Am in right in thinking that secondary fermentation in barrel or bottles should be 2 weeks at 18 - 20c.&#60;br /&#62;
Then condition at 12 - 14c for 3 - 4 weeks.&#60;br /&#62;
Does this souund correct.&#60;/p&#62;

<description>&#60;p&#62;I am looking for a recipe that uses honey. I have been given about 2KG of honey from a friend and was wondering how to include this in a brew?&#60;br /&#62;
I have read the honey beer recipe on the &#38;#39;recipe&#38;#39; page which sounds good, but I am also looking for ideas on spicing up a beer kit by adding some honey. I read the other month that someone had bought a cheap kit and added honey (and other ingredients) and it turned out alright. Just after some ideas?&#60;/p&#62;

&#60;p&#62;I started my first ever home brew last Saturday, it is a Woodfords Wheery. Everything was going ok until i notice fermentation has stopped, i noticed the air lock has stopped producing c02..... i check the temp and due to the cold weather my kitchen where the brew is stored has dropped below 16 degrees, so i immediately, put the heating back on and it is now back up to about 19-20 degrees, is my brew ruined, or is it possible to start fermentation again.... i also ordered a brew belt, but not sure that it will arrive until Friday..... &#60;/p&#62;

<description>&#60;p&#62;Think I may be getting a bit paranoid.&#60;br /&#62;
first beer I made was pride of Yorkshire kit Brupak Colne Valley Bitter&#60;br /&#62;
second Brupak West Riding Wheat&#60;br /&#62;
The bitter is in a king keg well half is very nice and very clear.&#60;br /&#62;
The wheat beer is all bottled up and conditioning.&#60;br /&#62;
both them two took about 6 days to ferment. I have them in a warm room and have a belt on and have got it as close to 20* as possible.&#60;br /&#62;
Now the paranoid bit starts I got a Brewferm Ambiorix given a strong beer I made it up and put just a bit extra sugar in at recorded the gravity and it was just over 1060 @ 20* during fermentation it seems to have gone mad a fantastic blanket of yeast and has bubbled like mad. Noticed today no bubbles so checked it again to day @20*its down @ 1010. Its taken only 6 days. Tasted the sample and it tastes fantastic a lot better than the other two after 6 days.&#60;br /&#62;
What to do now should I bottle it tomorrow or turn the heat off and leave it a bit longer. It just seems to be too quick for a strong beer or I have been very lucky with the 3 brews. If its good to bottle it now that would be good as I have one more kit to get going before trying an extract.&#60;br /&#62;
So any suggestions Bottle or leave it a few more days.&#60;br /&#62;
Also noticed after posting It was supposed to be 15 liters and I have made it about 18 liters don&#38;#39;t know why??? would that affect the speed I wouldn&#38;#39;t of thought so?

When it came to moving it for the fermentation barrel provided I bought a Young&#38;#39;s 5 gallon pressure barrel from Wilko&#38;#39;s for about £20 or so.&#60;br /&#62;
After the 1st night in the barrel at least 3 gallons had leaked out through the seal of the tap (not the tap itself)......&#60;/p&#62;
&#60;p&#62;Questions - Any ideas to why this happened ?&#60;br /&#62;
          - After looking online after this it seems a few people have had problems with leaking barrel&#38;#39;s so I don&#38;#39;t want to get another...what is the best storage for home brew...(bottles, carboys, etc...) ?&#60;/p&#62;

<description>&#60;p&#62;In the course of my travels today I called at a small company in Bury St Edmunds and they gave me a tub of Chlorine Disinfectant Tablets. &#38;#39;Effective against all food poisoning bacteria, MRSA, C Difficile, Viruses, etc&#38;#39; it says on the tub. Apparently it&#38;#39;s no longer acceptable to say, &#38;#39;Splash some bleach in&#38;#39;. You have to know exactly what concentrations you are dealing with or you get locked up. With this, 1 tablet in 1 lt gives a 1,000 ppm solution.&#60;/p&#62;

<description>&#60;p&#62;Now, I know what you all think of Greene King, but there was a big story about them on the local news last night.&#60;/p&#62;
&#60;p&#62;In 1936 Greene King produced a beer for the coronation of Edward VIII. Well, that went a bit wrong and the beer was never marketed. Greene KIng have always been a bit laid back and all over the brewery there are mountains of old kit no-one ever throws away but recently there has been a lot of development work around the brewery. Sadly, mostly turning bits of it into high priced flats. Some months ago some workmen were clearing out and renovating some old cellars and in the darkest recesses were some crates. Turned out to be 2,000 bottles of the Edward VIII Coronation Ale. It was tested and was sound, found to be 12% ABV and some lucky reporter was there last night when they drew some corks and downed a few bottles. Apparently it has a Port-like taste, and a kick like a mule!&#60;br /&#62;
Rumour has it there were 2,100 bottles when the workmen found it, and they didn&#38;#39;t surface for a week.

<description>&#60;p&#62;Now i was&#38;#39;t going to have a pint tonight as i had a glass of rose with a big roast dinner tonight but as the night has been getting on a bit my throat has been getting drier and until 5 minutes ago was extremely parched. I had a couple of honey lagers i made in the fridge and just could not resist the urge to crack a bottle open. For a start i got a 660ml glass out and poured a 500ml fliptop all in, ended up with about a 3 inch of luscious foam filled to brim of glass and carbonation that would have done West Ham proud and that first gulp WOW it is times like these when you are gasping that you really appreciate the pleasures of a perfect home brewed pint with crystal clear clarity for a bonus.&#60;/p&#62;

&#60;p&#62;I read a crop report from the US dept. of Ag. that said for the 2011 crop the harvested area was down but yield was up, prices were down and the overall tonnage was roughly the same. So unless the breweries are buying them all we should be ok.&#60;/p&#62;
&#60;p&#62;But American hops are running out over here, shouldn&#38;#39;t they be in stock by now?.&#60;/p&#62;

&#60;p&#62;Well after getting a Young&#38;#39;s brewing kit from my good lady wife at Chirstmas (bought from this very site), I finally decided that today was the day to start brewing. As it&#38;#39;s my first foray into home brew I found it a bit daunting and just wanted to ask a couple of questions to make sure that I haven&#38;#39;t completely messed up my first batch - all responses gratefully received:&#60;/p&#62;
&#60;p&#62;1. The sterilisation process is a bit counter intuitive for me...the kit instructions state 1-2 teaspoons per gallium yet the steriliser states to make up 10 litres and use that to swish round to cover the sides. Is it best to fill the fermentation bucket up then add or simply make up a smaller amount?&#60;/p&#62;
&#60;p&#62;2. On the subject of sterilisation, if everything is sterilised in a non-sterile environment and with the lid being left off for long intervals while making things up, how do the various components actually remain sterile? I understand it&#38;#39;s absolutely necessary but I&#38;#39;m keen to understand why!&#60;/p&#62;
&#60;p&#62;3. I added the airlock to the fermentation bucket&#38;#39;s lid and half filled it with water. Later on when I checked it looked like there wasn&#38;#39;t any water left so I took the lid of the airlock...and the water shot out! Do I need to refill this and will I have caused any damage to the brew?&#60;/p&#62;
&#60;p&#62;4. When mixing things together (it&#38;#39;s a St Peter&#38;#39;s Ruby Red ale kit), I had difficulty getting all of the mixture to dissolved - there were still gloopy deposits at the bottom of the bucket when stirring - should this be the case?&#60;/p&#62;
&#60;p&#62;5. I&#38;#39;ve left it in a room with an ambient temperature of between 19 and 23 degrees - it tends to fluctuate throughout the day/night...is this an issue?&#60;/p&#62;
&#60;p&#62;6. Speaking of temperature, the thermometer on the side of the fermentation says 18 degrees, way off what the room temperature is. Again, is this a problem?&#60;/p&#62;
&#60;p&#62;7. I stirred all of the main ingredients including the hops, but sprinkled the yeast on the top. Is this the right way to go??&#60;/p&#62;
&#60;p&#62;Sorry for the deluge of questions and I&#38;#39;m probably over complicating things already but I&#38;#39;d like to get off on a good footing!&#60;/p&#62;

<description>&#60;p&#62;i have just started bottling 8 gallons of plum wine which I started Aug 2010 with a batch of plums I had picked and frozen the year before. i have got to the bottling stage and sure I read somewhere to add campden tabs to each bottle, The 2 gallons I did yesterday, having checked this morning are cloudy as hell. Reread all my tips etc i have collected along the way and realised that it should be 1 per gallon. Still have 6 gallons untouched which i could mix with the bottled ones . what should i do or will the first 2 gallons be ok eventually.

<description>&#60;p&#62;Following my problems conditioning and carbonating my last batch of wherrys, I&#38;#39;m having problems again with Ruby Red.&#60;/p&#62;
&#60;p&#62;Last time the advice was to bring it back into the house from the garage for 2 weeks the put it back out.worked perfectly.&#60;br /&#62;
The advice back then for future batches was to bring leave it on the house for 2 days after bottling, then put it in the garage for conditioning 2 weeks minimum.&#60;/p&#62;
&#60;p&#62;Well, I did that, 4 weeks later and not a scrap of carbonation. The last 2 weeks its been 5 degrees or less out there.&#60;br /&#62;
What&#38;#39;s going on ?&#60;br /&#62;

&#60;p&#62;i pitched my yeast at 9.00pm last night and now at 4.45pm today fermentation has still now started , i done everything as normal made a yeast starter pitched at correct temp airiated the wort and there is now signs of anything happening ,the yeast i used was san diego super yeast by white labs the yeast is suposed to be super fast starting and fermenting ,i also tryed rouseing the yeast today ,&#60;br /&#62;
any ideas ??

&#60;p&#62;As I sit here supping am Amber Ale from Bath Ales, which I&#38;#39;m waiting to warm up a bit, my fridge is way to cold for Ales..&#60;/p&#62;
&#60;p&#62;I&#38;#39;m thinking about the Turbo Cider with Ginger I made at Christmas.&#60;/p&#62;
&#60;p&#62;Currently I have 2 left of the 3 5L Asda water bottles I primed it in.&#60;/p&#62;
&#60;p&#62;Now, as is to be expected with any fizzy drink, by the time I&#38;#39;ve opened it a few times and got to the bottom of the first container, the cider had become flat.&#60;/p&#62;
&#60;p&#62;As i&#38;#39;ve managed to save up plenty of 500ml bottles over the festive season, and intend on getting a crown capper shortly, I was wandering if I should bottle the rest with a tad more priming sugar, to get it nice and fizzy, and be more convenient to keep and drink, one bottle at a time.&#60;/p&#62;
&#60;p&#62;My question is pretty simple.. As i&#38;#39;ve already poured a couple of pints from the containers is there now a risk of there being contaminates in the cider? and should I take any measures to ensure I&#38;#39;m not locking any nasties in the individual bottles before I do so?&#60;/p&#62;
&#60;p&#62;A secondary question would also be.. after being in a large container for 3 weeks, is the yeast still going to activate with a priming sugar, to make my bubbles?&#60;/p&#62;

Trully the best pint I have tasted, the memory has lasted the best part of 40 years.  As I remember the taste was very complex, full and rich, with a roast or nutty-sweet under-taste, and lingering aftertaste.&#60;/p&#62;

&#60;p&#62;i recently ordered the cornie keg set up ,thinking c02 was easy to get i went out this morning to find a bottle of it ,i went to air products,airliquid as recommended on this site, BOC(said they need a deposit and then £50 per month for the hire and then a collection fee aswell) and other local gas suppliers in the mersyside area  where i live ,all of them said NO to me we dont sell to the public ,which has now left me dissapointed now the cornie kegs i have ordered off greg now have to be cancelled looks like am back to bottling and pressure kegging somthing i dislike doing.can anybody help me get a c02 bottle please i would be very greatful&#60;br /&#62;

&#60;p&#62;The main reason for my objection is that the use of, or lack of use of, a campden tablet has become the universal cure-all for any medicinal off-taste in beer, whereas in reality the cause of the problem is rarely, if ever, anything to do with chlorine. The real cause is almost always microbiological. This infatuation with the magic campden tablet diverts attention from the real cause, and the hapless sufferer goes round and round in circles.&#60;/p&#62;
&#60;p&#62;Apart from being quite unnecessary (in my view) the amount of sodium metabisulphite required to neutralise chlorine in tap water is extremely small. In my area the maximum amount of residual disinfectant present in the water has not exceeded 0.35ppm over the last three water reports; usually half that. Therefore the amount of sodium metabisulphite necessary is correspondingly small. If someone wishes to neutralise chlorine with campden, only enough to do the job should be employed. There are consequences to overdoing it, certainly grossly overdoing it, particularly if there is no copper (the metal) in your brewing set up. One of the consequences is the beer smelling of rotten eggs, because some yeasts, particularly lager yeasts, can metabolise sulphur dioxide into hydrogen sulphide.&#60;/p&#62;

<description>&#60;p&#62;I can&#38;#39;t be the only one with the problem of messing around with Young&#38;#39;s barrel taps to stop them leaking. As soon as the conditioning sugar starts to work, the beer starts to leak from the tap. I&#38;#39;ve tried putting the lever at all angles, but the only way of stopping the problem is to let the pressure off a bit. In the case of the one I&#38;#39;m getting problems with at the moment, even that isn&#38;#39;t working. It has only had about 5 brews in the barrel.&#60;br /&#62;
Has anyone found an alternative tap that fits, and doesn&#38;#39;t leak!

&#60;p&#62;Clearly we do, Marstons Pedigree, Hook Norton Old Hooky, Fullers London Pride, Timothy Taylors Landlord, Thornbridge Jaipur are just a few of the best, what more can I say.&#60;/p&#62;
&#60;p&#62;The Germans have their moments though, some of the Weissbiers are amazing, Schwarzbier and Rauchbier are good too. Weltenberger Anno 1050 has been a revelation, malty but nicely balanced with hops and really smooth for a bottled beer.&#60;/p&#62;
&#60;p&#62;Having sampled Speights no wonder the Kiwi&#38;#39;s chill their beer to near freezing, now you don&#38;#39;t want to be tasting anything do you.&#60;/p&#62;
&#60;p&#62;Baltika No. 4, a Russian beer was one of the worst I&#38;#39;ve ever tried, I struggled to finish it.&#60;/p&#62;
&#60;p&#62;Overall I think the French brew the worst beer, better they stick to making wine.&#60;/p&#62;

The Way to Amarillo extract is gorgeous, much better for the extra conditioning time. Wish i&#38;#39;d saved more of them now. The Rocker APA is even better although its in a barrel and I think it would be better bottled and a bit more sparkling but that may just be me. My TT Landlord AG is bottled and about to go into the cold so should be ok for a sneaky couple new years eve. With temeratures threatening to drop to around zero at night these days (and lower soon I guess) should I be worried about my bottled beer in the shed. I have ale and cider in the garden shed and soon a coopers larger will join them. &#60;/p&#62;
&#60;p&#62;What is the aceptable storage temperature range?&#60;br /&#62;
Should I be considering any form of insulation, I was thinking of I was thinking of a cupboard lined with polystyrene insulation.&#60;/p&#62;
&#60;p&#62;I don&#38;#39;t really have the space indoors for them, except the loft maybe and that can get just as cold.&#60;/p&#62;
&#60;p&#62;If low temperatures are a concern, what do others do?&#60;/p&#62;

(Still awaiting delivery of some heating equipment)&#60;/p&#62;
&#60;p&#62;Fermentation is still happening, based on the airlock bubbles and froth inside the demi, but are these low temps going to effect the taste/quality of my final product, or just cause the fermentation to last longer?&#60;/p&#62;

&#60;p&#62;So, I&#38;#39;m going to throw together a batch of cheap and cheerful cider, to keep me occupied before I start on my big wine kit.&#60;/p&#62;
&#60;p&#62;I have all the equipment together and plan to put this on tmrw, but I have a question regarding the yeast.&#60;/p&#62;
&#60;p&#62;I wasn&#38;#39;t able to get to my nearest Home Brew shop today, so the only thing I could get hold of was some &#38;#39;Youngs Super Wine Yeast&#38;#39;..&#60;/p&#62;
&#60;p&#62;As i&#38;#39;ve heard nasty things about so called Turbo or Super yeasts, and reports of crazy high ABV and musty smell/taste. I thought I get some opinion before I use it.&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;I&#38;#39;m assuming that the speed of the fermentation possible with this type of yeast is the cause of producing a dodgy batch.. so I assume I&#38;#39;ll be better keeping at the lower end of the temp scale required to brew, so it takes longer?&#60;/p&#62;
&#60;p&#62;Also, although these are designed for high alcohol.. whats the best way to limit the abv. Using less yeast?..less sugar?..stopping fermentation early?&#60;/strong&#62;&#60;/p&#62;

I am just about to bottle my first lager, it is a muntons larger which came with a kit I brought.&#60;br /&#62;
I have been researching over the internet about how much priming sugar to use but everyone seems to be saying different things.&#60;br /&#62;
I am going to use normal white cane sugar which I believe is ok to use and I&#38;#39;m using 2L plastic bottles.&#60;br /&#62;
What I want to do is put the sugar straight into the bottles then syphon the beer in. I know most people say to mix the beer and sugar in a second bin but I am not able to do that this time.&#60;/p&#62;

<description>&#60;p&#62;this question relates to the new style coopers fermenter(without airlock) all the info you get tells you to take the krausen kollar out after 3 days.. my two previous brews i did the foam had nearly gone after 3 days, but i&#38;#39;ve got the &#38;#39;way to amarillo&#38;#39; in at the moment and the foam hasn&#38;#39;t dropped after 4 days still 2-3 inch at least..(been fermenting at about 19 degrees)my head is telling me to leave it in till foam goes, is that right? or wrong?..this is first time i&#38;#39;ve used sa-fale 05 yeast, i believe it loves munching till the end...does it matter if the kollar is left in 1 week or 2 week?..any advice guys?..

I made up 5.0 lts of DME, used 1.0 lt of the resulting yeast for a brew (highly successful) and drained the rest off, washed it a couple of times with boiled, cooled water, then stored it in a small, sterile plastic bottle in the fridge. It was a 250 ml school milk bottle and there was about 1.5 inches of yeast in the bottom, so the propogating was quite successful. When I came to use some, it smelt really bad. I didn&#38;#39;t use it but made up a 2.0 lt starter with some of it. It took 3 days to get going, but fermented well and the resulting yeast smelt as fresh as could be. I left it in the starter bottle in the warm for another 3 weeks but it still smells fine. I went back to the bottle I stored the original in, took off the top, and the smell of rotten eggs drove us out of the house! Hydrogen Sulphide, I believe. What&#38;#39;s going on with it? How can the yeast seem to go rotten, but when I let it ferment out as a starter, it smells fine again?

I bought and got going with the summer ale extract kit a short while ago. Fermentation is complete and I&#38;#39;ve syphoned it into 5 litre plastic demi-johns. I did this so I can clean the fermentation bucket and then put it all back and batch prime it, but I have a few questions:&#60;/p&#62;
&#60;p&#62;1. How long can I keep it, after fermentation but before priming/bottling?&#60;br /&#62;
2. Will it go off if kept like this?&#60;br /&#62;
3. Equally, will it mature like this, or will it only mature properly once primed and in the barrel/bottles?&#60;/p&#62;

&#60;p&#62;I am a newbie to homebrew. So I bought the kit on here and go Woodfordes Wherry (as everyone appears to!). Did the fermentation, no problem. Came out crystal clear and tasting very very nice! SO I put it in the keg, not enough bottles saved yet, and put in half a teaspoon per bottle as recommended. Been in a few days now (since thursday and it is monday today) and tasted it. &#60;/p&#62;
&#60;p&#62;Question 1: Is it ok to drink the odd pint when it is in the barrel?&#60;/p&#62;
&#60;p&#62;Question 2: It tastes very very sweet (and one hell of a head on it). Does this mean the secondry fermentation  needs a bit more of a helping hand? i.e. more heat? I put it in a warm place as directed for 2 days, then in a cool place but just wondering if it needed more of a secondary fermentation to take place?&#60;/p&#62;
&#60;p&#62;Question3: If all is ok, will the sugar go over time? Or have I over suggared it? Seems a shame it is so sweet when it was so perfect out the fermenting Vessel!&#60;/p&#62;

i recently racked two four pint demy jars metal screw on tops (empty westons cider jars) with one of my latest all grain brew because i ran out of spare bottles and have noticed the bottles are fine but the jars still have small bubbles rising to the top ,does this mean the caps have a slight leak? or are they secondry fermenting still ? i thinking the screw caps are leaking because the bottles dont have no bubbles rising due to tighter seal&#60;br /&#62;

<description>&#60;p&#62;I have been meaning to read up on this for some time now, but I think I&#38;#39;ll give it a go on a few bottles of one of the current brews.&#60;/p&#62;
&#60;p&#62;Essentially the idea is that, once the beer has fermented, you collect a small quantity of the yeast and keep it.  Kill off all the remainder and fine it/leave to settle.&#60;/p&#62;
&#60;p&#62;The yeast is mixed with a solution of sodium alginate, before being dripped into a solution of calcium chloride from a syringe.  The two react and make quite dense pellets after ~10 minutes of hardening.  Drain off the calcium chloride and rinse, pop a few in each bottle and add the primed (sterile) beer.&#60;/p&#62;
&#60;p&#62;The yeast is trapped in the alginate structure, but can still do it&#38;#39;s thing and allow secondary fermentation to condition the beer.&#60;/p&#62;
&#60;p&#62;Sounds like a lot of fuss, but all the solution stuff doesn&#38;#39;t take that long (I&#38;#39;ve done similar things with pea juice to make, err, liquid peas etc)

i done a brew on saturday night fermentation started fast about 5 hrs later at about 20 degrees ,on the next day the temp dropped to about 15 degrees in the kitchen a couple of days later fermentation has stopped ,has the sudden drop in temp halted fermentation ? so i moved to awarmer room and thought that it would restart and nothing seems to be happening dont know weather it stopped anyway

&#60;p&#62;this is my 3rd attempt at Ginger beer making. the first was perfect but I only made 4 Litres. The second was nowhere near gingery enough however it was 8% and delicious with a dash of lemonade.&#60;/p&#62;
&#60;p&#62;My current batch is basically ready to be bottled, however it is incredibly dry and needs sweetening up. &#60;/p&#62;
&#60;p&#62;As far as I can see I have 2 choices:&#60;/p&#62;
&#60;p&#62;Add lactose as this is unfermentable&#60;br /&#62;
Or&#60;br /&#62;
Use Potassium sorbate to stop the fermenting and then add some more sugar, although with this choice how could i make it fizzy in the bottles?&#60;/p&#62;
&#60;p&#62;Is there any other way, or are these 2 correct and how would I go about doing them?&#60;/p&#62;

The accepted norm appears around 10g to 12g per keg (I think I&#38;#39;ve seen the recommendation by the manufacturer is 10g to 15g???), I have seen a photo of a deformed and now ruined Keg on another site which was over-primed!!!&#60;/p&#62;
&#60;p&#62;I love the idea of the system and would save loads of room, Plus it would look brilliant at Christmas to serve the Belgian Christmas Ale  to guests!

&#60;p&#62;if you over pitch yeast do you get off flavors in the finish beer ? like yeasty flavours.. thats what it  seems to be happening here with this brew ,ive done a 5L batch with a 1L starter safale-o4 ..or maybe i have not given it enough time to drop out naturally ,in future a might not use a starter and just buy liquid yeast like white-labs or wyeast as they cotain the correct amount of yeast for 5L&#60;br /&#62;

&#60;p&#62;Me and a friend stumbled on a recipe for an alcopop which, as students, we found rather interesting as it was easy to make, minimal effort and equipment. Its been in the loft for about a month because we have had no time to bottle. Now we are looking to bottle the liquid and prime it. My question to you guys is: how much sugar is needed to prime about 7 litres of liquid? We are using the 2 litre bottles that we needed for the recipe but we havent a clue how much is needed to get it to a decent fizz.&#60;/p&#62;
&#60;p&#62;Like i said, we know that its a rubbish drink to be making but it suits as a first brew.

I&#38;#39;ll be fermenting in a brick outhouse which will probably be between 15-18C. I can ferment somewhere colder if a lager yeast would work?

<description>&#60;p&#62;Hi, I&#38;#39;m a newbie to this brewing lark, started an Autumn Blush Cider on Monday and am already confusing myself with the secondary fermentation (please feel free to correct me if I&#38;#39;m not using the correct terminology).&#60;/p&#62;
&#60;p&#62;I was initially planning on putting the required amount of sugar into the bottles prior to syphoning but the more i read (all very useful advice) the more I wonder if I should syphon to a second FV with the sugar already dissolved in warm water.  If I do this how long should I keep it in the second FV before bottling?&#60;/p&#62;
&#60;p&#62;I am sure the obvious answer is straight away but any advice is very welcome.

<description>&#60;p&#62;A refractometer records the &#38;#39;index of refraction&#38;#39; of a given liquid. In terms of brewing they are extremely useful for several reasons;&#60;/p&#62;
&#60;p&#62;Firstly, we can get an instant &#38;#39;index&#38;#39; from a drop of wort, fruit juice or must and so can tell what potential end point it will have once brewed. Most refractometers here in the UK measure in Brix and often people will have charts or a trusted website to convert the Brix reading into the more familiar Specific Gravity measurement of the humble hydrometer. &#60;/p&#62;
&#60;p&#62;We only need to use a single drop of liquid to get a refractometry reading. The liquid can be of any temperature (many refractometers incorporate &#38;#39;Automatic Temperature Compensation&#38;#39; which enables us to get a reading from a drop of near boiling liquid in a few seconds) as such using a refractometer is very quick, accurate and requires no real wastage. &#60;/p&#62;
&#60;p&#62;While tables are available to get a useful refractometry reading from a fermented liquid I use my hydrometer when measuring for the end point of a fermentation. It&#38;#39;s just quicker. As alcohol levels rise in a batch the refractive index is distorted and therefore any refractometry reading must be calibrated to take account of this distortion. Tables for this compensation are available on the web.&#60;/p&#62;
&#60;p&#62;I find my refractometer indispensable at the start of a brew as it enables me to make minor adjustments and corrections and then to take fresh measurements quickly and easily even when playing with extremely hot musts.&#60;/p&#62;
&#60;p&#62;So in answer to your question, a refractometer can be used to measure both the sugar content at the primary stage and to help calculate the alcohol content at the end of the fermentation.&#60;/p&#62;
&#60;p&#62;I hope this was of use.&#60;/p&#62;

&#60;p&#62;Relatively new to brewing, currently brewing a little creatures pale ale. All looks good but I have one question.&#60;/p&#62;
&#60;p&#62;The foam head on the top of the beer is really thick - I have read / heard that some brewers &#38;#39;skim&#38;#39; the head of the beer to stop it &#38;#39;falling in to the brew&#38;#39;. This brew already has great taste so I don&#38;#39;t want to ruin it by either messing with it and removing the head or by letting the head fall back into the brew?&#60;/p&#62;
&#60;p&#62;Any suggestions? It will be ready to bottle in another couple of days so just wandering what to do?&#60;/p&#62;
&#60;p&#62;On a good note I tried my first extract brew the other week - Timothy Taylor - and it looks and smells great; just have to wait a few weeks before I try it - proving difficult though!!&#60;/p&#62;

I&#38;#39;m not sure what they do and what effect they give. I think Carahell gives a Malt flavour boost, but in practice how big a boost is it? It seems it&#38;#39;s used mostly in low alcohol lagers to a maximum of 40%, so how does it perfom as an addition to Crystal in a conventional recipe? Are there any yeasts that are specially good with these ingredients?&#60;/p&#62;

<description>&#60;p&#62;hi all, my name is john. i brewed my first batch yesterday but there is a few things worrying me. i used a brewpak bitter kit but in the instructions it just said to fill water to the required level, what is the required level? i filled it to 27 liters which was the top line is that too much water?&#60;br /&#62;
Also when i poured my cans in i started filling it with water till i got half way before realising i never stirred it. and lastly my brew is in the celler and the temperaturem of it was on 16 to 18 degrees so iv wrapped a towel around it and now its on 18 to 20.&#60;br /&#62;
i guess im worring its guna be a bad batch or just not ferment at all, its been 24 hours now and there is no sign of activity in the airlock.&#60;br /&#62;
Am i worrying over nothing and being too impatiant?&#60;br /&#62;

<description>&#60;p&#62;Regardless of how or what you brew, you sometimes get a batch that goes straight down the toilet. I&#38;#39;ve had 4 in the last 4 months, but none before that. There have been many recent references to it from several people, so I was wondering how widespread the problem is. Also, how many of you have found the problem, because it also seems to be the case that there is no easily identifiable cause. I read a long time ago you should only brew between October and May, in other words, don&#38;#39;t brew in the summer. &#60;p&#62;i do not know what AG stands for?&#60;/p&#62;
&#60;p&#62;i have a 16litre stockpot.&#60;/p&#62;
&#60;p&#62;i am getting a bit lost with mashing /sparging etc.&#60;/p&#62;
&#60;p&#62;the recipe states  heat 15 litres of water to 66c  add 2900gm larger malt/750maize  and keep at 66c for 90mins.&#60;/p&#62;
&#60;p&#62;then the confusing bit for me,  collect mashed grain in bag rinse in hot water to collect (15litre of extract)&#60;/p&#62;
&#60;p&#62;then boil extract with hops for further 90mins??&#60;/p&#62;
&#60;p&#62;i would have thought the first 15litre with malt and maize once boiled would be (the extract)&#60;/p&#62;
&#60;p&#62;this is i take it the TRADITIONAL BREWING METHOD,

&#60;p&#62;I have recently transfer some GW&#38;#39;s Old Hooky to a corny and then dried hopped. Had a sneaky sample when I got in from work and found the beer was being dispensed at a very slow rate. The Corny is pressurised between 3 - 5 psi with CO2. Is it possible I have hops obstructing the beer tube? Can anyone suggest a possible remedy?? The last thing I want to do is ruin 19 litres of Old Hooky.&#60;/p&#62;

I&#38;#39;m finally taking a few days off and going to stay with some rels in Brixham. Does anyone know of a pub in the area which; a) sells good beer, b) knows how to look after it, c) knows how to serve it, d) has a landlord you can meet rather than a load of kids you can&#38;#39;t understand, e) is interested in good beer and customers rather than just profit, and, finally, f) isn&#38;#39;t full of customers who fall silent and stare at you if you dare to walk into their pub!&#60;br /&#62;
Maybe I&#38;#39;m asking too much. I think there might be a couple left in Brixham that have avoided the &#38;#39;T-bar&#38;#39; gas pump. Probably The Globe (if you can un-glue your feet from the carpet!) and The Hole-In-The-Wall.

&#60;p&#62;Gonna do a lager for my next ag (the lager with no name from greg)&#60;/p&#62;
&#60;p&#62;I have been reading up on lagering and there seems to be multiple ways of doing it.  I wanted to know if anyone has had the pleasure of lagering!&#60;/p&#62;
&#60;p&#62;Heres what I have planned after reading loads of bits n bobs:-&#60;/p&#62;
&#60;p&#62;AG as per norm.&#60;/p&#62;
&#60;p&#62;Cool wort to 14-15c and pitch yeast (wyeast activator 2278 Czeh pils).&#60;/p&#62;
&#60;p&#62;Put in brewfridge @ 11-12c and ferment as usual for 7-10 days until fg is reached.&#60;/p&#62;
&#60;p&#62;Raise to 18-19c for 2 days (for a diacytil rest - not sure if this is needed as I have constant Low temp and pitched at a low temp).&#60;/p&#62;
&#60;p&#62;Rack to secondary and seal with airlock @12c and drop 1-2c per day until 4c (lowest fridge will go) and lager for 2 weeks.&#60;/p&#62;
&#60;p&#62;Bottle as per norm.&#60;/p&#62;
&#60;p&#62;I think the biggest problems for me are (apart from the fact I have never erally lagered anything):-&#60;/p&#62;
&#60;p&#62;Wondering is there will be enough yeast in suspension after the long ferment and lagering.  &#60;/p&#62;
&#60;p&#62;When to rack to secondary - at fermentation end or 3/4&#38;#39;s into it so there is more yeast left for the secondary, and if so should I bring the temp up in the secondary for the diacytil rest instead.&#60;/p&#62;
&#60;p&#62;Also how much sugar to prime with.&#60;/p&#62;
&#60;p&#62;What do people think on this process?&#60;/p&#62;

Just looking for a little help. I have done two brews (just started my third) they are all from kits - not all grain or anything - The first brew of coopers larger is very clear in the bottles but when I put them in the fridge they go cloudy? the second brew was a bit of an experiment. I used a coopers brewmaster pale ale, malt extract and even put in a hop bag just to give it a try. It is only three weeks old (and it tastes great) but it is very cloudy in the bottles - I even used some fnings in this brew? Anyone any tips on how to get relly clear beer?&#60;/p&#62;

&#60;p&#62;I&#38;#39;m thinking of taking a small break from brewing larger quantities of beer (planning on 1 gallon batches). So I understand the principles of 25l usually being 1 pack of yeast.. 50l I see people use 2 packs. How much yeast should I use if I make up a 1 gallon batch?&#60;/p&#62;
&#60;p&#62;I know Nottingham yeast says it will make a gallon to 5 gallons per pack, or would it make sense to take a Wyeast and split it into smaller quantities? Is there any recommended level of yeast per volume of wort?&#60;/p&#62;
&#60;p&#62;Hope this makes sense.&#60;/p&#62;

<description>&#60;p&#62;I was starting off both a 6 bottle red wine kit and a 10 litre beer kit. When I came to put the yeast in the beer I realised that I&#38;#39;d already emptied the beer yeast sachet into the wine (which a day later is fermeting well), so I put the wine yeast - all I had - into the beer. There are a few signs of fermentation after a day, being some froth, but nothing coming out of the airlock of the 25 litre brewing bin. Is there anything I should/can do? Thank you.

&#60;p&#62;Can anyone help me with some elderflower champage advise, i made some this year and it went down a treat but I would like to perfect it a little more.&#60;/p&#62;
&#60;p&#62;1. A had a few bottles surrender to the pressure and explode, all the other were a nightmare to open - from reading a few other posts i understand this is due to bottling too early - how can I tell the fermentation is finished and wont cause this? Would this then need extra sugar for the 2nd fermentation?&#60;/p&#62;
&#60;p&#62;2. Some posts say this should come out at 1.5-3%, I added champagne yeast to make sure the fermentation worked properly - would this make the percentage more like normal champagne?&#60;/p&#62;
&#60;p&#62;3. The results came out cloudy with some sediment - is there a way of clearing this up? Im sure degorging it like real champagne would work but this seems very dificult and dangerous considering the exploding bottles!&#60;/p&#62;
&#60;p&#62;Any help would be much appreciated.&#60;/p&#62;

&#60;p&#62;I used it on a Stout 17 days ago and it went off like a rocket - the airlock was constantly farting (as its known in our household...) for 4 days then silence. I always leave my FV&#38;#39;s for two weeks as that suits me with work etc so had planned to bottle the Stout this weekend presuming that all would be done. But last Wednesday it started to fart again! Not as vigorously as before but definately on the go again and I dont want to bottle until all is quiet to avoid any bottle bombs.&#60;/p&#62;
&#60;p&#62;Has anyone else had this happen with this yeast or any other? &#60;/p&#62;
&#60;p&#62;Temperture has not changed and I didnt stir it - it was just sitting there quietly one day and not so quietly the next...&#60;/p&#62;

<description>&#60;p&#62;Hi has anybody ever used one of these mills , I bought one the other and it fell to bits after the first five minutes of milling my grain ,the handle snapped because the grain is so hard to pull though , I payed £260 for it , when I opened the box I just though bad quality straight away ,the body is all so made of cheap mdf can&#38;#39;t believe I payed this amount of money for such I cheaply made looking product ,its advertised as an American hq mill , only looks like it cost about twenty quid to build , any of youz guys used one if so will you let me know what you think of them&#60;br /&#62;

I have brewed my first brew: a St Peters Ruby Red Ale!!&#60;br /&#62;
Fermenting stage appeared to be successful, kegged it and 14 days later (yesterday) I had my first taste. I&#38;#39;m impressed!! There are a few bubbles in the beer however no pressure in the barrel. I&#38;#39;m wondering whether air is leaking out and if there is any point adding some Co2. Does anyone know of any other reason why it has no pressure? I would be very grateful for any advice, many thanks,&#60;br /&#62;

<description>&#60;p&#62;I&#38;#39;ve been reading a fair few posts about things going wrong. I&#38;#39;ve just had a few kit issues which has ended up putting me out of action for a while in the beer side of things. On top of that I quit my job after 2 years of a VERY busy worklife of living in hotels and my car so I can spend more time with my family. Down side is I now have time but no cash to fix my boiler with.&#60;/p&#62;
&#60;p&#62;Anyhow.. Life always teaches me that the mishaps make us better at what we do. I wondered what other folks on here did after those joyful moments of wasted time and effort when a disaster occurs. Usually i&#38;#39;d just jump straight back in there with a &#38;#39;safe&#38;#39; brew to keep things moving but I can&#38;#39;t do that at present. Instead I&#38;#39;m making the most of this time of year and making up some &#38;#39;Hedgerow Wines&#38;#39;.. The blackberries and elderberries are looking ready where I live so i&#38;#39;m going to give them a shot soon.&#60;/p&#62;
&#60;p&#62;Don&#38;#39;t know how I&#38;#39;ll cope with the maturing part. &#60;p&#62;So had first of the Wherry the other night - via: barrel to 2 litre plastic bottle to friends house to fridge to glass) and it was quite flat - not surprising given the 45 minute warm car journey.&#60;/p&#62;
&#60;p&#62;Hand the second couple of pints last night straight from the barrel. Magnificent! It even seemed happier to pour from the barrel this time compared to the first.&#60;/p&#62;
&#60;p&#62;So my questions are:&#60;/p&#62;
&#60;p&#62;If I bottle a few pints today to take to a friends house for drinking tonight will &#60;/p&#62;
&#60;p&#62;A: It be flat as a pancake being carried by an ill-fated hedgehog crossing the A3&#60;/p&#62;
&#60;p&#62;B: Do I still need to/bother to prime the bottles?&#60;/p&#62;

&#60;p&#62;But just a testament to gregs summer ale recipe and hopefully my brewing skills i may have converted 3 other people to take up home brewing.&#60;/p&#62;
&#60;p&#62;All said they never realised you could produce something so good at home.&#60;/p&#62;
&#60;p&#62;I now even have a regular supplier of brown bottles by way of donation.&#60;/p&#62;
&#60;p&#62;Letting others sample your wares is almost as satifying as drinking it yourself.
