The sugar water (or wort) is then transferred to another vessel where it is boiled for a duration of time. In that time hops are added at certain points to give the end beer bitterness, flavour and aroma. The wort is then cooled to a certain temp (depending if using lager or ale yeast) and transferred to another vessel where the yeast is added and fermentation takes place. Whether it has improved or not depends on your taste. Cost and profit margins play a huge part in the production of all beers and the need to pay dividends to shareholders means that beer is often produced down to a price rather than up to a quality. The majority of people will say beer/lager has improved, and the reason they will say that is because breweries carry out massive amounts of market research and find out what people want. If they produce what the majority of people want, then those people will say there has been an improvement. One thing that has changed dramatically over the years is the strength of beer, and that is almost entirely because of the cost of brewing. Most don't mind the reduction in strength as drinking has become rather non PC in recent years. So, I would say some beer has improved. As Hamish pointed out, microbreweries are on the increase and because of that are creating their own competition. This has led to a programme of producing beer that people will appreciate and therefore buy. Another factor is Taxation. Microbreweries normally pay less Excise Duty on their product than the commercial brewers, which enables them to spend more on ingredients, and therefore brew a better quality beer. The downside to the proliferation of microbreweries is that there is a limit to the number of meaningful recipes you can come up with. In East Anglia alone there were 389 microbreweries at the end of 2009. Let's say them all brew 4 beers, that's 1,556 beers produced in East Anglia which leading to increasing complaints that the beers are all starting to taste the same. The market is different thesedays, I think there is a demand for pale ales now that wasn't there before. There is certainly more variety with so many micro breweries and regional brewery beers that are available nationally. But better?, maybe the micro brews by using just water, malt, hops and yeast have forced the bigger breweries to up their game. But I'm sure some of the biggest brewers with better marketing budgets still put plenty of other cheap crappy ingredients in their beer. References are from various brewing books and the Oxford companion to Beer, which is awesome. What is the difference between real ale and lager? The real main difference is the yeast. Ale is fermented with an "ale" (or top fermenting) yeast, which generally likes to be in a warmemer environmment (15-24c for example). While "lager" (or bottom fermenting) yeast likes a colder temp (6-13c) and does things more slowly. The name lager come from the German "lagern" which means "to store". Lagers tend to be lagered (or matured) for an extended period of time. What is the difference in the composition of real ale and lager? I suppose this is the same answer as the above. The yeast. You can use sazz hops in an ale and East Kent Goldings Hops in a lager, you can use whatever combination of malts (within reason) in either beer. The yeast decides the future of the beer! I enjoyed different beers and lagers when I started drinking 35+ years ago to those I enjoy now. I used to drink whatever was available in the pubs that I went to then, now I only go to pubs that sell the beers I want. This question really does involve most of the others, but I'll try to keep it straightforward and deal with one thing at a time. To help you. All beer is designed to a style, with parameters for Strength (Alcohol Content), Colour, Bitterness and a few others. Select a Lager style and click on it and you'll be taken to a page where the style for that particular beer is laid out. At the bottom of the page is a list like this: OG: 1.046 - 1.052 IBUs: 18 - 30 FG: 1.010 - 1.014 SRM: 10 - 16 ABV: 4.5 - 5.7% OG is Original Gravity and is given as a figure which takes into account the amount of sugars in the brew. The sugars are obtained by using malted grain which is subjected to a process called 'Mashing'. This process, allowing grains to steep for 90 minutes in water at 66°c, allows the enzymes within the grain to convert the starch to sugars. IBU is International Bittering Units and is a scale used to measure the bitterness of a beer. Bitterness is obtained from the hops by boiling them for 75 minutes to extract and isomerise the Alpha Acid, which is the bittering constituent. FG is the Final Gravity of the beer when the yeast used has converted most of the available sugars to alcohol. No yeast converts all the sugar and different yeasts have the ability to convert greater or less amounts, thereby giving the beer a slightly sweet or very bitter characteristic. SRM is the Colour of the beer. The SRM scale is an American scale of colur and the rest of the world uses EBC, which is roughly double the SRM (SRM 5 = EBC 10) ABV is Alcohol by Volume and is a measure of how strong the beer is. By looking at the chart I gave you and checking out several different beer styles, you'll start to see the differences. The rest of the questions you have asked all have different answers so it's not worth going into them here. I'll get on to another one later if I have time. You will also be able to find genuine stats from the brewing industry that will show trend changes in sales over the last 50 years etc to back up the findings.
