<description>&#60;p&#62;I&#38;#39;ve got a lager planned for the weekend after next. I&#38;#39;m going to make a 2 litre starter, maybe 3 litres if the stirrer can cope with that much and I expect it to be fermented after 2 weeks at 10C. If you&#38;#39;ve used one pack I should think you&#38;#39;re spot on with your estimated fermentation time.&#60;/p&#62;
&#60;p&#62;It depends upon the yeast of course but a diacetyl rest is quite important, you don&#38;#39;t want a buttery taste. When the wort is about 3 points away from the target gravity raise the temperature by 4 or 5 degrees.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve read that if you lager for more than a month especially if its 5C or below then you&#38;#39;ll need to re-yeast. I&#38;#39;m going to lager for 5 weeks at about 5C then re-yeast with 4 grams of Nottingham and batch prime with 120 grams of sugar.&#60;/p&#62;

<description>&#60;p&#62;My (only) all grain lager was fermented at 12c for 2 weeks then for a further 2 days at 20c (for a dicytal rest) and transferred to a secondary vessel for another 2 weeks, then bottled and left in the warm for 2 weeks again, and there was more than enough yeast to carbonate.&#60;/p&#62;
&#60;p&#62;6 weeks after a 2-3 week ferment may be a bit close, If most of the yeast has settled out and the beer is bright when transferring into the bottle then you may have to add yeast.  Why not decant a bottles worth after 5 weeks and prime, keep in the warm for a week and see how it goes - if it primes ok then you should be ok.  If not then its time to add some yeast to bottle, but I dunno how much.

&#60;p&#62;Im now on my 4th brew which I did yesterday with some left overs. &#60;/p&#62;
&#60;p&#62;I used the saflager s23 yeast and the beer is now sitting in fv at 12C. I expect it will take 2 to 3 weeks to ferment. I have read a bit into lagering and that it should be done for about 6weeks in the cold. &#60;/p&#62;
&#60;p&#62;What I&#38;#39;m wondering is after lagering what&#38;#39;s the best way to ensure proper carbonation? In my previous brews I have batch primed then bottled straight away. &#60;/p&#62;
&#60;p&#62;Is this still possible after the lagering or will new yeast need to be added? As I&#38;#39;m not sure on the effect 6weeks in the cold will have on the yeast. Any pointers greatly appreciated.

<description>&#60;p&#62;1.010 is a good figure. It&#38;#39;s 78.2% attenuation, so I would think the fermentation is done. It&#38;#39;s actually more than you would expect from either of the yeasts specified. I see you used S-04 which I didn&#38;#39;t expect would get to that figure and it&#38;#39;s certainly close to Greene King characteristics. You must have done something right!!&#60;/p&#62;
&#60;p&#62;Personally, I try to leave the FV alone until it&#38;#39;s time to barrel/bottle it, but there&#38;#39;s no reason why you shouldn&#38;#39;t rack it into a clean FV to settle, but it&#38;#39;s one more time to expose it to potential infection. The problem with doing this is that you don&#38;#39;t have a layer of Co2 over the beer to protect it. I would leave well alone for another week and see what it&#38;#39;s like then.&#60;/p&#62;

&#60;p&#62;Still got this in the fermenter. I took a hydrometer reading and its at 1.010 from 1.046.&#60;br /&#62;
The smell I have to say does resemble the Greene King which (without tasting it) is good news.&#60;/p&#62;
&#60;p&#62;I&#38;#39;m toying with the idea of Racking this off into a carboy for a week or two as there seems a lot of gunk.&#60;br /&#62;
What are your thoughts on secondary fermentation?

The amount of DME you add to the initial boil depends on the brew and the other ingredients. To extract the Alpha Acid properly from the hops, the Specific Gravity of the boil needs to be the same as the Original Gravity of the recipe.&#60;br /&#62;
If the recipe says OG 1.049, then the boil needs to be SG 1.049. To get that depends on all the fermentables in the recipe. If the recipe has 2.0 kg DME, 500 gms Crystal Malt and 900 gms of Sugar the OG will be 1.049 for a 23 lt recipe. If you are boiling 15 lts, you would need to add 1.3 kg of DME and the rest of the DME and all the sugar at the end of the boil. The easiest way to work it out is run the recipe through Beer Engine. Tick the OG box, remove any sugar included in the recipe and reduce the amount in the Volume box to the amount of the boil. This doesn&#38;#39;t take account of the fermentables contributed by steeping, but that really won&#38;#39;t have any effect.

<description>&#60;p&#62;Just watched the&#38;#39;you tube&#38;#39; video from from link 8 - very well made and I learned something from it. Being fairly new to brewing, it appears that I have been making my extract brews wrong (only done 4 of them and they still tasted great)- I have a 19 litre stock pot so I was boiling about 15 litres of water then adding all the DME - then the hops at the required times. After watching the video (and reading a few items on this forum)I see that I should only be using half of the DME in the boil, then add the rest to te fermentor. Next brew - I&#38;#39;ll be doing it this way - just waiting to build a brew fridge in a couple of weeks!!!&#60;/p&#62;

Boiling the hops extracts the Alpha Acid and the length and vigour of the boil is what isomerises it. It is generally held that you need a boil of at least 60 minutes to accomplish this, so most now go for 75 minutes to give a bit of safety margin. A schedule of 75 minutes main boil, with a 10 or 5 minute boil at the end for flavour and a post boil steep with 15 gm Nelson Sauvin would work well.&#60;/p&#62;

&#60;p&#62;You should be fine adding all of the extract in at the start of the boil. As you are able to boil the full beer length in your burco you shouldn&#38;#39;t need to top up. I&#38;#39;d hazard a guess that you&#38;#39;ll have approximately a 10% evaporation rate per hour so if you want a 19 lrt in bottle beer then have beer engine set to this and go with the total liquor it recommends. This should take account of trub loss and evaporation.&#60;/p&#62;

That recipe had some good feedback, but I have my reservations.&#60;br /&#62;
I don&#38;#39;t think hops added for the last 30 minutes are going to contribute anything useful, and I&#38;#39;m not sure that 22 EBU will be bitter enough.&#60;br /&#62;
The recipe only calls for a yeast with 75% attenuation, which suits 1968 perfectly.&#60;br /&#62;
I also don&#38;#39;t quite understand why it has Carapils in it when it&#38;#39;s not in the specification.&#60;br /&#62;
Another reservation is that the spec says for smell; &#38;quot;Toffee, slight citrus, chocolate.&#38;quot; I can see where they are all coming from, but only 15 gms of Styrians post boil could well be overpowered by the 15 gms of the stronger Fuggle. I think I&#38;#39;d just go with 20 gms Styrians.

I was told before that leaving it in there for two weeks would be too long and it would develop bad flavours. I&#38;#39;ve always left my kits a good two weeks though and I thought they&#38;#39;d come out fine. Do you use a secondary fermenter if you leave it in the primary for that long? I have used my barrel as a secondary fermenter in the past to let it clear for a while before bottling.

&#60;p&#62;The beer may well have fermented out or if not then its obviously well on the way to it!  Like you say its only 3.5% so it would be faster than normal, plus if you are fermenting in a warm area (20 and over) then it would go even faster.  Plus s04 is a great, clean, fast fermenting yeast as well!&#60;/p&#62;
&#60;p&#62;Its still worth leaving the vessel alone for a good 10 days (some leave it more - I tend to go for around 14 days) Just to make sure and let the beer drop brighter.&#60;/p&#62;
&#60;p&#62;Summer Ale was my first extract kit.  Trust me you won&#38;#39;t be disappointed!

&#60;p&#62;I have recently bought the Brew UK Summer Ale recipe pack and made the brew 4 days ago. Yesterday, after just three days the airlock stopped bubbling. For the first two days is was fermenting very quickly, the airlock bubbled every 5 seconds or so. Is it possible that the beer could ferment out so quickly? This is my first extract brew, I have only ever brewed the tinned kits before.&#60;/p&#62;
&#60;p&#62;Has anyone else found that this beer ferments so fast? It is quite weak, the instructions say 3.5% so I guess  there&#38;#39;s not as much sugar to get through plus the sachet of S-04 said that it was a fast acting yeast.&#60;/p&#62;
&#60;p&#62;Any advice would be appreciated.&#60;/p&#62;

&#60;p&#62;When you boil a brew, there are a few things that happen, but for our purposes we only need to look at what happens to the hops. By boiling, you extract the Alpha Acid, which is the bittering agent, and over a 75 minutes boil, you isomerise it (make it soluble) so it mixes with the beer. The efficiency of this process depends on the specific gravity of the solution you are boiling the hops in. The higher the gravity, the less efficient the process is. When a recipe is formulated, this is taken into account, and for a given recipe the hops included will give the correct dgree of bitterness, but only if they are boiled in a liquid of the same Specific Gravity as the recipe was formulated for. That is why all Extract recipes will specify how much extract to add to a specified amount of water for the initial boil, because extract brewing usually relies on equipment that can only handle smaller boil volumes. The quantity of water, with the amount of extract specified, will give the correct gravity and therefore the correct extraction. If you have a boiler capable of boiling the full amount of water the recipe calls for as the final volume, then add all the extract at the start, as the gravity will be correct.&#60;/p&#62;
&#60;p&#62;E-bay might provide a cheap boiler, or Greg can supply you a big stockpot which is just as good.

<description>&#60;p&#62;Well, there&#38;#39;s an extract recipe conversion of the AG recipe Techno found to make 22 lts. Personally, I think you would do better to halve all the ingredients and make 11.0 lts. It&#38;#39;s an awful lot if it&#38;#39;s wrong. Also, recipes that call for a 60 minute boil don&#38;#39;t make any allowance for incomplete isomerisation. To isomerise the Alpha Acid properly you need 75 minutes, as I&#38;#39;ve specified in the recipe.&#60;/p&#62;

Colour is campatable with the shop bought, taiste is slightly different, but not a lot, and has a very nice liquorice after-taste reminiscent of the dark ales of yesteryear.  Very pleased with the finished ale and will do another when the planned mild is in the bottles.

&#60;p&#62;But I think its best to make a starter, despite what Wyeast say, you&#38;#39;ll get a much better fermentation. Compared to commercial practice it really is a tiny amount of yeast.&#60;/p&#62;
&#60;p&#62;Make sure the yeast pack is at room temperature. Heat a litre of water, borrow 100 grams of DME from the kit, add to the water, bring to the boil and simmer for 10 minutes stirring occasionally. Cool to 25C pitch the yeast shake well. Every time you pass give the starter a swirl if you haven&#38;#39;t got a stir plate. When its fermented out get the yeast back into suspension and tip the lot into the wort.&#60;/p&#62;

&#60;p&#62;The volume of the kits has been adjusted to use round kilos and half kilos of DME, because it comes packaged that way, and it&#38;#39;s a wole lot easier all round. Also, GW&#38;#39;s recipes don&#38;#39;t always come out spot on, so a few adjustments are needed, which is often why some of the recipes call for small amounts of sugar to adjust the ABV without adding colour. The extra 80 gms of DME doesn&#38;#39;t raise the ABV by any appreciable amount and as we know it&#38;#39;s difficult to reach the stated ABV it will have a better chance. The TTL has a reduced amount for the same reasons, but you&#38;#39;ll see the volume is 21.0 lts. For a starter you only need 200 gms of DME for each yeast pack, so you could cut down the volume of the London Pride kit to release 400 gms of DME.&#60;/p&#62;

<description>&#60;p&#62;Ok and Yippee!!!  Big box arrived from Greg today with 3 lovely new extract kits in so a double brew day is in the offing for sunday. However, the TTL and the Pride kits were ordered with liquid yeasts, Wyeast1469 and WLP002.&#60;/p&#62;
&#60;p&#62;We have not used liquid yeasts before so are really looking forward to trying them but, GW says in his book that making a starter is essential. I also want to retain some of the yeast for future use too.&#60;/p&#62;
&#60;p&#62;I think I understand how it is supposed to work but GW says to use DME to make up the starter. Obviously I have only have the amount of DME that comes with the recipe packs so don&#38;#39;t want to steal any of that to make up a starter. I do have a kilo of brewing sugar in the cupboard so I wonder can I use that instead? I added the DME during the boil whilst the boiler was on and I did have a small amount stuck to the element but it didn&#38;#39;t appear burnt and it cleaned off easy. Though the element on the Swan is hidden and therefore easy to clean.&#60;/p&#62;
&#60;p&#62;That said next time I&#38;#39;ll bring the water to boil, switch off the boiler, dissolve the DME then bring it back to boil.

<description>&#60;p&#62;I really couldn&#38;#39;t tell you how the various scales are set, except to say that Beer Engine only gives the option to set to Tinseth or set to Linear. It&#38;#39;s set to Tinseth. That&#38;#39;s why I like it; simple and reliable. There is no option for setting a colour scale, and as everyone uses EBC (except across the pond where they insist on being different and over-complicated) that&#38;#39;s the only scale Beer Engine uses. Regardless of which program you use, the figures should be the same, unless you&#38;#39;ve got some alternative brewing system selected. Beersmith has loads of different ways of doing it. After all, for a givem amount of ingredients you&#38;#39;ll get the same colour, EBU and ABV.&#60;/p&#62;

<description>&#60;p&#62;This is the Extract recipe Brew UK will be supplying as a kit to brew 22 lts of Batemans Salem Porter.&#60;br /&#62;
It&#38;#39;s a 75 minute boil, using 700 gms of Extract in 8.0 lts of water for the initial boil, 37 gms of Cahllenger for 75 minutes and 14 gms of Golding for the last 10 minutes.&#60;br /&#62;

&#60;p&#62;Just checked the hydrometer. It&#38;#39;s calibrated to 20c, which is worse. I&#38;#39;m fairly sure the DME dissolved, no lumps or anything. I steeped the grains first at about 68c, let the wort cool to about 40c and then added the DME. Got everything up to the boil and and got the hops in. No boil overs etc. A really stressless brew TBH.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve got a 15l stock pan. I did have about 8l in there in case of boil over, which didn&#38;#39;t happen. A pretty concentrated wort but I don&#38;#39;t think it would have this much of an effect. <description>&#60;p&#62;Most hydrometers are calibrated at 15c so the reading wont be off by much.&#60;/p&#62;
&#60;p&#62;Are you sure all the dme dissolved ok?  Did you have any boil overs or add too much water as its quite a low reading.&#60;/p&#62;
&#60;p&#62;Did you double check the recipe and what happened on the brewday?&#60;/p&#62;
&#60;p&#62;I would check your hydrometer by putting it in room temp water to make sure the paper reading inside the tube has not slipped.&#60;/p&#62;
&#60;p&#62;Plus you said you just measured the og, but also the wort had been in the flat for 2 days, so was it 1030 before you added the yeast or 1030 now?

&#60;p&#62;I&#38;#39;ve just measured the OG of my extract clone of Batemans Salem Porter from GW&#38;#39;s book. The OG was 1030, should be around the 1048 mark according to the book. &#60;/p&#62;
&#60;p&#62;I did have to substitute some demerara and sugar crystals as there wasn&#38;#39;t enough regular sugar in the cupboard. I did have a quick look on the web for info and it seems this is OK to do. The wort was sitting for a couple of days in the flat, I reckon the average temperature in the flat is about 12 degrees just now, which makes my reading even worse! Any ideas where I may have cocked up?&#60;/p&#62;

Dried Malt Ext. Xtra Pale. 5.5 EBC. 500 grams. 23.7% of Extract&#60;br /&#62;
&#60;strong&#62;Crystal Malt, Pale. 60 EBC. 200 grams. 5.3% of Extract&#60;/strong&#62;&#60;/p&#62;
&#60;p&#62;Nelson Sauvin Whole. AA 12.7%. 75 mins. 12 grams 69.3% of EBU&#60;br /&#62;
Cascade Whole. AA 6.8%. 10 mins. 10 grams 10.7% of EBU&#60;br /&#62;
Nelson Sauvin Whole. AA 12.7%. 10 mins. 10 grams 20% of EBU&#60;br /&#62;
Cascade Whole AA 6.8%. 0 mins. 15 grams 0% of EBU&#60;br /&#62;

&#60;p&#62;Reduce the amount of Crystal to a maximum of 200 gms, or even 150. It gives a heavy, sweet character if used as more than about 5% - 7% of the total extract. 10% is reckoned to be absolute maximum.&#60;/p&#62;
&#60;p&#62;Steeping the Crystal Malt. Put 10 lt of water into a pan, raise the temperature to 70°c and steep the grains for 30 minutes. Monitor the temperature and raise the temperature if it falls below 66°c.&#60;/p&#62;
&#60;p&#62;For the initial boil only use the 1.5 kg of Pale Malt Extract or you will reduce the efficiency of the Alpha Acid extraction. Add the rest at the end of the boil.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve extended the boil time to 75 minutes. 60 minutes isn&#38;#39;t really enough to isomerise the Alpha Acid properly. 75 is just about right.&#60;/p&#62;
&#60;p&#62;Where are you getting 45 EBU. Even with the extended boil, I&#38;#39;ve only got 36. If you want more bitterness, increase the initial amount of NS to 20 gms to give 53 EBU. With 6.2% ABV this should be OK, and it also brings the initial bitterness figure up to 79% of the EBU which will give less harsh bitterness.

1.5kg Light malt extract&#60;br /&#62;
500g Spraymalt extra light (at end of boil)&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Hops&#60;/strong&#62;&#60;br /&#62;
12g Nelson sauvin (60mins)&#60;br /&#62;
10g Cascade (10mins)&#60;br /&#62;
10g Nelson sauvin (10mins)&#60;br /&#62;
1 Protafloc (10 mins)&#60;br /&#62;
15g Cascade (end of boil)&#60;br /&#62;
15g Nelson sauvin (end of boil)&#60;/p&#62;
&#60;p&#62;Rapid cool to 15-22C, into FV, top up with 2L of water&#60;/p&#62;

All I can say is, give it a go. Life&#38;#39;s one big experiment anyway. You&#38;#39;ll probably end up with something good. If I was doing it I think I&#38;#39;d halve all the ingredients to get the cost a bit more realistic, and have a bit less if it turns out iffy.&#60;br /&#62;
We&#38;#39;ve come quite a long way from the first recipe in this post.

Only improvement I&#38;#39;d suggest is to use a balloon whisk when it comes to adding the DME. You&#38;#39;ll find it a lot quicker. Leave it all untouched in the FV for 14 days, then bottle/barrel. 85 gms sugar for barreling, 120 gms for bottling.&#60;br /&#62;
Well done. Only wish I could brew something and end up as neat and tidy as you.&#60;/p&#62;

If you start with 23 lts and use 15 gms of Warrior at 18.2% AA you are going to get something very bitter, but if you are adding all 3 hops gradually over 60 minutes it would be impossible to work out the IBU anyway. It will also boil down to about 20 lts, so what is the final quantity? Does the recipe specify it?&#60;/p&#62;

&#60;p&#62;Not sure if this helps, but i have a copy of extreme brewing - written by the owner of dogfish head brewery, and it has a extract recipe for the 60-min IPA.&#60;/p&#62;
&#60;p&#62;He starts with making a pre-boil tea at 66C using 75g crushed British amber malt. Allowing the the grain to steep for 15mins before removing then adding 3.2kg of light dry malt extract.&#60;/p&#62;
&#60;p&#62;Then hops as follows&#60;/p&#62;
&#60;p&#62;(15 g) Warrior hops&#60;br /&#62;
(Add gradually over 60mins)&#60;/p&#62;
&#60;p&#62;(15 g) Simcoe hops&#60;br /&#62;
(Add gradually over 60mins)&#60;/p&#62;
&#60;p&#62;(55 g) Amarillo hops&#60;br /&#62;
(Add gradually over 60mins)&#60;/p&#62;
&#60;p&#62;(55 g) Amarillo hops&#60;br /&#62;
(end of boil)&#60;/p&#62;
&#60;p&#62;Yeast:&#60;br /&#62;
Wyeast 1187 Ringwood Ale&#60;/p&#62;

&#60;p&#62;You should be fine using 25lt FVs. The Co2 produced will displace the air and protect the beer during fermentation.&#60;/p&#62;
&#60;p&#62;Most think 11 gms of yeast in a starter should be adequate to ferment a 25 lt brew, so logically, half of it should do 13 lts. Using half and making a 1.0 lt starter should be more than good enough. Leave the starter for 3 days before pitching to develop as many cells as possible. I would use some of the ingredients for the recipe to make the starter as 1.0 lt in 13 lts is quite a large proportion.

At the moment I have two 25liter fermenting buckets and was wondering if I would be ok fermenting batches in this size bucket or should I get something smaller? &#60;p&#62;Also when pitching yeast in this size brew should i still use a full packet of yeast or should i split the yeast make a starter and save half for my next brew?&#60;/p&#62;

&#60;p&#62;1) At 8.5% ABV, such a specialist beer isn&#38;#39;t going to appeal to all in a large quantity. Probably more for a beer to be put away and only brought out for special occasions.&#60;br /&#62;
2) The cost of ingrediemts for 23 lts is very high, so to keep the cost of the kit at a level fairly consistent with the others, the volume is reduced.&#60;/p&#62;
&#60;p&#62;As with all the kits, this one has all the ingredients weighed out so there is no over-buying and no waste.

Each recipe has full directions for boiling a small volume in a stockpot, but your AG kit is perfect for Extract. All you do is boil the full amount, using all the Extract at once. &#60;p&#62;In responce to your question regarding vasalene on the fermenter will not be required  i only use vasalene on my keg as you need an air tight seal to carbonate the beer, but in the fermenter you just need enough of a seal to create a layer of co2 above the beer and help protect it from infection&#60;/p&#62;
&#60;p&#62; In responce about cleaning i personally sterilise everything before and after that come into contact with the wort whether its hot or cold, dunno if thats overkill but it works for me  &#60;/p&#62;
&#60;p&#62;The recipe states to pitch yeast between 18-24c So you should be fine , i know this is difficult to get wort cooled down quickly for a good cold break without the use if a wort cooler&#60;/p&#62;
&#60;p&#62;I would keep an eye and ear on ya fermenter to see if the yeast comes to life &#60;/p&#62;
&#60;p&#62;Personally i start my syphoning with my mouth but i know you can get a auto syphon or can fill ur syphon with water and hold your thumb on the end while u put it into bothe fermenters and let gravity do it thing&#60;/p&#62;

&#60;p&#62;Last night I made my first ever brew. I went for the Way to Amarillo kit as I wanted to jump straight to extract and everyone seems to have success with it.&#60;/p&#62;

As I have a 32 litre brupak boiler with a hop strainer and tap I cooled the wort with cold bottled water straight in the boiler and ran it out through the tap when cool. This was really easy and hopefully served to aerate the wort. It took quite a while to boil 6 litres of water on the stove though which doesn&#38;#39;t fill me with confidence at the prospect of a full-volume boil!&#60;/p&#62;
&#60;p&#62;No fermentation action yet but I&#38;#39;ll try to be patient, it&#38;#39;s only 10 hours later!&#60;/p&#62;
&#60;p&#62;I have a few questions that came up - any help would be greatly appreciated.&#60;/p&#62;
&#60;p&#62;1. I have an airlock on the FV, which goes through a rubber grommet in the lid. Should I have put vaseline on that for a better seal? The seal seems pretty good but I&#38;#39;m sure I&#38;#39;ve read something about vaseline.&#60;/p&#62;
&#60;p&#62;2. What do people do about cleaning and sanitising the hop strainer and tap/ball valve on the boiler? Is it sufficient to run a load of hot water and detergent through it, relying on the fact that it gets hot to sterilise it next brew? Or do I have to take it apart?&#60;/p&#62;
&#60;p&#62;3. I pitched the yeast at 24 degrees but I wonder now whether I should have waited (it was bedtime!). If I&#38;#39;ve ruined the yeast is there anything I can do about that? Chuck more in?&#60;/p&#62;

For example, to brew London Pride would cost £45.14 in ingredients because you need to buy 4 packs of hops. As a kit, with everything weighed out for you and all the instructions, it comes to £23.50, with nothing left over and no waste. All I&#38;#39;ve had to do is update and convert Graham Wheeler&#38;#39;s published recipes.&#60;br /&#62;
It should be remembered that you will never make an exact copy. Water will be different, brewing salts will be added, Dried Malt Extract is the same all over and breweries often use their own specification Malt, the yeast will be different and there are many other small variables, but you will brew the same style and as close as it&#38;#39;s possible to get with extract to the original brew.

Didn&#38;#39;t even realise there was 2 row and 6 row. One of the drawbacks of being a lorry driver rather than a farmer. I&#38;#39;ll be having a good look when I take the dog round the fields this summer. 6 row, presumably, is used as feed barley? What was confusing me was the apparent mix of AG and Extract. &#60;/p&#62;
&#60;p&#62;Can&#38;#39;t see the point of always quoting 2 row, but then the Yanks can be rather pedantic. I think the crap recipe is the answer.&#60;/p&#62;

The phrase, &#38;#39;Steep at 152°F (66°c) for 30 minutes&#38;#39;, suggests an extract brew, but steeping these grains will achieve nothing. Moreover, the 60 minute boil for the hops is barely enough. We alwys use 75 or 90 minutes to be sure of isommerisation.&#60;br /&#62;
Is this sweet beer? I&#38;#39;ve never tried it, but Wyeast 1187 Ringwood leaves quite a lot of residual sweetness as it&#38;#39;s attenuation is only 70%.&#60;br /&#62;
Let me have the recipe source and I&#38;#39;ll take a look. Could be another example of American confusing info.

<description>&#60;p&#62;It wont be a problem mate.  You will have to dodge the hops when you syphon off, so you may get some in the keg but it wont matter too much.  Its said to be best to add the hops (if in primary) after fermentation has slowed right down so the escaping co2 doesnt drive off the hoppy smell, but im sure you will still get a reallty nice kick from the cascade.&#60;/p&#62;

&#60;p&#62;My lovely smelling Cascade hops had arrived when I got home last night, so I had a bash at dry hopping the Amarillo. The only thing is, and I hadn&#38;#39;t properly anticipated this, that there was a thick layer or krausen on top of the beer. If I had had a muslin bag I could probably have just made a little hole at the side and popped the bag directly into the beer, but as I haven&#38;#39;t got any yet, and didn&#38;#39;t want to disturb the krausen, and had weighed out the hops, I ended up just just bunging the 25g of hops on top of the krausen, thinking that when it recedes the hops will start to infuse the beer.  I am almost certain this is not the right thing to do - should I have waited for the krausen to recede?  From memory this only happened after about 10 days in the FV last time I made WTA (and this brew is at Day 5) so, other than use the muslin bag (which I will try next time) what do you think I should have done?  &#60;/p&#62;
&#60;p&#62;I suppose the worst that will happen is I end up with plain old WTA, which is no bad thing at all.&#60;/p&#62;

By making up a 2.0 lt sugar solution, you dilute it a lot and it mixes far easier. Make sure your bottles are somewhere no damage can occur just in case.&#60;/p&#62;
&#60;p&#62;When sugar is packed, it&#38;#39;s sterile. Food production is very tightly regulated. Provided you are careful not to contaminate it, there shouldn&#38;#39;t be a problem.

<description>&#60;p&#62;Sounds good. You might find the sugar solution wasn&#38;#39;t very evenly distributed, so some may produce more gas than others. It&#38;#39;s a problem when you can&#38;#39;t stir it in well.&#60;/p&#62;
&#60;p&#62;The best way of doing it is this; Leave the beer in the FV for 2 weeks, not 1 week. By that time fermentation will be complete and the beer will be almost clear. Put your sugar into a saucpan, up to 125 gms for bottling 40 pints, about 3 gms per pint, and add half a pint of water. Boil it up for 5 minutes. Put the solution into a 2.0 lt jug, cool it to the same temperature as the beer and syphon some beer into the jug until it&#38;#39;s full. Pour it into your barrel. Syphon the rest of the beer into the barrel, cap it, roll it round the floor for a minute or so and immediately put the beer into bottles. This way, it&#38;#39;s all evenly distributed, there&#38;#39;s less handling so less chance of contamination, no stirring so a minimal risk of introducing oxygen and you will get far less sediment in the bottles. Store it at about 20°c for 2 weeks, then 2 weeks at a lower temperature.

<description>&#60;p&#62;So bottle day was Saturday. After the first week in the FV I siphoned off into the bottling barrel to condition for another week and to ensure fermentation had finished. It cleared down quite nicely with about 50mm trub at the bottom.&#60;/p&#62;
&#60;p&#62;Boiled up 85g of granulated sugar with a pint of water and added to the beer in the bottling barrel. Stirred carefully but thoroughly, trying not to disturb the trub. &#60;/p&#62;
&#60;p&#62;Got the little bottler ready and happily filled 40 500ml bottles. Had a sneaky taste, lovely fruity aromas nice long bitter finish. Still a bit spikey so hopefully some time in the bottle will mellow it. Excellent balance of biscuity sweetness and strong bitterness. Pretty much exactly the style of IPA I was going for.&#60;/p&#62;
&#60;p&#62;So bottles are in a warm (19c) place to start the bottle fermentation, I will leave them there for a week then move under the stairs (10c) to clear down and mature. I will probably try the first one in a week or so.&#60;/p&#62;
&#60;p&#62;One thing that bothers me slightly is that one or two of the bottles are showing signs of a much more active bottle fermentation than the other i.e. there is a ring of bubbles around the top. As this is only my second brew I am still worried about bottles breaking but I should be ok as the fermentation finished after a week and I left it for another to condition. Also 85g sugar seems an ideal amount for 20L.&#60;/p&#62;

The temperature really needs to be up at 22°c now for the fermentation to go as far as it can and the yeast to complete it&#38;#39;s work. 1.014 needs an attenuation of 75.4% and 1335 gives 73 - 76% in ideal conditions. I&#38;#39;d rouse it and leave it for another 7 days. 1335 is hghly floculative, and with a high OG beer, as the ferment progresses and a smaller amount of yeast is needed, the yeast can drop out of solution leaving only a small amount in suspension and slowing the ferment. I&#38;#39;d also be happy with 1.016.

It&#38;#39;s going to depend on the type of beer you brewed and when the hops were put in. Any hops you add in the last ten minutes are intended to give flavour and, to a small extent, arroma. In order to reinforce the character of theses hops, use them to dry hop, which will give the aroma. So, whatever went in at 10 minutes from the end of the boil, and I suspect it was Galaxy or Citra or both, use 10 - 20 gms for dry hopping. If it&#38;#39;s Citra, use 25 gms ..... unless, of course, you&#38;#39;re making something way off the wall.

&#60;p&#62;If you use Cascade you will need 25 gms. Best to put them in a boiled (to sterilise) muslin bag and drop it into the fermenter 3 or 4 days into the fermentation. Leave it there 10 days, remove it and bottle/barrel. If you were to use Nelson Sauvin, 15 gms would be plenty.&#60;/p&#62;
&#60;p&#62;Aroma, which what dry hopping gives, depends on essential oils.&#60;br /&#62;

I only have East Kent Goldings at home but wasn&#38;#39;t convinced this would go so well as it&#38;#39;s a bit fruity and more traditionally English Ale tasting - is that right?&#60;br /&#62;

<description>&#60;p&#62;Well from my last post i have just tasted mt chocolate and nut brown ale and for the 2 week stage it is very nice, lovely dark beer and with a chocolate flavouring thats not over powering and with a nice sweet taste thanks to the wlp002 yeast. This is so much better than what i was expecting for a 2 week old beer, probably has something to do with the kilo of muntons dark spraymalt instead of sugar and quite alot of melted dairy milk chocolate chucked in fermenter as an experiment with the kit. &#60;p&#62;The 5 gallons of London Pride is conditioning nicely and the old Peculier bottled a week ago looks good.  It tasted ok yesterday with a trial opening.

I now have bags of challenger icecubes, fuggles and so on. Hoping the extract brew is now soooo easy. Toss in the ice cubes in the amounts and varieties required. &#60;/p&#62;

I said, &#38;quot;what?&#38;quot;. He worked as an &#38;quot;old school chemist&#38;quot; and apparently did some GLC tests on the amount if alpha acids and olefactants in hops after being used. As we all know only about 20% or so is released during the boil. More or less. So he wondered what happened to the other 80%. Well a lot of it stays in the hop plant material and can be further extracted by more boiling. So I tried it and it appears to be true. The second boil does yield more &#38;quot;hop tea&#38;quot;. Maybe not quite so hoppy but none the less something I must consider the implications of. The prospect of saving on the cost of the hops is attractive.

&#60;p&#62;But seriously, I have been debating the rationale for boiling the extract at all. It seems to be a common practice to boil the extract, diluted to a reasonable extent with water, and any hops if one is adding hops. However I see no real reason to do that. I accept there may be subtle differences in flavour for some with sensitive palettes but not to my taste nor anyone who has tasted my brews made in this manner. Make up the malt extract with boiling water from a kettle directly in the fermentation vessel. Malt and boiling water will pasteurise most common bacteria and fungi so that is all that is needed to prevent a bad fermentation. The boiling water (eg 4ltr) obviously helps dissolve the malt extract.  If fresh hops are being added then my method says just boil the hops in a normal (eg 5ltre) saucepan as if one is making &#38;quot;hop tea&#38;quot;. 60 - 75 minutes boil for the bittering hops, and then aroma hops added a few minutes before flame out or indeed after flame out, depending on the flavour required. Then add the hop tea to the malt extract and hot water in the FV - using a strainer to filter the hops out. Top up with cold water to the required volume and temp. This also aerates the mix to give the yeast some oxygen (driven out by boiling the waters). When at teh right temp  - pitch the yeast and sit back. Some poeple wait for (say) 1 week before racking and bottling. After advice given here and elsewhere I now leave the beer in the FV for at least two weeks. And it has been as long as a month for &#38;quot;Belgian beers&#38;quot;. I rack off the brew into a second vessel to which I have added the pre-disolved priming sugar (en masse) so no need to prime each bottle. Then I bottle it. After a minimun of 2 weeks and pref a month the beer is good to go. &#60;/p&#62;
&#60;p&#62;I have shied away from boiling large amounts on malt extract dissolved in water because it wastes energy (and so increases the cost of the beer) and it is am obvious hazard. They don&#38;#39;t call boiling suger/water solutions &#38;quot;Napalm&#38;quot; for nothing.&#60;/p&#62;
&#60;p&#62;I have tried comparing boiled and unboiled methods on a the same wort mix (divide it in half - make &#38;quot;normally&#38;quot; and &#38;quot;without boiling&#38;quot;). After two such experiments using pale malt extract and Amber malt extract I can to the conclusion neither I nor my friends could tell the difference - either in a blind test or when I told them which was which.  Most brewers and brewsters in our brighton brew group now use this method.&#60;/p&#62;
&#60;p&#62;I make no claims for this to be the same for &#38;quot;all grain&#38;quot; brews - but I have a sneaking suspicion that it may be so (puts on hard hat and dives for cover....)  &#60;/p&#62;
&#60;p&#62;The latest development in this technique is the make larger than required batches of hop tea. I now make a number of single variety hop teas. You know the usual suspects - challenger, target, fuggles, goldings. And then I filter and make ice cubes from the tea and store them in the freezer. Now putting hops in my all extract brews is as simple as counting some cubes and tossing them into the malt extract/boiling water mix.&#60;/p&#62;

I&#38;#39;m in the process of listing some recipes for Greg to market as AG and Extract Recipe packs. Bass Mild, Belhaven 60/-, Hop Back Mild and Sarah Hughes Dark Ruby are all on the list. The advantage of the recipe packs is that they will come with the right amount of hops, so no left-overs. They are all GW recipes so highly reliable.

&#60;p&#62;The right yeast and any noble hop I reckon don&#38;#39;t you? and a big starter if you going to ferment at lager temps.

&#60;p&#62;I have a good idea what I&#38;#39;m going to do...It&#38;#39;s just if anyone has had a play with this malt they may give me a head start. I&#38;#39;ll have to look at what hops I&#38;#39;ve got. I have a German yeast in the fridge that I want to start on Friday ready for Sat or Sun.&#60;/p&#62;
