Great site & very informative, i've just moved to the US after living in NZ for the last 4 years (originally from UK tho) and find myself now deprived of both the shop bought non alcoholic ginger beer AND my good kiwi friends home brew Coopers derived alcoholic ginger beer Fortunately I have just been given a brewing kit by my in laws and would like to start of course, with an alcoholic Ginger Beer. I have searched the site and have read Tony's posts about his ginger beer with interest and seen several mentions of the recipe as being found in the recipe section...i cannot for the life of me find it tho? Could anyone help me out and send me a link to this recipe or tell me exactly where it is?
Also does anyone know if the alcohol content on the Coopers Ginger Beer mix can be boosted and how? According to my research the standard mix allows for 3.5% abv and i would like to aim more for the 6% abv mark.
Any help is much appreciated!!
Cheers
Kris

I've worked in and around Greene King brewery on and off for 15 years, but mostly in the Transport dept. Normally, a brewery apprenticship is 5 years, so how does what they are offering compare?
Microbrewery is a very flexible term. This looks like quite big one, with 15 beers listed and 7.5 years established. All I can really say is that commercial brewing is nothing like home brewing. There are budgetary pressures and logistics to take into account. The other consideration is job security. The statistics for microbrewery closures make sobering reading, although it tends to be the small ones that go. In all, I'd say research them a bit, try to talk to people who work there, or who have worked there and left.
If it's something that's going to sustain your interest, go for it. It's a big field and there is an awful lot to learn, and it's more than a job. It needs to be looked at as a career.

Hi guys,
Does anyone know anyone who works or who has worked in a brewery before? Reason I ask is iv been offered a position at a small micro brewery called red squirrel in Hemel hempstead as a trainee brewer. I'm a legionella risk assessor at the moment and really feeling a career change whilst iv still got a bit of youth left! I know it would be physically demanding and I'll probably never wanna to smell home brew again let alone taste it. Just wondered if anyone knew of anyone who has experience in the field and whether they enjoy the job? Does anyone have any thoughts about this do u think it's worth following up or would working in a brewery be a big no no?!?
Cheers all

Batch sparging is the system I use. I don't think it makes any real difference, but it's easier than the alternatives.
Summer Lightning is a very popular kit. If you have any queries, just post a question. There's usually someone around to help.

Thank you for the welcome.
I have chose to do the Hop Back Summer Lightning kit.
I have gone through the AG process in my head using various internet sources and am fairly confident with what is required, I will have a test run just to be sure.
The only thing I can't decide on is which way to sparge, I am drawn to batch sparging.

Hi everyone,

To introduce myself, this is my first time on this forum and have recently returned to brewing after having a go in the early 80's, WOW hasn't everything improved for the better. I have done about a dozen kits to get me back into the swing of things, moved onto extract kits and have done about half a dozen of them and I am really impressed with the results.

For Christmas my wonderful family have purchased me the All Grain Starter Kit from Brew UK and I have also obtained some other basic equipment needed. I'm know ready for a test run and then I shall have a go at my first all grain kit, can't wait

Nath. What did you make of the Poacher tweak?
It was given to me by a very experienced brewer.
Make a Wherry kit. Cut up and de-stone 2.0 kg of Plums. Add these and 25gms of Liquorice (Pontefract Cakes) to the FV while the beer ferments. Proceed as normal thereafter.
I've got half a Wherry kit somewhere from 2 years back. I'll give it a go.

Hi guys,
I was lucky enough to grab a stir plate from one of the labs i drop samples off at currently got my starter going now for my ESB brew day on Saturday. So I see alot of u guys using stir plates and wondered how long do you stir the starter for, for hours on end or just 15 minutes every now and then.

Cheers all

Sorry, Coby.
That starter kit gives you everything you need for kit brewing, and if you want to move on to extract brewing, all you need is a big stock pot. Wherry is a good base to experiment with as well. You can tinker with it by adding different hops during the fermentation to give different aromas and influence the taste. All the info is on here.
Happy Brewing

Thanks for the friendly welcome fellas - think I'll be taking Saracen's advice and starting with the Woodfordes kit before I take on anything more technical.

Thanks dude, just worrying a bit really as all my other brews bubbled like mad. Thanks for putting me at ease as I'm really looking forward to this one and this is the first time I've ever stirred the yeast in, I normally just pitch it on the top.

Good evening lads, just a quick question, if anybody's out there? Anybody done the munitions docklands porter kit? Only asking because this one seems to be a very slow starter. Any idea what's goin on? All my other kits started fermenting after 8-12 hours. This porter does have signs of a head in the fermenter, is this normal? Look forward to ur reply

Hello there! I am really interested to start brewing as well though I am still about 2 weeks away from finally getting a crack at it. I would want to try and infuse my own flavors at it. I am very keen to try how Mango will very well mix with it.

Well hello there! I would like to welcome you to the forum though I am new here as well. For me, it all started when I was able to visit a brewing company through a trip we joined en route to Germany. It was really great and that got me thinking since. I then took a look at a lot of options online and have very well traded with a lot of information with people who are in the same line of interest.

I've been brewing ruby red, nelsons revenge, wherry, ole home wrecker, yorkshire bitter and in the bucket now is a muntons docklands porter which has been bloody slow in starting.
I had to get a second fermenter because I couldn't wait to do another kit...' best one for me is the nelsons revenge, only got about 5pints left. Got to get off to work now, how I love Monday's. Smell ya laters.

Off the dog posts here but today me and the kids have visited a decommissioned nuclear bunker at Kelvedon Hatch in Brentwood Essex. Great place looks like a bungalow from the outside then you go in and all seems normal till you get out the first door and you go down this long tunnel taking you below ground then you can work your way up 2 levels. Really fascinating place.

I thought it was a young dog. With your experience you should know a good one. Was the school at RAF Debden, I think in Essex?
I've always been a bit wary of rescue dogs. My sister has had a couple of bad experiences. I always think they must be there for a reason. My dog left her mum at 6 weeks and I don't think she's left my side since. I didn't pick the dog. I simply sat in the pen with all the pups and waited for one to choose me. I find it works well.

I used to have one of those, Seamus. Poor old girl had a stroke while I was down the pub. Came home to find her going round and round in circles with her head on the floor. Really sad.

Welcome, I stick with the 2 tin kits for ease,i have done the extract(amarillo) ,which is great as well. Both great taste and fantastic flavour.Would like to try the AG but seems the set up is complicated (going by some of the pictures on here). Some dry hopping next for me.

Hi to all you fellow brewers, thought I'd better join you all in the great journey of beer making, I've drank plenty in my time and spent a small fortune on bottled conditioned ale. I thought it was about time to be brave and make me bloody own. Started in October and I'm on my 6th kit now, with pretty good results I must say. Only used the two can kits so far but I'm getting ready to try something different. I did have a conservatory back then but now it looks like a dodgey back street chemistry lab. The mrs has just ordered a pop up bed for me, so I can keep it warm on those colder nights. Might needs some tips and advise from you pro's in the future . Kind regards Tebb.

Hi Corby.
Start here: http://www.brewuk.co.uk/store/micro/complete-woodfordes-starter-equipment-set.html
A bargain, and all you need to get going, and with the addition of a stock pot you can move on to Extract brewing.
The Summer Lightning kit on here is no use to you unless you are going straight into All Grain brewing as it's an All Grain kit. However, within a very few weeks, Brew UK will be marketing a Summer Lightning Extract kit. We are converting recipes at the moment and the advantage of a kit is that it will have the right quantites of everything in it. No buying 100 gms of hops to use 20 gms. Simple, and great value.

Right then you lot, been tinkering with the idea of brewing my own for a while now, and made a new years resolution to finally take the plunge. Bit mind boggling to be honest, so where do I start?
Eventually want to try the all grain method but think I better start with something more basic. Came across this site when I Google'd Summer lightning (Heaven in a bottle as far as I'm concerned, but I'm probably a bit biased, cos' I'm originally from Salisbury). Baring that in mind, any suggestions of starter kits to begin with would be greatly appreciated

Cheers

I have said it before but this forum is so neatly laid out and so easy to find posts. I admit when i wanted to find more knowledge of brewing i looked at 3 or 4 and they just didn't seem user friendly. I am not talking about members on other forums but the whole design of other forums and ease of use and finding your way round them.

Thanks Mark
I got the idea from Nath really. It was a bit of an experiment and I built it mainly for lagering. Ive got another similar fridge that im turning into a cornie fridge which im going to be able to pick up and adjust temperatures from my pc. I hate going out into the barn in the winter. It will have an insulted multiple line coming into the utility room. Now that will be bad boy.

I would expect the unit would work at quite a temperature range mark, so it wouldnt worry me putting in in there, I just wanted to maximize my space so I could fit 4+ cornies in my fridge so it had to be out!

Hi Mark
I took the controller apart and had a look at the PCB and it is resin-coated so will be fine with any moisture. The only real problem would be the LCD display but it would only be affected if you were pulling down to say,-10 , there wont be a problem with the controller inside.

I do not have a brew fridge but i do have a temp controller but i personally would not put it inside.
It seems logical to me that the controller workings would work better at room temperature rather than if the fridge is cold but i msybe completely wrong. Please correct me if this is so.

Hi Nath
Thank you for giving me the ideas on components for building my brew fridge. I found your posts excellent. I put the controller inside because that area is a bit of a dead space and with a glass door its easy to see and makes it neat and tidy. What do you think?

Sqiffy on "DIY Bucket Sieve"

OK, I know this post is going to be of limit interest as many on the forum are beer brewers and this sieve was designed for a specific problem we faced while transferring large quantities of wine from the primary buckets into carboys. In case anyone faces a similar problem I thought I'd make this post.

Every few years the condition of my brew buckets necessitates their replacement, so if you too replace these buckets periodically, this is probably the best time to make the sieve. The sieve requires 3 or more (depending on your requirements) of the large Young's 26 litre buckets. As far as I am aware these are the only ones I have found that will do the job.

The reason these buckets are so well adapted to this sieve design is the reinforcing fins the bucket uses to reinforce the bucket rim.

To make this sieve you will need 3-4 Young's 26 Litre Buckets and the following tools.

a pad or hack saw (preferably with a blade for cutting metal)
A drill with a 3mm bit
Pencil or marker pen
a tape measure
A roll of masking or brown parcel tape (optional)
a stanley or craft knife
a sheet of fine grade sandpaper (optional)
a needle file (optional)

Take the bucket in the best condition and drill around 30 holes in the bottom. Don't drill too many as this may cause the sieve to split when fully loaded.

If you drill from inside the bucket to the outside it is a little trickier to do but makes debarring much easier.

Once you have all your holes drilled flip the bucket and use a knife or fine file to deburr the holes. Once you are happy that the bucket bottom is burr free it's time to move onto making the collars.

Take the bucket in the worst condition and measure down about 6cm below the fin edge of the bucket. Mark with pencil. Do this three or four more times.

Now take the tape and run a piece right around the bucket so that it gives you a continuous line to cut around. Once you are happy with the tape line get cutting.

You will end up with the bucket 'collar'

Personally I think two collars works just right, so sadly you'll have to struggle through cutting up a second bucket. I would advise taking a break for a cup of coffee at this point.

So once you have the desired number of collars cut take the sand paper and deburr each one. You will probably need to use the knife too to get everything reasonably smooth.

Take the last, untouched bucket, place it on the floor, drop the collars onto the rim and finally drop the sieve element inside. Done.

This bucket sieve (using two collars) has a fill capacity of 26 litres with a liquid collection in the bottom bucket of more than 2 gallons.

Using this bucket sieve I scoop all the solids out of the primary and just dump them in the sieve, adding to it as more material gets strained out of the primary and by the time I've finished processing the contents of the primary the bucket sieve has sat on the floor and collected me a couple more gallons of clean wine.

I hope this post was of use to a few readers,

Cheers!

3 weeks ago, a mate of mine was driving a 3 day old unit and box, in the rain, from Liverpool to Felixstowe. He was stopped by VOSA near Cambridge who, after over an hour, could find nothing wrong with the unit, trailer, load or his records. All smiles, they went to close the front panel and a sharp eyed VOSite said, 'Hnag on! Your washer bottle's empty.' 'Yes,' said Chris 'I've been using it all the way from Liverpool and it ran out a couple of miles back. There's a garge a mile down the road where I refuel and I'm going to re-fill it.' 'Too bad' said VOSite, 'Should have thought of it before. That's cost you £65 and your name recorded. See you soon'.

Oh yes, £7.50 an hour. Don't know many day drivers earning that much as a basic.

Maybe then we could enjoy driving again, instead of watching bridges, looking for parked vans, spotting VOSA, rushing flat out, sitting in jams, worrying what might be in the box, sleeping in lay-bys, filling in forms, avoiding car drivers thinking of no-one other than themselves, being pushed out by foreign trucks with no regard for our laws whatsoever and getting paid next to nothing for it.

Hi to all of you, I've been into homebrewing for years on & off, also make a bit of wine.
This morning I've put my last brew (an IPA) into a corni. Next weekend I hope to have a go at a Trappist recipe that I've been playing with for a while.

Hi Kamma

As far as I know it should be there. Some Woodfordes kits have it. It's supposed to enhance the hop flavour by steeping it in the brew. They are usually rather musty and generally not a good thing. If you want to add hop flavour, get some fresh Goldings and put 15 gms in the Fermenter 3 days into the fermentation and leave them there for a week. Re-seal the bag and keep them in the fridge for the next batch.

Just bought an Admirals reserve kit. This is my second kit from Woodfordes, wherry being my first. As well as finding the yeast sachet to add,in this kit there is a sachet of Goldings hop powder. Is this supposed to be in there because it doe's not mention anything about it on the side of the box it came in.

Lovely to hear from you, Derek, and glad you've been having success.
Home Brewing has come a very long way in 20 years or so, and so have wine kits. Done properly, you'd be hard pressed to tell home made from shop bought in a lot of cases.

Hi, thought I'd finally subscribe to thank everyone who I've taken advice from over the last few months starting up the homebrewing again.
I dabbled years ago and it was always a hit or a miss. This time round, I tried a Wherry kit and BAM, back in business. That kit is excellent - after 4 weeks it tasted as good as a pub "guest ale".
2nd attempt - Norfold Nog. Dabbled with Muscovado sugar for 2ndary fermentation and I was delighted with that too.
3rd attempt - Imperial Pilsner with Saflager 24 yeast. 3 weeks SF and even before it has some final clearing to go, it tastes super-clean and more-ish. I actually find it a perfect Pils type, no overpowering flavours and no sore head which I can get with some lagers which have been messed around with - even Becks.

Anyway, thanks to those who gave me confidence when I thought I had overcooked the Nog, blew the bubbler out and it stank like cat's piss - it resolved. And when I undercooked the Pils and it took 2 weeks to get under 1014 - I just added a bit of heat.

It's building up to be a great resource this.

Cheers!
