<description>&#60;p&#62;I did quite fancy the idea of the Brewfrem witbiere, with home dried orange or satsuma peel, coriander and candy sugar, possibly dry-hopped with a few of one of the halltuaer hops(sorry for the mispelling)   especially with summer coming up! Although I must say I quite like the sound of the Delta hop! In fact it&#38;#39;s had me salivating over the last couple of day, even though I know that I&#38;#39;d have to use it with the above additions, bar the sugar! &#60;/p&#62;
&#60;p&#62;Then thought about doing the 2nd lager kit (but with s23 ale yeast) &#38;amp; some steeped cara gold &#38;amp; spraymalt to replace some of the sugar :Is it possible to steep this one! I know it&#38;#39;s a caramel malt but are they all steepable (as I&#38;#39;m yet to learn some of what&#38;#39;s what &#38;amp; what&#38;#39;s not!) &#38;amp; this is one case of preferring not to learn from my mistakes...  &#38;lt;img src=&#38;quot;http://www.brewuk.co.uk/forum/bb-plugins/default/icon_redface.gif&#38;quot; title=&#38;quot;:oops:&#38;quot; class=&#38;quot;bb_smilies&#38;quot; /&#38;gt;   &#60;/p&#62;

<description>&#60;p&#62;Hi Nath been away a while meself did get it goin abit for a few days then it stopped today.I put a heating belt on with a insulating jacket(much like one on an emersion boiler)and thought it was getting a bit warm so I turned it off-It was still blubbing.When it cooled down it stopped blubbing out but started blubbing in!That settled down and totaly stopped until tonight when it&#38;#39;s just started the blub out now very slowly-no froth.Can it get too warm?It was warmish not hot.would there be any point trying to give it another start?.Does the yeast need feeding I&#38;#39;ve read that tomato puree will do and should the yeast you buy have it&#38;#39;s own or is that a load o bull. &#60;p&#62;I have never tasted RYE before but it says in a few places that 10% is a maximum unless you really want a strong rye flavour.  As for the hops...... You cant go wrong with them, though it is 121 IBU and 9%!  The yeast can take upto 11% so thats cool, but its gonna take a lot of conditioning to mellow out IMO.

&#60;p&#62;You could use unscented bleach from the supermarket, the thin cheapo stuff. Its about 2% Sodium hypochlorite, mix a 5 - 10% solution and rinse thoroughly.&#60;/p&#62;
&#60;p&#62;Stuff like VWP is a mixture of Sodium hypochlorite and Sodium hydroxide (caustic soda) and probably some other stuff too. The caustic element is good for cleaning.

Aaaahhh ... of course, the liquid ... that may explain why I&#38;#39;ve seen suggestions that honey is 75% fermentable, but other sources have described honey as 95% fermentable ... presumably the first is really saying that honey is made up of 75% fermentables, whilst the second is saying the sugars in honey are 95% fermentable ... it&#38;#39;s two (slightly) different uses of the same word ... and put together they both reconcile with your 140% suggestion  &#38;lt;img src=&#38;quot;http://www.brewuk.co.uk/forum/bb-plugins/default/icon_biggrin.gif&#38;quot; title=&#38;quot;:D&#38;quot; class=&#38;quot;bb_smilies&#38;quot; /&#38;gt; &#60;/p&#62;

3l NaOH food grade (3-5%) saw different versions&#60;/p&#62;
&#60;p&#62;first aid gloves and if possible cover for the eyes &#60;/p&#62;
&#60;p&#62;&#60;strong&#62;making of brezel&#60;/strong&#62;&#60;br /&#62;
hydrate yeast with the water&#60;br /&#62;
mix flour and salt together, form/ dig a mould&#60;br /&#62;
put sugar inside the&#60;br /&#62;
add the yeast&#60;br /&#62;
cover with cling film&#60;br /&#62;
rest for 15 minutes on a warm place (i think we all know what yeast likes :p )&#60;br /&#62;
add the soft fat and make a smooth dough (should feel like playdough)&#60;br /&#62;
cover with clingflim and rest for another 30 to 45 minutes&#60;br /&#62;
shape 12 brezel&#60;br /&#62;
put in fridge for 1hour!!! &#60;strong&#62;do not cover&#60;/strong&#62; the dougth will form a skin, which will be needed.&#60;/p&#62;
&#60;p&#62;bath the brezel about 30 seconds in the NaOH brine&#60;br /&#62;
put on baking paper&#60;br /&#62;
dust over with the rock salt&#60;br /&#62;
bake for 15 to 20 minutes @ 200 degree celsius&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;NaOH brine&#60;/strong&#62;&#60;/p&#62;
&#60;p&#62;2l &#60;strong&#62;cold&#60;/strong&#62; water&#60;br /&#62;
60 - 100g NaOH (food grade)&#60;br /&#62;
4l steal pot&#60;/p&#62;
&#60;p&#62;put the &#60;strong&#62;cold&#60;/strong&#62; water in the pan (water first, otherwise it&#38;#39;s getting dangerous!!)&#60;br /&#62;
add the NaOH while stirring gently ---&#38;gt; should become milky&#60;br /&#62;
note:&#60;br /&#62;
the brine can be stored for some months in a sealed jar
