Often when I'm typing I hit 2 keys as I have fingers of the large variety. Because of that I often have to go back and chnge things. Sometimes, when I try this, I can't do it because the thing starts typing with no spaces. By that I mean if I want to put an extra word in a sentence, as I type, the computer automatically overwrites the next letter. If I wanted to change 'look' to 'book', I would end up with 'bok', because as I type the 'b', it would delete the next letter. I think it's because I'm hitting 2 keys to turn something on. Does anyone know how to turn it off without switching the whole box off? A bunch of media 'luvvies' turning up today to film her and the people she has been working with for showing at the star-studded award ceremony at the Marriott Hotel, Grosvenor Square in Mayfair (no less) next month. Woohoo!!! A slap-up 5* bash, rubbing shoulders with the great and the good (I'm a celeb... get me a Doom Bar!) followed by lunch the next day at Number 10 with the 'Roonies (no... not the scouse ones). So Fingers crossed everyone! She deserves some recognition after 20 years of work fighting for our military families. Surprisingly avoiding Coors Light and making some pleasant discoveries. Such as Okanagan Spring's Porter. Coming in at 8.5% and bloody tasty. A Porter in every sense of the beer style. Dark, strong with some lasting sweetness in the after taste. Checked out the website and they are a fairly small brewery with a German Brew Master. Not a bad price either a 6 pack of 341ml bottles works out about £1.47 a per bottle. The photos were taken at Haytor Quarry, on Dartmoor. I took 2 photos immediately after each other on 28th August this year. The lower one was taken at 10.28&28 seconds and the upper one at 10.28&32 seconds. You can see from the small change in the clouds the time interval was short. I took 2 so I could blend them together and get a better sky colour. It was taken at ISO 250 1/350 sec at f13. With the short exposure, small aperture and low ISO, anything in the sky would have been in focus. So, what is the object that has suddenly appeared in the sky? I have studied the photos and the object seems to be metallic. It’s not a flaw in the lens because it would have been in both and I am very familiar with any lens aberrations. It could be a water spot on the lens, but I've ruled that out as there was also no rain and I wasn't near any water at the time. It appears to be moving very fast as it’s out of focus and elongated. The photos haven’t been messed with other than to balance the colours and make the object bigger in the small photo. I certainly didn’t see anything at the time. I changed pretty much everything (including paddles/thermometers/cleaners/treatments) apart from my mash tun in my setup to eliminate my problem and to a certain degree it worked. I use a carbon water filter to get rid of chlorine and I leave out water treatments to make sure Im not doing "too much". Now we bought our son a fish tank for his birthday on the 12th of August and after a week of the fish tank running it should of had enough bacteria in the filter to eliminate nitrites etc but for the whole week the water was cloudy as anything. So we left it another week and it was still cloudy and the water test came back bad. After another week the tank was much clearer but the water test still came back bad. Well we changed 15% of the water 3 days ago and overnight the tank is cloudy again - were not disturbing any sediment anywhere it just turns cloudy when our water is introduced. We had a fish tank 6 years ago and we never had this problem. So we started tasting and smelling our water, and im just wondering if there may be a problem with our water that we are un aware of. You can taste the chlorine, but its also quite metallicaly and while drinkable its not the nicest tasting water. Its got to the point where Im not really satisfied what Im reading from my water companies report, especially when you think that its a general report and a lot could happen from the various places the report takes place to my house. Time to send it off for a proper test. Not just for my beer.....Not just for the fish......But for my whole damn family...... In the past 24 hours I've had 2 experiences to suggest otherwise: 1) We're getting a wood-burning stove installed in our living room. The intallers were just about to leave yesterday with the parting bombshell 'you're going to need a plasterer to finish it off'. We informed them that we'd been told by the salesman that the price had included all the finish work and he'd never mentioned getting an outside plasterer. The installer called his boss and I could hear him say stuff like 'Seriously, I can't leave it like THAT'. Don't know what the boss had been suggesting to him but sounded dodgy. Anyway, the boss phoned me back and gruffly said that they'd send someone up on Monday to finish the plastering. I then informed him that the installed hearth was the wrong size; there was a noticable gap between where it ended and where the floorboards began. He replied 'WHAT ARE YOU TALKING ABOUT?? PUT [the installer] BACK ON THE PHONE!!' Charming. So they took the ill-fitting hearth with them and left us with a half-completed job. This was all the fault of the salesman who came out to our house a week ago, took measurements and told us exactly what would be done, but the boss-guy's attitude towards me, the paying customer, stank. No harm, but if at almost £2K, the very least I should expect is what I agreed to pay for. 2) Phoned a HB retailer today (not Brew UK, where the customer service has been nothing but polite and helpful), to inform them that the extra bung I'd recently ordered with my 5L Easy Keg hadn't been included in the packaging. No big deal. Rather than saying something like 'Oh right, apologies for that, sir, ...etc' the customer service guy says to me 'I'm not being rude, but why did it take you almost 2 weeks to call us?' Unbelieveable. I only opened the eff-ing thing 2 days ago because I didn't need to use it until now. I explained this, but did I really need to justify myself to that guy? Any of the rest of you seeing these trends towards decreasing customer resepect? I'm not trying to be all holier-than-thou here; in my work I tend to despise the customer, but you keep it to yourself. Too much time on my hands today. Off work sick. (Ok the last one may not be true!) So What do you need? Well a meat grinder, manual ones can be bought from £15-20 from places like robert dyas or electric ones can be bought from loads of kitchen shops. I bought mine from John Lewis at a cost of £55. Its lasted me 4 years and is made by molinuex. This one (and most others) come with stuffing tubes. You can also buy a dedicated sausage stuffer but to be honest if you only make em now and again I wouldnt bother. Sausage Skins. Go for real ones if ya can, nothing like pigs intestines to freak the kids out! Some shoulder meat from the local butcher or supermarket. Sometimes you can be lucky and if you ask for a lot then the butcher can give ya a discount. Rusk - used to abou 10% in a recipe to improve texture, bite and most importantly to retain fat to make your sausage more juicy! (you can also use breadcrumbs but this will cause the sausages to go off easier, so unless you are eating them that day or the next dont bother) Seasonings - Salt, pepper etc etc. Right so how do you do it? Freeze the pork and during the process try to keep it as cold as possible due to bateria etc etc. Chop up the pork into chucks that can go through the grinderer and grind on a coarse plate. Then its time to add all the ingredients. I add all the ingredients and then mix as well as I can and then I grind again either on a coarse or fine depending on sausage. Then attach the stuffing tube to the grinder and start putting the sausage skin on it (a lil olive oil helps with the slidyness), then stuff the meat through the grinder and feed it through the skin (can be tricky for the first/second time). Tie up sausages butcher stylee, or make rings. Put em back in freezer if ya like or leave them in fridge to hang and infuse if using them soon. Job done. Heres some recipes:- Pork n' Leek 2lb Shoulder Pork 1 tsp salt 1/8 tsp nutmeg 1/8 tsp mace 1/4 tsp black pepper 1/8 tesp white pepper 1 1/2 rusk 100g leek 3 tsp water I cut the leek up fairly coarse after the grinding so big bits were left in there....mmmmmm tasty! Cumberland 2.25kg pork shoulder 50g rusk 27g salt 6g black pepper 3g sage 3g marjoram 2.5g nutmeg 2.5g mace 2.5g white pepper 250g ice cubes 2.5g brown sugar (to give colour on skins when cooking ) Chilli Willi - adapted to all pork (ta to oddley) 720g pork shoulder 30g rusk 100g chilli paste (see bellow) 4g pepper 7g salt Chili Paste 215 gm Finely chopped onion 100 gm Tomato Puree 2 Minced Cloves garlic 2 Skinned Red Chilies 4 gm Cumin Seed powder 4 Tbs Light Olive Oil Method To make the chili paste skin the red chilies by holding them over the gas until they are blackened put them into a sealed plastic bag for five minutes the skin should then rub off easily. meanwhile in a frying pan fry the onions in 2 tablespoons of olive oil until caramelised. This will add sweetness to the paste. Add the garlic and chopped chili to the pan and fry for 1 minute do not brown. then add the cumin seed powder fry gently for 2 minutes to release the oils. now add the tomato puree and fry gently for a further five minutes. When cooled slightly put into a blender with the remaining olive oil and blend until smooth. You can also use a mortar and pestle to accomplish this. To make sausages make sure your meat is cold at all times (between 1 - 4 deg C) slice the meat across the grain to easily fit the mincer then mince on the 3/8 in plate. Now massage all the ingredients into the meat. Fill the skins and link. Place in the bottom of the fridge overnight to mature. Those are my favourite sausages and wow can they be spicy! It does take quite a long time, but it's mostly waiting rather than work. I can't remember the correct name, but it's a Thai snack. For the skin, I get my butcher to keep the trim off shoulders that go into sausages. Belly would work too. <img src="http://a2.sphotos.ak.fbcdn.net/hphotos-ak-snc/225359_10150186904849539_517264538_6789789_6691564_n.jpg"> Trim ALL the fat off. I use a filleting knife as the flexible blade helps a lot. This is a view of the fat-side. <img src="http://a2.sphotos.ak.fbcdn.net/hphotos-ak-snc6/247528_10150203152079539_517264538_6930125_2376614_n.jpg"> Cut up into 1 inch squares and put in a large pan of boiling water, add about 50mls of vinegar and around 1tsp of hydrolysed lime powder (65p per 100g from <a href="http://www.raanthai.co.uk" rel="nofollow">http://www.raanthai.co.uk</a> (product KES045). This stage takes about 40 minutes. The pores should be clearly visible on the outer side, and it will be opaque and almost sticky. Photo when it's done. <img src="http://a5.sphotos.ak.fbcdn.net/hphotos-ak-ash4/249377_10150203152314539_517264538_6930128_2839363_n.jpg"> Drain well and place on a wire rack until the skin has gone completly hard and is transparent. Depends on temperature etc, but I like to give it at least a week. Needless to say I forgot to take a picture of this stage. Crank up the fryer to 200 or so and fry maybe 4 or 5 pieces at a time - they puff up a lot! I like to drop them into the oil and then hold them under with the basket thing so it cooks evenly. Takes about 30-45 seconds. Shes getting married at some posh place which serves Skinners beers so to make sure her day goes perfect we need to be able to visit this brewery and try many beers....ahem. I rang them up about a month ago making sure it was allright to pop down and they said it was fine, we didnt really concrete anything, told em the day we would be down and that was that. So we turned up yesterday, tiny place concidering they produce 75000 litres of beer a week. the old boy behind the till welcomed us and said - "your the ones gettin marrieed then" (in a west county accent). Sorted! We pay our £7.50 (minus 10% for my CAMRA and minus a quid as my old mans an oap now), takes us through and theres a nice bar area with Betty Stoggs, Maggy Finney, St Pirians, Old Knocker on cask and a blonde/lager/pale called Skindog on keg. I have a St Pirans, the old man mas a Maggie and my sis has a Skindog. The maggie and the pirians are diffent in colour but taste like a bland beer, not too impressed, but its a free pint! The skindog turns out to be a nice refreshing pint, really crisp, slight hoppy aftertaste, citrusy - could be cascade. After a little wander round the bar the owner is shocked to see our pints empty so we go ahead and get a knocker and a stoggs. Really nice pints on tap. The stoggs is a great balance of malts and floral hops while the knocker is paler and more hoppy. We already settled that were gonna get a cask of each plus some skindog for the lager drinkers, as its a good way of introducing "proper" beer to em. So we got 1 pale, 1 bitter and 1 blondy/largery beer all sorted for the wedding. The bloke who owns Skinners is uber proud of what he has achieved and is a really nice bloke, mind you he wouldnt give me the recipe for cornish Knocker (sorry greg!) After another pint were off on the tour with the ol' boy. **NOTE** - by this time weve already made our money back on the beer and thats before the tour! They get their malt from Warminster (WOO!) and they buy pre crushed. They use 3 bittering hops in all their beers. Target, northdown and challenger. They must use celia and cascade in a lot of their beers as there were loads of packs of em. Theres only 1 boiler and 1 mash tun, which is amazing due to the fact they get throgh 75000 litres of beer a week. The mash tun temp is a constant 70c for 60 mins then after that its pumped into the boiler. The bittering hops are added at the start then after 30 mins the second lot are added and boiled for a further 1 and a quarter hours. Instead of adding the late additions to the kettle the wort is transferred (at 100c) to a second vat which is full of the aroma hops. Its left there for 30mins before going through a counter chiller, cooled to 20c and into a fermentation vessel - I think its 4000 ltr. Onto the fermentation room - we wernt allowed in due to the levels of co2 but they have 4 4000 ltrsand 4 8000 ltrs that I can remember. Their yeast is stored in a lab somewhere in Hertfordshire and they get it delivered to them. The yeast is added and fermentation is controlled at 20c throughout. This is achieved by room temperature control and also steel tubes inserted into the fermentors which run cold water through to keep things under control. The yeast is obviously top fermenting ale yeast and all the fermentors are open, no sealed containers. The yeast is top cropped and used for all the beers they produce. Apparently its kept for upto 6 months before they need to get some more delivered. Thats pretty amazing seeing you can keep the same taste for that long. The top cropped yeast is "chucked" into a plastic bucket in the same room. Fermentation takes 3 days then is chilled in the fermentor to 10c over another 2 days. 5 days fermentation! Its then moved from there to sealed maturation tanks and kept at 10c. At the moment it goes in a maturation tanks then straight out to cask, but it can stay in there for 6 weeks due to the fact they can purge any air which they replace with nitrogen. Any beer which is to be bottled gets picked up by a lorry and taken to a bottling plant, islinglass is added then force carbed and capped. No bottle conditioning. Its amazing to think that after 5-6 days from kettle the beer is ok to drink. Mental! I asked about the water and because the water is so soft in cornwall they add minerals to get it to a "burton" water profile. I also asked about cleaning and everything is washed down with water then caustic, then water twice and then for the mash tun after the second wash peracitic acid then another wash! The casks they clean are then left, open to air to dry out. So there we are. Amazingly compact brewery, only saw about 6 people working on the floor. Good stuff, back to the bar after the 45 minute tour where another few pints were poured! We had the bar till 4.30 so thats 2 and a half hours of what you can drink! Really interesting and has made me think about a lot, especially on how anal I am with steralisation and fermentation times. Also its good to see that you can create a lager type beer through normal fermentation, no need to lager or add lager yeast. It was a 1 gallon all-grain batch in a glass demijohn using the crudest of improvised tools (e.g. I sparged with a large kitchen sieve!). I used pale malt, crystal malt and just Northern Brewer hops. My thinking was that I didn't want to spend any money on equipment till I saw how it turned out. Anyway, 2 years and over 40 brews later and I'm still going strong. From a passing interest to an obsession! Aided, in no small part, by loads of extremely useful advice and helpful encouragement from this forum. Does anyone remember Green Shield stamps (or even the less well known Pink Stamps. Were they S&H)? What about Cigarette Coupons? We decided in the early 60's that we would save enough Green Shield stamps to get my Mum a dinner service. It became an obsession. I was only about 8 and we went round the shops (lived in Enfield at the time) asking all the customers as they came out if they wanted their stamps. A lot of them gave them to us, but it still took 6 months and resulted in a pile of stamp books half as tall as I was. There were caravans and holidays in their catalogue and I often wonder if anyone actually managed to get one. Anyway, having collected the 17 billion stamps required for a 36 piece dinner service, my Dad took us along to the Green Shield stamp shop, which I think (?) was in Palmers Green. My sister and I carried the dozens of books, dropping them all over the floor, to the girl at the counter. Now, if you missed the 60's, this is what all shop girls looked like. She was brunette with her hair in a bun, too much bright make up, nail file welded to one hand which was used 99% of the time to file the nails on the other hand, mini skirt, bored expression like you were seriously disrupting her day and a gob full of gum, which she chewed incessantly pausing only to come out with the standard line, "Sorry, Out of stock", or chat to her mate, Mavis. So, Mum didn't get the dinner service, but she did get; an iron, a can opener, a small saucepan and a potato peeler. Here endeth my association with Green Shield stamps. Being an incurable experimenter and a lover of all pickles, last year I had a go at creating "Ye Olde Suffolk Black Pickled Onions" to go with the Black Pickled Suffolk Ham you can still find in a few village butchers. I used brown malt vinegar and added a large amount of black treacle together with a lot of cloves, pickling spice and dried chillis. I got an interesting result but they weren't black. I know there's only just time to get some ready for Christmas but I've just tried another approach, born of a desire to get shot of nearly a kilo of chocolate malt. Heated 500 ml of Brown Malt Vinegar to 70°c and added 40gm of Chocolate malt, 18 Cloves and a teaspoon of mixed peppercorns. Let it steep for an hour and this time I've got really black vinegar! The coffee aroma was overpowering, so I added more vinegar to make it up to 700ml, filtered it and poured it on the onions. Now we wait. If it works the possibilities with special malts could be interesting. Anyone else tried anything similar? I know people knock Wetherspoons but when your work mates like lager its a great place to get started. After venturing round town we finally stopped off at the Porton Hotel (in Porton) and I finished off with a few pints of Black Sheep. Well I say I finished off with that, Im now sat at the house with an already drunk spitfire and a few pints of my homebrew. Seems like a great piece of kit and I decided to put it through it's paces the other week. Hopped on a train at Fareham and headed off down to Exeter to meet a friend of mine who was working - well ok, alleged to be working down there. I used the GBG and headed down to Topsham to the 'Bridge Inn' (<a href="http://www.cheffers.co.uk/bridge.html" rel="nofollow">http://www.cheffers.co.uk/bridge.html</a>) - Used the map facility on the app to guide me straight to the front door. What a great place, presented with a beer menu, and a tasty ale in a proper pint glass (you know, the one with a handle!). Had some lunch - a very hearty west country cheese and chutney sandwich (doorstep in a basket!) and after a couple more ales and banging my head (twice!!) on the very low doorframe (much to the delight of other drinkers!), we headed off to Exmouth to try another pub from the guide. They had a nice selection of hand pumps which we worked our way through and a 'rough old cider'. Really lovely place and friendly welcoming bar staff (even more happier when I mentioned we had found them in the GBG!). The time started to drift on and i decided that going home this evening may not be on the agenda - (something to do with my partner, and the words 'Drunk' 'Brewery' 'Smelling of' ' Disgraceful' suddenly entered my mind - so I pulled out the Iphone and used booking.com and booked a twin room for my pal and myself to crash in at the Jurys Inn at Exeter. After finishing up at the Holly tree, a suggestion was made by my friend about visiting the 'Beer Engine' at Newton StCyres (first stop on the Barnstaple line out of Exeter St Davids) I remembered looking at it in a 'rail ale' guide our company produced - only to find about only 3 or 4 trains stop there in each direction in a day (grumble, moan!)but we checked the timetable and it was a go! - Great pub / brewery which was about 20 paces from the station (watch the gap/step down getting out of the train onto platform as it's quite a drop and alcohol (lets say!) can make this more of a challange! Check out the two Chute Villages and their pubs, Upper Chute has the Cross Keys and Lower Chute the Hatchet (13th Century). Both do accomadation,dog friendly, if you fancy a weekend away Salisbury/ Stonehenge is 20 mins away. The Cross Keys can even put your horse up! and has a beer festival next weekend. One other thing to get off me chest, why is it that every time I find a good bottle of beer in the supermarket I go back the week after to get some more its gone!! I found a while ago a beautiful one from Innes & Gunn it had been furmented in old whiskey barrels, the best I have ever tasted(went down well with steak) kept looking for it but it had vanished, can anyone tell me what kind of numpties they employ when it comes to the type of beer they stock. Found 4 bottles of Becks blue left unopened on a table. After realising (much to my great sadness) that they are alcohol free.
