I&#38;#39;ve got a proper lager comming up (Wyeast 2206 Bavarian Lager) after a wheat beer tomorrow, which I might call Schnee Weiss as we&#38;#39;ve got half an inch of the stuff already.&#60;/p&#62;
&#60;p&#62;ihatenissanmicras, for an extract brew replace the lager malt with 2200 grams of extra light DME and replace the pudding rice with 290 grams of normal household sugar, which you add half way through the boil. Everything else is the same.

<description>&#60;p&#62;Good, unmistakably lager-like, I&#38;#39;m very pleased with it but it was very cold. I keep the corny kegs in an insulated box in the shed but it couldn&#38;#39;t have been much above freezing inside the box. I suppose I should have put the keg in the brew fridge for a while.&#60;/p&#62;
&#60;p&#62;The Saaz have come through well though its perhaps lacking the complexity of some German type lagers but I think thats mainly down to the yeast. I was quite cautious with the late hops but I think it could probably stand more, maybe 10 grams of Mittlefruh at 5 minutes and flameout.

&#60;p&#62;All you need to do is put the recipe in Beer Engine, adjust it so all the figures come right, then place a tick in the Original Gravity &#38;#39;Fix&#38;#39; box, and a tick in the Bitterness EBU &#38;#39;Fix&#38;#39; box, make sure you have the &#38;#39;%Extract&#38;#39; by the top panel and the &#38;#39;%EBU&#38;#39; by the lower panel highlighted, then go to the top of the screen and amend the Volume box to whatever volume you want to finish up with and it will adjust all the ingredients but keep the ratios the same.&#60;/p&#62;

<description>&#60;p&#62;I also use a spreadsheet from biabrewer in Oz that you can put the original recipe (i.e. the one you came up with) into along with the size and capacity of the boiler vessel and it will re calculate the recipe and give out a list of figures such as cool water volume needed, post boil dilution quantities, efficiences, ratio&#38;#39;s.&#60;/p&#62;
&#60;p&#62;I was just playing on beer engine and thinking that It must be possible to amend some of the defaults to get most of this info out of BE. So was amending things like the liquid:grist ratio, evaporation % and wort loss to see what I could come up with. &#60;/p&#62;

It&#38;#39;s not the first one I&#38;#39;ve found in the book by any means, which is why I don&#38;#39;t just follow the recipe without running it through the software. Not only do you find problems like these, but you can also update the recipe for modern AA values. Most are things like EBU coming up at 22 with 20 gms of something when you need 33 EBU and get it with 30 gms. Often the OG doesn&#38;#39;t line up with the predicted ABV, either.

If I change the hop utilisation in defaults to 36% (down from 39%) and put in his recipe It comes up with 16 ebu (low) knock the hop bill up to 50gms and its an acceptable 40 ebu. But it seems were not the first to spot this...there&#38;#39;s a thread over on jims about it from 2010. When I made it before I loved the beer but felt there was something lacking it could well have been too few hops...particularly as I didn&#38;#39;t use any software just worked out the proportions for the grist manually and then ran it through a biab recipe spreadsheet I got from an Aussie site.

&#60;p&#62;I&#38;#39;ve been working on Beer Engine again and I&#38;#39;ve been trying to get to the bottom of why the EBU is always too high when you put in one of Graham Wheeler&#38;#39;s recipes. Given that the book complements the software, and he published both at the same time using the same figures, it should be identical. In his book, &#38;quot;Brew your own British Real Ale,&#38;quot; he gives a table of hop utilisation figuires for different SGs. His figure for a wort of 1.040 is 26.8% efficiency, yet the default in Beer Engine is 39.75%. Nothing in his table gets near that figure, and it&#38;#39;s baffling me. What I&#38;#39;ve done is adjust the hop efficiency in the Defaults to 36% and now I&#38;#39;m near enough right with his recipes. I think I&#38;#39;ll go with that for now as it seems to make everything fit together.

You have 150 gms of Brown Sugar as well, which will over-prime a barrel, and 13 gms of Northern Brewer, which gives me 39 EBU, not 38.&#60;br /&#62;

&#60;p&#62;I don&#38;#39;t understand why you have a different figure. I&#38;#39;ve just loaded it all up agin, this time with the sugar at 3% moisture, and the figures are exactly the same. If I up the Light Brown Sugar to 350 gms I get OG 1.039 and 4.3% ABV. When I added the sugar to the database, all I did was open the grain editor, select Sugar, Household White, and edited it to read; Sugar, Light Brown and left all the figures the same. ie: Extract 375 LDK, Moisture 0% and Fermentabilty 100%, on the basis that all sugar will perform the same except for colour. The EBC values are a guess.&#60;br /&#62;
Did you change anything in the &#38;#39;Set Defaults&#38;#39; menu?

I didn&#38;#39;t use any software I was at work and was trying to do this with a pen and paper and websites. I thought hop utilisation was typically from 20 - 30 % o went the middle figure.&#60;/p&#62;
&#60;p&#62;Goliath if your dad was old enough to drink whilst in town he&#38;#39;ll know the beer. You can&#38;#39;t miss the brewery it sits on the river running through a pedestrianised town centre lovely old building on a cold morning the steam coming out of the boiler chimney is a beautiful sight.&#60;/p&#62;
&#60;p&#62;Vsat boiler will be the first trial of my new self build biab boiler. It&#38;#39;s a 60 ltr plastic barrel with a 3kw 240v immersion element. I&#38;#39;d had enough of diluting post boil and do decided to build my own big enough to big beer lengths without dilution. &#60;/p&#62;

&#60;p&#62;Well, I&#38;#39;ve done it. I got some really off-the-wall figures, but there&#38;#39;s nothing unusual about that when it comes to converting Dave Line&#38;#39;s recipes. It started off at 3.2% ABV and 69 IBU! The resipe was for 25 lts, but cutting it to 23 and including the priming sugar got it up to 4.1% ABV. I can&#38;#39;t tell what hop AA figures he was using, but the shop has Goldings (East Kent are probably better) at 5.7% AA and Northern Brewer at 10.5% AA, so those are the figures I&#38;#39;ve used at the normal utilisation Beer Engine defaults to. It&#38;#39;s all done as a 90 minute mash and a 90 minute boil. All the hops go in at the beginning and Dave doesn&#38;#39;t list any late additions. Personally, I think I&#38;#39;d use 15 gms of Goldings post-boil.&#60;/p&#62;
&#60;p&#62;Pale Malt. 5 EBC. 3000 grams. 78.1% of Extract&#60;br /&#62;
Flaked Maize. 0 EBC. 250 grams. 6.8% of Extract&#60;br /&#62;
Sugar, Light Soft Brown. 10 EBC. 250 gram.s 10.8% of Extract&#60;br /&#62;
Sugar, Brown. 25 EBC. 100 grams. 4.3% of Extract (Priming Sugar)&#60;/p&#62;
&#60;p&#62;Northern Brewer Whole. AA 10.5%. 90 mins. 13 grams. 41.8% of EBU&#60;br /&#62;
Golding EKG Whole. AA 5.7%. 90 mins. 32 grams. 58.2% of EBU&#60;/p&#62;
&#60;p&#62;Final Volume: 23 Litres&#60;br /&#62;
Original Gravity: 1.038&#60;br /&#62;
Final Gravity: 1.006&#60;br /&#62;
Alcohol Content: 4.1% ABV&#60;br /&#62;
Total Liquor: 31.6 Litres&#60;br /&#62;
Mash Liquor: 8.1 Litres&#60;br /&#62;
Mash Efficiency: 75 %&#60;br /&#62;
Bitterness: 38 EBU&#60;br /&#62;

&#60;p&#62;If you can get an ABV for the pub version we might get closer, but this will give a good beer and the accuracy depends on how close Dave Line was 35 years ago, and how much the recipe has been changed by the brewery since.

&#60;p&#62;I am planning a clone of Harveys Sussex Best which is the no 1 beer down here in Lewes. I am struggling to find an exact recipe but from scouring the net I have come up with this, I think the base recipe came from Dave Lines old brewing book and I have amended this in terms of yeast, grain and hop quantities. Now not being very experienced in recipe formulation I&#38;#39;d appreciate any comments that the (and don&#38;#39;t I use the word lightly) genius&#38;#39; on this site have.&#60;br /&#62;
Yeast is an issue as Harveys use their own strain and I don&#38;#39;t have it so am thinking to go with Wyeast 1318 (London Ale III) anyone have experience with this?&#60;/p&#62;
&#60;p&#62;I will be using the biab method to brew this which will involve mashing the grain at 66c in 32 ltr of water for 90 mins. Followed by removing and draining the bag of grist and then conducting the boil as standard to end up with 19 ltr into bottles after fermentation.&#60;/p&#62;

9g Northern Brewers hops  (5.9% aa)&#60;br /&#62;
1tsp Irish Moss&#60;br /&#62;
WYEAST STRAIN: 1318  &#124;  London Ale III™	&#60;/p&#62;
&#60;p&#62;OG 1041 ( 23l)&#60;br /&#62;
SG 1010&#60;br /&#62;
30-35 ibu (based on 25% hop utilization)&#60;br /&#62;
4.1%	abv&#60;br /&#62;
19 ltr	&#60;/p&#62;
&#60;p&#62;Bring water to 60*C and add crushed malt and flakes&#60;br /&#62;
Raise to 66*C &#38;amp; mash for 90 min&#60;br /&#62;
Disolve sugar in a little hot water&#60;br /&#62;
Boil wort and add hops &#38;amp; sugar and boil for 1.5 hours.&#60;br /&#62;
Pitch irish moss as per instructions&#60;br /&#62;
Ferment until SG reaches 1010 and rack to secondary.&#60;br /&#62;
Disolve gelatin finings into hot water and add to secondary whilst racking&#60;br /&#62;
Leave for 7 days&#60;br /&#62;
Rack beer off sediment into keg or bottles and carbonate (use dissolved brown sugar for bottle carbonation)&#60;br /&#62;
Leave in bottles for 7 days to condition before sampling.

We thought Amber Malt couldn&#38;#39;t be steeped, but Hamish contacted a brewer who said it steeps perfectly well. You can substitue Wheat Malt Extract for Wheat Malt, but you have to reduce the DME accordingly as Wheat Malt Extract is 50/50 Barley &#38;amp; Wheat.&#60;/p&#62;
&#60;p&#62;Flaked Barley:&#60;/p&#62;
&#60;p&#62;&#60;blockquote&#62;Flaked unmalted barley is often used in Stouts to provide protein for head retention and body.&#60;/blockquote&#62;&#60;/p&#62;
&#60;p&#62;Caramalt:&#60;/p&#62;
&#60;p&#62;&#60;blockquote&#62;greatly improves body, foam retention and beer stability whilst adding little colour&#60;/blockquote&#62;&#60;/p&#62;
&#60;p&#62;Maybe? It also might be worth doing a mini-mash with the Wheat Malt and the Flaked Barley by bringing a corresponding quantity of water to the boil in a saucepan, let it cool to about 70°c, stir in the grains and leave it for 90 minutes. From there, proceed as Extract.

If you want a quick brew you&#38;#39;ll have to force it, so that means temp control and corny kegs (nothing to do with full mash, you could do this as an extract brew, just use DME and sugar.) but its not necessarily the way to produce the best beer.&#60;/p&#62;

Sounds like a good recipe. I&#38;#39;ve always wanted a beer that is ready quickly, I&#38;#39;m always disappointed when I try them after 3 weeks (so far). My thinking is, it&#38;#39;s probably down to keg conditioning and AG? At the moment I&#38;#39;m using extracts and bottling.&#60;/p&#62;

&#60;p&#62;Very pleased with the initial taster, much more lager-like than the previous attempt.&#60;/p&#62;
&#60;p&#62;Dropped the temperature to 10°C and will probably rack it on Monday when it&#38;#39;ll go back in the fridge. I may drop the temp further so when it goes into the corny it&#38;#39;ll absorb the co2 better. Could be drinking this a week tomorrow if I get the carbonation right.

As for the next brew i have some sorachi ace and citra hops so gonna use them for something. Hav&#38;#39;nt used either before but i really like Oakhams Citra beer and sorachi ace is supposed to be a bit lemony so i think they may go together fairly well.&#60;br /&#62;

&#60;p&#62;This is taken fronm Graham Wheeler&#38;#39;s book and it&#38;#39;s just about spot on with the specifications. I&#38;#39;ve adjusted the amounts of hops in line with current AA values to maintain the Hop EBU ratio so the recipe is as near as it&#38;#39;s possible to get to GW&#38;#39;s original.&#60;/p&#62;
&#60;p&#62;It uses Styrian Goldings for Dry Hopping but ordinary East Kent Goldings will be just as good. Use 5 gms more if using EKG.&#60;/p&#62;
&#60;p&#62;Check the Alpha Acid figures on your hop packs. They have been varying a lot lately. If they are very different to the figures I have here, let me know and I&#38;#39;ll sdjust the recipe. The values I&#38;#39;ve used are Challenger AA 8.2%, Fuggles AA 4.9% and East Kent Goldings AA 5.7%.&#60;/p&#62;
&#60;p&#62;This is formulated for a full 23 lt boil. If you are boiling a smaller quantity, say 8.0 lts, use only 1.2 KG of Dried Malt Extract in the initial boil and add the rest at the end of the boil.&#60;/p&#62;
&#60;p&#62;The colour is right but you need to use both extracts to get it right. If you want you can use all Light DME but it will be a little dark.&#60;/p&#62;
&#60;p&#62;Note the 75 minute boil.&#60;/p&#62;
&#60;p&#62;Dried Malt Extract Pale. 10 EBC. 1770 grams&#60;br /&#62;
Dried Malt Ext. Xtra Pale. 5.5 EBC. 1770 grams&#60;br /&#62;
Crystal Malt. 130 EBC. 295 grams&#60;br /&#62;
Chocolate Malt. 1050 EBC. 215 grams&#60;/p&#62;
&#60;p&#62;Yeast: S-04, Wyeast 1098 or WLP 007&#60;/p&#62;
&#60;p&#62;Challenger Whole. AA 8.2% 75 mins. 25 grams&#60;br /&#62;
Fuggle Whole. AA 4.9% 75 mins. 15 grams&#60;br /&#62;

&#60;p&#62;It&#38;#39;s not going to make any difference which sugar you use, except Sainsbury&#38;#39;s own label. It has some sweeteners in that don&#38;#39;t ferment, so avoid it. Tate &#38;amp; Lyle or Silver Spoon is the way to go. Brewing sugar should ferment out a bit quicker, but the end result is the same. Not worth the extra outlay, in my opinion.&#60;/p&#62;
&#60;p&#62;Priming sugar can be worked out at 3.0 gms per pint for bottling and 2.0 gms per pint for barreling. The amount of fizz you&#38;#39;ll get depends on a few things. First, glass bottles will force Co2 into the beer better than plastic because it can&#38;#39;t expand. The next consideration is storage temperature. You need to keep the bottles at 20°c for 2 weeks before storing them at a lower temperature. Not too low, no lower than about 8 - 10c. The lower the temperature, the more the Co2 will be absorbed into the beer, until at very cold temperatures it disappears altogether. Next, when you open the bottle, the lower the temperature the less &#38;#39;head&#38;#39; you&#38;#39;ll get. Rather than losing all the fizz when you pop the cap, the Co2 will be released into the beer as the temperature rises, giving, hopefully, a fairly constant feel to the beer as you drink it.

&#60;p&#62;Looking at the recipes on this site they go for 120 g sugar for priming in bottles.&#60;/p&#62;
&#60;p&#62;My last, and only, brew I used 1 tsp per litre in the bottling bucket which would work out as about 80g in total. 1/2 tsp per botle as seems the norm.&#60;/p&#62;
&#60;p&#62;It turned out pretty flat.&#60;/p&#62;
&#60;p&#62;I&#38;#39;m bottling the lot so is 120g about the right amount to have some but not to much fizz?&#60;/p&#62;

&#60;p&#62;Ringwood XXXX Porter.	Extract Recipe.	Final Volume 23 lts.&#60;/p&#62;
&#60;p&#62;Hop Alpha Acids: Challenger 8.2%, Goldings EKG 5.7%, Progress 5.5%&#60;/p&#62;
&#60;p&#62;Yeast:  S-04, or Wyeast 1187 Ringwood Ale&#60;/p&#62;
&#60;p&#62;Sanitise all equipment and rinse before using.&#60;br /&#62;
Bring 6 litres of water to between 65-70 C and steep the Chocolate Malt &#38;amp; Crystal Malt for 30 mins. Monitor the temp and add heat if it drops below 65 C. Remove the grains with a strainer and bring the liquid to the boil. Dissolve 1.0 kg of malt extract into it. Bring back to the boil and add the Challenger hops. Boil for 65 mins then add 10 gms of Progress hops and boil for a further 10 minutes. Turn off the heat, let the liquid cool to 80°c and add the rest of the hops and allow to steep for 30 minutes then add the rest of the Dried Malt Extract, stirring vigorously to dissolve it. Add 8 litres of water to the fermenting bin then strain the boiled liquid into the water. Top up the fermenting bin to the 23 Litre mark pouring the remaining water through the strainer to extract maximum flavour from the hops. Add the yeast when the liquid has cooled to 15-24C. Use a thermometer to check the temperature. Take a hydrometer reading and record starting gravity. Place the lid on (ensuring one corner is not fully clipped down) or use a lid with airlock. Move to a suitable area in the house and leave until fermentation is complete. Bottle/Barrel and wait approx 1 - 2 weeks to clear. As with all beers, it will continue to improve with age.&#60;/p&#62;

Wheat Malt Extract	8 EBC	 	400 grams&#60;br /&#62;
Crystal Malt	130 EBC		400 grams&#60;br /&#62;
Chocolate Malt	1050 EBC	 	200 grams&#60;/p&#62;
&#60;p&#62;Challenger	Whole	8.2 %	75 mins		35 grams&#60;br /&#62;
Progress	Whole	5.5 %	10 mins		10 grams&#60;br /&#62;
Golding EKG	Whole	5.7 %	0 mins		7 grams&#60;/p&#62;
&#60;p&#62;Final Volume:	23	Litres&#60;br /&#62;
Original Gravity:	1.049&#60;br /&#62;
Final Gravity:	1.012&#60;br /&#62;
Alcohol Content:	4.8%	ABV&#60;br /&#62;
Bitterness:	32	EBU&#60;br /&#62;
Colour:	98	EBC

&#60;p&#62;A great prize which you must be chuffed at and my estimate of say 6-10 entries must make the odds very good for you but i hope more people will enter but i personally think it will be the regulars from this site entering.&#60;/p&#62;
&#60;p&#62;Talking of regulars Nath is the moderator and in all competitions anyone assossiated with the running of the competition is normally excluded to ensure fair play rules. <description>&#60;p&#62;Well, I dunno!  Ive not used 3 of the above malts, but as long as they are within their adition limits im sure it will be a beer!  For an imperial stout its mentioned that the ratio of sweetness and bitterness should be as close to 1.00 as possible and youve pretty much hit that target.&#60;/p&#62;
&#60;p&#62;As for the colour..... its pretty damn dark dude, but it is a stout!  This is an experimental brew so why not.&#60;/p&#62;
&#60;p&#62;You may want to keep bottles for a LOOOONNNNGGGG time, make sure you leave some for a good few years!

That&#38;#39;s a different recipe, and a book I don&#38;#39;t know. I always use Graham Wheeler&#38;#39;s &#38;quot;Brew you own British Real Ale&#38;quot;. Sounds similar to the other one. It&#38;#39;s the book we recommend to everyone who joins. There is so much bad and conflicting advice on the net, we find it best to stick to one source, and GW is about the best.&#60;/p&#62;
&#60;p&#62;The recipe above is taken directly from the book. It&#38;#39;s an extract recipe, in line with Iceman&#38;#39;s requirements, but I was looking at an old recipe for it in Dave Line&#38;#39;s book &#38;quot;Brewing Beers like those you buy&#38;quot;. It&#38;#39;s so old it uses all sorts of unusual ingredients and would take a lot of converting. I am very lazy, very, (some would say very) .... but once I&#38;#39;d done a couple of extract brews, the only kit I&#38;#39;d do now is Headcracker (cos I love it), and maybe Ruby Red cos everyone raves about it and I&#38;#39;m curious. Not dissing kits at all but the extra effort of boiling water for 75mins and straining some hops is worth it.&#60;br /&#62;
BTW, I did the same with Grolsch for the bottles, bought loads on the cheap, after a couple of weeks I tipped the last few down the sink... was 8 months ago and I still have that taste.

<description>&#60;p&#62;I see what you are saying Kev but i find if you brew these all low end temp and get rid of all sugar and replace with better ingredients and condition for a couple of months as well as recently upgrading to liquid yeast that you can get an exceptionally high standard of beer,lager,cider or wine and much better than shop bought or pub mass produced piss. Last week i bought 4 bottles of Grolsh lager simply for the bottles and it was terrible to drink, not kidding like it had been watered down as it was so thin and tasteless and what lager i make is far far superior to this piss that tastes really quaffable. If i was getting disastrous results with kits then i might try but every time i am brewing a quality drink that i mostly drink from 2 months onwards.

<description>&#60;p&#62;I would expect the best bet is to get a pale or ipa kit, replace any sugar with light spray malt and try to find out the bitterness of the kit. From there either make a hop tea, pr dry hop (or both) with your specific hops you want to use to get a really hoppy smelling brew going on then use the bittering extract from thi site to add to the brew until you get the required bitterness. You could always change the yeast to a more sutible strain as well&#60;/p&#62;
&#60;p&#62;Loads a options! Or ( like above) get a stockpot and take the extract plunge. You won&#38;#39;t be disappointed!

I was wary of going down that route, partly because I couldn&#38;#39;t find a bl**dy pot for a sensible price. Then one rainy day I found one in Trago Mills (Cornwall) 15L, good solid stainless, for about £20. You already have the other kit I expect. You just need a pot that will allow you to brew 8L safely (enough spare capacity to cope with foaming during the boil).&#60;/p&#62;
