#62;Place Elderberries, Sugar &#38;amp; Minced Raisins directly in a brew bucket and pour on boiling water. Dissolve the sugar. Cover and wait until cool (usually 24 hours). &#60;/p&#62;
&#60;p&#62;Once the must is at room temperature add Pectolase.&#60;/p&#62;
&#60;p&#62;Leave covered for 24 Hours.&#60;/p&#62;
&#60;p&#62;Add the yeast &#38;amp; yeast nutrient.&#60;/p&#62;
&#60;p&#62;Cover and leave in a warm place (or use brewbelt etc.) to ferment for 3-4 days only. Over this period stir and push down the cap three times a day.&#60;/p&#62;
&#60;p&#62;Strain off the liquid into secondary and fit a bung and airlock. When SG reaches 992 and / or fermentation has ceased add one Campden tablet per gallon (also add fermentation stopper at this point if desired). Leave to settle for the rest of the month. Rack. Leave for two months. Rack to storage. Can be drunk 3 months later or left to mature. Tanin profile gradually subsides after the first year but the wine is perfectly drinkable after the initial 3 months.&#60;/p&#62;
&#60;p&#62;We have made over 150 gallons of this wine over the last few years and have developed and honed this recipe ourselves. We love it.&#60;/p&#62;

you can get your grape juice from AlDi it&#38;#39;s just like the LiDl grape juice.&#60;br /&#62;
if you can not get to LiDl for the peach juice, use ASDA and get the orange,peach &#38;amp; passion fruit juice drink&#60;br /&#62;

Can you explain what juice you mean, is it in cartons, and do you also get the grape juice from Lidl.  I have just made Peach wine from the fuit, but was very messy, and when I tried it before storing, it did not taste too good, hope it improves with age. I also made Carrot but that tastes like dish water.  I must be doing something wrong.  Hope my other fruit and veg wines come out ok, have put them in the garage to clear, and hopefully become drinkable. Do Aldi have the same juices, as there is not a Lidl close to me.:)

250g-Banana skins(optional)&#60;br /&#62;
1-lemon(juice only no pith)&#60;br /&#62;
9-cloves.&#60;br /&#62;
2tbls-honey.&#60;br /&#62;
half tsp-tannin.&#60;br /&#62;
1tsp-GP yeast compound.&#60;br /&#62;
&#60;u&#62;METHOD:&#60;/u&#62;boil then simmer the Bananas and cloves for ten min,then strain and press the banana pulp to extract all the juice,then dissolve half of the sugar in the hot juice,then boil and simmer the Banana skins for ten min and strain. When both liquids are cool,add to the demijohn with the rest of the ingredients,fit the airlock&#60;br /&#62;
and ferment for a week then add the rest of the sugar in syrup form when cool and top up the DJ with water&#60;br /&#62;
and fully ferment out.&#60;br /&#62;
&#60;strong&#62;NOTE:&#60;/strong&#62;when fermenting stops rack and add finings rack again and add (glycerine to taste,optional) then&#60;br /&#62;

I reckon they must have about 40+ inthere of all sizes. <description>&#60;p&#62;I seem to remember, from years ago, that there are 2 types of Elderberry. One grows bunches with flat tops and the other grows bunches that are round, like bunches of mini grapes. The old girl who told me this said you can only use one type for making wine, but I can&#38;#39;t remember which type. I &#60;em&#62;think&#60;/em&#62; she said avoid the flat top one or you&#38;#39;ll turn into a frog, or worse. Is it true, (not about the frog) and if so, which one do you use? She used to make some truly &#60;strong&#62;AWESOME&#60;/strong&#62; wine. The new owner of a local pub found some of it down the cellar 12 after she died. It was probably 20 to 30 years old, and a truly memorable night was had by all!

&#60;p&#62;&#60;strong&#62;Parsnip Wine&#60;/strong&#62; (based on my grandfather&#38;#39;s recipe)&#60;/p&#62;
&#60;p&#62;2kg Parsnips&#60;br /&#62;
1kg Sugar&#60;br /&#62;
500g Honey&#60;br /&#62;
5 ltrs of cold water&#60;br /&#62;
1 Lemon&#60;br /&#62;
10g Grated root ginger&#60;br /&#62;
Prepared juice of 500g raisins (see below)&#60;br /&#62;
Campden tablet.&#60;br /&#62;
Pectic enzyme&#60;br /&#62;
White wine yeast &#38;amp; yeast nutrient&#60;/p&#62;
&#60;p&#62;Slice parsnips thinly, add to pan and cover with 5 ltrs cold water, bring to boil and cook until tender (do not over-cook so that they go ‘mushy’)&#60;/p&#62;
&#60;p&#62;Strain and return water to the pan adding sugar, raisin juice, lemon juice and rind (not pith), ginger and honey.  Bring to boil then simmer for 1 hour.&#60;/p&#62;
&#60;p&#62;Strain into bucket and when cooled add pectic enzyme and campden tab.&#60;/p&#62;
&#60;p&#62;Leave for 24 hours then add yeast &#38;amp; nutrient.  Leave for 4 days, stir and strain into a DJ and add fermentation lock.  Rack after one month, after another rack and add finings, bottle after another month.  Drink after another three!&#60;/p&#62;
&#60;p&#62;&#60;em&#62;Raisin Juice:&#60;br /&#62;
Wash raisins in very hot water then chop.  Bring to a boil and simmer for 5 mins then squeeze out juice through muslin.&#60;/em&#62;&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Chilli Wine&#60;/strong&#62;&#60;/p&#62;
&#60;p&#62;100g red  chillies (medium hot with seeds)&#60;br /&#62;
230g chopped sultanas&#60;br /&#62;
25g fresh ginger&#60;br /&#62;
1 kg sugar&#60;br /&#62;
5 ltrs water&#60;br /&#62;
1 tsp pectolase&#60;br /&#62;
1 lemon (juice)&#60;br /&#62;
1/2 tsp tannin&#60;br /&#62;
1 Campden tab&#60;br /&#62;
1 tsp yeast nutrient&#60;br /&#62;
1 tsp white wine yeast&#60;/p&#62;
&#60;p&#62;Chop chillies and add to a pan with the water, chopped sultanas, chopped ginger and lemon juice.  Bring to the boil, add 500g sugar and simmer for 30 mins.&#60;/p&#62;

2tsp-G-P yeast compound(1 per gal)&#60;br /&#62;
2tbl-glycerine(optional)&#60;br /&#62;
1tbl-wine-finings.&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Method:&#60;/strong&#62;boil then simmer the blackberrys &#38;amp; elderberrys in water for 20 min,then strain all the juice from them,then dissolve half the sugar in the hot liquid and leave to cool,then divide all the ingredients to&#60;br /&#62;
your demijohns fit the airlocks and ferment for 7 to 10 days then make the rest of your sugar in to a syrup&#60;br /&#62;
then divide into your djs when cool and top up with water to the neck.&#60;br /&#62;

If I recall correctly, they all turned out very, very dry. The home brew shops at the time sold cans of grape juice, and I don&#38;#39;t remember too much success with these, either. Made some good stuff by going round the market at packing up time and acquiring some fruit and grapes that was only fit for the bin. Peach and Strawberry was particularly good. It all made a terrible mess, though. All that squashing fruit and straining it through muslin. It was a short lived experiment.

put the pearl barley in the fermenting bin,peel and dice potatoes,&#60;br /&#62;
(discard peel and any green parts)place diced potatoes in the fermenting bin,add raisins after rinsing in hot water and mincing,then put half of the&#60;br /&#62;
sugar in 3 pints of hot water and stir until all the sugar as dissolved,&#60;br /&#62;
when cool add to the fermenting bin,with the lemon juice,marmite and cold tea,then add 3 more pints of cold water,stir then add yeast and cover.&#60;br /&#62;
&#60;strong&#62;NOTE:&#60;/strong&#62;stir the pulp 2 times a day for up to ten days,then strain the pulp in to the demijohn&#38;#39;s,add the rest of the sugar in syrup form,and top up with water,fit the airlocks and fully ferment out.&#60;br /&#62;
When the fermenting as stoped rack and add finings,when clear rack again and add glycerine to taste.&#60;br /&#62;

<description>&#60;p&#62;Okay here&#38;#39;s the mulled wine recipe I came across the other day. It&#38;#39;s from gordan Ramsey so excuse some of the faff but it look like a winner. Not tried it yet but planning next week.&#60;br /&#62;
Pour a bottle of red wine into a large saucepan and heat gently. Tie 7 cardamom pods, 5 cloves, 2 start anise, 1halved cinnamon stick and 1 snipped lemongrass stalk in a piece of muslin to form a bag. Add to the wine with the pared zest of 1 orange and segmented orange flesh, 1 tablespoon of demerare sugar and 2 chopped preserved stem ginger with 2 tablespoon of syrup from the jar. Heat gently for 4 mins stirring occasionally to encourage the flavours to infuse without boiling.&#60;/p&#62;

&#60;p&#62;Inspired by Wurzel&#38;#39;s Orange Wine&#60;/p&#62;
&#60;p&#62;Thought it was time to try and brew a wine. Not sure how to bottle it - suggestions welcome. &#60;/p&#62;
&#60;p&#62;385g White granulated cane sugar&#60;br /&#62;
1 Litre Salisbury’s basic Orange juice.&#60;br /&#62;
1 Litre Salisbury’s White Grape &#38;amp; Peach Juice Drink&#60;br /&#62;
1/2 tsp. Young’s Wine Yeast&#60;/p&#62;
&#60;p&#62;~1 x 5 Litre Mineral Water&#60;/p&#62;
&#60;p&#62;Sanitise and rinse all equipment.&#60;/p&#62;
&#60;p&#62;Boil about 1 Litre of water. Add sugar. Boil for about 5 minutes (until bored)&#60;br /&#62;
Add 1.5 Litre of cold water and pour in to Empty 5 litre mineral water bottle (poor man’s DJ)&#60;br /&#62;
Add Orange Juice.&#60;br /&#62;
Add Grape and Peach Juice&#60;br /&#62;
Add 1 x mug of tea (for the tannin)&#60;br /&#62;
Add water to fill bottle to 4 litre mark  (this one might be a heavy bubbler)&#60;br /&#62;
Add Wine Yeast.&#60;br /&#62;
Fit air lock.

Been desperately trying to remember my recipe from years back and I&#38;#39;m pretty sure this is it.  I searched the net for ginger essence recipes and even put a request out on another forum ... but no reply.&#60;br /&#62;
However .. I&#38;#39;m fairly sure this is correct - and there&#38;#39;s only one way to find out.  Just finished and now waiting to pitch the yeast.&#60;br /&#62;
Makes 23 ltrs:&#60;/p&#62;
&#60;p&#62;8 bottles of Friar Tuck’s Ginger Essence (or equivalent)&#60;br /&#62;
4.5kg White Sugar&#60;br /&#62;
1kg Dark Brown Sugar&#60;br /&#62;
4 Oranges&#60;br /&#62;
8 Lemons&#60;br /&#62;
1 cup strong black tea&#60;br /&#62;
200g Sultanas (chopped)&#60;br /&#62;
200g Raisins (chopped)&#60;/p&#62;
&#60;p&#62;Peel (completely) the oranges &#38;amp; lemons and slice.  Add to 8 ltrs of boiling water.  Bring back to boil then simmer for 15 mins.&#60;/p&#62;
&#60;p&#62;Pour (strain) onto the sugar in your fv.  Stir to dissolve the sugar, add the sultanas, raisins and ginger essence.  Pour in the cup of tea.&#60;br /&#62;
Allow to cool to around 22C and add champagne yeast.&#60;/p&#62;
&#60;p&#62;Leave for 2 days and then agitate gently each day until vigorous ferment has finished (maximum 2 weeks).&#60;/p&#62;
&#60;p&#62;Rack into secondary and leave for 4 months.  Bottle.  Best if left another year but if impatient (like me) it can be drunk after a further 6 months.&#60;/p&#62;
&#60;p&#62;It is possible to use fresh (grated) ginger, but I’ve found in the past that this is very slow to clear and can need up to another year.&#60;br /&#62;
Here&#38;#39;s the little darling sans yeast...&#60;/p&#62;

Just waiting until school hols then mother can rack my country wines for me all 15 demi-johns! (I can&#38;#39;t lift or crouch/crawl down under the table to get them from where they are maturing)

Yeast&#60;br /&#62;
Water to 1Gal&#60;/p&#62;

I&#38;#39;m going to get another batch on the go early next year! oh and I didn&#38;#39;t pay £5 for the tub of tea! it was around £2.50 as I live close to Boundry Mill and theres a Whittards section in there! might pick up a Mango &#38;amp; Passion Fruit when im in the store next time!&#60;/p&#62;

This orange wine has quite a big following on the internets, so I thought I&#38;#39;d knock some together with the hope of it being ready for Christmas.&#60;/p&#62;

1 litre white grape juice.&#60;br /&#62;
1½ lb sugar.&#60;br /&#62;
1 tsp nutrient&#60;br /&#62;
General Purpose yeast&#60;br /&#62;
½ tsp tannin&#60;br /&#62;
1 tsp Pectic Enzyme&#60;br /&#62;
1 tsp glycerine&#60;br /&#62;
Water to 1 gallon&#60;/p&#62;

1. gallon of cold water.&#60;br /&#62;

prepared juice of half lb.&#60;br /&#62;

campden tablets.&#60;br /&#62;
pectic enzyme (See pack for instructions)&#60;br /&#62;
Wine yeast. &#38;amp; yeast nutrient.(See pack for instructions) &#60;/p&#62;

This wine is best made in February or march with  parsnips which have remained in the ground all the winter. prepare your raisins ahead. That give them a brief wash in near boiling water to remove the waxy coat that the produces apply. Allow the raisins to cool enough to handle and then cut them up. Now simmer the raisins in just enough water to cover them (If in doubt add a touch more than enough. After simmering for about 5 minutes extract the juice from the raisins by means of a muslin cloth. The raisin juice is needed latter on. Scrub the parsnips well, but do not peel them: slice them thinly and put them in a large saucepan or preserving pan. pour in 1 gallon of could water, or; if you haven&#38;#39;t a saucepan big enough, cook 1lb. of parsnips and half of a gallon of water at a time. cook the parsnips until they are tender, but not mashy. when they are cooked, strain the liquid off. after strain, throw away the parsnips and  return the liquid to the pan. add the 3lb. of sugar, the raisin juice, and the lemon juice and rind, having removed the pith.  simmer for three quarters of an hour, stirring occasionally. strain again into a plastic bucket, and then lukewarm add the pectic enzyme and a crushed campden tablet. leave for 24 hours, placing the bucket in warm room: then stir in the yeast and yeast nutrient. cover the bucket and leave in the warm for four days. the stir it well . &#60;/p&#62;
&#60;p&#62;Strain into a fermentation demi-john. fit an airlock and ferment until dry, the rack and clear the wine before bottling. A little feeding with a tablespoonful or two of sugar may be helpful if fermentation seems slow. the wine will be drinkable in six months. but much better if you can leave it longer

&#60;p&#62;A book would probably be a sound investment in you are looking for a lot of new recipes. The CJJ Berry ones are very popular and well respected although a little dated.&#60;/p&#62;
&#60;p&#62;I don&#38;#39;t have any other recipes except the one&#38;#39;s already on here and the site. I tend to make more beer then wine these days as I don&#38;#39;t have the patience for country wines, I can never wait for them to mature.

<description>&#60;p&#62;Here&#38;#39;s the other recipe kindly given to me by my Irish customer John. Produces a really nice, dry wine with a hint of fruit but not nearly as fruity as you would expect. Highly recommended but does need a year or two to really reach its peak. &#60;/p&#62;
&#60;p&#62;1 litre good quality orange juice.&#60;br /&#62;
1 can (822G) Apricots/Peaches and Juice.&#60;br /&#62;
500g-Green Grapes or 250g-Chopped Sultanas.&#60;br /&#62;
5kg White Sugar.&#60;br /&#62;
35g- Citric Acid&#60;br /&#62;
one half teasp Grape Tannins&#60;br /&#62;
Wine Yeast&#60;br /&#62;
Water to make 25 litres&#60;/p&#62;
&#60;p&#62;Put all the ingrediants in a container and add 10 litres boiling water.Stir,make up to 25 litres with cold water.Add 1 and half teasp.Pwctic Enzyme and working wine yeast,Ferment in covered container for 7-10 days before continuing as for Red vin ordinaire,This may need filtering but will clear naturally.

<description>&#60;p&#62;Hi Dan, spoken to the chap who gave me the recipe and he said that its a really old recipe (40 years) and he&#38;#39;s not really sure why but he always puts it in there as per the recipe.&#60;/p&#62;
&#60;p&#62;He also say that wine works really well with any fruit, so long as you still use the elderberries.&#60;/p&#62;
&#60;p&#62;His white wine doesn&#38;#39;t have baking soda so it must be something to do with the red fruits.&#60;/p&#62;
&#60;p&#62;I had a bottle last Saturday and its tasted really nice. I&#38;#39;m also still alive and didn&#38;#39;t have a hangover.

<description>&#60;p&#62;Here is one I have matureing at the moment! my small taster bottle was ermmm very potent! (you get very much the same reactions like on the good life) It may not be to everyones taste or smell great but its worth ago! Im matureing mine so the taste hopefully gets better!!!&#60;/p&#62;
&#60;p&#62;To make 2 Gallons!&#60;/p&#62;
&#60;p&#62;2 Gal of Pea Pods&#60;br /&#62;
2 Gal Water&#60;br /&#62;
1800 g Sugar&#60;br /&#62;
25 g Ginger&#60;br /&#62;
zest and juice of 2 lemons&#60;br /&#62;
zest and juice of 1 large orange&#60;br /&#62;
2 tins of grape concentrate&#60;br /&#62;
1 1/2 tsp citric acid&#60;br /&#62;
2 tsp tannin&#60;br /&#62;
2 tsp pectolase&#60;/p&#62;
&#60;p&#62;Boiled the pods, ginger, lemon and orange juice/zest until the pods were tender, added sugar and grape concentrate, let cool slightly addedm citric acid, tannin and pectolase.&#60;/p&#62;
&#60;p&#62;When down to temp im going to seperate into two bactches, add some yeast nutrient and do one with Hock yeast and on with White Wine yeast!&#60;/p&#62;
&#60;p&#62;The Verity of Pea Pods I used was Pea Canoe  &#38;lt;img src=&#38;quot;http://www.brewuk.co.uk/forum/bb-plugins/default/icon_smile.gif&#38;quot; title=&#38;quot;:)&#38;quot; class=&#38;quot;bb_smilies&#38;quot; /&#38;gt;  (these pea seeds were only purchased because the name contained the word Canoe!)

<description>&#60;p&#62;A customer gave me a couple of bottles of wine the other day and he has also kindly agreed to share the recipe handed down for a few generations. I opened them up and the weekend and they were really tasty. Mildly port flavoured and really nice body, flavour and aroma. Anyways here&#38;#39;s the recipes. The bottle he gave me was a few years old but he says it tastes good after 4 weeks. White to follow shortly.                                                  &#60;/p&#62;
&#60;p&#62;450g of each.Dried Elderberries and blueberries (or Morello Cherries)&#60;br /&#62;
6kg White Sugar&#60;br /&#62;
2 and half teasp.Bicarbonate of Soda&#60;br /&#62;
1 and quarter teasp.Tartaric Acids&#60;br /&#62;
2 and half teasp.Yeast Nutrient.&#60;br /&#62;
1 and half teasp. Pectic Enzyme&#60;br /&#62;
Wine Yeast.&#60;br /&#62;
Water to make 25 litres.&#60;/p&#62;
&#60;p&#62;Boil the fruit gently in 5 litres water for 5 minutes-for convenience the fruit may be put in a nylon bag for removal and draining.Add the sugar,Bicarb,tartaric acid and Yeast Nutrient.Make to 25 litres with cold water and add the Pectic Enzyme.Now add a working Wine Yeast.Leave 3 to 4 days in a covered bucket.Drain from the bucket to a Glass jar and fit air-lock.This wine is usually ready in 4 - 6 weeks

<description>&#60;p&#62;1 Box (20) Infusion Tea Bagss&#60;br /&#62;
2 litres 100% White Grape Juice (cartons from supermarket)&#60;br /&#62;
2lbs sugar&#60;br /&#62;
1tsp Citric Acid&#60;br /&#62;
1/2tsp Grape Tannin&#60;br /&#62;
White Wine Yeast&#60;br /&#62;
Nutrient&#60;/p&#62;
&#60;p&#62;I Infused the bags for 30 minutes in 3 pints boiling water. Then Strained the tea bags and pressed them to get out the juices and flavor!&#60;/p&#62;
&#60;p&#62;Then added the sugar to the liquor, and Stirred until it dissolved. I then let it cool and added the tannin, acid to the liquor and placed into a DJ along with 1L of the Grape juice, and pitched the yeast after a couple of days i have added the other 1L of grape juice and topped up the DJ with water to the 5gal mark!&#60;/p&#62;
&#60;p&#62;This can be made with any infusion tea’s!
