Another batch of Turbo Cider put on the go last night, using Lidl Apfelsaft.

3 Demi's

1 is going to be plain apple, i've added some black tea, and used Champagne yeast (The others are wine yeast).
1 will be topped up with a fruit juice in a couple of days.. not sure which flavour yet.
The final one will have some crushed berries/pectolase added after the initial ferment eases.

It'll be nice to see how each one turns out. As soon as I find a variation I love, I'll get a 23L batch together to keep in stock.

Wilco... I'm pretty sure it'll be lush. Clear as a bell, crisp, tart, very refreshing on the palate, sparkly and moorish as heck.

It's quick and easy Mark... We quaffed quite a lot of this during the summer.. it was fabulous out in the garden on a warm afternoon. We were making up a 20 litre batch every month to keep the stock going for when the neighbours popped over etc.. Still got 2 bottles left in the garage I think. might have to dig em out and see what they are like after 7 months.

Cheers for the input guys!

Turbo cider was looking favourite. I was looking at the on the rocks kits but I'm leaving my Coopers Ginger in my big fermentor for a few weeks to make sure i squeeze every last bit of alcohol out of the yeast.

I was wondering what others had added to turbocider to get different flavours? (or what worked well should I say)

I'm also on the hunt for some burdock annd large dandelion roots if anyone knows where I might be able to find any? Got an alcoholic D&B in mind for Summer...

A friend of mine is currently making a 'Blush' Turbo Cider, replacing 1L of the Apple Juice with a carton of Red Grape Juice. This of course would work with many flavours. Just make sure the juice is preservative free.

Does that fulfill your need for something interesting?

I can't think of a way to add Toffee flavour to a Turbo Cider.. but that doesn't mean it's not possible.

I'd never name a competitor on these forums. To be honest, the only reason I came across this forum is because BrewUK looked like such an excellent shop. And I agree, the range they have in stock is superb. Plus, i'm sure you'll agree, this site just looks better, in design terms. A pleasure to browse.

However, If I want to brew tmrw, I may have to pop to a shop. Reluctantly, of course.
Plus it's nice to have a good look at the equipment... and then buy it from the good people at BrewUK

Back on topic:
I really like the look of the On the Rocks Ciders. But I can't decide if I want to brew a different flavour, or just plain apple this time.. hmm

SSSHHHH you don't talk about going to another homebrew shop on this site. The last person that done that got blocked.
To tell you the truth they may be local but do not stock nearly half as much as this site. I have a local homebrew shop 2 mins walk from me called BeersUnlimited run by a gooner called Cliff and he does not have the on the rocks kit like Gregs shop has hence i get everything from here as it's mostly always in stock.

Thats a couple of times now I've seen the suggestion of adding juice in place of the water in a cider kit..

I've got 15L of Lidl Apfelsaft downstairs that I was going to throw in the Demi's tngt.. but now i'm tempted to try this method. I'm going to my local Brewshop tmrw anyway.

Hmm.

To brew, or not to brew, that is the question.

Yeast: Montrachet
Batch Size (Gallons): 1
Original Gravity: 1.060
Final Gravity: 1.000
Color: Caramel
Primary Fermentation (# of Days & Temp): 14 days @ room temp
Tasting Notes: Slightly sweet and intense flavour, rich apple/pear taste with Caramel/Biscuit/Toffee aftertaste

This is a cider based on the Brother's Toffee Apple that I've grown to love so much.
It's especially suited to the autumn, particularly during halloween or round a bonfire, but goes well in the summer too.
You can also heat it gently on the hob to warm the cockles after a hard day in the winter. Add a little lemon, orange and ginger, and you've got a great cold cure.
It's easy and inexpensive to make, so give it a go!

The reason this is brewed so strong is that you can add appleade/lemonade in the glass to make the yield go further, make it sweeter and a little fizzier - if you're scaling up and don't want to do this, cut the honey a little!

4L 100% Organic Apple Juice
500g Honey
1 pack yeast of your choice. Popular choices are Montrachet, Champagne, Safale S-04 and Nottingham.
1 14oz tin Pear Halves
1tsp Yeast Nutrient
1 Vanilla Pod or Vanilla Extract

First, collect empty bottles, preferably green pints - enough for the entire batch.

Heat the honey in a relatively large saucepan, just on the edge of boiling (but not boiling) until it's dark in colour, and the smell resembles candy floss/marshmallows - around 20 mins.

Don't be afraid here - it won't burn the pan and stays very liquid, but it will froth up quite a lot.

Blend the pears using a food processer. If the pears come in flavored water or syrup, just chuck it all in, providing there's no preservatives. If they come in plain water, drain them first.

When Honey is successfully "burnt," take off the heat and allow to cool. Add 1 carton of Apple Juice and the pears, and stir thoroughly until all honey is dissolved and mixture is consistent. Blending in the Apple Juice and Pears while the honey is still hot will result in a cloudy "Scrumpy" type cider that will never settle. The choice is yours!

Add this mixture to a sterilized demi-john, top up with water or apple juice if need be, check gravity, and when cool enough add yeast and nutrient, and seal with airlock.

Add corn sugar/glucose or honey if you want it stronger. Allow to ferment completely.

When fermentation is complete, check FG. The honey is likely to have created some non-fermentables so it might be slightly sweeter than your usual fully fermented cider.

Rack into an identical secondary vessel passing through a muslin bag. The ingredients create a lot of gunk, so doing this increases your yield.

Wrap Vanilla in a small muslin bag, and suspend in the cider using fishing line. Check taste every few days until you're happy - the cider should be close to settled by the time it has taken the taste. Alternatively, skip this stage and add vanilla extract when priming.

When taste is to your liking and cider has settled, bottle into pint bottles, adding 1/2tsp priming sugar per bottle.

Bottle condition for 3 weeks before drinking. Store in the fridge and drink cool without ice - prepare second trip to the supermarket to make more. Just don't drive, whatever you do.

I have just made the raspberry and lime on the rocks cider kit and left a review on the site, it is a really impressive cider.
You could buy the blueberry on rocks cider kit and to improve further buy 10 litres of ocean sparay blueberry juice on a 2 for 1 special at tesco meaning £6.20 in all. Substitute this with 10 litres of water and add just half kilo brewing sugar. Should be very nice

or buy the raspberry lime kit and 10 litres of Sungrown Apple/Raspberry Juice from tesco at 69p litre and as above but with 3 or 400g sugar. This should be impressive as the kit i am drinking is bloody good without the modifications of cartons juice.

Hey Guys!

I've been lurking for a few weeks without joining the forum; after doing my first Coopers Ginger kit a few weeks ago.
(By the by it worked alright but hasn't got the alcohol content i was looking for.)

Anyway, I'm looking at doing a nice cider from fresh apple juice and had no idea on recipe. Has anyone got a decent, INTERESTING recipe that wont be to tricky for my noob status?
A mixed fruot cider of toffee cider is really what i'm looking for.

Thanks in advance!

This thread seems like an exciting one.

The wine i'm planning will certainly not be ready/matured by christmas, so i'm looking for something to try that everyone can drink sooner.

I've been informed today that a friend has some unused Demi's I can have, so maybe a Turbo Cider will be a fun (and inexpensive) side project to my wine brewing. I'm thinking christmas spices. Ginger and cinnamon sound like they work well. Maybe some orange peel?

Thanks for your suggestion. I brewed them about 3 months ago and to be honest I am tempted to ditch it all. I used a cider yeast and it should have been ok. I think an infection is the most likely cause. But can't work out why. Everything was sanitised with solution and rinsed, airlocks were used . Nevermind guess I just put it down to experience!!

Hi. Not sure really. Possibly an infection. The sugar levels will have given a high ABV. It might be too high for the yeast to work and that would explain the lack of carbonation. How long ago was it brewed? It might get better with keeping. I sometimes buy 5 lts of farm cider down in Devon, and the real strong stuff is pretty foul tasting. Don't know why I bother buying it. Perhaps it's in the hope it might get better.

A question. This is the 4th batch of TC I 've brewed and possibly the worst tasting!! I upped the suger level to experiment to 200 gms in 5 ltr demijohn and 250 gms in the other all brewed fine but both my 5 litre batches taste of smelly socks, really is not nice and it didn't carbonate well either. Any suggestions as to what could have caused the truly rank tasting cider?

If you add more Apple juice then it will probably ferment again, even if you add Pot Sorbate but it won't give you 20% ABV. Apple juice on its own would probably give you 5 or 6% ABV so even if it does ferment it will reduce the ABV down from 10%.

Why don't you just make some more but don't add any sugar which will make it lower ABV. You could then blend the 2 together or just serve separately to the appropriate drinkers.

Alternatively why not just add some lemonade to the strong one when serving, make a kinda shandy. Probably be quite nice served with some ice.

On second thoughts I'm using youngs cider yeast which is tolerant to 10% abv is it likely to go higher than this

It has been in primary for 3 and a half weeks followed by 3 weeks secondary I assumed there would have been enough yeast in suspensionto carbonate but wouldnt have expected the abv to go any higher ?

Cheers saracen

Well I currently have it in my corny which is set at 30psi which I read somewhere will kill the yeast cells is this correct ?

I have a 2ltr bottle of the stuff which I was gonna save and condition longer which will no doubt be alot stronger, think I'll have to just keep an eye on the pressure in the bottle

Tried a cold one tonight very easy to drink maybe have overdone it a lil on the diluting but overall a very nice summer refreshment

When you add the apple juice, the yeast will start on it, then you'll be heading for 20% ABV. You need to either stop the yeast with Potassium Sorbate, or add the apple juice to the glass of cider. Yes, doubling the volume will halve the ABV, roughly.

Hi guys

Kegging up my Ginger turbo cider but decided to dilute it with more apple juice to top up my corny and too take the harsh 10% alcohol twang away

Would I be right in saying if I had 10 litres of 10% cider to 10litre of apple juice would make 5% cider ? On the condition that the yeast doesn't ferment anymore ?

Hi guys - thought i'd show you my recipe as i'm real proud of it (although it's still evolving)

2 gallons Apple and Rasberry pressed juice (this was copella and cost 16 quid)
2 gallons Apple and 1 gallon pineapple pressed juice (this was 3 litres for 4 quid from sainsburys)
1 KG Fructose (tesco)
1 packet of lalvin d47 mead yeast
2 - 4 tsp Pectolase
about a cup of brewing sugar in a keg or in litre bottles 1 tsp each

2 one gallon demijohns
1 five gallon fermenter
bottles or a keg
autosyphon

ok i disolve my fructose in a big steel pan with some of the apple and rasberry and start my yeast in 22C juice . . .
then split the juice sugar mix between my two demijohns and add more juice until 22C,
pitch the yeast and airlock with vodka.
six hours later add half my pectolase - orange foam dies down
three to four days later fermentation slows, so i rack to my five gallon fermenter and add the remaining juice
this goes off like a rocket again, a week later you can bottle / keg with or without the brewing sugar -
it's very tasty both ways after another two weeks,
although the trub in the bottom of containers is very sour and full of pineapple flavour, which some dislike.
Try it - it's quick and easy !

Its not all about cost though. I know I started brewing beer kits because I could get cheap beer but as the hobby grows you start wanting to make better homebrew regardless of cost. Plus its also a good starter into the hobby - ingredients and equipment needed is a minimal cost, easy to mess about with and people like drinking it.

As much as I like the idea of TC is it really worth it? I can buy 2 Litres of Cider from aldi for 1.99 (5.3%)which works out cosiderably cheaper than the ingredients. I know i could tweak it with other flavours or is it just something people do when they have nothing else to brew. I made 50litres of real cider last autumn bit of a palaver but results appear good at initial quality control check.

Hello. Noob here.

DanDan's thread inspired me, so am trying first ever homebrew - Turbo Cider (just apple juice with a bit of cinnamon).

I've cocked up the recipe at the final hurdle, in that I've added the last 0.5 litre of apple juice about 10 mins after the initial 4.5 litres went in. End result is the 5 litre demijohn now has about 1.5 inches gap at the top (i.e. between top of juice level with yeast head on it and very top of the demijohn where the airlock cap is).

Cross-referencing with another recipe I think I was supposed to leave it 24-36 hours before adding the last 0.5 litres of apple juice.

Given I am where I am (i.e. full demijohn 10 mins after adding the yeast), is this likely to overflow or might it be ok? (Apologies for dummy question - never done this before). If the former is there any remedial action I could / should take now / asap, i.e. siphon off 0.5 litres or so now before fermentation kicks in properly?

Cheers if anyone can help.

so I polished off both batches, I have to say I was more impressed with the juice from concentrate batch. So, what to do next...? Oh yeah putting another 10 litre batch on! This time using wine yeast. and my fermenting bin rather than the DJs. Infused the ginger and cinnamon for an hour while cold then simmered for 5 mins with the sugar. OG was 1050.

Having done a couple of TC's i was impressed with the results (dry and crisp) but the Mrs prefers her cider sweet (woodpeckerish). Was wondering if adding Lactose sugar say 10/15 gms per bottle would result in a sweeter cider. If this wouldnt work does anyone have any tips to sweeter cider??

Nice amount of taste, fizz and well I'm impressed. It was the left over (i.e. the bit before the dregs when I bottled it ) so about 1/2 a bottle (I'm using 1 litre PET bottles). Will let you know how the pure pressed apple juice one tastes in a few days.

All from Aldi's pressed apple juice. Love the ginger (sneaky bottle quaffed) but waiting for spring/summer to drink the rest. Just doesn't seem right drinking cider in the winter.

When I made this I bought a 5lt bottle of water from tesco for 85p, and that's the fermenter. 3lts of apple juice and 1lt of white grape juice. Added the sugar and chanpagne yeast and got some rocket fuel. The grape juice added something really good to it. I recently passed the recipe on to a friend and he's never out of Aldi and Asda now! Using the 3 apple to 1 something else ratio, he's made it with Cranberry, Pomegranite, Pear, Red Grape and a few others with no plans to stop yet. Something about a village barbie in the Summer.

Hi I recently started brewing again after a 20 yr break. Just carried out an experiment last night to make 2 batches of TC using DanDans recipe. First batch using Aldi Rio D'Oro Apple Juice (from Concentrate) the other from the Aldi Rio D'Oro Pressed Apple Juice (i.e Not from Concentrate) using 1 sachet of Youngs Cider Yeast in each. Interesting watching the different reactions of the Juices. I would say the reaction from the pressed Juice is much stronger to the Yeast. Bothe are being kept in the same conditions. Anyway I'll see how it turns out... at 62p and 99p a Litre it's not going to kill me (until I drink it!!)

I was in Kitzbuehel Austria for the downhill race a couple years ago, they have a massive party in the streets over the race weekend. One of the outside bars was selling Glühmost which is a bit like Glühwein but made with cider. I have to say it was one of the worst things I've ever drunk!. I reckon the fella was getting rid of his 'off' cider. But I think yours should be quite tasty Tony.

The Hot Bull, which I presume is mulled Red Bull was very nice though.

Hey folks and folkesses!
Just thought I'd tell you about a recent experience.. at the start of the summer I made 40 odd pints of turbo cider (that's 40+, not 40 strange ones), well... nice to drink through the summer and it's peculiar ability to pucker the mouth from it's uber dryness was even welcome in those warmer months. Now the winter has landed upon us I thought I'd try mulling a pint.

Good grief ... what a great drink it makes, if you have a bottle or two lying around, give it a go!
1 pint turbo cider
1 orange cut into slices (skin n'all)
3 tablespoons of dark brown sugar
2 sticks of cinnamon
6 cloves

Bung in saucepan and bring to a gentle simmer-like heat. Don't get anywhere near the boil. Leave on heat for a few mins (like next door's cat).

Drink. Fall over. Nice.

Oh .. drink responsibly.

Can you tell I've just polished off a few?

Tried my first bottle of Turbo Cider last night, really impressed with how it came out, a nice dry crisp flavour, wife likes her cider sweeter so added a wee bit of lemonade to hers and she was happy. Used cloudy apple juice from the CO-OP so even after fermenting for ten days and bottle conditioning for two weeks not expecting it to go crystal clear.
This is definitely being done again, going to experiment with different flavours next time, ginger, cinnamon??

I would definatley stick to just the 150g of sugar/glucose because the one i did with the mistaken amount of 450g sugar turned out far too sweet, don't think all the sugars turned into alcohol, but it started off at 1.060 and ended up at 0.990.

No raspberries comming through, may not bother next time. Made the big mistake (as its so hot) of putting it in the 'fridge for an hour first - tasted better unchilled.

I think they chap in the homebrew shop has not calculated the fermentable sugars in the apple juice!! Mine started off at 1.050 ish so should be around 6%. Didn't measure the FG to be honest.

Bottled it on Sat, taste nice, like scrumpy at the moment. No sign of the ginger so I think I'll have to up the amount quite a bit next time or leave it in the demijohn while it ferments.

11% now that's rocking! I had a crack at turbo cider and it turned out at 7%. Used 150g of glucose and 4.5 cartons of Aldi concentrated apple juice at about 58p a carton. Added a whole sachet of cider yeast. Guy at local homebrew shop told me 150g sugar was only gonna produce a cider of 2%. Not sure how he worked this out, but after listening to you guys I thought I would stick to the forum recipe. If I added what was suggested I would have probably have made fuel for an aircraft carrier!

just to let you all know how the super-turbo mixed fruit cider turned out that i mistakenly added too much sugar to!

it was quite sweet, but tasted nice! has one hell of a kick to it though, infact i would even say it was more like a fruit liqoure. i have worked out that its about 11% but it does taste stronger.

Anyway it won't go to waste and i am gonna try again this week with the proper recipe.

Hi Andy, to use a hydrometer take a sample (or stick the hydrometer sterilised straight into the cider), read where the top of the liquid comes up to. Write this down, ideally before it starts fermenting.

Then do the same at then end.

To work out the ABV just measure the two calculations. This will show you how tohttp://www.brewuk.co.uk/store/index.php/measuring-volume

If its not fermented too much then you could probably add 5 litres of apple juice and split into 2 batches. Or just leave it and end with with some rocket fuel. I'm sure it will get drunk and you've only got 5 litres any how.

Sounds like a good combination.

I had some apple and ginger juice the other day which worked really well. How about ginger cider?

In fact I'm going to make some this weekend so I'll let you know how it turns out.

Saw it and loved it. In my last abode I planted and grew a bramley tree. By the time I moved out it was producing enough apples for about 30 - 40 gals. I miss that tree.

(Actually I grew the tree in the garden - just re-read that and it looks like it may well have been in front of the TV... or in the toilet, it wasn't :o))

I have to make one of those scatters and presses! I made a red wine last september with grapes grown just up the road - toyed with the idea of using the natural yeast but chickened out in the end.

First cider kit I have tried and still waiting until autumn to try the scratter/press. Not sure if you saw the final press but for under £25 it should be a good'un

Yes, I put all my hops and yeast in the freezer as soon as it/they arrive(s) - unless I know I'm going to use it in the next day or two - then I store it/them in the 'fridge.

I take the yeast out about 6 or 12 hours beforehand so it can climb up to room temp. I usually go by the date on the packet - but that's a good question. Do you do all your ciders with natural yeast?

Q. Tony - you freeze the yeast?

Ref the apple pressing I hear freezing apples kills the natural yeast so I guess it is ok for dried. Is there a time limit for freezing?

Found myself with a bit of time to myself this afternoon so - inspired by dandan's recipe, I headed to sainsbury's. Hope you don't mind dandan, I changed it a little:

20 ltrs TC (I 'acquired' a few large water bottles from dispensers - says 19 ltrs on the label but it easily holds 20)

16 ltrs apple juice
3 ltrs apple & raspberry juice

Simmer 340g honey in around 1 ltr of apple juice for 5 mins
Add 15 ltrs of juice to the fermenter
Add 1 cup of black tea
Add the juice with honey
Add 2 teaspoons pectolase
S-04 yeast (because that's what I have in the freezer).

Kept a lot of headspace for yeast activity and will add the top up of apple juice after a couple of days.

I completely forgot to take into account that the juice had been in the 'fridge. It's now warming in a sink full of hot water before I can pitch the yeast (started at 13C).

Apple juice was 56p a ltr (It is from concentrate but at that price it's worth taking a risk on it), the apple and raspberry was 1.68.

The trouble with being a teacher is that everyone in the area knows you. In the past few days I've been seen buying 19 ltrs of juice and 19 jars of honey (for the mead). This will come back to bite me at the next parents evening!

As greg says a whole packet Young's Cider Yeast Sachet 5g or Young's Champagne Wine Yeast Sachet 5g work well.

I've bought some Copella Apple and Elderflower juice to make a batch of TC this week.

Sorry Greg!

5L you need!

I tend to leave it a few weeks after bottling! Its your choice if you prime or not!

I find Lidl's Vitafit Apple Juice quite good for it (does concentrated but is 100%), or Copella Apple juice (on offer at lidl at 2L for £3 at the moment)

Dan, thanks for this looks good. Think I'm going to try some with dried elderflower or maybe even raspberries.

Quick question. You say add the remaining juice one the yeast head settles down but how much as there is no total amount of juice in the recipe?

Also how long to you leave before bottling/drinking?

Yeah I also add a few teaspoons of honey.

Although I only go for the 100% squeezed apple juice and not the concentrate as this already has sugars along with water added to it.

I have a 5L bottle conditioning ready for mid November, dont know what to expect! Maybe some youthfull memories!!!

Some people don't add sugar, but I do boosts the Alch levels and gives more profile to the cider! I some times add a cinnamon stick or some elderflowers to the simmer for a twist! champagne or cider yeast works well with this recipe

Method

Simmer 150g sugar (brewers sugar works best) in around 0.5L of apple juice for 5 mins

Add 4L of juice to the fermenter

Add the juice with sugar

When below 30 deg c, pitch the yeast, cover and shake well to aerate

Fit airlock.

Add the remaining juice once the yeast head settles a little.
