&#60;p&#62;There are 3 main types of hop; Bittering, Aroma, Dual Purpose. Flavour can be obtained from all three&#60;br /&#62;
Bittering hops usually contain a high amount of Alpha Acid, which is the bittering agent and is extracted by boiling. In it&#38;#39;s raw state it doesn&#38;#39;t mix with water so you have to boil the mix for at least 60 mins to &#38;#39;isommerise&#38;#39; it. 75 minutes is considered to be best.&#60;br /&#62;
For flavour, hops are added late in the boil. The elements which impart flavour are boiled off in quite a short time so the hops are added in the last 5 or 10 minutes.&#60;br /&#62;
Post-boil hopping imparts flavour and aroma. The wort, as we call the mix before it ferments, is allowed to cool to 80°c after the main boil and the hops added and steeped for 30 minutes. The reason for allowing it to cool is that the essential oils, the aroma element, boil off at anything over 80°c.&#60;br /&#62;
Dry hopping is adding hops to the beer while it is fermenting. This gives more aroma.&#60;br /&#62;

&#60;p&#62;All you do now is decide on a style, check the guidelins for Bitterness, etc, choose suitable hops and load it all into Beer Engine, adjusting the times and quantities to give the beer you want.&#60;/p&#62;
&#60;p&#62;As Seamus says, Graham Wheeler&#38;#39;s book is excellent and covers just about everything you need to know. Stick with GW and don&#38;#39;t make the mistake of taking bits of info from several sources. GW&#38;#39;s methods are sound and by following one system you don&#38;#39;t start confusing yourself.

<description>&#60;p&#62;I have an RO unit but can&#38;#39;t imagine it being good for brewing. It strips everything out of the water. Metals, minerals, salts, everything. The pure H2O you get out is very very soft and unstable. You would then have to start adding most of what you&#38;#39;ve taken out back in.&#60;br /&#62;
Leave it for the Discus breeders and the Coral Reef / Marine tank brigade me thinks.

<description>&#60;p&#62;I thought it might be a good idea to pass on any good experiences with brewing in the form of a few handy hints. Here&#38;#39;s the first one.&#60;/p&#62;
&#60;p&#62;When your plastic barrel pressurises during conditioning, the little plastic feet underneath rise up as the barrel &#38;#39;balloons&#38;#39;. If you look at the bottom of the barrel when the barrel is emptied, you&#38;#39;ll often find it is distorted and the plastic hasn&#38;#39;t gone back to the right shape.&#60;br /&#62;
Boil a kettle and pour the water, about 1.5 lts, into the barrel. Let it stand for a few minutes to heat the plastic of the base. Pour it away and add another 1.5 lts of boiling water. Screw a cap on loosely and give the barrel a quick swill round. Try not to swill the hot water up the sides of the barrel. You&#38;#39;ll hear air escaping from the loose cap as the hot water expands the air. Now screw the cap down tight and stand the barrel in a cold place. The plastic of the base will have softened slightly with the hot water and as the hot air inside contracts, the base of the barrel will be drawn upwards back to it&#38;#39;s proper shape.&#60;br /&#62;
Keep an eye on it, because it&#38;#39;s possible that the sides will start to cave in. If that happens, loosen the cap, pour the water out, pour in another 1.5 lts, screw the cap down and give it a good swill round. As soon as the shape returns, remove the cap.

&#60;p&#62;The trub usually consists of 3 layers, the muck on the bottom, a thin layer of yeast on top of that and then the liquid yeast suspension.&#60;/p&#62;
&#60;p&#62;If you can avoid picking up the &#38;#39;muck&#38;#39; then fine but don&#38;#39;t be too fussy about it as you will get rid of the rest when washing.&#60;/p&#62;
&#60;p&#62;Don&#38;#39;t try to syphon off the thin yeast layer after washing as there will be plenty of yeast in suspension still, assuming you haven&#38;#39;t left it to settle for hours and hours.

Only interested as i have a tettnag lager ready to 2nd ferment over the weekend and a european lager to start next so could i reuse yeast from tettnag batch.

It is very easy to do, and people shouldn&#38;#39;t be afraid of it.&#60;br /&#62;
As well as saving money it is very useful to always have the yeast to hand for those times when you suddenly get the urge to brew.&#60;br /&#62;
Just make sure that you apply all the usual hygiene standards.&#60;br /&#62;
If you aren&#38;#39;t brewing for a while then you can either freeze the yeast for a few months or keep it in the fridge and make a starter and reharvest every 3 weeks.

I hate warm beer in the summer months but always barrel my home brew in King kegs kept in the garage where they heat up. I came across some large flexible cooling mats in Tesco,  silver foil on one side with pockets filled with a blue stuff which turns to ice in the freezer. It&#38;#39;s sold for lining picnic baskets etc. Three mats joined together with duct tape fit perfectly around a King keg and can be kept in place with self-adhesive velcro tape or a strap or bungee cord. Put the mats in the freezer each night and wrap around the barrel in the morning. If you remember to do do this you get a nice drinkeable beer temperature through the hot weather.

&#60;p&#62;Putting a glass of gin in the freezer doesnt freeze the water and allow you to remove the ice, and have a glass of alcohol and glass of water.  Both the frozen and the liquid componants will contain alcohol, but the liquid will be stronger.&#60;br /&#62;
You can repeatedly freeze and defrost the samples to create increasingly alcholic (and less alcoholic) glasses, but a single freeze wont turn a 20% alcohol/water solution into a glass water and an emptier glass of alcohol, half a dozen freezes is likely to leave your &#38;quot;water&#38;quot; glass, at beer %ages.&#60;/p&#62;
&#60;p&#62;Heat distilliation suffers from the same problem, which is why even cheap mass markets like Smirnoff are triple distilled.&#60;/p&#62;
&#60;p&#62;You cant just add more yeast to make a stronger drink, alcohol is quite toxic, turbo yeast is merely yeast that can survive very high alcohol levels, but no matter how much you put in, it&#38;#39;ll still die at around 17-22%&#60;br /&#62;
As a comparison, humans die at around 0.7%

<description>&#60;p&#62;Hi guys, after reading up online about the freezing technique which would probably be one of the easier options but the problem with that is it is nearly 100% alcohol in that which is obviously way to high, most distilleries then water down the mixture for their proper ABV. I think it is definitely worth a try so that is an option. I also want to try the turbo yeast which was the first suggestion, would I have to use the recommended amount of yeast that the recipe suggests but use turbo instead if the provided one or do I use less? I have no idea but I would like to try out other people&#38;#39;s suggestions. This way you could bump up the abv, but you would loose a fair bit of the prduct. The good news is, a packet of turbo yeast, 8kg or so of sugar and 20l of water is pretty cheap! My friend who i am trying to start a micro brewery with doesnt like beer :-O he only drinks spirits and cider. We were doing the research for our MB and came across the spirits and he hasnt shut up about them since lol. My question is, could you get the ABV up from 22% to maybe 25-30%? would it just be a case of more sugar and yeast and longer to ferment or is there more to it then that?&#60;/p&#62;

And how do you clean the FV before sticking the new brew on top of the yeast cake? Or should you move half of the yeast cake to a clean sterilised FV? &#60;/p&#62;

&#60;p&#62;For the later addition aroma hops, we just poured them in.  But when straining into the fermenter we used a couple more bits of tights to keep them out.  I effectively covered the top of the fermenter with a piece and put as many hops in as possibly and then poured the wort over and through them to get as much flavour as possible.  Whether this mad any difference at all, I don&#38;#39;t know, but the thought was there.

&#60;p&#62;The time to use the campden tablet is when you get the water ready, not in the pan.  What I do is get the total amount of water I want to use in a seperate container then treat it (I usally do it the night before) then its good to go when I start brewing.&#60;/p&#62;

<description>&#60;p&#62;As the fermentation started at 32c I would expect the beer to have some off flavours, but these may subside while the beer is conditioning.  Also its a lot a flavoursome hops in there so it may just need a lot more time to balance out as well.&#60;/p&#62;
&#60;p&#62;Conditioning always amazes me.  What could be a chucker, given a few months may suprise you.&#60;/p&#62;
&#60;p&#62;If its still in the fermenter, as long as its airlocked, I would leave it on the yeast for another week to see what difference that makes.  If its in a barrel - just leave it alone and try it every now and again.

&#60;p&#62;Hop additions all pellets&#60;/p&#62;
&#60;p&#62;Citra 10g 90min&#60;br /&#62;
Galaxy 10g 30min&#60;br /&#62;
Galaxy 15g 15min&#60;br /&#62;
Citra 10g 15min&#60;br /&#62;
Galaxy 15g 0min&#60;br /&#62;
Citra 15g 0min steep for 30min&#60;/p&#62;

&#60;p&#62;Was it a tried and tested recipe&#60;/p&#62;
&#60;p&#62;the reason I ask the last one is because (as I have found out) the recipe may cause some flavours you were not expecting - any chance of getting the recipe up?&#60;/p&#62;
&#60;p&#62;Fermentation is a likely suspect as you have said that the sanitation process is good.

<description>&#60;p&#62;Too much crystal might make the beer taste a little icky, cloying I think is the official term but thats all. If you steeped the grains for too long or at too high a temperature you may get tannins from the husks.&#60;/p&#62;
&#60;p&#62;My guess would be sanitiser residue and/or too high fermentation temp. &#60;p&#62;I had put the brew belt on after pitching the yeast as had been drinking while brewing and when I checked on tithe next day the thermometer said 32c but after taking the belt off and giving it a stir without inderducing too much oxygen the fermentation started again &#60;/p&#62;
&#60;p&#62;Another batch I dine a week ago went fine started fermenting at room temperature but has also has a tcp like smell which is what made mr think it was the heat that done it

&#60;p&#62;I&#38;#39;m very anal with my sterilisation so pretty sure it ain&#38;#39;t an infection and the other other thing I did different was steep crystal grain and carapils where previously I only steeped carapils?&#60;/p&#62;
&#60;p&#62;The only thing I can think it&#38;#39;s the tempratuter it&#38;#39;s fermented at?&#60;/p&#62;
&#60;p&#62;Thought about getting a big bin my fermenter would fit in and filling partially with water while I look into the brew fridge

&#60;p&#62;After my last two batches ruined due to the lovely summer weather(not that I&#38;#39;m complaining about the weather )&#60;/p&#62;
&#60;p&#62;I&#38;#39;m seeking a method to maintain a better temp for fermentation during these warmer days I read vanish&#38;#39;s pale ale method that state he put the fermenter in a bucket of water, would this do the trick along or would you need to add some ice to brig the temp down?&#60;/p&#62;
&#60;p&#62;I know I could build myself a brew fridge for fermenting but the SWMBO may just flip her lid if I spend any more money on brewing equipment after shedding out the dosh on a corny and co2 &#60;/p&#62;
&#60;p&#62;I&#38;#39;m dying to get some beer in my corny and give it a go but after my last failure which should have been in the keg this week it looks like I&#38;#39;m starting from scratch.&#60;/p&#62;
&#60;p&#62;So how do you guys brew in the summer ?&#60;/p&#62;

&#60;p&#62;Funny you should say that, Nath. I&#38;#39;ve done two 23 lt brews since I set up mt ATC 800+ and aquarium heater and I&#38;#39;ve got 46 lts of Vinegar! Sterilisation hasn&#38;#39;t changed and there&#38;#39;s nothing common to the brews which could explain it. No new ingredients and 2 tried and tested yeasts, neither of which have any problems in the propogation bottles. The only change has been the heating, and all components have been thoroughly sanitised each time.

It was about 2 times the size of a &#38;quot;normal&#38;quot; kitchen one in a rectangle shape with 2 handles that pull out from either side.  This let me just rest it on top of the fv while I poured away!

welcome to the forum.  Your beer will Be fine in the fermenter for that length of time.  No sugar is needed in those kegs as the pressure is sufficient to force carbonate the beer rather than simple pushing it out of a pressure barrel.

&#60;p&#62;I&#38;#39;m new to all this brewing but have fancied it for a while. I bought a cheap Brew Buddy kit from Tescos (We all have to start somewhere!) and it&#38;#39;s been fermenting for 3 days now.&#60;/p&#62;
&#60;p&#62;The fermenting whadya-call-it has a lid that seals it shut.&#60;/p&#62;
&#60;p&#62;Does this lid need to be sealed shut all the time? I&#38;#39;ve opened it at the edge to have a nosey from time to time - and there&#38;#39;s aload of white frothyness all over it so I assume all&#38;#39;s well.&#60;/p&#62;
&#60;p&#62;I feel I&#38;#39;ve done everything by the letter so far - however the kit says I should bottle or keg my beer. I&#38;#39;m going to buy a Corny (from here!) and use Co2 but that&#38;#39;s not going to happen until next week.&#60;/p&#62;
&#60;p&#62;Will I harm my beer leaving it in its 1st fermenting barrel with the lid sealed until I get my Corny - and how does secondary fermentation work with a Corny, ie do I need to add priming sugar even though I&#38;#39;m planning on force carbonating?

&#60;p&#62;A few weeks ago Greg (being the nice man that he is) let me borrow a book on Yeast.  This has spurred on many a conversation between us and the more I read and researched on the net the more I thought - &#60;strong&#62;Flippin&#38;#39; hell.&#60;/strong&#62;&#60;/p&#62;
&#60;p&#62;Yeast (and the way you treat it) is without a doubt one of the, if not the, most important part of the beer and how you use it depends on how your beer could turn out to be crap to great to unbelivable.  There is so much that the yeast gives you and even if you use the same strain, without consistant methods, no two brews would be the same.&#60;/p&#62;
&#60;p&#62;Temperature, lag times, fermentation vessel size, pitch rate, oxygen levels, mineral levels, fermentation times, time on yeast cake, etc etc.... - every thing (and I mean literally everything) makes a difference.&#60;/p&#62;
&#60;p&#62;Now in the following week (when the missus takes the kids down Cornwall for the half term)  I will be writing a &#38;quot;readme&#38;quot; with some (hopefully) good information to digest and ponder over (if im not too drunk while they are away   &#38;lt;img src=&#38;quot;http://www.brewuk.co.uk/forum/bb-plugins/default/icon_razz.gif&#38;quot; title=&#38;quot;:P&#38;quot; class=&#38;quot;bb_smilies&#38;quot; /&#38;gt;  ). <description>&#60;p&#62;Greg is the man for kit. His outfits are great value. Take a look here in the shop at &#38;#39;Microbreweries&#38;#39;. The equipment is suitable for kits or extract with the addition of a stockpot. It&#38;#39;s good for all grain as well with the addition of a boiler and a bit of ingenuity making a mash tun. Mine is a converted 28lt coolbox I found on E-bay, brand new, for £9.69 + postage plus a bit of plumbing. I made a wort chiller from a 10m coil of 10mm copper pipe wound round a cylinder and fitted with some tubing to run cold water through it, in all about £20. There are plenty of posts and photos on here of home made kit, and I think it adds to the fun.

&#60;p&#62;The most important thing for me is that I now know it is possible to ferment in my garage. I thought I was going to struggle with temperature but the heater / temp regulator solution looks just the thing.&#60;/p&#62;
&#60;p&#62;As I mentioned, I&#38;#39;m fairly new to beer brewing and don&#38;#39;t have much equipment other than hydrometer, syphon and and some small demijohns I use for wine - so my next step is to decide what kind of equipment I need.&#60;/p&#62;
&#60;p&#62;I was thinking of extract brewing to start, and I was going to use a calor ring and a large saucepot to make the wort. Having had a look around though it seems to be almost as cost effective to buy a catering urn. I&#38;#39;ve seen a ss 30l one brand new for 70 quid so I&#38;#39;m assuming they can be picked up used for a bit less. &#60;/p&#62;

The rest you can do in the garage easily, but fermentation needs to be quite accurately temperature controlled. A 100w heater is plenty for a 5 gallon fermenter, but the same seller does 200w heaters for £1.00 more. I bought the smaller because the unit is actually shorter and will fit the FV better.&#60;br /&#62;

&#60;p&#62;Fermenting in the house is an option, but if you can get a workable setup in the garage it&#38;#39;s going to be so much better. They are usually brick and the temperature tends to remain far more constant. I wish I had a garage to brew in as there have been a few mishaps in the house.&#60;/p&#62;
&#60;p&#62;I would find an old single quilt, or new one at the giveaway prices supermarkets come up with, and wrap the Fermenter in it. That will help the temp stay up in the winter and down in the summer.&#60;/p&#62;

&#60;p&#62;The only way you can ferment in the garage is to use some kind of heater and ideally a temperature controller. If you use a fish tank heater then it will be low voltage and not use much power. &#60;/p&#62;
&#60;p&#62;The best thing to buy is an ATC800 Temp controller, you can find them quite cheaply on ebay. Saracen picked up a set for about £35 (including a heater) then you will be able to control the heat to within a degree.&#60;/p&#62;
&#60;p&#62;If you don&#38;#39;t do this then you have no chance of brewing beer to be honest unless you manage to find a window in the weather when its a steady 18c but good luck with that!&#60;/p&#62;
&#60;p&#62;Its the best £35 odd quid you&#38;#39;ll ever spend on brewing gear.

&#60;p&#62;In the summer temperature swings will be smaller and average temp higher but it would be good if I could get started now (if possible)&#60;/p&#62;
&#60;p&#62;I have power but I don&#38;#39;t really want to run heaters 24/7 due to expense. Brewing in my house isn&#38;#39;t an option either as I&#38;#39;m getting away with wine but I don&#38;#39;t think the addition of brewing smells and equipment will be all that welcome.&#60;/p&#62;

I have it in mind to do a Jaipur clone - I have the grain bill and hop schedule pretty clear by doing a little research so I emailed them to suggest a yeast - and although they wouldn&#38;#39;t let you know what yeast Thornbridge (or any other brewery) use, they will &#38;#39;suggest&#38;#39;.&#60;/p&#62;
&#60;p&#62;I emailed them and said I was planning to do just a 30ltr brew and they emailed back suggesting a yeast and saying that I&#38;#39;d probably need a 1 ltr starter. &#60;p&#62;I have wrapped my beer up in a nice blanket as it&#38;#39;s snowy in Norwich and very cold too. But i checked this morning and those little yeasty things have started doing their business. I don&#38;#39;t know what&#38;#39;s making my hair go grey more the kids running riot at 8:07am in the morning or me stressing over my beer? I&#38;#39;ve not even thought about work yet.&#60;/p&#62;
&#60;p&#62;I used Wyeast British Ale II 1335... Supposed to be a very good yeast. &#60;/p&#62;

The propogator won&#38;#39;t do any harm. These yeast things and real small, but damned clever. They&#38;#39;ll sort if for you.

<description>&#60;p&#62;As the other say your yeast will be fine. That yeast is good up to 10% abv its just that the amount of yeast in the smack pack can only cope with 5 gallons up to 1060 but as you only have 2 gallons it will be fine.&#60;/p&#62;
&#60;p&#62;1080 is going to be a strong old brew. I would probably liquor back anyway to make it weaker and get more. I always end up adding water to the fermenter to bring the gravity down. Just follow Tony&#38;#39;s advice and boil it (and cool) first.

Add enough to bring the gravity to where you want it - this has the advantage of giving you more beer too!&#60;/p&#62;
&#60;p&#62;I didn&#38;#39;t realise that yeast was only good up to 1060 ... but that will be what is says on the packet, I&#38;#39;m sure it&#38;#39;ll tackle much higher gravities than that.  The yeast is probably in shock at the moment at all that food!&#60;/p&#62;
&#60;p&#62;I&#38;#39;ve had liquid yeats that have taken 48 hours to get going.  Is there any reason you ended up with that amount - was it just more lost to the boil than you expected?  Too high a temp is likely to give poor results rather than too much sugar, your temp was spot on!&#60;/p&#62;

&#60;p&#62;Hmmmmm is how i am going to start this. &#60;/p&#62;
&#60;p&#62;I pitched the yeast last night and the temperature was 22c which is about right. However, this morning nothing! Doesn&#38;#39;t even look like it&#38;#39;s starting to bubble? The yeast i am using is 1968 london esb. I also read on the packet it works up to 1.060 O.G when i measured mine 1.080!! Aaarrrgh! Will this have a knock on affect and have i ruined my hard work?&#60;/p&#62;
