&#60;p&#62;Pretty much comprehensive. &#60;/p&#62;
&#60;p&#62;Any water treatment calculator will give you a selection of beer types to choose from and this will alter the treatments recommended.&#60;/p&#62;
&#60;p&#62;I&#38;#39;ll see if any of this has made a difference to my latest beer and will use it for an extract brew some time soon. I&#38;#39;ve got Amarillos so may do the IPA again which I&#38;#39;ve done in the past with bottled water and no water treatments.

<description>&#60;p&#62;Well at the moment I&#38;#39;ve got the cornelius at 15psi, and serve at 5psi. I shall do as you all say and reduce pressure, and get a longer beer line for the lager. Now my Norfolk Wherry is ready, I have bought another FV and another cornelius, so I secondary ferment, wait to clear, then remove to cornelius and serve at about 2-3psi correct? I have just bought some campden tabs, but a little to late for this lot though.

<description>&#60;p&#62;Hi Bex, depends on the sugar content at the beginning. If you add more water now you may water it down too much and make it thin and not very alcoholic.&#60;/p&#62;
&#60;p&#62;I would give it a taste, if it tastes okay then I would leave it alone and let it finish fermenting. Its not ideal to have so much air above it but hopefully the c02 being given off should protect it.

&#60;p&#62;It was heated to 75 degrees in another pot.&#60;/p&#62;
&#60;p&#62;I think I&#38;#39;ve sussed what might have happened.&#60;/p&#62;
&#60;p&#62;When I calibrated the boiler I forgot the 1.5 litres of dead space. So, when I thought I had 19 litres I only had 17.5 litres of usable water.&#60;/p&#62;
&#60;p&#62;Next time I&#38;#39;ll do what I said above and put as much water in as possible, treat it then draw off until I have a safe amount of water in which to mash the grains. Then, when the mash is over, use that water to sparge and then pour back in the boiler.&#60;/p&#62;
&#60;p&#62;I can only mash safely with about 19 litres but I can boil with a lot more. Maybe 25 or 26 litres.

<description>&#60;p&#62;I did a mash out. Raised the temp to 75 degrees with the grains still in the bag for 15 minutes. I took the bag out and put it in a FV then poured over about 4 litres of water I reserved from the treated water. Then poured back into the boiler.&#60;/p&#62;
&#60;p&#62;Next time I think I&#38;#39;ll just brim the boiler with water at the start and draw off into another pan until I get to a safe level into which I can put the bag and grain (about 19 litres). Then sparge with the reserved water. Hopefully next time it&#38;#39;ll be enough.

&#60;p&#62;The blackerries would have started fermenting on their own (im guessing) because of wild yeast that is on them and I wouldnt have thought you have ruined it by putting it in a sterile demijon or by adding the yeast, as it was fermenting for another 3 days in the demijohn Im sure all will be ok.&#60;/p&#62;
&#60;p&#62;Did you take hydrometer reading at the beginning?  If so take another now and see if its stable for the next 2 days, if it is then its finished fermenting.&#60;/p&#62;
&#60;p&#62;In regards to wether to add water I would stick by your grandma&#38;#39;s recipe and then fiddle with it after you have tasted the goods!

<description>&#60;p&#62;Hello people. I am a total newcomer to wine making, and following an ages old recipe from my grandmother&#38;#39;s cookery book for blackberry wine. I originally had the must sitting in a Pyrex bowl covered with a clean tea-towel, as the recipe said to leave it to ferment for 6 days, but didn&#38;#39;t mention adding yeast. It did start to ferment, and bubbled for about 3 days then slowed right down. At my father&#38;#39;s suggestion, I transferred it to a sterile demijohn with an airlock, and added a small amount of wine makers&#38;#39; yeast. It has sat there bubbling happily for a further 3 days.....but there are only around 3 pints of liquid. Should I top it up to fill the demijohn? Have I ruined it by putting it in the demijohn? Any advice apprecitaed. <description>&#60;p&#62;Interesting about leaving lids off. I&#38;#39;ve done 4 AG brews so far and was not aware about leaving a lid off. The electrim i did one brew in with a lid on and my gas setup had a lid on (3 brews) for all of the boil time other than when adding my wort chiller 15 mins from the end of my boil. All the brews have tasted top stuff and even nicer than some pubs i&#38;#39;ve visited up and down the country (other than my London pride clone - something got into FV). That is one hell of a boil off though Nath! With my lid on the steam still seems to escape as it is not tight or close fitting. The last brew i did i had about 24L in the boiler and this dropped to around 17-18L at the end of the boil (one hour boil) with lid on!. When i hit a rolling boil i reduce the gas output to the burner but still maintain a rolling boil. Looks like a cracking day Nath with your equip. My first run off after my first gas boil also presented me with problems like you had. I tipped the whole lot into my electrim and ran it through the hop stainer in that as it was the only thing i could do. Did some mods to the strainer (only had about 2 drain slots per inch) so I cut an extra 2 per inch and then replaced the middle part at the far end of the strainer with a butchered brewpaks strainer i took from my electrim. Last brew i had no problems at all with running off the wort from the boiler.&#60;br /&#62;

<description>&#60;p&#62;Hi Howard, I find 1318 London III or 1099 Whitbread work well. I&#38;#39;ve done loads of brews based around that recipe with different hop profiles and yeasts.&#60;/p&#62;
&#60;p&#62;My last batch didn&#38;#39;t turn as well as normal as I dried hopped with some goldings pellets and just thought I would chuck them straight in no bag or anything. Anyway bad idea as they turned to mush and gave the beer a grassy flavour. Its improved quite a bit over the last couple of weeks and its certainly drinkable but not my best effort but you learn from your mistakes.

<description>&#60;p&#62;Cliff, release some pressure via the top valve down to about 2 or 3 psi and it should reduce the foam.&#60;/p&#62;
&#60;p&#62;You might find that the keg just takes a bit longer to condition. I would leave it alone for a week or two and see if it improves.
