I have searched the site and have read Tony&#38;#39;s posts about his ginger beer with interest and seen several mentions of the recipe as being found in the recipe section...i cannot for the life of me find it tho? Could anyone help me out and send me a link to this recipe or tell me exactly where it is?&#60;br /&#62;
Also does anyone know if the alcohol content on the Coopers Ginger Beer mix can be boosted and how? According to my research the standard mix allows for 3.5% abv and i would like to aim more for the 6% abv mark.&#60;br /&#62;
Any help is much appreciated!!&#60;br /&#62;

Does anyone know anyone who works or who has worked in a brewery before? Reason I ask is iv been offered a position at a small micro brewery called red squirrel in Hemel hempstead as a trainee brewer. I&#38;#39;m a legionella risk assessor at the moment and really feeling a career change whilst iv still got a bit of youth left! I know it would be physically demanding and I&#38;#39;ll probably never wanna to smell home brew again let alone taste it. Just wondered if anyone knew of anyone who has experience in the field and whether they enjoy the job? Does anyone have any thoughts about this do u think it&#38;#39;s worth following up or would working in a brewery be a big no no?!?&#60;br /&#62;

&#60;p&#62;To introduce myself, this is my first time on this forum and have recently returned to brewing after having a go in the early 80&#38;#39;s, WOW hasn&#38;#39;t everything improved for the better. I have done about a dozen kits to get me back into the swing of things, moved onto extract kits and have done about half a dozen of them and I am really impressed with the results.&#60;/p&#62;
&#60;p&#62;For Christmas my wonderful family have purchased me the All Grain Starter Kit from Brew UK and I have also obtained some other basic equipment needed.   Eventually want to try the all grain method but think I better start with something more basic. <description>&#60;p&#62;Hi to all you fellow brewers, thought I&#38;#39;d better join you all in the great journey of beer making, I&#38;#39;ve drank plenty in my time and spent a small fortune on bottled conditioned ale. I thought it was about time to be brave and make me bloody own. Started in October and I&#38;#39;m on my 6th kit now, with pretty good results I must say. Only used the two can kits so far but I&#38;#39;m getting ready to try something different. I did have a conservatory back then but now it looks like a dodgey back street chemistry lab. The mrs has just ordered a pop up bed for me, so I can keep it warm on those colder nights. Might needs some tips and advise from you pro&#38;#39;s in the future . Kind regards Tebb.

<description>&#60;p&#62;OK, I know this post is going to be of limit interest as many on the forum are beer brewers and this sieve was designed for a specific problem we faced while transferring large quantities of wine from the primary buckets into carboys. In case anyone faces a similar problem I thought I&#38;#39;d make this post.&#60;/p&#62;
&#60;p&#62;Every few years the condition of my brew buckets necessitates their replacement, so if you too replace these buckets periodically, this is probably the best time to make the sieve. The sieve requires 3 or more (depending on your requirements) of the large Young&#38;#39;s 26 litre buckets. As far as I am aware these are the only ones I have found that will do the job.&#60;/p&#62;

&#60;p&#62;The reason these buckets are so well adapted to this sieve design is the reinforcing fins the bucket uses to reinforce the bucket  rim.&#60;/p&#62;

&#60;p&#62;To make this sieve you will need 3-4 Young&#38;#39;s 26 Litre Buckets and the following tools.&#60;/p&#62;
&#60;p&#62;a pad or hack saw (preferably with a blade for cutting metal)&#60;br /&#62;
A drill with a 3mm bit&#60;br /&#62;
Pencil or marker pen&#60;br /&#62;
a tape measure&#60;br /&#62;
A roll of masking or brown parcel tape (optional)&#60;br /&#62;
a stanley or craft knife&#60;br /&#62;
a sheet of fine grade sandpaper (optional)&#60;br /&#62;
a needle file (optional)&#60;/p&#62;
&#60;p&#62;Take the bucket in the best condition and drill around 30 holes in the bottom. Don&#38;#39;t drill too many as this may cause the sieve to split when fully loaded.&#60;/p&#62;

&#60;p&#62;If you drill from inside the bucket to the outside it is a little trickier to do but makes debarring much easier.&#60;/p&#62;
&#60;p&#62;Once you have all your holes drilled flip the bucket and use a knife or fine file to deburr the holes. Once you are happy that the bucket bottom is burr free it&#38;#39;s time to move onto making the collars.&#60;/p&#62;
&#60;p&#62;Take the bucket in the worst condition and measure down about 6cm below the fin edge of the bucket. Mark with pencil. Do this three or four more times.&#60;/p&#62;
&#60;p&#62;Now take the tape and run a piece right around the bucket so that it gives you a continuous line to cut around. Once you are happy with the tape line get cutting.&#60;/p&#62;
&#60;p&#62;You will end up with the bucket &#38;#39;collar&#38;#39;&#60;/p&#62;

&#60;p&#62;Personally I think two collars works just right, so sadly you&#38;#39;ll have to struggle through cutting up a second bucket. &#60;p&#62;So once you have the desired number of collars cut take the sand paper and deburr each one. You will probably need to use the knife too to get everything reasonably smooth.&#60;/p&#62;
&#60;p&#62;Take the last, untouched bucket, place it on the floor, drop the collars onto the rim and finally drop the sieve element inside. Done.&#60;/p&#62;

&#60;p&#62;This bucket sieve (using two collars) has a fill capacity of 26 litres with a liquid collection in the bottom bucket of more than 2 gallons.&#60;/p&#62;
&#60;p&#62;Using this bucket sieve I scoop all the solids out of the primary and just dump them in the sieve, adding to it as more material gets strained out of the primary and by the time I&#38;#39;ve finished processing the contents of the primary the bucket sieve has sat on the floor and collected me a couple more gallons of clean wine.&#60;/p&#62;

<description>&#60;p&#62;Hi, thought I&#38;#39;d finally subscribe to thank everyone who I&#38;#39;ve taken advice from over the last few months starting up the homebrewing again.&#60;br /&#62;
I dabbled years ago and it was always a hit or a miss. This time round, I tried a Wherry kit and BAM, back in business. That kit is excellent - after 4 weeks it tasted as good as a pub &#38;quot;guest ale&#38;quot;.&#60;br /&#62;
2nd attempt - Norfold Nog. Dabbled with Muscovado sugar for 2ndary fermentation and I was delighted with that too.&#60;br /&#62;
3rd attempt - Imperial Pilsner with Saflager 24 yeast. 3 weeks SF and even before it has some final clearing to go, it tastes super-clean and more-ish. I actually find it a perfect Pils type, no overpowering flavours and no sore head which I can get with some lagers which have been messed around with - even Becks.&#60;/p&#62;
&#60;p&#62;Anyway, thanks to those who gave me confidence when I thought I had overcooked the Nog, blew the bubbler out and it stank like cat&#38;#39;s piss - it resolved. And when I undercooked the Pils and it took 2 weeks to get under 1014 - I just added a bit of heat. &#60;/p&#62;

&#60;p&#62;Now I have retired I have a little time to concentrate on my may hobbies, I have always liked to drink, but now I have time to produce too.&#60;/p&#62;
&#60;p&#62;I have made wine for many years, but beer has not been top of my success list until recently.  I purchaced some equipment and pressed a stockpot into service for my first brew for many years. (Previous attempts failed misserably).&#60;/p&#62;

<description>&#60;p&#62;Was looking at doing an graham wheeler extract of London pride and esb and have seen that white labs do a similar strain yeast, thought it would be easier to make a starter with the white labs yeast by just tipping half the yeast from the tube and making a starter and then just putting the lid back on the tube and leaving it in the fridge till next week and doing the second brew, rather than going to the hassle of splitting the yeast in different cartons like u would do with wyeast, would this be ok doing this? And has anyone tried the white labs esb strain??

<description>&#60;p&#62;Hi guys,  I am another newbie who is finding this forum very informative and helpful. I have had a few goes at extract brewing with fair results however I could do with some advice.  My latest brew was an attempt at an HPA clone. Now the result so far hasn&#38;#39;t  come out to bad and has been in the barrel conditioning for 2 weeks so far. My  initial tasting though confirms that it hasn&#38;#39;t got the early sweetness you get on the palate.  Bittering is good though and it has a nice dry hoppy finish. Any ideas? Here&#38;#39;s what I did.&#60;/p&#62;
&#60;p&#62;2x Coopers Light malt extract brought to the boil.&#60;br /&#62;
Added 1oz Target hops 12.53% alpha, for 60 mins.&#60;br /&#62;
Made up brew to 23 L in the FV and pitched a packet of Muntons yeast when cooled.&#60;br /&#62;
Then added 1oz Styrian Goldings 4.5% alpha and allowed to ferment.&#60;br /&#62;
OG 1040.  FG 1015.&#60;/p&#62;

<description>&#60;p&#62;Got married 40yrs ago - got gazumped - no spare cash - so to ease the pain started with a can of Tom Caxton and a ton of sugar, 20yrs later had the Saudi experience with fermented grape juice ( very good in fact ) tried the fermented/distilled sugar water called  &#38;#39;Siddiqui&#38;#39; ( arabic for my friend ) which was very very potent but when mixed with tonic or coke you could swear it was Gin or Bacardi. Now I&#38;#39;m retarded or going that way !? with a bit of time on me hands and I really do like good beer. So it came to pass I was nudged/pushed to try a brew putdown by my son-inlaw... bloody good it was, Wherry Bitter it was, so Wherry Bitter it is that I&#38;#39;ve just bought with all the gear to putdown a keg before Christmas. &#60;p&#62;I had a brainwave to try homebrewing a couple of months ago – I like cooking and drinking so it seemed a sensible thing to do.  I have to say that reading this forum has been a massive help – I have questions on a daily basis and the answers are almost always somewhere to be found.&#60;/p&#62;
&#60;p&#62;I tried the Wherry kit first of all, and am nearly halfway through drinking the keg I brewed.  It was really simple and better than I expected.  My wife, who never usually drinks ale, is helping me drink it.  So kind. &#60;/p&#62;
&#60;p&#62;Then 10 days ago I tried an extract brew – Way to Amarillo.  It’s in the FV now and bubbled away very nicely for a couple of days and then slowed down to one or two blips per minute. I was a bit worried it had stalled but the hydro read 1.014 a couple of days ago so I reckon it&#38;#39;s nearly done - I&#38;#39;m going to leave it a full 2 weeks then bottle.  Anyway, assuming the WTA comes out OK I am looking for what extract brew to try next.  I like hoppy ales, wheat beers, dark beers, anything really – any thoughts anyone?  I am thinking it might be easiest and economical to stick to an extract kit like WTA.&#60;/p&#62;

Summer Ale nearly finished, Amarillo been in the bottle for 2 weeks and Rocker still fermenting.  Can&#38;#39;t believe the quality of these. Drinking a Wherry at the moment (made about 5 months ago),  It looks stunning -crystal clear but very definitely home brew so won&#38;#39;t be sad when the barrels finished.  Hoping to give AG a go after Xmas.  Have been on lots of internet fora over the years but have never come across one that is so friendly, informative and useful - should get some sort of award! is there anywhere to nominate for this sort of thing?

<description>&#60;p&#62;I have never home-brewed before so not sure how to add the sugar to condition the beer in the barrel. Surely if you just pour in it will sit in a heap on the bottom of the barrel? A book I am reading says dissolve the sugar first in a little warm bear from the FV and then add to the barrel and stir. Is this a good method?&#60;/p&#62;

<description>&#60;p&#62;Just tried my Amarillo after 3 weeks of conditioning, starting to taste good but still not quite there, I batched primed this before bottling with 80 grams of priming sugar. I left the bottles for 1 week at 20- 21 degrees. I then moved it to my brew fridge and kept them at 11-13 degrees, but after trying my brew it just doesnt have that much fizz to it, I was wondering if I could store my bottles at 20+ degrees again to bring them back to life, or would the change in temperature ruin the conditioning of the beer and the taste be spoilt?&#60;br /&#62;

<description>&#60;p&#62;Hello everyone I&#38;#39;m very new to this and I&#38;#39;m hoping there is a wine making knight in shining armour out there to help me.  Or is it too late.&#60;/p&#62;
&#60;p&#62;My first ever batch of wine(pear and Damson) made using a hedgerow wine kit is bubbling away but my second batch which is from home grown grapes seems to have stopped in it&#38;#39;s tracks!!!  &#60;/p&#62;
&#60;p&#62;I find the whole issue of how much sugar to add very confusing and probably got it wrong. I also made the huge mistake of forgetting to write down exactly how much I put in or the SG&#38;#39;s.  &#60;/p&#62;
&#60;p&#62;Fairly sure the juice was 1060, used campden tablet then 24hrs after put pectolase, nutrient and All purpose red wine yeast and approx. 500gms sugar(that was my best guess after reading lots of info I didn&#38;#39;t really understand in various books and forums! I should of asked sooner! (yeast said sufficient for 5 gallons I only had 1 gallon so I didn&#38;#39;t put it all in. Was that wrong? &#60;/p&#62;
&#60;p&#62;All seemed well for 6 days kept stirring the skins under.  Recipe said after 7 days strain out grapes.  Which was last night i did notice not so active.  Transfered to demijohn and air lock SG now 0998 wasn&#38;#39;t sure if should add more sugar and now no sign of bubbles at all!&#60;/p&#62;
&#60;p&#62;Is it down the sink or can it be saved?  It&#38;#39;s a good red wine colour just cloudy.  I still have the rest of the yeast in an airtight container.  Also have some grape concentrate.  &#60;/p&#62;

&#60;p&#62;Have been lurking reading this excellent forum and finally took the plunge and bought Wherry microbrewery last week.  Have brewed b4 at uni, after uni and after wife/b4 kids but back into it now for the 4th time.  Wherry gone in tonight (no mods)at 1036OG @ 26C.  Was a bit worried about pitching yeast at that temp despite leaving FV outside sealed with airlock for over an hour.  Sure it will be fine.  Look forward to sharing my experiences and more like it asking you all for help.&#60;/p&#62;

I&#38;#39;ve got 5 gallons of Coopers Brewmaster Pilsner on the go with the bottom fermenting yeast that came with it - should it be getting a shake to lift the yeast deposit to ferment it out more efficiently or will that just lift dead yeast and impair the flavour? I started homebrewing as a 14 year old with the objective of getting as strong a brew as possible. After many years of not brewing and now with an older (much) and maybe wiser head on my shoulders I&#38;#39;ve started brewing again but this time going after quality. Initially just following the instructions and recipes until I know a bit more. It&#38;#39;s good to have found an active forum.

Kind of new at this ..&#60;/p&#62;
&#60;p&#62;I piled everything into the primary fermenter on sunday as instucted.&#60;br /&#62;
Within 24 hours it was bubbling away really nicely.&#60;/p&#62;
&#60;p&#62;The instructions say 4 to 6 days.  Other posters say they want to leave it two weeks.&#60;/p&#62;
&#60;p&#62;It&#38;#39;s now 48 hours and the bubbles have all but stopped. &#60;/p&#62;
&#60;p&#62;Have I lost my first brew?&#60;/p&#62;

&#60;p&#62;Fuggles: 60 grams, 60 min boil&#60;br /&#62;
Challenger: 20 grams. 10 min boil&#60;/p&#62;
&#60;p&#62;1x cinnamon stick&#60;br /&#62;
3x large orange peel&#60;br /&#62;
100 grams of ginger&#60;br /&#62;
8 black peppercorns&#60;br /&#62;
1 vanilla pod&#60;br /&#62;
200 grams of honey&#60;/p&#62;
&#60;p&#62;Irish ale wyeast.&#60;/p&#62;
&#60;p&#62;23 Litre&#60;br /&#62;
IBU: 35&#60;br /&#62;
EBC: 174&#60;br /&#62;
ABV: 4.8%&#60;/p&#62;
&#60;p&#62;Steep grains 30 mins at 65-70 degrees in 8.0 litres. Bring to boil and add 1kg of extract. Boil fuggles for 50 mins then add the 20 grams of challenger for last 10. Add all the crimbo ingredients with 5 mins left of the boil. At end of boil add the 2kg remaining extract. What does anyone think, or do u reckon this would turn out rank?? Cheers guys

I decided on a Beaverdale Chiraz 30 bottle kit which is fermenting nicely . Never having much joy with extraction and poor results with kits made me hang up my hydrometer nearly forty years ago , but I&#38;#39;m back and this time I mean business  :-))   The quality and range of the kits has improved enormously and I have two questions .&#60;br /&#62;
 Can anyone recommend a White Wine kit . I would like to try something similar to the floral , crisp ,acid finish German wines .&#60;br /&#62;
With kits costing over £100 for 30 bottles does the higher end kit make a far superior wine ?&#60;br /&#62;

I had fv&#38;#39;s all over my house,i also made wine, i thought that i would never have to go to a pub again,the problem was,how to make it TASTE like beer or wine,there was no internet forums in those days, all imformation&#60;br /&#62;
came from the numerous magazines that suddenly appeared,but they could never cover the problems that are now answered in this forum,therefor we never new what we were doing wrong,but we did know that it did not taste like beer.&#60;br /&#62;
Most of my brews ended up, being thrown away,untill i execepted that i was never going to make it as good as a pint in local pub, so i decided to pack it all in.&#60;br /&#62;
But now i&#38;#39;v found this forum, and im back on the road again, with a werry at 1010 in the fv, so thanks guys for all your advice.  Popey

<description>&#60;p&#62;A friend has given me his old stuff and im just starting out, the gear is about 10 years old but have soaked it 24 hours to sterilise. changed the seals and taps on both fv and kingkeg. the fv has a tap at the bottom, can i use the tap to transfer the beer into the barrel when its ready or will it drag all the sediment with it this way? got a woodfordes great eatern in there for a week as we speak( all seems well, mate told me to put whiskey in the airlock and did so but seems odd to me but not knowing any better followed his advice. the new tap on the kingkeg seems to have a very small leak on it when tested with water(about 1 drip an hour, cant see where its dripping from but have seen stain on the floor, should i bin it and get another one or is there anything i can do to remedy this? dont want to transfer my ale into and find it leaks. any advice please..sorry for daft questions but i aint got a clue to this game yet..i get the feeling that im going to become addicted to homebrewing though..thanks Del.

Totally new to brewing; I can see from the posts that I should be aspiring to the &#38;#39;all grain&#38;#39; beers in time, but kits will have to do me for the time being till I get my beer wings.&#60;/p&#62;
&#60;p&#62;Have coopers IPA and British bitter on the bottle and keg.  Waiting with anticipation, though not expecting too much.  It&#38;#39;s been a good learning curve getting through the motions though.&#60;/p&#62;

All went really well except for when england scored a try in the rugby meaning me running to the t.v for 30 secs and in that time its almosrt like the stock pot knew i werent looking and decided to boil over a bit   &#38;lt;img src=&#38;quot;http://www.brewuk.co.uk/forum/bb-plugins/default/icon_rolleyes.gif&#38;quot; title=&#38;quot;:roll:&#38;quot; class=&#38;quot;bb_smilies&#38;quot; /&#38;gt;  not to bad though the mess was cleaned up before the missus had time to tip the brew in the garden! Really starting to enjoy these extract brews now and cant wait to do the GW london pride recipe. The only real minor worry now is the starting OG was 1.030 instead of 1.050!! when i took the reading at 23 degrees and before adding the yeast. I think this could be down to the whole wort mixture not being stirred properly before taking a representive sample and cos i was topping up the wort through the strainer and hops it wasnt really mixing the wort up nice so i think most of the goodness was still near the bottom of the fv. <description>&#60;p&#62;Hi there, I wanted to say this is such a great site! I read a load of different stuff before I took the plunge, but when it came to it, the one page instructions the came with the Road to Amarillo pack were exactly what I needed!&#60;/p&#62;
&#60;p&#62;I have a couple of questions, I hope someone can help me out..&#60;/p&#62;
&#60;p&#62;When I syphoned the Amarillo, I tried a pint (I had to!) and it was cloudy, which I expected, but there was a huge citrus hit in it, very grapefruitey to me. I&#38;#39;ve started drinking it in the last few days (after a week and a half in keg, it&#38;#39;s nearly clear, and I can&#38;#39;t really resist.. should I wait longer?) but most of that hit has gone. Will it come back as it clears more? At the moment it comes flying out of the key leaving a very frothy head, but I&#38;#39;m smelling a lot more malt than hops. Maybe I should have left some hops in the barrel - is that &#38;#39;dry hopping&#38;#39;?&#60;/p&#62;
&#60;p&#62;My other question is, does anyone have a recipe for a simple, &#38;#39;American craft style lager&#38;#39; - something like Brooklyn Beer or Sam Adams, but simple like the Road to Amarillo recipe? &#60;p&#62;Started making wine last year with kits and got hooked pretty quickly - all drinkable and gloriously cheap.&#60;/p&#62;
&#60;p&#62;Then leapt into the realms of country wines and it all went horribly wrong!  Disasterous dalliance with peach, plum and blackberry wines; all of which got stuck and refused to start again.  Slightly more success with apple wine: got the right reading with hydrometer, but it steadfastly refuses to clear.  Dandelion wine still in production, although also worryingly slow to clear.  My faith in country wines finally paid off with some highly drinkable elderflower champagne earlier on this year.&#60;/p&#62;
&#60;p&#62;Anyway, just got a new batch of freebie apples so thought I&#38;#39;d search for inspiration here.  Will post some questions and see what happens - thanks in advance for any help offered.

<description>&#60;p&#62;Been trying to get my head around this for the last couple of weeks now and the more i read older posts that people have written the less i understand it, basically i would like to change some of graham wheelers AG recipes into extract recipes, but i dont have a 20 litre plus stock pot or boiler to do the recipes how he says, i just have a standard 15 litre stockpot. I have read some of saracens extract comments that other people have asked about this subject and unfortunately i seem to be a bit &#38;quot;blonder&#38;quot; on this subject than others cos they seem to understand straight away. Saracen says to use an 8.0 litre boil with 1kg of DME and add the rest at the end of the boil, with the hops reduced from the normal recipe to suit the 1kg of DME. So how do i work out the correct hops? i have beer engine, does this mean when doing an extract recipe on beer engine i should always type in 8.0 ltres in the volume section rather than the full 23 litres final volume then just add the hops from then onwards until they equal the right ibu&#38;#39;s etc im looking for in the recipe? So basically never type 23 litres in the volume section because that aint the boil im looking for. &#60;p&#62;I&#38;#39;m brand new to this forum and am hoping to ask a few questions in due course. I started brewing about a year and a half ago after starting out with a London Bitter BruBox which was bought for me as a gift. I was pretty impressed but the 18 pints went in no time! So I decided to buy the excellent Woodfordes Wherry Microbrewery. It was susch good value I ordered another one straight away. So far I have only done 2 brews, first I did Wherry and soon after I tried Admirals Reserve. I must say I was absolutely blown away by both (and so were my mates, my dad my father in law and everyone else who happened to drop by!!!!). Well that was 4 or 5 months ago and I haven&#38;#39;t done anything since due to a crazy work schedule, however I am about to get back into business, I have just ordered a Woodfordes Nog kit and a Muntons Premium Smugglers Special Ale. Can&#38;#39;t wait until the postie brings them! Roll on the homebrew......

Years ago when i used to prime bottles i just put a level teaspoon of sugar or enhancer straight from packet and tipped it down funnel straight to bottom of bottle as advised by Cliff at BeersUnlimited Westcliff.&#60;br /&#62;
Never had a problem with this and thought it be less messy than disolving sugar in water and then adding to bottles.&#60;br /&#62;
Does this still seem ok with you or is there a tried and trusted method that i may find easier or get better results from?&#60;br /&#62;
Was also thinking of adding 1 and half carbonation drops to the bottle as well.

So everything is set up, the wyeast Pilsner lager is expanding nicely in my boiler cupboard and my hops and malt extract is all lined up nicely on my kitchen counter like a kid with their christmas presents. And in fact today I ordered a few more bits to add to my booze making so thought I should really say hello before I start bombarding the forum with questions and requests for advice. &#60;p&#62;I&#38;#39;ve made ginger beer a few times before using very basic recipe but this has always been in a 5 litre water bottle with no air lock and the need to release the lid at least once a day to stop me having a ginger beer stained ceiling. So of course the first thing I&#38;#39;ve started on once my kit arrived was a vat of ginger beer. Once thats done I&#38;#39;ll get onto the wherry but I wanted to have a drink ready soon and the ginger only takes about a week. I&#38;#39;m really looking forwards to making some fruit based drinks and the turbo cider recipe on this forum has got me thinking too...&#60;/p&#62;
&#60;p&#62;Anyway I&#38;#39;ll try to keep the stupid questions to a minimum and hopefully I&#38;#39;ll have some advice I can pass on at some point...&#60;/p&#62;

I&#38;#39;m hoping someone can clarify the priming process for me when bottling....I&#38;#39;m a little confused. I&#38;#39;m on my first IPA brew kit and will be looking to bottle in about a week’s time from now. I understand that adding half a teaspoon of sugar per pint to the beer prior to bottling will carbonate and condition the beer? Will this be a lot of carbonation, as I don&#38;#39;t particularly want fizz in my ale when drinking or will it be removed from the beer when the bottles are opened....or have I got the wrong end of the stick altogether?&#60;/p&#62;

&#60;p&#62;new to the forum but hardly new to brewing!&#60;/p&#62;
&#60;p&#62;a bit about me.... home brewing since i was 18 so 14years now, mainly ale but will try anything have done cider, lagers, stout, wines all sorts! i do enjoy an experimental brew&#60;/p&#62;
&#60;p&#62;mainly use brew kits then add enhancers/different flavours additives and that but have brewed from scratch a few times and now grow my own fuggles and golding hops.&#60;/p&#62;
&#60;p&#62;I usually bottle all my beer but have recently rediscovered my 2 pressure barrels in the back of the shed so will be making use of them this year, when i find the correct seal kit!&#60;/p&#62;
&#60;p&#62;ive always just bodged around with my brewing but will now start asking questions about how to do it properly!&#60;/p&#62;

&#60;p&#62;I made country wine many years ago from all the usual ingredients, blackberries elderberries, etc. but stopped when wine became cheaper in the eighties. On retirement I took on an allotment and planted a dozen Vines, six each of Müeller Thurgau and Seyval. With a bit of luck I managed to obtain 6 gallons of wine last&#60;em&#62; Vendage&#60;/em&#62; which should be drinkable next year. I also brewed up a couple of gallons of Cider from windfalls.&#60;br /&#62;

&#60;p&#62;Have been lurking here for a while as a guest and have picked up lots o useful info along the way.  Have been brewing for about 2 years now (although did a bit quite a few years ago ;-)) Started off as a means to help my teenage son understand organic chemistry for GCSE and it just grew from there.  Prolly done about 40 kits since then and only had one that was rank.&#60;/p&#62;
&#60;p&#62;Anyhoo... it&#38;#39;s been a busy day today... bottled 40 pints of Blackrock cider this morning and then spent the rest of the day brewing an Amarillo swiftly followed by a Summer  Ale.  Thanks Greg... the packs were excellent and real easy to follow.  Smelt awesome (although my daughter wrinkled her nose up when she got in after her GCSE exam this afternoon... Wimmin... can&#38;#39;t live with &#38;#39;em, can&#38;#39;t kill &#38;#39;em and bury &#38;#39;em in the garden.&#60;/p&#62;
&#60;p&#62;So... having now been seduced by the whole bubbly pan of goodies on the stove thing I think my son and I are slipping further into the shadows towards the dark side... Now, where&#38;#39;s that winning lottery ticket I need to convert our shed into a microbrewery?&#60;/p&#62;
&#60;p&#62;Oh, and how does one add a &#38;#39;drinking, fermenting, planning etc thingy to to bottom of a post?&#60;/p&#62;
&#60;p&#62;Drinking: A take on Blackrock Cider, St Peter&#38;#39;s Ruby, Woody&#38;#39;s Great Eastern, Coopers Australian.&#60;br /&#62;

&#60;p&#62;I have been looking at home brewing for a few years now and Real Ale is my drink of choice. Followed closely by rum. Finally taken the plunge and like many opted for a Wherry Kit to get em going.&#60;/p&#62;
&#60;p&#62;Selection of my favorite tipples include - Hog&#38;#39;s Back TEA (Local), Surrey Hills Shere Drop (Another Local), Adnam&#38;#39;s Broadside, Sharp&#38;#39;s Doom Bar. I could go on (Tanglefoot, Old Peculier)&#60;/p&#62;

<description>&#60;p&#62;evening all, was going to brew a lager next month and i want to keep the stock for a couple of months. I&#38;#39;m really liking the look of the mini kegs but wondering if any of u guys have used them before? In terms of conditioning lager i know its better to bottle than barrel to keep the fizz, and im just wondering whether a mini keg would be able to contain a fizzier lager than barrel because i don&#38;#39;t really fancy the hassle of cleaning and sterilising 40 bottles everytime i use them! how good are mini kegs for lager? &#60;/p&#62;

<description>&#60;p&#62;I live in Australia and I am going to try and brew some real ale (not the fizzy larger they sell down here) The only kegs I can find are &#38;#39;Cornelius kegs&#38;#39;. Can these be used for real ale? I understand that you have to put gas in them - will that not make my ale fizzy? Going to attempt a Timothy Taylor so don&#38;#39;t want it fizzy.&#60;/p&#62;

&#60;p&#62;still reading the great advice from the forum that everyone gives have learnt so much already that i didnt think i would, at the moment cos im still an amateur i have done 2 kits, (whilst im trying to feel my way round the whole different yeasts and hop options and what they do!),  hopefully going on to extract before christmas. I want to add a little bit of something to my kits until then, just finished a ruby red and as nice as it was i felt it was missing something, i see people saying &#38;#39;dry hopping&#38;#39; spices things up a bit. What exactly is dry hopping and how does it work? what stage of the brewing process do i start dry hopping, making the wort of in the fermenter? Any other tips anyone else can give to adding more to kits.&#60;/p&#62;

<description>&#60;p&#62;just finished my st peters ruby red and has been conditioning in the barrel for a week now, still a bit cloudy though, but the flavours are starting to come together now compared to last week  :P. Now i have just stuck my woodfordes great eastern ale in the fermenting bucket and cant wait for that golden colour to come thru! i heard woodfordes did good kits any reviews on the great eastern? i think my next project will be either amarillo or summer ale, i am also on the verge of a brew fridge coming in to the garage next week! just waiting for the highly recommended atc 800 to arrive at my door, its all looking up! just gotta make sure i keep the missus sweet. I have just ordered the st peters brewing starter kit and i see alot of recommendations about using spraymalt instead of sugar before transferring to the barrel, i will probably sound well naive now  :oops:, but there are so many different types of spraymalt, which would be suited best for the st peters ruby red??&#60;/p&#62;

<description>&#60;p&#62;Hi everyone, having reached the wrong side of 50 and been bought a ginger beer kit for Christmas (which has turned out nicely for a soft drink), I thought I&#38;#39;d get in on the home brewing lark. My Avatar reflects the liquid I was weaned on all those years ago. I remember when I started drinking I could get very merry indeed on £1.00 (5 pints), and I am pleased to say that due to my age and lack of practice I can still do so (a quarter of a pint!).&#60;/p&#62;
&#60;p&#62;Ordered the Wherry microbrewery yesterday and boyish impatience has already set in. How I will be able to leave a keg for four weeks is anybody&#38;#39;s guess.&#60;/p&#62;

&#60;p&#62;My other half brews a lot of the ales from Brew UK, and I have decided to get in on the act and try the Elderflower Champagne.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve followed the recipe that came with the kit and I&#38;#39;m ready now to filter and bottle up.  It&#38;#39;s had two weeks fermenting and I&#38;#39;ve used the dried flowers not fresh.  It&#38;#39;s been bubbling happily for the past 2 weeks.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve just taken a quick peek as I was going to bottle it up, but there is mould like lumps on the surface.  Is this normal and in fact not mould but possibly the yeast reacting with the flowers and nothing to worry about? I thought I&#38;#39;d got all the insects off the flower heads, I rinsed each one really thoroughly but when I put them in the brewing barrel a few floated to the top, is this going to be a problem? Also I wasn&#38;#39;t sure if I should take the stalks off the flowers? I&#38;#39;ve left them on.&#60;br /&#62;
The recipe that came with the kit says to leave to ferment for two weeks, some other recipes advise stirring the mix regularly&#60;br /&#62;
Any advice welcome, I hope I haven&#38;#39;t ruined my first attempt at home brew&#60;br /&#62;

&#60;p&#62;Just set up the Micro Brewery kit with the St Peter&#38;#39;s Ruby Ale and have to say very impressed so far.&#60;/p&#62;
&#60;p&#62;Delivery just in time for the bank holiday weekend. All set up and really brought some memories of my dad doing his real ale. He can&#38;#39;t wait to get one of his own on the go after a 20 year gap!&#60;/p&#62;
&#60;p&#62;The fermentation bin is set up and down in the cellar. At the bottom end of the recommended temp on the box (17o) for the fermenation but hope things are just a bit cold after the night.&#60;/p&#62;
&#60;p&#62;One question - after measuring the gravity using the trial jar and hydrometer, should you clean and sterilise both now, or clean for the meantime, and then sterilse before the next use?&#60;/p&#62;

I have been making my own fruit wines for a couple of years now and last year also got into brewing beer and cider from kits.&#60;br /&#62;
This weekend I plan to try a mash kit for the first time and have brought the Summer Ale recipe.&#60;br /&#62;
Later this year we plan to make cider from apples - free access to an unwanted crop - so my birthday present is a crusher and press!&#60;br /&#62;
I have often used this forum for tips and ideas so I thought it was time to join - hope you guys don&#38;#39;t mind a girl joining your gang!&#60;/p&#62;

It has taken me a year to get round to brewing my first brew (got the equipment for my 40th...shat it and waited for ages), but am sitting here supping a fine Way to Amirillo that I brewed up several weeks back and was ready yesterday. A fine beer, am dead chuffed with myself at being able to brew up a good un and not to contaminate it with my various flora. And the taste!!! Equally as good as many many beers that I have ben forkign out sveeral quid on ever week....so all good!&#60;/p&#62;
&#60;p&#62;Anyway, boiled up my first summer ale on Sunday and got way too brave and added coriander seed to the boil and some lime leaves to the end of it. It&#38;#39;s in its FV and smelling fine. Am converted; this home brewing lark is the business...hope th summer al comes out good&#60;/p&#62;
&#60;p&#62;Will hopefully &#38;quot;keep the heid&#38;quot; over the next few beers and follow the recipes so that I have something to comapre my experiments to; looking forward to joining in the forums too&#60;/p&#62;

Have Muntons Connoisseur&#38;#39;s Continental Lager fermenting now, but having read up on this forum am interested in trying some extract brewing.  The Amarillo recipe seems to be quite popular so will probably give that a go.

I have just started drinking my St Peters Ruby Red Ale 40 pt and I am loving it.&#60;br /&#62;
I have a Coopers Australian Lager 40 Pts in the FV at the moment and I am planning&#60;br /&#62;
my next purchase of lager, any recommendations would be welcome.&#60;/p&#62;
&#60;p&#62;My lager will not last very long as I have a couple of sons that will be helping me&#60;br /&#62;
drink it. So I will have lager in the FV all of the time. So my question is would I&#60;br /&#62;
be able to use the 2 gallon barrels for lager or should I stick to bottles? Could I&#60;br /&#62;
use the PET Bottles 1 Litre Clear Carton for lager and for bitter?&#60;/p&#62;

&#60;p&#62;I just joined the forum tonight as I have my very first brew just about ready to go. I can&#38;#39;t wait.&#60;/p&#62;
&#60;p&#62;My brew has been fermenting now for 11 days (Youngs Harvest Ale - not sure if its any good. The wife baought it with the kit). Instructions said 5-10 days. The reason why I&#38;#39;m leaving it longer is that I&#38;#39;m waiting on a delivery from BrewUk for another 25Ltr bin with a tap and little brewer along with coopers carbonation drops (order shipped 15/12). I figured it would be easier to bottle if I syphoned the first fermentation batch through a muslin cloth and funnel (to try and remove any sediment caught up) into my second bin. From there I could bottle it through the tap and little bottler. All in all just to make the whole process tidier.&#60;/p&#62;
&#60;p&#62;The brew has been kept at a constant temperature (20 - 22 degrees C) for the full time. It now has a SG of 1.006.&#60;/p&#62;
&#60;p&#62;Question is: would it be OK to leave it for another few days until my other equipment arrives or do I need to bottle it now?&#60;/p&#62;

Just a quick question if I may: If I keg the beer (more than likely for the sake of ease) can I then bottle some if I want to, straight out of the keg? Just a thought as I may well need to bottle some to keep cool as the days become warmer. Any tips here would be good!&#60;/p&#62;

&#60;p&#62;A little about my brewing background..&#60;/p&#62;
&#60;p&#62;I&#38;#39;d always wanted  brew, then around a year and a half ago I dec ided to give it a try, a Cooper&#38;#39;s Stout kit.&#60;br /&#62;
Result wasn&#38;#39;t great, but drinkable.&#60;/p&#62;
&#60;p&#62;I then tried a few different kits, IPA, Real Ale, Nut Brown Ale, etc, with various degrees of success. During this time I moved from secondary fermenting in a plastic keg, to bottle conditioning, which saw my beer improve a lot! My latest venture is Cooper&#38;#39;s Irish Stout, inluding my first ever go at dried malt extracts. I tried a bottle last night, and it&#38;#39;s not there yet, but I think a bit more time in the bottle and she&#38;#39;ll be an improvement on last time  &#38;lt;img src=&#38;quot;http://www.brewuk.co.uk/forum/bb-plugins/default/icon_smile.gif&#38;quot; title=&#38;quot;:)&#38;quot; class=&#38;quot;bb_smilies&#38;quot; /&#38;gt; &#60;/p&#62;

Used to brew from kits 30 years ago and thought I might give it a go again. Just&#60;br /&#62;
bought the St Peters Microbrewery Premium kit and have had it in the FV for four&#60;br /&#62;
days now, can&#38;#39;t wait till it&#38;#39;s ready as I love my drink.&#60;/p&#62;
&#60;p&#62;Just ordered my second FV, barrel and Young&#38;#39;s Harvest Yorkshire Bitter 40pt and other&#60;br /&#62;
bits and bobs.&#60;/p&#62;
&#60;p&#62;Will probably stick with the kits till I get familiar with home brew and then move&#60;br /&#62;
on to the more difficult areas of home brewing.&#60;/p&#62;

&#60;p&#62;Another newbie here.. Just a quick question about the quantities in home cooked kits.  I&#38;#39;ve managed a decent basic Wherry brew kit and wanted to look at venturing into cooking up some malt and using our own hops (hopefully this summer if we get a decent harvest).  I&#38;#39;ve done a Google search on this question, but never really came up with good enough answers.&#60;/p&#62;
&#60;p&#62;So the question is... Is creating malt alot like &#38;#39;basic cookery&#38;#39;? - By that, I mean can we change the percentage of ingredients and get the same results?   I.e. can I divide everything by 4 on an existing 40 pint recipe and get approx 10 pints? Or will the brew come out noticeably different?  &#60;/p&#62;
&#60;p&#62;If this basic division is true, how does time factor into the cooking and fermentation processes? Do they remain the same? Or do they need altering as well? For now, I just mean from an existing recipe, rather than altering bitterness properties etc.&#60;/p&#62;
&#60;p&#62;I was going to start this idea with the Summer-Ale recipe from the website/shop as a proof of concept to cook up smaller batches. This way, I can eventually start mixing up my own ingredients and have a selection of beers, before I look to make larger quantities.&#60;/p&#62;
&#60;p&#62;I know this probably sounds like a stupid basic question, but I wanted to start experimenting with smaller batches, rather than waiting and producing 40 pints of pure yuck!...&#60;/p&#62;

&#60;p&#62;I&#38;#39;m just about to take the plunge into this wonderful world and I just have a quick question re secondary fermentation. I&#38;#39;ve bought a Coopers English Bitter starter kit and it comes with the standard Coopers carbonation drops. It recommends to put two drops into each 750mL bottle however I am planning to use 500mL glass bottles that I&#38;#39;ve been collecting for my maiden brew. Obviously I&#38;#39;d prefer not to have 46 exploding glass bottles on my hands so I&#38;#39;m thinking two drops will be too much, but one drop would be too little. &#60;/p&#62;
&#60;p&#62;Would anybody have any advice as to how much regular household sugar I should put into each bottle... or is this a stupid idea?&#60;/p&#62;

I have just about finished drinking my first barrel of Wherry, it’s to good for words.&#60;br /&#62;
The second barrel of wherry will be ready in about one week.&#60;br /&#62;
And all being well, my third barrel will be delivered tomorrow.&#60;br /&#62;
I have a question for one of you experts out there. The Wherry instructions say to add half a teaspoon of sugar per pint that equals about 100grams. Reading the Forum it has been suggested that 80 grams should be added. What effects will the amounts of sugar have on the beer (my first one did take six weeks to clear)?&#60;br /&#62;

Well, German beer is good as far as it goes, but it&#38;#39;s all extremely &#38;#39;samey&#38;#39;... you&#38;#39;re basically restricted to either lager or wheat beer (or the local &#38;#39;Kölsch&#38;#39; that they brew around here, but that is, basically, still lager). And I really miss my bitters and pale ales.&#60;/p&#62;
&#60;p&#62;So, the thought came to me that I would brew my own... won&#38;#39;t save any money doing it, though, a 500 ml can of extremely drinkable pilsener costs 29 cents at my local supermarket! I just really miss the variety of British beer.&#60;/p&#62;
&#60;p&#62;So I&#38;#39;ll probably be tootling around in the beer kit section, asking lots of N00b questions...&#60;/p&#62;

&#60;p&#62;Justto let you know what I&#38;#39;m up to well I&#38;#39;ve currently got some elderberry wine maturing in 2 demijohns, a cherry wine kit (my wife&#38;#39;s idea!) about to be bottled, and I&#38;#39;m drinking St Peters IPA and Woodfordes Great Eastern Ale which was my last brew. &#60;/p&#62;
&#60;p&#62;The St Peters is great but I think I lost count when adding water to the Great Eastern as it&#38;#39;s not very strong and is pretty watery. &#60;p&#62;Enjoyed making &#38;#39;The Way To Amarillo&#38;#39; at the weekend there, had a lovely frothy head, but have noticed today (day 3 in the fermenting bin) that the froth has disappeared and there is what I would describe as a cluster of tan coloured scum about 5mm in diameter floating all over the top which I haven&#38;#39;t seen before, everything was sterilized for the prep work, the prep went without a hitch, good colour, nice aroma, excellent froth, yeast added at 18oC, fermented perfectly afetr 24hrs, a nice aroma, plenty of bubbling through the airlock, but now a completely different story - no froth, scum on surface(had a little check as I do with all my brews) no bubbles through the airlock - cant tell about the aroma as I have a blocked nose today after getting wet at work today  :(,  :lol:, any ideas why this is and also will it still be ok or do I have to skim the top off? Any advise will be greatly recieved.

&#60;p&#62;I am just returning to home-brewing/winemaking after a break of over 20 years (why on earth did I stop?).&#60;/p&#62;
&#60;p&#62;I started with my first lager kit when I was still in school, and over the years have made a variety of lagers and bitters/ales, I&#38;#39;ve even had a go at &#60;blockquote&#62;all-grain&#60;/blockquote&#62; recipes such as Old Peculiar with some success.&#60;/p&#62;
&#60;p&#62;In the past I have made many types of wine, blackberry, elderberry, rhubarb, rose-hip and elderflower (champagne).&#60;/p&#62;
&#60;p&#62;I&#38;#39;m currently making a couple of batches of cider, a Pinot Grigio (Cantina), white wine from locally grow grapes, and ginger beer.&#60;/p&#62;

Apologies first, been using this forum for about a month and did not realise that there was a guestbook.  Started brewing a month ago, brewed a wherry (ultra nice), thats been well and truly drunk, now drinking a Youngs harvest Scottish ale and a Geordie lager (substituted spray malt and brewers sugar for normal sugar).  Both brews are lovely, although I did have my doubts about the scottish ale, it turned on Thursday into an extremely quaffable beer.  Thats me now hooked on brewing and I couldnt be happier, going to move onto extract in the new year and then I can work on the wife to release the purse strings to go onto AG.&#60;br /&#62;

&#60;p&#62;I started brewing a couple of different wines a year (2 demijohns of each) 2 years ago.  having finaly moved&#60;br /&#62;
out of my parents in march at the age of 30 I&#38;#39;ve added 3 pressure barrels to my kit (still thinking i need another 1 or 2 :lol:) and have been brewing my own ales, only from kits so far.  just started to try the double&#60;br /&#62;
can kits after a few singles and I must say they&#38;#39;re worth the extra money.  the 1 single can kit that I really enjoyed was &#38;quot;tom caxtons real ale&#38;quot;.&#60;/p&#62;
&#60;p&#62;The only problem I&#38;#39;m finding with brewing so far is leaving the beer conditioning in the PB for 2 months&#60;br /&#62;

&#60;p&#62;I was drawn to these dark arts very innocently when a friend was cutting back the elder tree in his garden this May and it seemed a shame to waste the heads, so I got a rough and ready elderflower champagne on the go in the washing up bowl with some bread yeast (sorry - blame River Cottage).  Which got me thinking maybe I should get some gear and try some real stuff...&#60;/p&#62;
&#60;p&#62;Now got a Woodfordes Great Eastern conditioning in the barrel and just ordered a pilsener as the FV is sitting forlorn and empty (though having since read the forums maybe that was a mistake...)&#60;/p&#62;

&#60;p&#62;Ive decided to go with the Woodfordes Microbrewery Premium 40 Pint Starter Set.Im already condisdering picking up another Fv and barrel so i can have more than one on the go but dont know if i should just do the one for now.Dont wanna jump the gun&#60;/p&#62;
&#60;p&#62;My only concern i got as i will be brewing in the garage is the temp.I was considering the Heater Pad - 25 Litre Ferment bin on the site.Sorry to sound rather stupid but the kit comes with a 33lt bin does that mean it will not get the heat require from that pad.&#60;/p&#62;

Well £2.50+ for a pint crosses the line as far as i am concerned.I know there are cheaper pints in other pubs around here, but as i say, they crossed the line. That was Jan 2nd and its been homebrew all the way. Aint been in a pub since. (£3.50 for a Carling here)

&#60;p&#62;Am very new to home brewing.  Have successfully made up 3 kits (Wherry, Nelson&#38;#39;s Revenge and Smuggler&#38;#39;s SPA) although from reading the posts here I have a long way to go before I can started on extract / AG and such like.  As someone who enjoys making a big mess, the quasi-chemical nature of cooking, and drinking gallons of real ale, I can&#38;#39;t believe it has taken me so long to start! &#60;/p&#62;

&#60;p&#62;Just bottled my first Wherry this evening after my wife bought me a home brewing kit and have to say I&#38;#39;ve enjoyed every minute of it. My only complaint is that I think I got a bit too excited and could have let it ferment for another 24 hours or so, and there is a bit of oxidation - not spoilt it but I&#38;#39;m just a bit picky!&#60;/p&#62;
&#60;p&#62;My last brush with brewing was in 2000 when I used to be a Brewer at Ushers brewery before it was closed and was made redundant - and gave the whole thing up at the time - until now!&#60;/p&#62;
&#60;p&#62;Anyway - any other brew kits I should check out before I start along the grain route???&#60;/p&#62;

<description>&#60;p&#62;Hi to all. Started homebrew about 3 months ago. Am using wine kits as they seem an easy starter to gain some basic knowledge. Have finished the following kits. &#60;/p&#62;
&#60;p&#62;Beaverdale - 6 bottle Pinot Grigio - very good&#60;br /&#62;
Beaverdale - 30 bottle Pinot Grigio - okay but had problems with the finings. Cloudy, without bits but drinkable.&#60;br /&#62;
Beaverdale - 6 bottle Chablis Blush - excellent (for the wife)&#60;br /&#62;
Carafe 21  - 30 bottle medium sweet. Cheap and cheerful. Degassing at the moment. Smells &#38;#39;ok&#38;#39; so will post the outcome.&#60;/p&#62;
&#60;p&#62;I did invest in a tray heater which keeps a constant 25 degrees C.&#60;/p&#62;
&#60;p&#62;Basics I have learnt so far.&#60;/p&#62;
&#60;p&#62;1. Invest in a decent lever corker. Those cheap hand corkers wear you out after 30 corks and leave the edges of the cork showing over the rim.&#60;br /&#62;
2. Get hold of a plastic milk crate. They are ideal for holding the bottles. especially for corking.&#60;br /&#62;
3. Go for a no-rinse sanatizer - see the forum on videne&#60;br /&#62;
4. Invest in a FV with a tap. It helps speed up racking.&#60;/p&#62;
&#60;p&#62;Anyways, good luck to you all...

It has now been 6 days and the yeast is not working - is my brew ruined or can it be salvaged some way. I now have it in a warmer place but it&#38;#39;s still only at 18c at least until I get my heater mat delivered.
