<description>&#60;p&#62;Mate, no worries. Try extract, you will not be disappointed. The modern can kits are really good but Gregs extract kits are the dog&#38;#39;s proverbials. The TWA for instance is a real head-turner. Everyone who has been lucky enough to blag one off me has LOVED it! <description>&#60;p&#62;A bit of prep beforehand, 75 mins total boil time, and then about 35 mins cooling the wort before bunging into the FV and pitching etc and a then quick clean up. 2.5 hours all in? &#60;p&#62;All ingredients checked as being present and correct and everything sanitised(?) with videne then rinsed (yes I know it doesn&#38;#39;t need it but I do it anyway).&#60;/p&#62;

&#60;p&#62;6L of water on the stove in the 15L stockpot and brought up to 68C, then temp stabilised before steeping 18g of Black Malt for 30 mins in a mussie bag.&#60;/p&#62;

&#60;p&#62;Meanwhile, weighed out 800g of DME and 25g of East Kent Goldings and 27 g of Styrian Goldings.&#60;/p&#62;

&#60;p&#62;30 mins is up so out with the black malt and in with the first lot of DME. The balloon whisk is a godsend here... it really helps to mix in the DME quickly and smoothly! &#60;/p&#62;

&#60;p&#62;Bring the mix to the boil and add the first of the hops.&#60;/p&#62;

&#60;p&#62;While that&#38;#39;s boilng away nicely the smackpack of Wyeast is doing its thing at 22C and the next batch of hops is weighed out... 18g of Styrians all ready to go.&#60;/p&#62;

&#60;p&#62;Timer&#38;#39;s gone off so in with the last of the hops and set the timer for another 10 mins... will be 75 mins total boil.&#60;/p&#62;

&#60;p&#62;Then off with the heat, in with the remainder of the DME (1700g) and stir in nicely.&#60;/p&#62;

&#60;p&#62;Stockpot into the sink with cold running water and the occasional stir... temp down from 100C to 28C in 35 mins (found out that the wort chiller is being &#38;#39;borrowed&#38;#39; by brew buddy son&#38;#39;s mate without telling me!) &#60;/p&#62;

&#60;p&#62;8L of cold water into the FV, then the contents of the stockpot poured into it through the strainer using the hops to help filter out the crud.&#60;/p&#62;

&#60;p&#62;Topped up to 21L also added through the hop bed to wash out the last of the flavours... by which time the smackpack has swollen up to bursting point! Quick temp check 21C... good to go... &#60;/p&#62;

Currency exchange procedure is the same, as with sitting down and enjoying your hard earned pint.

&#60;p&#62;Extract car key from jacket pocket and open car door. Carefully enter the vehicle, put on seat belt, start car and set temperature to 20c using heating or cooling elements before moving off (the rest of this procedure is pretty clearly explained in GW&#38;#39;s book, How to Drive a Motor Vehicle on Great British Roads). &#60;/p&#62;
&#60;p&#62;Make your way to local Tesco store and park in car park. If you park as far away from the front doors as possible and leave your jacket zip open you will achieve an excellent cold break as you make your way across the car park.&#60;/p&#62;
&#60;p&#62;Navigate your way to the beer section and locate bottles of PJ. Put half a dozen in your goods strainer (a rectangular steel mesh basket that will allow discarded sweetie wrappers and other undesireables to fall through whilst retaining bottles of PJ). This is also a good time to add other items wanted by the SWMBO that will add flavour and aroma to your relationship such as a bunch of flowers or something exotic like Ferrero Roches.&#60;/p&#62;
&#60;p&#62;Take the whole lot to the check out and wait for 60 mins in the queue. 15 mins before the end of the wait add a couple of impulse buys from the shelves immediately to your right.&#60;/p&#62;
&#60;p&#62;10 Mins from the end of your wait extract currency from your wallet or pocket as appropriate. Sterling is found to work best although other currencies may be accepted if you happen to have old stock hanging about the house from previous brew purchases (it&#38;#39;s usually best to run these items through a currency converter first to ensure you have the correct values for each - these are often found in branches of local banks). &#60;/p&#62;
&#60;p&#62;When greeted by surly check out staff smile sweetly and hand over the correct amount of sterling to complete the purchase. Rack items across to second vessel for transportation. Carrier bags (invariably obtainable in large numbers for a small fee from the cashier) can work quite well here and there is not normally any requirement for disinfecting, sterilising, sanitising or whatever. You may wish to consider a cornyflake box as an alternative to a carrier bags but this has it&#38;#39;s own pros and cons which will be explored in a later post.  I find carriers work fine for me... I like to keep it simple.&#60;/p&#62;
&#60;p&#62;Place any returned coinage back in pocket and retain for future brew purchases (you can often use up lots of odds and sods this way and be pleasantly surprised by the results).&#60;/p&#62;
&#60;p&#62;Gather up your goods, make your way back to vehicle having done up your jacket to avoid a second cold break and repeat driving procedure until you reach home.&#60;/p&#62;
&#60;p&#62;Give flowers to SWMBO, pat the dog, pour first bottle of PJ into suitable glass, place others into fridge,  and retire in front of TV with DVD or sporting event of your choice.&#60;/p&#62;
&#60;p&#62;Now I&#38;#39;m sure some if the more experienced brew purchasers on this forum will have their own suggestions as to how to achieve a better pint of PJ but this method works fine for me.&#60;/p&#62;

Greg will be posting 60 or so new extract recipes soon, together with kits to make them, from easy drinking 3.6% ABV Bitters to 8.5% ABV Robinsons Old Tom. All the kits will have the exact amounts of ingredients and clear instructions. In addition to the stuff you have for kit brewing, all you need is a stockpot that will hold 12 lts. We only boil 6 lts, but you need the extra capacity to stop boil overs.&#60;br /&#62;
For a book, all you really need is Graham Wheeler&#38;#39;s &#38;quot;Brew your own British Real Ale&#38;quot;, and maybe &#38;quot;Camra Guide to Home Brewing&#38;quot;, also by GW. I think it is going to be very strong and a bit sweet. I did not have any brewing suger or spray malt to hand so decided to get some muscavado suger as its a dark beer. It said to put in 1075 grams so I got a 1kilo bag and a 500 gram bag put the one kilo bag in fv and when I opened the 500 gram the bag split and half of it went in.&#60;br /&#62;
Just had a look this morning and its bubbling away like mad and has a yeast layer about 6 inch. Has anyone else tried one of these kits.

That recipe is a long way out. I&#38;#39;ve no idea why, or how Beer Engine came up with it. I can only think it was mixed up within the program during the conversion. When you simply do the recipe, you tend not to notice it, but it&#38;#39;s way out. It would give 8.2% ABV. Good job your people are checking it.&#60;br /&#62;
The bit I don&#38;#39;t understand is that the specifications it&#38;#39;s come up with are right but could never correspond with the ingredients. This is correct. I can only apologise and hope it&#38;#39;s not too inconvenient for you. I suspect there may have been so many opinions for this that I used the wrong figures, but the software should have sorted it.&#60;br /&#62;

It&#38;#39;s fairly accurate and is the recipe Greg&#38;#39;s kit will be made up to, but we changed the Yeast to S-04, Wyeast 1098 or WLP 007. It&#38;#39;s for 23 lts, which is a lot of a strong beer like Old Peculiar and makes the kit very expensive. With liquid yeast it would be around £45. The Brew UK recipe is for 13 lts at the moment.&#60;br /&#62;
The other 2 beers you mentioned are in there, too. The London Pride is already on sale.

Also, if you fix the EBU in the &#38;#39;Bitterness EBU&#38;#39; box, then change the time for 1 hop, the amount of the other changes to compensat and still give the same values. BE is quite sophisticated when you find your way round it.&#60;/p&#62;
&#60;p&#62;Glad you London Pride&#38;#39;s going well. It&#38;#39;s never going to be an exact copy, because the water is different where you live, the brewery will almost certainly use brewing salts, the malt nay be to their own specification. There are so many variables, but it should be close. 4 weeks should be about right to condition. At the moment I would guess it has a slightly harsh bitterness.

&#60;p&#62;The formula for substituting different hops works for different AA as well of the same hops. I tend not to use BE because I BIAB and use Brewmate or Beersmith for water quantities. Anyway...thanks for your advice on the wlp002.  The London Pride clone conditioning in the bottle but think this will be some time before ready to drink (about 4 weeks?).  Early tasting check after a week not quite right!

Beer Engine does take account of hop additions. All you do is adjust the boil times in the &#38;#39;Hop Variety&#38;#39; panel.&#60;br /&#62;
Simply adjusting the AA figures doesn&#38;#39;t quite do it. When you load a recipe into Beer Engine, using the same AA figures as Graham did, you&#38;#39;ll get the correct IBU for the recipe, at the time it was written. There is a button on the right of Beer Engine marked &#38;#39;% EBU&#38;#39;. If you use this, the &#38;#39;Hop Variety&#38;#39; panel show a %age figure in the last field. This gives you the original balance of the recipe. If you then &#38;#39;tick&#38;#39; the box beside the panel marked &#38;#39;Bitterness EBU&#38;#39;, you can then adjust the AA value in the &#38;#39;Hop Variety&#38;#39; panel and it will automatically adjust all the amounts of hops, but retain the same balance. All page 21 does is gives a formula for substituting different hops, which beer engine can do easily, provided you have a record of the original EBU%ages.

Try not to browse around the net looking at all sorts of advice, especially the American forums. Foreign brewing isn&#38;#39;t the same as English and the advice is often bad and conflicting. You&#38;#39;ve found a good source of info both here and from GW. Try not to confuse yourself. There are many &#38;#39;new&#38;#39; ways of brewing, with new ideas. Some are sound, but I reckon, as it&#38;#39;s been going on for thousands of years and the beer still tastes good, stick with it.&#60;/p&#62;
&#60;p&#62;I&#38;#39;d be interested to know which beer you are going for and which yeast you will be using, just to see if it corresponds with my findings.

<description>&#60;p&#62;There will be extract kits, from recipes in Graham Wheeler&#38;#39;s book, on here very soon, and they will all have the correct amounts of hops and grains in them so there is no waste and no extra expense. Greg has them all and it&#38;#39;s just a few days to get them online. Be careful of simply converting GW&#38;#39;s recipes. They were formulated a few years ago and Hop Alpha Acids not only change year by year, but have improved a bit. It&#38;#39;s not simply a case of adjusting the values. You have to convert the recipe using software, note the EBU %ages, then put in the new values and re-balance the recipe or you&#38;#39;ll get the wrong bitterness. Also, when trying to replicate a beer, the yeast is very important. GW gives Original Gravity and Final Gravity figures to each recipe, and this is vital information. A beer which starts at 1.040 and ends at 1.010 needs a different yeast to a beer that starts at 1.040 and ends at 1.007. Without taking all this into account, and this has all been done with the Brew UK recipes, all you get is a brown beer.

&#60;p&#62;Just finished bottling my second brew its a kit wheat beer.&#60;br /&#62;
Thanx to all the help on this forum everything is going along very well.&#60;br /&#62;
I now have a king keg 3/4 full of a very nice bitter and my first wheat beer bottled.&#60;br /&#62;
I have just been given a 2 cans of brewferm lucky me Ambiorix and Abdij so will get them going.&#60;br /&#62;
Think this will be the last kits that I do. Got a 19lt pan and am going to try the extract beer. again I am so lucky as we have a great brew shop local and the lady said that if I tell her the page number in graham wheelers(again got this from the advice here) book she will put the kit together for me.(think I have pulled lol.)&#60;br /&#62;
Its just a shame that the nearest corny supplier on ebay is 85 miles away oh well cant have it all.

<description>&#60;p&#62;Honestly, I&#38;#39;m fairly new to the brewing game, but Turbo Cider is so simple it&#38;#39;s not been hard to get to grips with.&#60;/p&#62;
&#60;p&#62;Fermentation of a Demi has taken 7-10 days at around 18c. This has been roughly the same regardless of the addition of real fruit, or different quantities of sugar. The ferment start was surprisingly fast, with airlock bubbles with an hour (using 1tsp youngs wine yeast/champagne yeast per Demi)&#60;/p&#62;
&#60;p&#62;As for conditioning, I made a cider with ginger at christmas, and it was certainly drinkable after only an additional 10 days priming in 1 gallon PET&#38;#39;s. Although the flavour was very dry and sharp, but refreshing with ice.&#60;/p&#62;
&#60;p&#62;My brewing colleague was able to leave his plain apple for at least 3 weeks, and he said there was a distinct improvement in the taste, with the fruit flavours being more distinct, and any yeasty type presence disappearing.&#60;/p&#62;
&#60;p&#62;With enough willpower I would leave for at least a month. As i&#38;#39;ll be bottling my wine and this current batch (all 3 styles) at the same time, I think i&#38;#39;ll put them away together, tasting after one month, and leaving for a second.&#60;/p&#62;
&#60;p&#62;My next challenge is to try and move away from the super dry cider and play with some non fermentable sugars to balance the sweetness.

&#60;p&#62;I seem to have a few things going on, so I thought a post would be in order.&#60;/p&#62;
&#60;p&#62;My Rioja is all done fermenting, and has been degassing with the stabilizer over the weekend. I&#38;#39;ll be clearing in the next day or two, which is exciting, as a tasting is certainly in order!&#60;/p&#62;
&#60;p&#62;Also, I have 3 different turbo ciders on the go, these are in the last couple of days of fermentation I reckon. &#60;/p&#62;
&#60;p&#62;It&#38;#39;s been really interesting to see the difference of the fermentation lvls depending on the contents of the Demi. My plain apple cider gently bubbled away for the duration, the one I added a blackberry juice (concentrate) to was fizzing like crazy for a day or two, I think this is due to the added sugar in the juice. Then one with some crushed real strawberries, big, foaming ferment on that one. And a great colour from the fruit.&#60;/p&#62;
&#60;p&#62;I&#38;#39;m going to bottle these all up later this week and leave them to sit for as long as I can resist. Looking forward to the results.

Greg only got them yesterday and it&#38;#39;s going to take bit of time to get it up and running. Give him a week. I&#38;#39;ve got to start on the AG versions of them soon, so there will be a choice. It should be a lot better than buying 3 x 100 gm packs of hops and only using 50 gms out of the lot. No waste, and cheaper all round.&#60;/p&#62;

If you do short brews, you might be interested in having a go at Robinsons Old Tom. It&#38;#39;s 8.5% ABV and it&#38;#39;s one of the recipes I did for an extract kit. It&#38;#39;s done to 11.0 lts, 105 EBC and 36 EBU. Quantity is easy to change. Uses Whitbread Golding and Golding hops, 75 min boil with additions in the last 10 minutes.

&#60;p&#62;Yesterdays st Austell old smoke went badly, to say the least. My home made mash tun leaked lots and I lost the first few litres of sweet treacly wort. Checked the og and came up with 1042 at 5 deg instead of 1056. Taking temp into account, og is 1024. Shouldn&#38;#39;t take long to ferment! &#60;/p&#62;
&#60;p&#62;My question to you is, should I add some sugar to get the abv up or should I just go and buy some proper job, not from tesco, and ditch the black stuff. &#60;/p&#62;
&#60;p&#62;I&#38;#39;m putting it all down to experience, character building, rather than getting down about the epic fail. Next time...&#60;/p&#62;

&#60;p&#62;Your hop additions. You say the first 10gm of Goldings was boiled for 45 minutes. You need at least an hour to isommerise the Alpha Acid completely, so increase this to 60 minutes. Other than that, all seems good.&#60;/p&#62;
&#60;p&#62;There is no way of predicting the IBU of a kit. If I ever use Beer Engine to try to work out how many hops to use, I take an arbitary figure of 33 IBU, unless there&#38;#39;s a reason to go for some other figure. Add Liquid Malt Extract until you get the OG/ABV, then enough hops of a type likely to be in that beer to get to 33 IBU, and tinker from there. It&#38;#39;s not an exact science.&#60;/p&#62;
&#60;p&#62;You are unlikely to improve Golden Ale as it&#38;#39;s a great beer anyway. All you&#38;#39;ll do is change it&#38;#39;s characteristics. Slightly stronger, more bitter, more hop flavour/aroma, etc.

             Thank you both  for your reassuring input, I was a little concerned  with the &#38;#39;bittering&#38;#39; !?  of me 2nd  Wherry but after a gargle during Kegging yesterday I was taken by surprise by the outcome.&#60;br /&#62;
  The &#38;#39;bittering&#38;#39; was not overly so, as I&#38;#39;d expected, in fact, very ok, what really did take me by surprise was the smell or aroma ( as us con-a-sewers say ) orangey-fruity!?  Could I conclude that the Wyeast1968 has orchestrated this, if so them  yeasty-beasties are a magical addition to this er beer making.  Now to the hopping, Brupaks - Goldings - Alpha Acid 5%... 10,10, and 10gr that&#38;#39;s for a 45min boil, 30min steep ( both in 1.5lts water.. 250 &#38;amp; 500ml used respectively) and finally a dry hopping.   Please... how could I predict the IBU&#38;#39;s on a brew kit using GW&#38;#39;s beer engine  - to me it seems a little complicated to input the data and  if that is possible what is the range of units I aim for.&#60;br /&#62;
  Now  regarding the St-Peter&#38;#39;s Golden Ale tinkering,  I&#38;#39;m really,  asking/questioning whether it can be improved upon in anyway, saving time and effort I suppose. It kinda would be nice for our  local home brew shops to provide us with a  mouth washing sample of the various brews on offer.&#60;br /&#62;
   All in All... I&#38;#39;m enjoying splashing about, like as a kid  we all enjoyed jumping up and down in a puddle, simple pleasures.

&#60;p&#62;It&#38;#39;s tried and proved and gives a lift without going over the top. It would work with St Peter&#38;#39;s just as well. Hop teas are all very well and they can be used successfully, but boiling hops to adjust the bitterness is a very unpredictable area. You need to be using some software to predict the results and Beer Engine is good for this. Steeping is another matter. Steeping for 30 minutes at 80°c will give flavour and aroma without increasing the bitterness. Higher temperatures will extract some Alpha Acid and give a harsh, bitter note. Really, you need to make a kit with no mods the first time, decide what you want to do with it, then work out how to do it.

Mine was considerably darker than the Tribute, and had much more maltiness to it, and an accompanyingly thicker mouthfeel. Very pleasant but lacking the hop kick of the original.&#60;br /&#62;

I&#38;#39;ve got another batch brewing at the moment, this time with WYEAST 1768 Special Bitter Yeast (instead of S-04) a little less crystal malt and way more hops. I&#38;#39;ve had a little sniff of it and it smells hoppy!&#60;br /&#62;
I made a few mistakes making the current batch - I took a hydrometer reading and it was very low (1.020) so I boiled up some of the wort with an extra bit of extract in it and chucked it in to the FV. Then I realised I should have stirred the wort before taking the OG!! Oops. Going to be a strong one for me - OG was 1.050. I shouldn&#38;#39;t have tried to do a brew while cooking for the family!

<description>&#60;p&#62;Hello all....My 2nd Wherry BB has been down now for 12 days so will be Kegging it Wednesday - couple of mods done are.. used Wyeast 1968 and two types of hop teas poured in prior to tossing the yeast - one 250ml of 10gr boiled Goldings and another 500ml of 10gr Goldings steeped for 30min produced quite a bittering effect more than I care to admit is to my liking, will this tone down with a few weeks of conditioning ?!... Oh and plus 10gr dry hopped Goldings SOOooo! have I £%$*&#38;amp;^%£/messed up.  Did have a sip of both the hop teas, the boiled tea was in my estimation at least 4-5 times more bitter than the steeped hops, that&#38;#39;s why I only used 250ml. Will sip a sample of the beer prior to kegging it.&#60;br /&#62;
     I do have another kit which was a Christmas pressy to be put down this weekend it&#38;#39;s  St Peter&#38;#39;s Golden Ale so any advice on the posible adjustment/addition to the ingredients knowng that I have Wyeast1968 and Golding... I know, I know - stop bloody tinkering will you, I hear you say.. tinkered all me life.. can&#38;#39;t stop now.. wuff wuff says me best mate &#38;#39;merlin&#38;#39;

&#60;p&#62;OK, OG has come out at 1.043, target so pretty close.  I ended up having about 0.5l extra water in the FV which may explain it.&#60;/p&#62;
&#60;p&#62;Yeast has been pitched.&#60;/p&#62;
&#60;p&#62;Not smelling as Nelsony as I was expecting it to but still smelling pretty good.&#60;/p&#62;

Every year is different and if you don&#38;#39;t correct the figures you can sometimes by a long way out. For new hops, go into the Hop Editor to enter them, but for hops used in the recipes, it&#38;#39;s best to make temporary changes with the &#38;#39;alpha +&#38;#39; and  &#38;#39;alpha -&#38;#39; buttons along the bottom. If you make sure the &#38;#39;% EBU&#38;#39; button is checked, you can note the original figures, change the values and juggle the quantities to get back to the original proportions

Used the new kit and the summer lightning recipe from greg&#60;/p&#62;
&#60;p&#62;I messed up the sparging a bit and definitely will purchase a hop bag. Og came out 0003 under which I&#38;#39;m not too bothered about. The yeast is frothing nicely now sO fingers crossed&#60;/p&#62;
&#60;p&#62;Thanks for all the tips and help getting to ag&#60;/p&#62;
&#60;p&#62;Planning to get the other ag kits now, then on to gw recipes. Incidentally, I tried st peter&#38;#39;s red and tribute a couple of days ago on the recomendations and loved them&#60;/p&#62;

<description>&#60;p&#62;After a 6 month&#38;#39;s layoff I&#38;#39;ve got another Twibute on the go. As was well with the BIAB mash and in went the bittering hops. 30 mins later and go to put the next batch of hops and..  Oh dear, the boilers stopped! Change the fuse and still Nowt.&#60;/p&#62;
&#60;p&#62;Bugger! Decided to chuck all the hops in and let it steep, cool down and drain. Let&#38;#39;s see what happens.&#60;/p&#62;

&#60;p&#62;My first homebrew is now on it&#38;#39;s way. 3 demi&#38;#39;s of Spiced Cider with some mulling spices and ginger.&#60;/p&#62;
&#60;p&#62;It may just be a flavoured Turbo Cider, but going through the process of sterilizing everything etc was something I wanted to do before I put my 30 bottle wine kit on next weekend.&#60;/p&#62;
&#60;p&#62;After sugar was added I recorded an OG of 1.050. I think theory dictates that&#38;#39;ll put it at something like 7-8% depending how the fermentation goes? We&#38;#39;ll see. &#60;/p&#62;
&#60;p&#62;Here&#38;#39;s hoping it ends up tasting ok.

&#60;p&#62;So its 70ibu instead of 60 and probably a whole percent or so lower in alcohol!  But hey ho - its beer and fermented with some WLP007 yeast which has got the BIGGEST yeasty head on it 18hours after pitching!  Smells great, those aurora hops are uber cool!

I should have kept with my original idea of having hlt in my shed on sturdy workbench &#38;amp; mash tun under on a toolbox......next time it&#38;#39;s not going to be balanced on 2 boxes and a beer fridge.&#60;/p&#62;
&#60;p&#62;Mash tun wrapped up to keep warm, only lost 2C so all good. It&#38;#39;s a coolbox as well, but as the temp outside starts to drop I&#38;#39;ll see if I can pinch some of next doors 100mm Celotex insulation board as they building an extension, and make a box for the mash tun.&#60;/p&#62;

I presume that&#38;#39;s the mash tun wrapped up to keep the temperature up.&#60;br /&#62;
My mash tun is a converted cool box and I&#38;#39;ve cut a piece of thick, laminated insulation polyfoam (not polystyrene) which I think came with the TV, to fit inside the box on top of the grain. I wrapped aluminium foil round it and put it on top of the grain, fit the lid and yesterday&#38;#39;s mash started at 68°c and after 2.5 hours it was still at 66°c.

I climbed a stepladder holding the FV ready to pour into the boiler, got to the top, and dropped the lot. All over me, the kitchen, the cat and the dog. Yes, you are probably thinking, why was he up a step ladder? It&#38;#39;s a long story involving an experiment in gravity brewing and I&#38;#39;m still upset about the whole thing.

&#60;p&#62;Should have seen it before the HLT fell off, was some what precariously balanced. But a modification of thin rope solved that problem. Something to sort for next time.&#60;/p&#62;
&#60;p&#62;The mash smelt good, wifee came up to gazebo / brew tent said it smelt like wheatabix lol. Found it most interesting, and have already sussed what I&#38;#39;ll do different next time - mainly the placement of my HLT, and get some more clear placcy pipe.&#60;/p&#62;
&#60;p&#62;I just used Danstar Nottingham that came in the pack I bought from Brewuk.......it&#38;#39;s just started bubbling now.&#60;/p&#62;

<description>&#60;p&#62;+1 to Saracens advice a sheet with steps marked out and space for notes is really useful, it&#38;#39;s very easy to forget things that happen during the brew. Then on your next brew give the notes a read through before you start and you will hopefully eliminate the errors and improve your process as you move on.&#60;/p&#62;
&#60;p&#62;Last night I did my 2nd biab all grain brew and by using this method I had not one hitch hit the right gravities and efficeincy so was well happy and issues that came up in the first brew were avoided this time by using the notes from the first attempt.&#60;/p&#62;

<description>&#60;p&#62;Righty had some mates over lastnight and had a chance to use my beer engine with this beer. I know it&#38;#39;s a bit sad but pouring yourself a beer from one of these bad boys is so satisfying! We bought a fair few ales in and had some really nice bottles but this beer is spot on. It smells delicious due to the dry hopped cascade, the malt and hops are really balanced, the esb yeast really melds them together well.&#60;/p&#62;

<description>&#60;p&#62;Right it has been kegged.  Got a cornie full and 12 bottles (and I over spilt some while decanting from a pot to a conical when I first brewed so defo 28ltrs).&#60;/p&#62;
&#60;p&#62;It fermented to 1.008 so an abv of 4.4% which is nice, but it made me think - if the temp during mashing was 70c then it should have added more non-fermentables making the body more heavy - which in turn would make the fermentation stop at a higher gravity.  Obviously this didnt happen so why did it ferment this low???&#60;/p&#62;
&#60;p&#62;Anyhoo I was going to leave it &#38;quot;dryhopping&#38;quot; for another day or so, but we have friends over saturday night and all was clear in the fermenter so I bit the bullet.  The beer tastes ok at the mo, pretty balanced malt and hops with no lingering aftertaste so we shall see how this one goes the next few days.  I had a quick half from the cornie and it has impressive head retention (as did the other recipe with caragold).&#60;/p&#62;
&#60;p&#62;The beer is lighter than I expected, but then there wasnt really anything else but pale malt in there with a touch of caragold.&#60;/p&#62;
&#60;p&#62;So to recap I hit pretty much all targets, the beer looks promising and is clear as a bell.  Now we play.............. THE WAITING GAME!

Don&#38;#39;t know how you describe it, but it looks laminated and usually comes in the packaging with large, flat, usually glass things. I cut a piece to fit inside my mash tun, wrapped a pieve of ally foil round it and the mash temperature stays spot on for ages.

<description>&#60;p&#62;Well it was all going great but this damn heat wave (com&#38;#39; on its nearly October!) is playing havock with my fermentation temps.  Its in a garage and in a water bath but ive had to resort at getting up at an ungodly hour to plop frozen bottles in there to keep it at a cooler temp.  Fingers crossed as the temp has stayed around 20-21 (as long as the cheap min max thermometer is good).  I will bring it inside for a nice 2 day rest before bottling.  Smells nice though, cant wait to dry hop with some yummy cascade!

&#60;p&#62;Well I was shooting for 1.045 but got 1.042 which I was a little miffed at but then I saw the amount I got from the boiler.  It must be about 28ltrs, so I over shot by 3 ltrs.  Gonna reduce the amount of sparge water next time and then we shall see!  Still a good brewday, pitched slightly on the warm side but on a concrete floor and surrounded by cool water at the mo to drop it fast as poss, not really worried, by the time the yeasties have started to munch on the sugar the temp should be a steady 20c ish.

After 9 days of fermentation 20g Cascade - Dry Hop 7&#60;/p&#62;
&#60;p&#62;So its gone well so far.  All the tap water needed went through a carbon filter and had a campden tab (dunno why but I thought it may as well, just incase the filter didnt do its job for an unknown reason) then the mash water was treated with 2.3g gypsum and 8mls crs (which is 4ml short of the reccomened but I dont like using it that much).  The mash doughed in fine and I took a temp of 66.8 which is fine.  After an hour and 20 mins I got ready to fly sparge but when I took the temp of the mash to see what it dropped to it actually read 70c!  I must really take care and look at mash temp more in the time its mashing.  Still no biggie and whats done is done!  The ph came out at 5.5 which I am very happy with.&#60;/p&#62;
&#60;p&#62;So I sparged with 30ltrs of water and kept the grain beds temp at around 75-77c which is great.  The sparging took 25mins and it stopped at 1.012 which again is good.  Boiling now and smelling fine!&#60;/p&#62;

&#60;p&#62;The HCGA Enterprise award has enabled the production of a low colour malt, involving twelve months’ extensive pilot malting and brewing trials at BRI, followed by commercial malt production at French and Jupp’s.&#60;br /&#62;
Malty, fruity and toffee flavour notes are carried through to the beer. Low malt colour produces a golden orange lager with increased body and fullness. Softer, rounder mouth-feel with improved drinkability.&#60;/center&#62;&#60;/p&#62;

<description>&#60;p&#62;Hey peeps,  Brewday Saturday.  Going for a similar (ish) brew to the lastchance EPA which was a mega success.  The hops have been changed a bit as I wanted to a) lower the IBUs from around 37 to 30 and b) wanted to get some cascade in the fv for dry hopping as I havnt used cascade for about a year now!&#60;/p&#62;
&#60;p&#62;Im also upping the abv as while it was a great drink, I found myself drinking it too fast as it was 3.4%, this one is going to be around 4.2%&#60;/p&#62;
&#60;p&#62;The left over cascade will be used in an IPA next brewday with some aurora which I have kept for a while in the fridge - I may even pitch on the slurry, or should I just double my starter and keep one in the fridge..... (hmmmmm another topic coming)&#60;/p&#62;

The extract you had in the tins was very concentrated and therefore very viscous. Whichever extract you use, Liquid or Dried, it has to become liquid, virtually water, for it to be transformed into beer, so yes, it should be like a stock. No need to leave the lid off.&#60;/p&#62;
&#60;p&#62;Leaving the wort to cool is not too much of a problem so long as you have a lid on it. You need to guard against bacteria entering the solution, and to be honest, that can happen when you pour it into the FV, stir it, add yeast, all sorts of stages. I shouldn&#38;#39;t worry about leaving it a few hours to cool. Just don&#38;#39;t put it anywhere silly, like standing on the manhole cover to the sewer. The rapid cooling is for All Grain where you need to achieve a &#38;#39;cold break&#38;#39;.&#60;/p&#62;
&#60;p&#62;26°c should be ok. You need to ferment your beer at the lower end of the temperature scale to get the best flavour, so put it somewhere cool to get it down to 19° to 20°c. With a lid and an airlock, there&#38;#39;s no reason why you can&#38;#39;t leave it in the garden to cool doewn. At the temperature you pitched the yeast, it should be going well in about 6 hours, or less. Personally, I would have waited.&#60;/p&#62;
&#60;p&#62;I was told they&#38;#39;re not seeds. I can&#38;#39;t remember what they are called, but they are bits that carry the Alpha Acid and perfectly OK.&#60;/p&#62;

&#60;p&#62;wife was out shopping, it&#38;#39;s hammering down outside and the 15ltr stockpot arrived so took the plunge and went ahead with the amarillo recipe from Brew UK. &#60;/p&#62;
&#60;p&#62;Instructions were easy and great.  All started off well...&#60;/p&#62;
&#60;p&#62;I realised that the stockpot, being so thin, doesn&#38;#39;t get an aggressive boil on so I kept the lid on for the whole hour and a bit.The wort smelt amazing but looked like a stock rather than the thick syrup which I had in the Coopers cans on the last two batches.  Should the wort be more like a syrup or a stock? (should I have left the lid off to boil down).&#60;/p&#62;
&#60;p&#62;When it came to sieving the stock into the fermenter, (glad there were two of us!) the final temp at 21 lts was in the mid thirties!! I left it for half an hour (to pick up the wife), added some ice cubes and it was around 26.  I&#38;#39;ve read here from someone (vague, sorry)that the wort shouldn&#38;#39;t be left too long so I went ahead and added the yeast.&#60;/p&#62;
&#60;p&#62;Yeast guidelines say 15-24deg so I may have botched it.  What happens, does the yeast just die if it&#38;#39;s too hot?  I&#38;#39;ll have to wait and see if any fermentation occurs.  What would you guys have done if the temp of the wort was over - just wait or add the yeast?&#60;/p&#62;
&#60;p&#62;Also, there are still seeds from the hops in the wort, is that ok?&#60;/p&#62;
&#60;p&#62;I&#38;#39;m a &#38;#39;barrel&#38;#39;s half full&#38;#39; kind of guy, so I&#38;#39;m hopeful, if not impatient!&#60;/p&#62;

<description>&#60;p&#62;Righty this fermented out to 1.008 so thats 3.4%, I didnt dryhop this one and it went into corny and 12 bottles 9th september.&#60;/p&#62;
&#60;p&#62;The beer had a slightly &#38;quot;bitey&#38;quot; aftertaste when transferred which I didnt really like but its mellowing out now.  The brew isnt clear and has a haze about it so im hoping that will clear in the next week.&#60;/p&#62;
&#60;p&#62;The flavour is similar to the last pale hop wise (as its very similar in hops, bar the amarillo, which in hindsight should have been saved for dryhopping).  Chocolate is just the right amount, and is in now way overpowering as it can be it larger amounts.&#60;/p&#62;
&#60;p&#62;Anyhoo, I will post an update in about a week when its hopefully a little clearer and less bitter.

The efficiency was 67% which is a little low, but if I can keep it a constant thats ok by me.  Bonus on the amount though, strange as the last batch which had a similar amount of hops I only got 22.5 ltrs, maybe its because I left the l;id on 1/2 way this time.&#60;/p&#62;

&#60;p&#62;The brewing method you outlined isn&#38;#39;t 100% correct. WTA is a recipe originally formulated for extract and the hop bill will be adjusted for that brewing method. Twibute is an AG recipe and the hop bill will be suited to the SG of that recipe. Although it won&#38;#39;t make much difference, you need to keep the SG of the wort at around 1.040 to 1.050 in order for the hop extraction efficiency to work correcly. (That&#38;#39;s why an 8.0 lt boil is better than 6.0 lts.) Because of this, only 1 kg of DME goes in the boil and all the rest of the DME goes in &#60;u&#62;after&#60;/u&#62; the boil. The last 2 hops at 10 mins will impart some bitterness, and with the extra DME added before, the amount of extraction will be considerably lower.&#60;br /&#62;
I&#38;#39;m not sure if you have Beer Engine, but if you do, load up a recipe with 1.0 kg of any DME and 50 gms of Target hops with the volume set at 6.0 lts. You&#38;#39;ll see you get 240 IBU. Add a further 1.0 kg of DME and check the IBU. Then add another and check again. You&#38;#39;ll see how drastically the IBU goes down as the SG goes up.

You really should leave it in the FV for 2 weeks. That will make sure the ferment is over and the beer will be almost clear, which means less sediment in the bottles. If you&#38;#39;re worried about the heat, and my FV only shows 19.2°c today, drape a damp towel over it.

<description>&#60;p&#62;Might be a wee bit high but you need to take readings over 2 or 3 days. If they remain constant then it&#38;#39;s stopped fermenting and can be bottled. Leaving it until Monday should be fine.

Safe to bottle or shall i leave it? If i leave it it&#38;#39;ll be monday before it gets bottled. I don&#38;#39;t want to leave it hanging around in this heat!
